El objetivo de este proyecto fue evaluar la aplicación de las prácticas de manufactura en los trapiches San Francisco y La Esmeralda mediante la aplicación de encuestas etnográficas, documentación fotográfica e identificación de contaminantes microbiológicos presentes en la panela, manos de empleados e implementos de trabajo. En los resultados obtenidos se encontró que una proporción importante de las muestras presentaron contaminación por bacterias como Staphylococcus epidermidis, Streptococcus uberis, Leuconostoc mesenteroides, Bacillus spp, Corynebacterium spp, Actynomices spp, Lactococcus lactis y Gardnerella vaginalis, y hongos como Fusarium spp, Aspergillus spp, Paecilomyces spp, Penicillium spp y Mucor spp, demostrando falencias en el proceso de producción por la falta de implementación de las Buenas Prácticas de Manufactura. A partir del estudio, se recomendó capacitar a los empleados periódicamente acerca de la manipulación de alimentos y prácticas básicas de higiene y realizar una vigilancia más estricta a los trapiches.

Low germination and high levels of fungal infections were found in seed of June plantings of dry beans in Honduras, Fusarium equiseti (12-62% incidence) was the dominant internally seedborne fungus of that season. October plantings showed fewer (P = 0.05) seed infections and less discoloration.  Fusarium semitectum (7 to 21%) was the dominant seed microorganism. Stored seed (December to June) lost about 50% of its vigor and size without losing germination (89%). Bacillus licheniformis, with up to 37% incidence, was the dominant seed storage microorganism. Storage microorganisms included Aspergillus spp., other Bacillus spp., Penicillium spp., Chaetomium spp., Mucor spp., and Flavobacterium spp. Fusarium spp. varied in their recovery after storage. Fusarium semitectum was eliminated in storage, whereas F. equiseti increased. Levels of Fusarium spp., in recently harvested seed, and Bacillus and Aspergillus spp., in stored seed, were excellent indicators of seed quality losses in the field and storage in Honduras. Germination data alone was not a good indicator of seed quality because low vigor seed had excellent germination.

The paper presents the results of analyses of the chemical composition of 455 samples, microbiological analysis of 412 samples, and mucotoxicological analyses of 212 samples of feed mixes for different categories of swine which arrived for control at authorized laboratories from the territory of the Republic of Serbia during the period from 2000 until 2001. The analyses of 455 swine feed mix samples showed that as many as 185 feed mixes do not meet the quality condition on protein content envisaged by legal regulations, and the highest discrepancy was determined in feed mixes for piglets. Analyses of Ca, P and NaCl contents showed that the mixes in a large number of cases contain insufficient quantities, and in a considerable number even quantities which are not permitted. Analyses of the contents of certain microelements showed that mixes contain insufficient quantities in a large number of cases, especially of copper, manganese and zinc. The number of saprophytic bacteria greatly varied depending on the type of feed mix but all examined samples contained a permitted number of saprophytic bacteria. These analyses most often isolated Bacillus spp., Staphylococcus spp., coliform bacteries, and Micrococcus spp.. Most examined samples contained a permitted number of clostridia, and a smaller number of samples mostly for piglets, showed an impermissible number of clostridia. The quantity of mold fungi in mixes was significantly higher in mixes for young animals, and the determination of fungi most frequently resulted in the isolation of Penicillium spp., Aspergillus spp., Fusarium spp., and Mucor spp.. The mucotoxin analysis of 212 feed mixes showed that only 30.2% were within permitted levels, and the differences between the mixes for young and adult animals were not significant. The mucotoxins most often present were zearalenon and ochratoxin, and all mixes in which aflatoxin and trychotecenes were identified contained these toxins in quantities above permitted levels.

El comercio del café es uno de los renglones económicos más importantes a nivel mundial, sin embargo, también es susceptible a contaminaciones desde su cosecha hasta su transformación. Para la realización de este estudio se recolectaron muestras de café cereza procedentes de diferentes municipios productores de Norte de Santander y posteriormente en el laboratorio se aislaron y caracterizaron fenotípicamente los siguientes agentes fúngicos del grano de café: Aspergillus  spp., Penicillium spp., Fusarium spp., Cladosporium  spp., Mucor spp. y  Rhizopus spp. con ayuda de claves taxonómicas. Los hongos que presentaron una alta incidencia fueron Aspergillus spp. y Fusarium spp. Entre las tres variables fisicoquímicas analizadas en el café cereza (pH, actividad de agua, % de humedad) se puede afirmar con certeza que la actividad de agua y el porcentaje de humedad influyen directamente en el número y tipo de aislamientos fúngicos obtenidos.

As cascas de amendoim (Arachis hypogaea L.) são de grande importância para confecção de cama de frangos, de gado de leite e como fonte de fibras para ruminantes, portanto a elucidação dos mecanismos de contaminação por fungos toxigênicos e por micotoxinas em amendoim é imprescindível, especialmente para que medidas preventivas possam ser tomadas. Realizou-se, este trabalho, em Junqueirópolis, Estado de São Paulo, Brasil. Os principais fungos isolados nas cascas de amendoim foram Fusarium ssp. (78,75 %), Rhizopus ssp. (14,1 %) e A. flavus (11,75 %). No solo foram isolados Penicillium spp., Fusarium spp. e Aspergillus flavus, entre outros. Aflatoxinas foram detectadas em amostras de cascas de amendoim a partir do estágio de granação em concentrações que variaram de 5,42 μg/kg a 218,52 μg/kg. Ácido ciclopiazônico e fumonisinas B1 e B2 não foram detectadas. A presença de A. flavus e aflatoxinas nas amostras, revela a importância de um controle das cascas de amendoim antes de sua utilização. Boas práticas agrícolas são indicadas para região, uma vez que a contaminação das vagens ocorreu antes da colheita.

The research was conducted on 19 stud farms in Serbia, on 80 mares used for breeding, with and without reproductive disorders. During the two years period (from 2009 to 2010) double guarded uterine swabs from 80 mares, aged between 3 and 22 years were collected. Mares belonged to the different breeds: Thoroughbred, Standardbred, Lipizzaner and mixed breeds. It was determined, that bacterial infection of genital organs was found in 24 mares in the examined population, and the bacterial species Streptococcus zooepidemicus was diagnosed in the 11 samples from cervical swabs. In the 5 samples, Escherichia coli was isolated, while Staphylococcus epidermidis and Pasteurella multocida were present in the 2 samples each, while the other causes and simultaneous isolation of two bacterial species are much less present. These species are: Bacillus spp. plus Escherichia coli; Streptococcus zooepidemicus plus Klebsiella pneumoniae and Escherichia coli plus Streptococcus zooepidemicus. In one swab we determinated Arcanobacter pyogenes. In this examination, according to available data after natural mating, we found conception level of 43,10%, which is similar with previous reports in our country.

The purpose of the present studies was to establish the species composition of fungi occurring on the underground parts of winter wheat, Kobra cv. and to determine the quantitative and qualitative composition of microorganisms developing in the rhizosphere of this plant. The mycological analysis of the infected roots and the stem base of winter wheat gave 320 fungi isolates. Fusarium spp. were most frequently isolated, and their proportion was 64.7% of all the fungi. This genus was represented by F. avenaceum, F. culmorum, F. equiseti, F. graminearum, F. oxysporum and F. solani. Among these species the dominating ones were F. avenaceum (19.4%) and F. culmorum (38.7%). The microbiological analysis of winter wheat rhizosphere gave the highest number of total bacteria (6.32 × 106 cfu/g of d.w. of soil). The number of Pseudomonas pp. was 3.56 × 106 cfu/g of d.w. of soil, and the number of Bacillus spp. was 2.42 × 106 cfu/g of d.w. of soil. Fusarium spp. and Rhizoctonia solani dominated within pathogenic fungi isolated from the rhizosphere of winter wheat.

Exopolysaccharides (EPS) produced by three Lactic Acid Bacteria strains,Lactococcus lactisSLT10,Lactobacillus plantarumC7, andLeuconostoc mesenteroidesB3, were isolated using two methods: ethanol precipitation (EPS-ETOH) and ultrafiltration (EPS-UF) through a 10 KDa cut-off membrane. EPS recovery by ultrafiltration was higher than ethanol precipitation forLactococcus lactisSLT10 andLactobacillus plantarumC7. However, it was similar with both methods forLeuconostoc mesenteroidesB3. The monomer composition of the EPS fractions revealed differences in structures and molar ratios between the two studied methods. EPS isolated fromLactococcus lactisSLT10 are composed of glucose and mannose for EPS-ETOH against glucose, mannose, and rhamnose for EPS-UF. EPS extracted fromLactobacillus plantarumC7 andLeuconostoc mesenteroidesB3 showed similar composition (glucose and mannose) but different molar ratios. The molecular weights of the different EPS fractions ranged from 11.6±1.83 to 62.4±2.94 kDa. Molecular weights of EPS-ETOH fractions were higher than those of EPS-UF fractions. Fourier transform infrared (FTIR) analysis revealed a similarity in the distribution of the functional groups (O-H, C-H, C=O, -COO, and C-O-C) between the EPS isolated from the three strains.
