STUDY OF MORPHOMETRIC CHARACTERISTICS OF ALDER LEAVES OF PHARMACOPOEIAL SPECIES

To expand the raw material base of medicinal plant raw materials, a promising area of research is the study of additional types of raw materials that can be harvested from already used medicinal and food plants. Given the complexity of harvesting alder seeds, researchers are interested in the leaves of this plant, a wide range of biologically active substances that cause anti-inflammatory, astringent and antioxidant effects. The first stage of standardization of raw materials is the definition of morphologically significant features, based on the generalization of which the section "External features" is developed. The analysis of morphological features of freshly harvested, dried and frozen leaves of gray alder (Alnus incana Moench) and black alder (A. glutinosa Gaerth) harvested from wild plants in mixed forests of the Moscow region revealed diagnostically significant features and found that the method of conservation does not affect the occurrence of the identified features. Since it is planned to use both types of alder for the preparation of a new type of raw material "Alder leaves", a generalized formulation is proposed for raw materials that are a mixture of species.

Among the relevant for the modern pharmacy problems, there is a need for the rational complex use of known medicinal plants, as well as the search for new sources of natural biologically active compounds in order to expand the list of official medicinal plants and raw material base. Species of genus Geum L. contain a number of biological active substances and are promising sources of raw materials for the production of antimicrobial, astringent, anti-inflammatory, and hemostatic medicines. Pharmacological activity of these plants results from their multi-component chemical composition, including tannins, flavonoids, macro- and microelements and other compounds. The aim of thе study was to compare the elemental composition of herb and rhizomes with roots of G. urbanum L., G. aleppicum Jacq. and G. rivale L. of Ukrainian flora. The objects of the study were the samples of herb and rhizome with roots of G. urbanum L., G. aleppicum Jacq. and G. rivale L. (dried raw materials) which were collected in the Kharkiv region, Ruski Tishki village, in June-August 2018–2019. The determination of the qualitative composition and quantitative content of elements was carried out by atomic absorption spectroscopy with atomization in an air-acetylene flame using a spectrometer CAS 120 («Selmi», Sumy, Ukraine). In the studied samples, 19 elements were determined, including 5 macroelements and 14 microelements. The data about accumulation of elements in investigated herb of G. urbanum L., G. aleppicum Jacq., G. rivale L. can be arranged in descending order as follows: K > Ca > Si > Mg > P > Fe > Al > Na > Sr > Zn, and in rhizomes with roots as follows – K > Si > Ca > Mg > Fe > P > Al > Na > Sr > Zn. The content of toxic elements such as cobalt, cadmium, arsenic, and mercury was within the permissible limits for plant raw materials and food. For the first time, a comparative study of the macro- and microelement composition in herb and rhizomes with roots of G. urbanum L., G. aleppicum Jacq. and G. rivale L. has been carried out. Using the method of atomic absorption spectral analysis, 19 elements have been identified and their content has been determined, among which К, Ca, Mg, Si, P, Fe, Al, Na, Mn, Zn predominantly accumulate.

Carotenoids are of interest as precursors of vitamin A, which has a wide range of pharmacological effects — antioxidant, immunomodulatory, participating in photoreception, etc. The aim of the research was to develop a technique for the spectrophotometric determination of the A-vitamin activity of carotenoids-rich medicinal plant raw materials (MPRM). The objects of research were the traditional sources of carotenoids — sea buckthorn, carrot, pumpkin and wild rose. A method is proposed for determining the content of individual carotenoids in MPRM by optical density at wavelengths corresponding to the characteristic peaks of α-carotene, β-carotene and lycopene. It has been shown that it is preferable to use isopropyl alcohol as the most effective solvent. Taking into account the content of specific carotenoids makes it possible to determine the A-vitamin activity of the sum of carotenoids extracted from plant materials, and, accordingly, to increase the efficiency of the use of herbal preparations and biologically active additives for health improvement.

An actual problem of the alcohol industry development is the expansion of the raw material base through the use of new, cheaper types of carbohydrate sources. Recently, glucose-fructose syrup has been of increasing interest to producers of ethanol. Among the producers of craft drinks, in particular rum-based drinks, cane molasses is in increasing demand. The article presents the technological aspects of the fermentation process of nonconventional sugar-containing raw materials on the example of glucose-fructose syrup and cane molasses in ethanol by different yeast strains. It is determined that glucose-fructose syrup and cane molasses are raw materials depleted of nitrogen, phosphorus and growth substances necessary for the yeast activity. To improve the technological properties of raw materials in the molasses, nitrogen, phosphorus nutrition and corn extract as a growth substance shall be added to a mash. Glucose-fructose syrup is of pH 3.68 and of acidity 0.12, which negatively affects the fermentation. It is established that in order to create optimal living conditions for yeast, it is necessary to add substances to the glucose-fructose syrup that will contribute to the safety of development and prevent the pH 3.5. It was determined that the alcohol yield from 1 ton of glucose-fructose syrup is 31.0 dal, from 1 ton of cane molasses is 24.0 dal on the yeast 46ED and 22 dal on the TegaYeast without the use of growth substances and vitamins necessary for the reproduction of yeast biomass. Under conditions of improving the technological properties of the mash from the glucose-fructose syrup and cane molasses by adding biologically active substances promoting the synthesis of yeast biomass, the ethanol content in the fermented mashes increases up to 11.9 12% vol.

A recent tendency in Ukraine is the changes in the structure of food consumption, which are caused by the reduced consumption of some product groups and by their decreasing quality. A persisting problem is that affordable and easy-to-consume food products made with due consideration of the needs of patients with certain categories of diseases can hardly be found on the domestic market. The products present on the domestic market are all imported, available in a limited assortment, very expensive, and not customised to suit all the specific needs of human metabolism. Approaches to the nutrition of patients with certain types of nutrition-dependent and non-infectious diseases have been analysed. It has been established that аn effective component in the diet of patients with non-infectious diseases can be plant-based milk analogues. It has been determined how important it is to use domestic raw materials: it will contribute to expanding domestic production, will help the gross domestic product growth, and will reduce the product’s costs, thus reducing the costs of diagnostic and treatment procedures. It has been established that the assortment of plant-based milk analogues is constantly expanding. The vegetable raw material conventionally used to make this product group has been analysed. It has been shown that fenugreek seeds can be most effectively used to make special food products (in particular, plant-based milk analogues) for the nutritional support of patients with non-infectious diseases. This is feasible due to the availability of the raw material, simple cultivating conditions, the chemical composition of the product (e. g. a wide range of biologically active substances), low costs of the product when it is made from domestic raw materials, and the simple production technology. It is expected that manufacture of milk analogues from fenugreek seeds will widen the assortment of this product group, and satisfy the target consumers’ needs of safe and high quality products that offer an alternative to imports.

Determination of the directions of formation of the contemporary level of quality and assortment concept of the species diversity of functional bread of mass assortment with the use of wild berry plants Ericaceae for health improving nutrition. The materials were questionnaires of a survey of potential consumers of functional bread of the city of Krasnoyarsk, wild berry plants of the Heather family (Ericaceae): fruits of cranberry (Vaccinium oxycoccos), of cowberry (Vaccinium vitis-idaea), of bilberry (Vaccinium myrtillus), of blueberry (Vaccinium uliginosum) and powders from them. The method of isolation of the average sample according to GOST 24.027.0-80 was used in the work. The content of toxic elements in berries was determined according to GOST 26927-86, GOST 26930-86, GOST 30178-96 using an atomic emission spectrometer with inductively coupled plasma-iCAP 6500. Generally accepted theoretical and statistical research methods, combinatorial analysis, and data processing using standard mathematical programs were used in the work. Study of the consumer survey, literature data of the chemical composition of berries of wild plants Ericaceae, data on the possibility of procurement of raw materials on the territory of Krasnoyarsk region, investigation of safety performance of the raw material and powders out of him for compliance with the requirements of TR CU 021/2011 and 027/2012 indicate the possibility of their use in the composition of functional bread as a source of biologically active compounds with a variety of positive physiological properties. The multivariance of the development of the range of functional types of bread with additives from Ericaceae berries is confirmed by the data of combinatorial analysis. As a result, an assortment concept of the species diversity of functional bread of a mass assortment of contemporary quality with additives from wild berry plants Ericaceae for improving nutrition was formed. Researches is promising in the formation of the range and actual quality of functional types of bread of mass assortment using local wild-growing raw materials, the advantage of which is naturalness, the content of functional ingredients, and contribute to the development of the range and technologies of healthy food products.

The article deals with the manufacture of modern structural ceramic materials from clay and loam deposits of the Republic of Sakha (Yakutia). The importance and relevance of the development of the production of building materials from local raw materials is emphasized, since this will certainly affect the effectiveness of the construction complex as a whole. The successful development of the construction complex is capable of not only stimulating growth in all sectors of the economy, but also contributes to solving the most pressing social problems. Today, Yakutia has huge reserves of mineral raw materials for the production of a wide range of building materials and products. Of practical interest are wall materials made from clay soils. Given the features of the region’s raw material base, this work focuses on additional processing of traditional material. Controlling the complex physicochemical and structural-mechanical transformations that occur during heat treatment, a methodology has been developed for creating a composite material that will allow competitive innovative materials with enhanced strength properties to be produced with a reinforcing element with a glassy phase matrix of mullite crystals. The fabricated samples have a wide range of physical and mechanical properties and allow using it as a high-quality structural building ceramics, as well as industrial floor technical tile.

The use of phytopowders as food additives allows you to create highly nutritious mixtures with a pronounced taste and aroma of fresh fruits and berries. Fruit and berry powders are already used in the production of jelly, fruit drinks, drinks, juices and sauces based on domestic plant raw materials with a high proportion of biologically active substances. The most important phytonutrients of sea buckthorn fruits (Hippophae rhamnoides L.) are carotenoids, flavonoids, anthocyanins, sugars, organic and amino acids, tannins and pectin substances, phospholipids, macro- and microelements. The aim of the research was to study the quality and nutritional value of freezedried sea buckthorn powder. Sublimated sea buckthorn was the object of study (TU 10.39.25-007-0111115841-2018) manufactured by IP A.N. Mazurina (Russia, Kaluga region, Borovsky district, Borovsk). The quality of packaging and labeling, as well as organoleptic characteristics, nutritional value and mineral composition of raw materials have been studied. It was determined that the marking of sublimated sea buckthorn does not comply with the regulated requirements of GOST R 51074-2003 and TR CU 022/2011. Organoleptic characteristics of phytopowder are identified as characteristic of this type of raw material. The actual protein and fat content of the test material does not correspond to the levels stated by the manufacturer. The studied raw materials are distinguished by a variety of chemical composition, namely, the content of protein, carotenoids, vitamins E and A, lipids, dietary fiber, unique trace elements – Al, Co, Cr, Cu, Fe, Li, Mn, Ni, Ti, Zn.


The technology of production of a biologically active phytocomplex in the form of a biologically active additive has been discussed. The qualitative and quantitative composition of the formulation, which forms the functional properties of a specialized product, has scientifically been determined. The main stages of production include the preparation and input control of the raw material, the preparation of a mixture for encapsulation, including the steps of dispensing, sieving, grinding and mixing at a rate of 100 kg / 1 h, encapsulation and deducting, packaging, packaging and storage. A description of the technology of ex-traction of plant raw materials has been given, which is of great importance in the formation of consumer properties of the product being developed. The extraction process includes: obtaining liquid recovery us-ing demineralized water with dissolved in it sodium bicarbonate in an amount of 8% of the dry feed con-tent. The extractant-raw ratio is 1:13, the extraction time is 4 hours for each time; thickening of the liquid extract. It is carried out by means of vacuum in a vacuum evaporator plant before obtaining an extract with a solids content of not less than 20%; obtaining a dry extract. It is carried out by spray drying at a temperature of 90-95 ° C. The advantage of the developed technology of dietary supplements is the possi-bility of combining several differently directed biologically active substances in one capsule. The gelati-nous membrane reliably protects the contents from various environmental factors. Functional properties of the formulation formula of a specialized product are aimed at the prevention and comprehensive treatment of infectious viral diseases, confirmed by the conclusion of experts from the Russian Federal Service for Consumer Rights and Consumer Protection and the results of clinical trials in a group of pa-tients with acute respiratory viral infections. The developed product has been approved and produced at the enterprises of the company «Art Life».

In this article identifies new sources of obtaining biological substances from plants of the genus Atraphaxis (A. spinosa) prepared in the Almaty region. According to well - known methods, the analysis of indicators and standards of raw material quality-humidity, total ash, sulphate ash, insoluble ash in 10% hydrochloric acid-was developed and carried out. Micro- and macroelements determined by atomic absorption spectroscopy. Analysis of the elemental composition shows that iron predominates from microelements, and sodium, potassium and calcium from macronutrients. Conditions for obtaining a biologically active complex from the aboveground part of Atraphaxis spinosa developed for the first time. The optimal conditions for obtaining the complex are extractant – 50% ethanol, the ratio of extractant and raw materials – 1:8, double extraction time – 48 hours, temperature – 22 - 26 °C. The lipophilic composition identified by chromatography-mass spectroscopy. Since lipophilic fractions of plant samples include such classes of compounds as fatty acids; mono-; di-; triglycerides, phospholipids, sterols, Sterol esters, glycolipids, fat-soluble vitamins, they can considered not only as nutritional products, but also as possible pharmacological agents. The content of lipophilic components – 26 organic compounds-was determined. It found that A. spinosa contains a large amount of di - (2-ethylhexyl) phthalate (54.66%) and β-sitosterol (13.11%). A complex study of plant resources as medicinal raw materials provides for the chemical study of biologically active substances and biological screening of extracts and individual compounds obtained from plants. In most cases, the extract showed a wide range of antibacterial activity against the used strains of microorganisms.

Recently, there has been an increasing interest in whey drinks. It is possible to expand the range of whey drinks and regulate their nutritional value due to the wide use of a variety of fillers. Non-traditional local plant materials can be used as fillers. The products of processing (powders, juices, syrups) of fruits and berries are more and more widely used. The value of wild fruits, along with a pleasant taste, is determined by the content of vitamins, minerals, antioxidants and other biologically active substances that play an important role in human nutrition, regulate metabolic processes, and affect the functions of individual organs. The aim of the research is to study the effect of fruit syrups on the nutritional value of whey drinks. The fruits of the following wild plants are consid- ered as the objects: common viburnum (Viburnum opulus), cinnamon rosehip (Rosa cinnamomeal), raspberry (Rubus idaeus L.). The choice of raspberries, rose hips and viburnum as raw materials for enriching drinks is due to the high content of biologically active substances, such as vitamins C, B, E, a fairly large raw material base, environmental friendliness, and availability. The article considers the results of the use of fruit syrups obtained from rose hips, viburnum and raspberries in the preparation of whey drinks. The influence of the dosage of fruit syrups (5 %, 10 % and 15 %) on the organoleptic and physicochemical indicators of the quality of whey drinks has been established. The optimal dosages of syrups from fruits of wild plants in the preparation of whey drinks have been determined. Rosehip, viburnum and raspberry syrups have a high nutritional value, which will enrich whey drinks and give them a functional focus.
