Wild pomegranate (Punica granatum L.) fruit arils with high acid content are processed into dried arils (anardana) which is used as an ingredient in various medicinal formulations and culinary preparations. The various phenols and flavonoids are responsible for the antioxidant activity of anardana which signifies its functional benefits. The advanced packaging techniques like vacuum packaging, can retain higher antioxidant activity characteristics during storage. So, the present studies were carried out to compare the effect of packaging on total phenols, flavonoids, DPPH (2, 2-diphenyl-1-picrylhydrazyl) antioxidant activity, metal chelating activity, FRAP (ferric reducing antioxidant power) and reducing power of anardana prepared in mechanical cabinet drier. Anardana was packed in different packaging materials and stored under ambient and refrigerated temperature conditions. The overall effect of storage during 12 months revealed that there was a significant (p< 0.05) decrease in total phenols (180.95 to 161.76 mg GAE/100 g), flavonoids (40.60 to 32.66 mg QuE/100 g), DPPH antioxidant activity (61.23 to 56.13%), metal chelating activity (22.25 to 19.37%), FRAP (34.60 to 31.73 ?M Fe2+/100 g) and reducing power (0.610 to 0.521) which was observed less in anardana packed in ALPV (aluminium laminated pouches with vacuum) followed by ALP (aluminium laminated pouches) and gunny bags. Due to slower rates of degradation of various antioxidant compounds, the changes after 12 months of storage were lower under refrigerated conditions. The total phenols, flavonoids and DPPH antioxidant activity were reduced  from 180.95 to 167.24 and 156.28 mg GAE/100 g, 40.60 to 34.95 and 30.37 mg QuE/100 g and 61.23 to 57.99 and 54.27 % in refrigerated and ambient temperature conditions, respectively.

Abstract Lead as a potent environmental and occupational pollutant, exerts its toxic effect mainly through oxidative stress induction. Currently, chelation therapy is the only medical management of metal intoxications in clinic, but its administration is associated with various side effects as well. In this study the protective effect of synthetized Piroxicam derivative was evaluated against lead toxicity in vitro. First the chelating activity of Piroxicam derivative was studied through Jobs method and 13C{1H} NMR spectroscopy. Then the cytoprotective effect of Piroxicam derivative (10, 20, 50, 100 and 200 μg/mL) was evaluated and compared with that of EDTA (30 μg/mL) in the presence of lead nitrate (30 μg/mL). The EC50 value of Piroxicam derivative was calculated as well. Finally, the chelation efficacy and antioxidant effects of Piroxicam derivative in EC50 and 2EC50 values was assessed and compared with that of EDTA. Results showed that Piroxicam derivative chelates lead ion as much as EDTA. Moreover, Piroxicam derivative prevented lead-induced cells death more effectively than EDTA which is may due to its potent innate antioxidant activity. In conclusion, the synthetized Piroxicam derivative with possessing potent chelating activity as well as potent antioxidant activity, could be considered as potential drug target in management of toxic metals poisoning.

Exopolysaccharides (EPS) and internal (intracellular) polysaccharides (IPS) obtained from thePleurotus ostreatusM2191 and PBS281009 cultivated using the batch system revealed an average of between 0.1–2 (EPS) and 0.07–1.5 g/L/day (IPS). The carbohydrate analysis revealed that the polysaccharides comprised 87–89% EPS and 68–74% IPS. The investigation of antioxidant activityin vitrorevealed a good antioxidant potential, particularly for the IPS and EPS isolated from PBS281009, as proved by the EC50value for DPPH, ABTS scavenging activity, reducing power, and iron chelating activity.

The paper presents new data on chemical composition and antioxidant properties in extracts of the aerial organs of Saponaria officinalis growing on the territory of the Republic of Buryatia. It was revealed that soapberry leaves extracts contain a number of organic acids such as oxalic, formic, fumaric, succinic, malic, citric, and benzoic ones, the dominant being formic, malic, acetic and citric acids. Of vitamins B2, B3. BC extracted from the plant the dominant one was riboflavin. The method of and Fthigh-performance liquid chromatography helped to reveal five compounds identified as aglycone and glycosidic in character. They are orientin, isoeryentin, isovitinexin-7-О-glycoside, orientin-7-О-glycoside, of which isovitoxin is dominant. The greatest total antioxidant activity was demonstrated by soapberry leaves and inflorescences picked up on abandoned sites of the village of Selenginsk. Extractions from Saponaria officinalis leaves showed showed antiradical and Fe2+-chelating activity comparable to that of the extractions from plants with pronounced antioxidant activity. Thus, the data obtained indicated the antioxidant activity of S.officinalis aqueous extracts due to the presence of natural flavonoids. This fact shows the plant as a promising new source of antioxidants.

The investigation determined the influence of Lactobacillus helveticus strains (T80, T105, B734 and DSMZ 20075) and Lactobacillus acidophilus La-05 (probiotic strain) on the antioxidant activity of whey and milk protein preparations. In order to indicate possible mechanism of antioxidant activity of the obtained hydrolysates, the reducing power (RP) assay, ability to neutralize free radicals and Fe2+ chelating activity analysis were employed. The results suggest that antioxidant activity of tested hydrolysates depends on the type of protein preparation (substrate) and the applied bacterial strain. The strongest antioxidant activity was exhibited by whey protein isolate hydrolysate obtained by using L. helveticus T80. A majority of fermented products obtained with the use of the probiotic strain were characterized by higher antioxidant properties than those obtained by application of L. helveticus. The solution of caseinoglicomacropeptide fermented by strain T105 exhibited the highest RP values, while α-lactalbumin hydrolysed by probiotic strain (La-5) was characterized by the strongest Fe2+ chelating activity. The analysed protein preparations and their hydrolysates obtained with using tested bacteria might potentially be applied in food products in order to inhibit oxidation processes.

The antioxidant and metal chelating activities inJ. curcasprotein hydrolysates have been determined. The hydrolysates were produced by treatment of a nontoxic genotype with the digestive enzymes pepsin and pancreatin and then were characterized by fast protein liquid chromatography and reverse phase chromatography. Peptidic fractions with higher radical scavenging activity were analysed by matrix-assisted laser desorption/ionization mass spectrometry. The antioxidant activity was determined by measuring inhibition of the oxidative degradation ofβ-carotene and by measuring the reactive oxygen species (ROS) in Caco-2 cell cultures. Cu2+and Fe2+chelating activities were also determined. The hydrolysates inhibited the degradation ofβ-carotene and the formation of ROS in Caco-2 cells. The lower molecular weight peptidic fractions from FPLC had stronger antioxidant activity in cell cultures compared with the hydrolysates, which correlated with a higher content in antioxidant and chelating amino acids. These fractions were characterized by a large presence of peptides with different molecular masses. The hydrolysates exhibited both Cu2+and Fe2+chelating activity. It was concluded thatJ. curcasis a good source of antioxidant and metal chelating peptides, which may have a positive impact on the economic value of this crop, as a potential source of food functional components.

The present investigation was carried out to evaluate the nutritional potential of five different Indian mustard genotypes. Fatty acid composition was determined in the oil, whereas seed meal was analyzed for limiting amino acids (tryptophan and methionine), protein content, glucosinolate content and antioxidant potential (DPPH free radical scavenging activity, total antioxidant activity and iron chelating activity). The monounsaturated fatty acids (MUFA) were found to be maximum in RH 0749 (58.70 %) followed by RH (OE) 0801 (48.91 %), JM 6011 (47.03 %), EC 597328 and EC 597340 (45.77 %). Polyunsaturated fatty acids (PUFA) were observed maximum in EC 597340 (47.45 %).Glucosinolate content ranged from 42.80 (EC 597328) to 79.79 μmole/g defatted seed meal (EC 597340). The methanolic seed meal extract exhibited a concentration dependent elimination of DPPH free radicals. All the five genotypes showed about 50 % inhibition in 3.0 mg of dry seed meal. The highest total antioxidant activity (20.41mg/g) and metal ion chelating activity (32.58 %) was observed in RH 0749. Protein content varied from 33.57 [RH (OE) 0801] to 38.01 % (RH 0749). Maximum methionine and tryptophan content were recorded in RH 0749 (0.99 and 1.01 g/100g protein, respectively). Thus, RH 0749 was observed as a potent variety in terms of total antioxidant activity, metal ion chelating activity, protein content, methionine and tryptophan content.

Ipomoea pestigridis (Linn) (family Convolvulaceae) is commonly known as “Tiger Foot Morning Glory” in English and locally known as ‘Pulichuvadi’ or ‘Pulichuvadu’ in Malayalam. The current study, aerial parts of different concentrates(Pet.ether, ethyl acetate, and methanol) of I.pestigridis, was evaluated for its in-vitro antioxidant potential by nitric oxide activity, total antioxidant activity, iron chelating activity taking ascorbate & Ethylenediamine tetraacetate as the standard correspondingly. An IC50 value was originated that EA concentrates of I.pestigridis  more efficient in nitric oxide activity, total antioxidant activity, Iron chelating capacity compared methanolic & PE concentrates. The ethyl acetate concentrates of I.pestigridis  & ascorbic acid exhibited antioxidant potential possessing IC50 226µg/ml & 66µg/ml (Nitric oxide). 185µg/ml & 60µg/ml (total antioxidant) , 287µg/ml & 65µg/ml (iron-chelating Activity) respectively. The difference in the scavenging potential of the extracts can be due to variation in the percentage of bioactive compounds present in different solvents.  Invitro antioxidant studies obviously show  EA concentrates of I.pestigridis have better antioxidant activity. These results indicate that aerial parts of methanolic concentrate I.pestigridis  could serve as a natural antioxidant, which may be useful in preventing free radical-induced diseases.
