The article is aimed at forming a methodical approach to the assessment of tendencies in production, sales and organization of consumption of food products and services, which includes all the components of the food sector and allows to conduct a comprehensive assessment of tendencies in its development. The proposed methodical approach includes assessment of the status and dynamics of food supply to the population, assessment of the status and dynamics of indicators of agricultural enterprises, food industry, trade in foods, restaurant economy and assessment of the factors that influence the development of the food sector. The use of the proposed methodical approach allows to reasonably make decisions on the development of a strategy for the development of food sector enterprises. The conducted studies have shown that in Ukraine as a whole and in its regions in particular in recent years there have been positive tendencies in the production, sale and organization of consumption of food products and services. At this, sales of foods by enterprises of both agriculture and food industry is much higher than by retail enterprises of food products and restaurant enterprises, which indicates the sufficient provision with food products to the financially reliable demand of the population of Ukraine. Prospects for further research in this direction are the development of methodical instrumentarium for assessing the effectiveness of management of food sector enterprises, which will be adapted to modern conditions for the implementation of specific managerial decisions.

The second chapter represents an analysis of agri-food sector indicator of Serbia. The authors were aiming to show how the analysed indicators have an effect on the export of agri-food products. After reading this chapter, readers will be familiar with the structure of agricultural production and the status of natural resources in Serbia. They will understand that the results of overall analysis have a practical significance, as well as that by the rational use of comparative and competitive advantage dynamizes the export of agriculture and food industry of Serbia on foreign market. They will be able to notice the connection between the unfavourable structure of agricultural production and the structure of agricultural areas. Readers will comprehend the impact of number and size of agricultural holdings on the productivity level and the price competitiveness of products. They will perceive types of land in Serbia according to land capability classification and will know about the quality of soil, water, air and forest potential. They will be able to understand a limiting role of age and educational level of human resources in agriculture. Readers will be familiar with the degree of utilization of production capacity in food industry. They will be familiar with suggestions for the improvement of agri-food sector from different points of view, and also will perceive room for deepening research as scientists, as well as educators, creators, politicians and strategists.

Purpose Food industry players obtain the advantages of profits growth within the halal industry whereby the market is dynamic to generate profit. Hence, this study aims to analyse the perception of food manufacturers towards the adoption of the halal food supply chain (HFSC). Design/methodology/approach For this study, 103 halal food manufacturers in Malaysia were selected as respondents. Perceptions of respondents towards HFSC were recorded using a five-point questionnaire. The questionnaire was designed by authors and adapted from a previous study. The questionnaire was circulated by two experts with proficiency in this filed. Findings By conducting exploratory factor analysis, the study found the perception of food manufacturers, which is expected business benefits play an important role in the adoption of HFSC. Halal integrity becomes the second factor to lead the company to its adoption. Organizational readiness is the third factor that drives the company to adopt HFSC. Research limitations/implications Majority of the sample was responded by Bumiputera companies. The study suggests focussing the study for non-Bumiputera companies to examine their influence towards HFSC. Furthermore, future studies should explore different sectors of halal, such as pharmaceuticals, cosmetics, travel and tourism, logistics, finance and e-commerce. Moreover, ensuring the status of halal should be more emphasized in food chains; thus, the source of risk in HFSC should be explored to secure the integrity of halal. Practical implications The paper includes implications for the halal food industry, whereby the adoption of HFSC will contribute to the business benefits to create a more competitive advantage to the industry. Moreover, the implications of halal practice can create consumers’ trust on the halal product. Originality/value This paper fulfils an analysed need to study specifically on upstream parties by adopting HFSC.

Food waste is a problem that manifests throughout the food supply chain. A promising solution that can mitigate the food waste problem across various stages of the food supply chain is upcycling food ingredients that would otherwise be wasted by converting them into new upcycled food products. This research explores perception of upcycled foods from a panel of 1001 frequent shoppers at a large grocery retailer in New Zealand. Findings from this research uncover several hitherto unexamined aspects of consumers’ evaluations of upcycled foods. These include consumers’ indications about shelf placements of upcycled foods, willingness to buy upcycled foods for people or pets other than themselves, and consumers’ preferences about information pertaining to these foods. This research advances our understanding of how consumers perceive upcycled foods and provides actionable insights to practitioners in the food industry.

PurposeThe importance of packaging in the food industry lies in its multifunctional nature. Packaging elements can come from studying the contribution of different research disciplines and functional areas: marketing, logistics, food technologies and the environment. The purpose of this study aims to identify and evaluate packaging elements in the food industry from a holistic point of view.Design/methodology/approachPrimary data are collected through two research initiatives via questionnaires, which were filled by 1,219 consumers of food products and 390 managers (executives) working in the packaged food products market, which is a very important and competitive sector in Greece.FindingsIn general, the findings reveal that all the key players in the food supply chain understand and appreciate the multifunctional and multidisciplinary nature of packaging. Moreover, informational, operational, physical and visual elements are all of high importance. These findings lead to the conclusion that all executives from different operational areas of a business should be involved in packaging design, despite the fact that they may have different perspectives concerning the different elements involved in the packaging in the food supply chain.Research limitations/implicationsThe research confirms that: (1) health and nutrition are two interrelated concepts that receive constant attention from the food industry, as well as from governments and consumers and (2) the quality of a food product is inextricably linked to the quality of its packaging. Naturally, there were also significant differences between the various roles, while differences were also observed in the appreciation of the packaging elements between consumers and executives in the food industry.Practical implicationsThe study proves the need for narrowing the gap among managers' perceptions regarding packaging by adopting practices and approaches in an integrated manner.Social implicationsFrom the analysis of the relevant literature, the authors of the present study note that there is a lack of research concerning the main elements of packaging in the food industry from a holistic point of view. This view will encompass the needs of marketing and logistics managers, food technologists and executives are responsible for environmental issues, as well as the consumers of food products. By identifying the significance that all the above perceive against the various elements of the packaging of retail products, manufacturers can take into consideration the elements that are highly appreciated by both cohorts.Originality/valueAlthough the multidisciplinary nature of the package is very clear, most studies in the literature focus on either its impact on consumer behavior and its use as a communication/differentiation tool or as a tool that has significant implications for the efficiency of the logistics systems throughout the supply chain, as well as for the particular features/properties and the environmental awareness. This study sought to fill the abovementioned gap, by recognizing its importance among marketing, logistics, food technology and corporate social responsibility managers, including issues concerning environmental awareness, and how consumers perceive the data on the packaging.

Due to globalisation, the new technological developments and the complexity of food supply processes, the European food sector is increasingly becoming more complex. The consumers’ trust in food, triggered and affected by a number of food crises, is low. Today, consumers increasingly expect safe and high quality food and demand information about the origin of their food. Also, economic health of food industry can be greatly affected by food crises; therefore efficient and effective mechanisms are required to assist food industry in tracking and tracing products along the food chain. In this paper we discuss the criteria for efficient and effective traceability system from an IT perspective (mainly data exchange) and we identify key requirements for ICT enabled traceability.

The main purpose of this paper is to assess the importance of agriculture and food industry in creating and allocating the supply of agri-food products in European Union countries. The years covered by the analysis were 1995 and 2010. As demonstrated, there are differences in the contribution of imports to the supply of agricultural products among EU countries. Low shares of imports are particularly characteristic of the new member states, which is indicative of weaker connections with the European and global agribusinesses in comparison with EU-15 countries. On the other hand, the proportion between volumes of agri-food products allocated to intermediate and final demand confirm that the agricultural sector is primarily a supplier of raw materials in most EU countries. In turn, the main role of the food industry is to satisfy the final demand and provide the population with food products.

This paper analyzes agriculture and food industry as key sectors of export in Serbia. The goal of the research is to point to the role and the significance of export of agriculture and food industry in the development of Serbia. The results show that the development strategy of Serbia must be based on the increase of export of agricultural and food products (more intense production) and the change of production structure in accordance with demand (especially with the demand for environmentally safe foods), with a higher level of finalization, in order to increase competitiveness and add value. Published data of the Statistical Office of the Republic of Serbia was used in the paper, and the charts represent the derivatives the authors prepared based on these original data. Research period included 2000 to 2015. The goal of the research of role and significance of export of agriculture and food industry in the development of Serbia was achieved by application of descriptive and comparative analysis, using statistical and mathematical method – linear trend of export and import of economy and agricultural and food products.

Many security technologies (Anonymous, Effective supply chain protection, 2002) have been developed to protect a wide range of products, documents, and individuals. The food industry has very specialized needs, and food products may be affected by criminal activities such as tampering, relabeling, unauthorized diversion, and counterfeiting. It is important to understand the attributes associated with security technologies so that the benefits may be weighed against the restrictions that arise when selecting appropriate solutions to protect the food supply chain. Security technology may be split into a number of categories: authentication, coding, tamper evidence, and tracking. Within each category the technology may be subdivided into overt, covert, and forensic features. No single technology provides an infallible solution to all problems, so the most enduring and effective solutions almost always comprise a combination of technologies that provide deterrence, aid detection, and assist with subsequent prosecution of perpetrators.

Purpose Environmental management (EM) is becoming increasingly important in all types of organizations. The food industry represents the top industrial sector of the Spanish economy; however, there is still little knowledge about how it is managed environmentally. The purpose of this paper is to present a descriptive analysis of the Spanish food sector. Design/methodology/approach This study undertook a descriptive analysis based on probabilistic sampling surveys from food companies in Spain. The survey was sent out to 900 companies obtaining 128 answers. Findings The results of this study show that companies with an EM standard tend to have a more developed system and a greater presence of EM tools and actions. Moreover, statistical differences were identified among the characteristics of companies and various factors that affect the evolution of their EM. Originality/value There are no studies that reveal a clear picture of the status of EM in the Spanish food industry. This study presents a clear starting point that might help policy makers, consultants, researchers and other parties to set new improvement routes so companies do not get stuck in their progress toward environmental excellence.

Introduction. Food security has not been a concern of any particular state and is a global problem for already a long time. It, as an economic category in the scientific literature, is considered from the position of ensuring the security of the global world problem, regions, individual countries, population groups and individual people. It is a multifaceted issue, closely linked to other security issues, and has a great impact on the national safety situation, which in turn is an economic, social and political category. COVID-19 has created a large-scale economic crisis. The pandemic has had a major impact on food security and the field of nutrition. The crisis has affected food systems and threatened public access to food, raising the issue of food self-sufficiency in countries.Aim and tasks. In order to assess food security, the paper examines the self-sufficiency coefficients of basic agro-food products in Georgia under the conditions of the World Pandemic, and evaluates its components: local production, import, export. In addition, local production trends have been analyzed, Results. Thus a study of the current state of the agro-food sector shows that the problem of providing the population with food is becoming more acute. The pace of development of the agro-food sector lags significantly behind the growth rates of other sectors of the economy. The current economic growth has not yet created the conditions for sustainable economic development: The level of supply of essential agro-food products is quite low, the number of jobs has not increased substantially, the level of income is low, poverty rates are still high and the food deficit is filled mainly with imported products.Conclusions. This study showed that the issue of the food security is still unresolved for Georgia. Despite the state support activities, the agro-food sector still needs assistance. We have developed recommendations, the consideration of which will significantly contribute to food supply of the markets and food supply to the population.
