The levels of proximate composition, minerals, antinutrients, fibre components and calculated parameters for mineral bioavailability were determined in the testa, dehulled and whole seeds of Bambara groundnut on dry weight basis. Proximate levels were (g/100 g): ash (2.46- 4.36); crude fat (2.47-6.99); crude protein (15.2-22.2); crude fibre (1.03-22.9) and carbohydrate (51.6-61.9). The non-starch polysaccharide (NSP) components were (%): ADF, 7.13-29.0 (or 16.1 %-65.5 %); NDF, 1.77-23.6 (or 6.28 %-83.7 %); ADL, 6.15-28.0 (or 14.9 %-67.8 %); cellulose, 1.36-23.3 (or 5.02 %-86.0 %) and hemicellulose, 0.84-26.5 (or 2.86 %-90.1 %). In minerals (mg/100 g): Mn, Co and Cu were not detected; Na, K, Ca, Mg, Fe and P were low in values whereas Zn was high at 11.2-40.2. These parameters were also good for human health: Na/K (0.47-0.51) and Ca/Mg (2.58-4.36). Antinutrient values showed that Phy was high (14.4-29.2 mg/g); oxalate was high (5.02- 8.59 mg/g) and unavailable phosphorus as Pp % of P (10.2-49.3 %). The mineral bioavailability showed Ca/Phy to be good at 0.20-0.89 and [Ca] [Phy]/[Zn] to be good at 0.09-0.23 thereby making Zn bioavailable in all the samples. Summary The use of insects as “novel” and natural feed materials seems to be an attractive alternative protein source for poultry, pigs and fish since more than 80% of their chemical composition (dry weight basis) is crude protein and crude fat content. Therefore, the aim of this study was to determine some chemical composition parameters of powdered mealworm larvae, as a potential animal feed as well as human novel food. It was found that the crude protein (55.83%) and crude fat (25.19%) content was predominant, as well as that the content of nitrogen-free extract was low. Coincided with the high protein content, the levels of the most important amino acids were found to be considerable, especially lysine (3.18%) and threonine (1.34%). Crude fibre content was 7.15%, while ash was 4.84%. The samples were found to be rich in most nutritive elements, especially phosphorus (1.06%) and potassium (1.12%) in terms of macroelements, and zinc (138.2 mg/kg) in terms of microelements. Based on our research and other experimental results, it can be concluded that meals from the insects originating from the order Coleoptera, Tenebrionidae (mealworms) may be successfully used as feed material in diets of livestock animals, especially poultry.

Dextrose was produced from locally available hybrid variety of maize (Bako Hybrid660) in Ethiopia, using acid extraction. The variety was selected as an experimental input from Bako Agricultural Research Centre for the production of intermediate product starch using wet milling and end-product dextrose. The proximate composition values in the wet, milled, dried and cleaned white dent 2000 g BH-660 maize when steeped in 0.3% sulfur dioxide for 46 hrs at 50oC were determined. The mean values were 11.74%, 64.15%, 4.51%, 10.23%, 6.53% and 2.81%, for moisture content, total starch, germ, gluten, husk and fibre, respectively on dry weight basis. The total starch obtained from wet milling was 91.8% pure starch by mass. The proximate analysis values of moisture, crude protein, crude fat, crude fibre and total ash content of the sample were 7.65 %, 4.89%, 0.35%, 0.75 % 0.29 % , respectively on dry weight basis. Besides these, pH value was also determined to be 4.79. This obtained starch was hydrolyzed by an acid extraction method for the production of BH-660 maize dextrose. An average yield of 91.64% dextrose result was obtained and from this, 92.24% was pure dextrose by mass. Analysis result revealed that moisture, crude protein, crude fat, crude fibre and total ash content of the produced dextrose were 6.24%, 0.11%, 0.25%, 0.30% and 0.03%, respectively on dry weight basis. In addition, the pH value of 6.28 was determined. The control dextrose obtained from Ethiopian Pharmaceutical Manufacturing Share Company analysis values of moisture, crude fibre, crude fat and dextrose content were 5%, 0.24%, 0.23% and 93.73%, respectively on dry weight basis. From these data, it can be concluded that the BH660 maize variety has a significant potential for the production of high quality starch and dextrose, which can be used as a raw material for starch and dextrose processing industries.

This study was conducted to evaluate the effect of oven drying on the proximate composition and rehydration characteristics of shellfish. Shellfish studied included rough and smooth periwinkle, oyster and whelk. Proximate composition of the fresh samples were determined. Then dried in the oven to a moisture content of 10% and further rehydrated with distill water in sample water ratio of 1:40 and allowed to equilibrate. Proximate composition of the fresh shellfish showed that moisture content ranged from 82.38 to 69.24% with fresh smooth periwinkle having the highest moisture value while whelk had the lowest. The results also showed that whelk had the highest values for ash (2.92%), crude protein (18.83%) and crude fibre (3.71%) when compared to other samples. On rehydration, a moisture loss of 11.75%, 13.28%, 19.24% and 22.04% were observed for rough periwinkle, smooth periwinkle, oyster and whelk, respectively. The results for rehydration indices revealed that dehydration ratio was significantly (p<0.05) high for whelk (1.44), followed by oyster (1.29), rough periwinkle (1.23) and lastly, smooth periwinkle 1.20. Rehydration ratio of whelk (1.47) was equally significantly higher, followed by oyster (1.33) and the least were rough and smooth periwinkle (1.17). For coefficient of reconstitution, oyster recorded the highest value of 1.03, followed by whelk 1.02, rough periwinkle 0.95 and smooth periwinkle 0.98. Rate of water imbibition revealed a sharp increase in the water content of smooth periwinkle up to 240 min and thereafter, it slowed down until equilibrium was reached. In terms of rough periwinkle, oyster and whelk; water imbibition took place with rehydration time up to 300 min, 210 min and 270 min, respectively, thereafter they slowed down. The results have demonstrated that the rate in which oven drying affect the physical and nutritional qualities of shellfish differs.

Altogether 19 fodder climbers were collected with local information for their quality, feeding season and preference by livestock from Sunsari district, Nepal. Fodder climbers were distributed under 15 angiospermic families. Among them, 6 climber species were analyzed for dry matter, crude protein, ether extract, crude fibre, N-free extract, total ash and mineral contents (K, Ca, and P). Dry matter content ranged from 24.12 to 45.43%. Crude protein content showed slight variation. Ether extract ranged from 2.13- 4.23%, while Crude fiber content ranged between 18.62 and 22.52%. N-free extract showed narrow variation in the content while Total ash content exhibited a wide variation ranging from 5.67 to 11.52%. Among the minerals, Phosphorus showed distinct variation in the content from 0.19 to 0.46%. Fodder quality assessed by local people was compared with the result of chemical composition. On the basis of local information and chemical composition, Hedera nepalensis and Hedyotis scandens were considered as very good fodder climbers.

Chemical Composition and Nutritive Value of Protein of the Pea Seeds - Effect of Harvesting Year and VarietyWe tested nutritional usability of pea seeds (Pisum sativumL.) at full maturity. Four white-flowering and 5 colour-flowering new Polish cultivars were compared. We determined proximate composition of ground seeds collected over 4 years period as well as amino acids, minerals (Ca, P, Na, K), tannins and fiber fractions (NDF, ADF, ADL). The seeds contained between 224 and 260 g·kg-1of crude protein which was rich in Lys (6.8±0.8 g) but poor in Met+Cys (2.0±0.2 g·16 g-1N). The amount of tannins (as tannic acid equivalent) in white-flowering cvs was 4.3±0.9 g and in colour-flowering - 7.4±2.2 g. The calculated protein nutritional values were compared against amino acid standards of human and animal nutrition and the whole egg protein. Effects of the cropping year and variety variance in respect of chemical composition of seeds were examined. Crude protein, crude oil, N-free extractives, tannins, K, amino acid content: Leu, Phe+Tyr and Ala content were influenced significantly by the cultivar, while the cropping year had a significant influence on dry matter, crude ash, crude protein, crude fibre, crude oil, N-free extractives ADF and ADL fiber fractions, content of P, Na and K, most of the amino acid levels and on nutritional values of the protein measured by means of CS and EAAI indices.

The results of more than fifty estimates1 of herbage yield and ninety-seven analyses of chemical composition are presented in the first of several reports on nutritive evaluation studies of Panicum maximum (guinea grass). Effects of stage of maturity and season are discussed.Herbage yield increased at an increasing rate with maturity, and was depressed by about 40 % in the dry season compared to the wet season. The most significant differences in chemical composition were a decrease in crude protein from 9·8 % to 6·6% and a corresponding increase in crude fibre from 32·1 % to 39·4% as the grass matured from about 2½ weeks to about 2½ months in age. An increased level of nitrogen fertilization resulted in crude protein content being nearly doubled and crude fibre somewhat reduced.

The influence of the stage of maturity of alfalfa on the chemical composition and in sacco digestibility was studied in a laboratory experiment. Alfalfa plants were analysed in 8 vegetation stages harvested in regular intervals before the beginning of bud setting until the fall of blossoms. The contents of nitrogenous substances, fat, crude fibre, ADF, NDF, Ca, P, Na, K and Mg were determined in the samples, and using the in sacco method also the organic matter digestibility in the rumen. Further we assessed the energy content and calculated the N−free extractives (BNLV) value. In some stages the chemical changes were monitored in the whole plant. It was discovered that during vegetation there was a statistically significant increase in the crude fibre content and in the ADF and NDF fractions and a reduction in nitrogenous substances. A strong negative correlation was detected between the stage of maturity of alfalfa and content of crude protein and net energy for lactation (r = −0.97 and r = −0.92, respectively). In the individual stages of vegetation the differences in the content of nitrogenous substances, fibre and fat were statistically significant (P < 0.05). The statistically highest content of crude protein (28.97%) was detected in the first stage before bud setting and the lowest (11.97%) in the stage after the fall of blossoms. Later vegetation also had a stronger depressive effect on the content of fat and NEL. The organic matter digestibility (P < 0.05) was the lowest in alfalfa in the last stage of sampling (62.6%) when it reached a mere 85.99% of the digestibility at the beginning of bud setting. The highest organic matter digestibility (72.80%) was detected in a sample of young alfalfa prior to bud setting. In the experiment we confirmed a strong and negative correlation (r = −0.97) between the crude fibre content and organic matter digestibility. The correlation was also strong between the stage of maturity of alfalfa and the content of magnesium (Mg).

Sweet potato (Ipomoea batatas (L.) Lam) is one of the main crops worldwide. However, systematic properties characterization of this crop is still required, particularly on the Malaysian local sweet potatoes. Hence, this study aims to determine the proximate composition and the energy value of five common varieties of local sweet potato (Anggun 1, Anggun 2, Anggun 3, White, and VitAto) in Malaysia. For each variety, three different parts of the tuberous root which were the skin, the cortex, and the mixture of cambium and parenchyma were characterized. The findings indicated that VitAto exhibited the highest starch (16.95% – 17.17%) and crude protein (0.86% – 1.15%) contents in all parts as compared to other varieties, hence reflecting its potentials to be further processed for a mass starch production. Among all the parts, the skin contained the highest crude protein, crude fat, ash and crude fibre, which can be further utilized to produce by-products such as animal feed. The findings in this study serve as a baseline for the future starch and byproducts production from local sweet potatoes.

Madidi was produced from different formulations of pearl millet ogi and bambara nut flours. Five madidi products were produced at the laboratory scale using 100:0 (control), 95:5, 90:10, 85:15 and 80:20 millet to bambara groundnut flours, respectively. Bambara ground nut were cleaned, sorted (to remove foreign materials), soaked in cold water for 2 hours, dried and toasted for 30 minutes by using oven. The five formulated products were subjected to proximate, minerals and sensory analysis. The results showed that the protein contents increased with increased addition of bambara groundnut flour. The protein contents ranged from 1.79 to 3.51% on dry weight basis. The fat contents ranged from 0.26 to 1.22%. Carbohydrate content decreased from 22.00 to 13.21% as the proportion of bambara flour increased. Magnesium and phosphorous increased significantly (p=0.05), however potassium and iron were not significant affected (p=0.05). The 100% millet (0.17 mg/100 g) was significantly high in magnesium (p=0.05) followed by 95% millet and 5% bambara nut (0.09 mg/100 g). The phosphorous composition increased with increase in bambara nut (0.17– 0.22 mg/100 g). The average scores of parameters for all the products are relatively high. Product 85:15 millet to bambara flour was most acceptable. It is concluded that an acceptable madidi can be produced from millet and bambara nut at 15% substitution level.

In this paper we analysed the change of the chemical composition and nutritive value of Timothy observed during the spring of 2005. The nutritive value of Timothy was observed between the end of April and the beginning of June relating to the following parameters: crude protein, crude fibre, crude fat, ash, N-free extract, net-energy growth, net-energy lactation, net-energy maintenance, Metabolizable Protein Energy dependent, Metabolizable Protein N-dependent. We also analysed whether a relationship between the environmental factors that affect thegrowing period of grasses and the chemical composition can be detected or not. While testing for correlation, the number of days from 1st January, the amount of heat accumulation, solar radiation and rainfall were considered as independent coefficients.For the estimation of weather conditions we calculated the climate index. The observed year can be described as a year with a rainfall above the average and abundant solar radiation. A correlation can be detected between the change of parameters of nutritive value and the quality of the current year. In 2005 the result of the analysis of nutritive value was showed a significance difference with respect to each chemical composition at the rate of P<0.001 depending on the time when the samples were taken.According to the outlined data it can be stated that the change of the value of crude protein and ash show decreasing tendency agreeing the research literature. In parallel with the change of nutritive value, the amount of crude fibre and N-free extract increased. However, the value of Net-Energy maintenance showed an alteration only in the first half of the observed period. The same alteration tendency can be detected in the Net-Energy growth and the Net-Energy lactation.
