The objectives of this experiment were to investigate the effects of N-carbamylglutamate (NCG) on growth and slaughter performance, meat quality, nitrogen utilization, plasma antioxidant and amino acids of Holstein bulls. In this case, 24 Holstein bulls (490 ± 29.0 kg of body weights and 540 ± 6.1 d of age) were blocked by body weights and age and randomly assigned to 1 of 4 groups: (1) CON group: bulls were fed the control diet, (2) CON + NCG group: bulls were fed the control diet with 40 mg/kg BW NCG, (3) Urea group: bulls were fed the urea diet, and (4) Urea + NCG group: bulls were fed the urea diet with 40 mg/kg BW NCG. Feeding NCG significantly improved ADG, FCR, DM and CP digestibility, carcass weight, slaughter weight, DOP, eye muscle area, shear force (p = 0.001) and reduced L* of color, drip loss and cooking loss. Concurrently, feeding the urea diet induced a decreased ADG, carcass weight and slaughter weight, DOP, eye muscle area and shear force. NCG decreased contents of fecal N and urinary N, plasma urea in bulls and ammonia but increased N retention and utilization, plasma NO, plasma Arg, Leu, Ile and Tyr. On the other hand, feeding the urea diet increased urinary N, plasma urea and ammonia. Thus the study efficiently demonstrates that beef benefited from being fed a NCG product in the urea diet by enhancing its growth and slaughter performance, meat quality, nitrogen metabolism and plasma amino acids.

Abstract This study was undertaken to evaluate the influence of rumen-protected folic acid (RPFA) on slaughter performance, visceral organ and gastrointestinal tract coefficients, and meat quality in lambs. Sixty-six lambs from 120 Hu ewes were selected based on body weight and maternal diets, and then assigned to six groups using a randomized block experimental design in a 3 × 2 factorial arrangement. The first factor was folic acid (FA) as RPFA in the maternal diet (0 mg/kg [M0F], 16 mg/kg [M16F] or 32 mg/kg [M32F] on dry matter basis). The second factor was FA in the lambs’ diet from weaning until slaughter (0 mg/kg [OC] or 4.0 mg/kg [OF]). The results indicated that the addition of 16 mg/kg FA to the maternal diet increased pre-slaughter weight (PSW), dressing and meat percentage, the reticulum and omasum coefficients, length of the jejunum and ileum, tail fat and perirenal fat coefficient and a* value of the meat color. The addition of RPFA to the lambs’ diet increased PSW, dressing and meat percentage, eye muscle area, abomasum weight, weight and length of the small intestine, but reduced the coefficients of tail fat. A M×O interaction was observed for the weights of heart, lungs, rumen and total stomach, weight and coefficient of omental fat and the GR value. Collectively, RPFA in the maternal and lambs’ diet improved slaughter performance and meat quality by stimulating the morphological development of the gastrointestinal tract and the distribution of fat in the body.

This study considers the impact of dried distillers’ grain with solubles (DDGS) in diets of lambs. Randomly; 27 lambs were distributed to one of three diets. Diets were: a control diet (CON; n = 9), a 125 (DDGS125; n = 9) or a 250 g/kg DDGS (DDGS250; n = 9) of dietary dry matter (DM). The lambs were fed using these diets for 91 days. To assess carcass traits; five lambs were randomly selected at the end of the study. No significant differences were detected in intake and digestibility of DM; crude protein and fiber. Average daily gain did not differ among diets. Carcass characteristics did not differ among diets. With the exception of shear force and redness, which were greater in DDGS250 than in DDGS125 and CON diets, meat quality parameters were unaffected. Eye muscle area decreased in DDGS125 than in DDGS250 and CON diet. These results demonstrate that the feeding of lambs on DDGS at 125 or 250 g/kg DM did not have any impact on growth. These diets only had a simple effect on the characteristics of carcass and meat quality. These results suggest that it would be suitable to introduce these feeds into sheep nutrition in the future.

Meat quality and carcass traits were measured for 2180 feedlot finished Brahman (BRAH) and Tropical Composite (TCOMP) steers to investigate genetic and non-genetic influences on shear force, and other meat quality traits. Genetic and phenotypic correlations were estimated between carcass and meat quality traits, and with live animal measurements collected in steers from weaning to feedlot exit, and their heifer half-sibs up to their first mating, which were managed in Australia’s tropical or subtropical environments. Left sides of carcasses were tenderstretched (hung by the aitch-bone) while right sides were conventionally hung (by the Achilles tendon). Tenderstretching reduced mean shear force by 1.04 kg, and phenotypic variance by 77% of that observed in conventionally hung sides. Genotype differences existed for carcass traits, with TCOMP carcasses significantly heavier, fatter, with greater eye muscle area, and lower retail beef yield than BRAH. TCOMP had lower shear force, and higher percent intramuscular fat. Meat quality and carcass traits were moderately heritable, with estimates for shear force and compression of 0.33 and 0.19 for BRAH and 0.32 and 0.20 for TCOMP respectively. In both genotypes, estimates of heritability for carcass traits (carcass weight, P8 and rib fat depths, eye muscle area and retail beef yield) were consistently moderate to high (0.21 to 0.56). Shear force and compression were genetically correlated with percent intramuscular fat (r g = –0.26 and –0.57, respectively), and meat colour (r g = –0.41 and –0.68, respectively). For TCOMP, lower shear force was genetically related to decreased carcass P8 fat depth (r g = 0.51). For BRAH steers and heifers measured at pasture, fatness traits and growth rates were genetically correlated with shear force, although the magnitude of these relationships varied with time of measurement. Net feed intake was significantly genetically correlated with carcass rib fat depth (r g = 0.49), eye muscle area (r g = –0.42) and retail beef yield (r g = –0.61). These results demonstrate that selection to improve production and carcass traits can impact meat quality traits in tropically adapted cattle, and that genotype specific evaluations will be necessary to accommodate different genetic relationships between meat quality, carcass and live animal traits.

The research was conducted to study the effect of heat stress on carcass characteristics and meat quality in indigenous sheep. Nine sheep were divided into three groups which were almost similar in age, sex and weight. Three groups were divided as zero hour (T0), four hours (T4) and eight hours (T8) heat exposure to direct sunlight. During experimental period temperature–humidity index (THI) value was calculated as 27.09 which indicated T4 and T8 groups were subjected to heat stress condition for at least four hours and eight hours respectively every day. Slaughter weight, body length and heart girth had no significant difference among the treatment groups. Dry matter, ash and ether extract had no significant difference (p>0.05) among the treatment groups but crude protein were increased with the increase of heat stress from T0 to T8 group (p<0.05). Drip loss was increased (p<0.05) in non-exposure group than treated groups but there is no significant result (p>0.05) found in pH and cooking loss. Carcass weight and eye muscle area had no significant difference (p>0.05) among the treatment groups but dressing percentage was decreased with the increase of time in heat treated groups (p<0.01). Significant difference (p<0.05) were found in weight of heart, kidney, lung + trachea and pluck between control and heat treated groups. The significant difference (p>0.05) in empty gut was found in gut with content and gut fill in heat treated groups. Objective and subjective tests for quality were performed on the meat from 40 cryptorchid second-cross lambs fed lucerne only (L; n = 8), lucerne plus an oat grain supplement ad libitum (LO; n = lo), lucerne plus wilted lucerne silage ad libitum (LS; n = 11), or an oat-lupin grain (3:1) supplement at 90% of ad libitum while grazing dry summer annual pasture (OL; n = 11). All carcasses complied with the Elite lamb specification of weight >22 kg and GR measurement 6-15 mm. There was no significant difference between groups for hot carcass weight, the mean (� s.e) values being 25.1 0.43, 25.2 � 0.36,25.2 � 0.38, and 25.3 � 0.36 kg for L, LS, LO, and OL groups, respectively. When the GR and fat depth over the eye muscle at the 12th rib were adjusted to a common carcass weight of 25.2 kg there was no significant difference between groups. There was no significant difference between groups for pH, or the colour values a*, b*, and L* of the M. longissimus thoracis et lumborum (a* is relative redness, b* relative yellowness, and L* relative lightness). The shear force values for the loin muscle were significantly (P<0.05) greater for lambs from group OL than for those from group LO. Cooking loss for the loin muscle was significantly (P<0.05) greater for OL lambs than all other groups. A comparison of the mean values for aroma and flavour showed the lambs from group OL produced meat that was considered significantly (P<0.05) less desirable for these characteristics, with other groups being similar. Meat from OL-fed lambs was considered oilier and less meaty than meat from lambs fed the other diets. There was a significant (P<0.05) difference in absolute scores between panellists, but their ranking was not affected and there was no panellist x sample interaction. Because many producers use grain supplements such as oats and lupins for finishing lambs on dry forages, further study is recommended that focuses on the interaction between supplement and the base forage.

Crossbred wethers were given a control diet (8 g nitrogen, 730 g dry matter daily) or a low nitrogen diet (0.5 g nitrogen, 520 g dry matter daily) or starved, for a 12 or 20 day experimental period. The concentrations of free serine, glutamine, glycine, alanine, histidine, and arginine in the plasma of the starved sheep decreased significantly while the concentrations of lysine, 3-methylhistidine, and isoleucine increased significantly. The ratio of essential to non-essential amino acids increased from 0.35 to 0.56 in the starved sheep. In sheep on the low nitrogen diet, the ratio of essential to non-essential amino acids in the plasma decreased from 0.40 to 0.27, with significant increases in the concentrations of glutanlic acid, glutamine, glycine, isoleucine, leucine, and 3-methylhistidine. Starvation and the low nitrogen diet both resulted in a reduction of the plasma urea concentrations. Starvation and the low nitrogen diet resulted in a 20-50 % reduction in the flow of saliva and a 40-78% increase in the concentration of total nitrogen. This resulted in no significant change in the daily secretion of nitrogen in the saliva. The concentration of urea in the saliva was increased by 3-54%. The concentrations of individual free amino acids in saliva are reported. The nitrogen content of the rumen was reduced, and after 7 days of starvation or on the low nitrogen diet all rumen nitrogen could be attributed to ammonia and free �-amino nitrogen.

SUMMARY The objective of this study was to evaluate the performance, carcass, meat quality, fatty acid profile and liver alterations of cattle supplemented with cottonseed feedlot. It used 100 Nelore cattle, being divided into two groups of 50 animals, which received a cottonseed (CS) in grain form by the diet in the proportion of 15% and the other group was provided with control diet without CS in the feedlot for 88 days. The diets were isoprotein and isoenergetic and concentrate:roughage ratio of 60:40. The animals were slaughter in the end of experimental time and the collection of liver samples for histological analysis. After cooling 24 hours at ± 1°C were conducted evaluation of carcass and major cuts, final pH and collected muscle samples longissimus to carry out the physicochemical analyzes (Color, Cooking Loss, Pigments and Shear Force), chemical composition, fatty acid profile and oxidation. The inclusion of CS in the diet provided animals with higher slaughter weight, daily weight gain, Hindquarter, however, the animals showed reduced carcass yield, forequarter weight and Thin flank, without changing the parameters as rib-eye area and backfat thickness. There was an increase of the yellow values (b*) and moisture with the final pH reduction. There was no influence of the use of cottonseed in relation to histological parameters evaluated in the liver. The cottonseed in the feeding feedlot cattle promoted improvement in animal performance, despite the reduction of the forequarter weight, with appropriate aspects of meat quality, fatty acid profile and conservation.

The present study evaluated the effects of dietary N-carbamylglutamate (NCG) on carcass traits, meat quality, and fatty acid profiles in the longissimus dorsi muscle and adipose tissues of Chinese Ningxiang pigs. A total of 36 castrated female pigs with a similar initial weight (43.21 ± 0.57 kg) were randomly assigned to two treatments (with six pens per treatment and three pigs per pen) and fed either a basal diet or a basal diet supplemented with 0.08% NCG for 56 days. Results showed that dietary NCG reduced shear force (p = 0.004) and increased drip loss (p = 0.044) in longissimus dorsi muscle of Ningxiang pigs. Moreover, increased levels of oleic acid (C18:1n9c) (p = 0.009), paullinic acid (C20:1) (p = 0.004), and α-linolenic acid (C18:3n3) (p < 0.001), while significant reduction in the proportions of arachidonic acid (C20:4n6) (p < 0.001) and polyunsaturated fatty acid (PUFA) (p = 0.017) were observed in the longissimus dorsi muscle of pigs fed NCG when compared with those fed the control diet. As for adipose tissues, the C20:1 (p = 0.045) proportion in dorsal subcutaneous adipose (DSA), as well as the stearic acid (C18:0) (p = 0.018) level in perirenal adipose (PA) were decreased when pigs were fed the NCG diet compared with those of the control diet. In contrast, the margaric acid (C17:0) (p = 0.043) proportion in PA were increased. Moreover, the NCG diet produced PA with a greater proportion of total PUFAs (p = 0.001) (particularly linoleic acid (C18:2n6c) (p = 0.001)) compared with those produced by the control diet. These findings suggest that dietary NCG has beneficial effects by decreasing the shear force and improving the healthfulness of fatty acid profiles, providing a novel strategy for enhancing meat quality of pigs.

Context The inclusion of Pinus taeda hydrolysed lignin (PTHL) in beef diets could improve quality and stability of meat, but effects could vary through the aging period (AP). Aim The aim was to evaluate the effects of the PTHL inclusion in the diet of finishing beef cattle on meat quality, fatty acid composition and oxidative stability at Days 1, 8, 11 and 15 of aging. Methods Forty Limousin bulls (340 ± 42 kg) were fed ad libitum on a total mixed ration (TMR). The control group received exclusively TMR for 120 days, while the experimental group received the same TMR as the control group but supplemented with PTHL (Oxifenol, I-Green, Padua, Italy; 35 g/day per head at 1–90 days and 70 g/day per head at 91–120 days). Key results Diet did not influence the chemical composition, pH, cooking loss, Warner–Bratzler shear force and hydroperoxide content. The Warner–Bratzler shear force (P &lt; 0.001) decreased, while lightness (P &lt; 0.01) and hydroperoxides (P &lt; 0.001) increased through the aging period. Thiobarbituric acid reactive substances were similar for both diets at 1 and 15 days. However, thiobarbituric acid reactive substances at 8 and 11 days were higher for control than for the PTHL diet (P = 0.023 for interaction). Protein carbonyls were higher for control than for the PTHL diet at 8 days (P = 0.003 for interaction), but similar for both diets for the other dates. Saturated, monounsaturated and polyunsaturated fatty acids varied through the AP with PTHL diet, while no changes were observed with control diet (P &lt; 0.01 for interactions). At 11 days, the n-6:n-3 ratio passed from being the minimum value with the PTHL diet to be the maximum with control diet (P &lt; 0.01 for interaction). Conclusions The effects of PTHL inclusion in bull finishing diets depends on the AP but, generally, may result in beef with meat with beneficial effects on human health. Implications Including PTHL in the diet of finishing bulls can be useful to improve meat quality, favouring the use of natural waste substances deriving from vegetal production.

Residual feed intake (RFI) is calculated as the difference between an animal’s actual feed intake and its expected feed intake based on its size and growth over a specified test period. Following a single generation of divergent selection for postweaning RFI, Angus steers and Angus × Hereford, Angus×Poll Hereford and Angus × Shorthorn crossbred steers born in 1996 and 1997 were fed in a feedlot. Cohorts of steers were slaughtered at the same age and had attained similar (P&gt;0.05) final liveweights: 467 kg for steers selected for low RFI (high efficiency; HE, n = 91) and 459 kg for steers selected for high RFI (low efficiency; LE, n = 98). The HE and LE steers had similar (P>0.05) carcass weight (247 and 244 kg), dressing percentage (53.1 and 53.2&percnt;) and eye-muscle area (58.9 and 60.3 cm 2 ). The HE steers had slightly less subcutaneous fat over the rib than the LE steers (9.2 v. 10.1 mm, P&lt;0.05), and there was a trend towards less fat over the rump of HE steers (11.5 v. 12.1 mm, P = 0.10). For meat samples taken from the M. longissimus dorsi (LD) there were no differences (P>0.05) between the HE and LE steers in content of intramuscular fat (5.4 and 5.3% fresh weight), marbling scores, meat colour and fat colour. There were also no differences (P>0.05) between HE and LE steers in shear force and compression values for samples of LD aged for 1 day (4.6 and 4.6 kg shear force, 1.45 and 1.44 kg compression), or for 14 days (3.8 and 3.5 kg, 1.36 and 1.32 kg). Myofibril fragmentation index (MFI) measures the breakdown of these structural elements which occurs as an initial step in the process of protein degradation and meat tenderisation. MFI was lower (i.e. less fragmentation; P<0.05) in LD samples from HE steers than from LE steers, both in samples aged for 1 day (67.7 v. 72.5 units) and in samples aged for 14 days (87.8 v. 91.1 units). The rate of decline in MFI between 1 and 14 days post slaughter was similar in the LD samples from both lines of steers. There were no differences (P>0.05) between HE and LE steers in the activity of m-calpain and &micro;-calpain in LD immediately after slaughter (HE steers: 1.9 and 2.3 units, LE steers: 1.8 and 2.1 units). The level of calpastatin in LD from the HE steers was 13% higher than in the LD from the LE steers (5.2 and 4.6 units respectively, P<0.05). Rate of myofibril fragmentation was positively correlated (P<0.01) with the ratios of both m-calpain and µ-calpain to calpastatin, but not (P>0.10) with levels of either calpain or calpastatin. A single generation of divergent selection for RFI produced differences in calpastatin and myofibril fragmentation that may, with on-going selection for low RFI, negatively affect meat tenderness.
