Processing and selection of fruits and vegetables generate high quantities of wastes that represent an economic and environmental issue for the agroindustry sector. According to the so-called “biorefinery” approach, this biomass can be exploited for the recovery of value-added molecules. In this study, the residues of industrial processing of tomato (Lycopersicon esculentum variety “Hybrid Rome”), fennel (Foeniculum vulgare), potato (Solanum tuberosum) and carrot (Daucus carota) were used as sole carbon sources to support cheap and sustainable microbial growth as well as the production of secondary metabolites (hydrogen and ethanol) by Thermoanaerobacterium thermostercoris strain BUFF, a thermophilic anaerobic microorganism isolated from buffalo-dung compost. Moreover, the use of hemicellulolytic enzymes of T. thermostercoris was assayed in the bioconversion reaction of the polymer fraction extracted from the rhizome of giant reed (Arundo donax) and of the leaves and stems of cardoon (Cynara cardunculus), dedicated non-food crops employed in energy supply.

Agro-industrial residues are low-cost carbon sources (C-sources) for microbial growth and production of value-added bioproducts. Among the agro-industrial residues available, those rich in pectin are generated in high amounts worldwide from the sugar industry or the industrial processing of fruits and vegetables. Sugar beet pulp (SBP) hydrolysates contain predominantly the neutral sugars d-glucose, l-arabinose and d-galactose, and the acidic sugar d-galacturonic acid. Acetic acid is also present at significant concentrations since the d-galacturonic acid residues are acetylated. In this study, we have examined and optimized the performance of a Rhodotorula mucilaginosa strain, isolated from SBP and identified at the molecular level during this work. This study was extended to another oleaginous red yeast species, R. toruloides, envisaging the full utilization of the C-sources from SBP hydrolysate (at pH 5.0). The dual role of acetic acid as a carbon and energy source and as a growth and metabolism inhibitor was examined. Acetic acid prevented the catabolism of d-galacturonic acid and l-arabinose after the complete use of the other C-sources. However, d-glucose and acetic acid were simultaneously and efficiently metabolized, followed by d-galactose. SBP hydrolysate supplementation with amino acids was crucial to allow d-galacturonic acid and l-arabinose catabolism. SBP valorization through the production of lipids and carotenoids by Rhodotorula strains, supported by complete catabolism of the major C-sources present, looks promising for industrial implementation.

With the increasing demand for convenient and ready-to-eat foods, the use of antioxidants and preservative additives in foodstuff formulation is essential. In addition to their technological functions in food, bio-based additives confer beneficial properties for human health for having antioxidant capacity and acting as antimicrobial, antitumor, and anti-inflammatory agents, among others. The replacement of preservatives and other additives from synthetic origin, usually related to adverse effects on human health, faces some challenges such as availability and cost. An opportunity to obtain these compounds lies in the food industry itself, as a great variety of food waste has been identified as an excellent source of high value-added compounds. Large amounts of seeds, fibrous strands, peel, bagasse, among other parts of fruits and vegetables are lost or wasted during industrial processing, despite being rich sources of bioactive compounds. From a circular economy perspective, this work reviewed the main advances on the recovery of value-added compounds from food industry bioresidues for food application. Bioactive compounds, mainly phenolic compounds, have been largely obtained, mostly from seeds and peels, and have been successfully incorporated into foods. Additionally, alternative and eco-friendly extraction techniques, as ultrasound and microwave, have showed advantages in extracting antioxidant and preservatives compounds.

Editor's Note: Guidelines for Selecting Books to Review Occasionally, we receive questions regarding the selection of books reviewed in the Journal of Economic Literature. A statement of our guidelines for book selection might be useful, therefore. The general purpose of our book reviews is to help keep members of the American Economic Association informed of significant English-language publications in economics research. Annotations are published of all books received. However, we receive many more books than we are able to review so choices must be made in selecting books for review. We try to identify for review scholarly, well-researched books that embody serious and original research on a particular topic. We do not review textbooks. Other things equal, we avoid volumes of collected papers such as festschriften and conference volumes. Often such volumes pose difficult problems for the reviewer who may find himself having to describe and evaluate many different contributions. Among such volumes, we prefer those on a single, well-defined theme that a typical reviewer may develop in his review. A volume that collects together papers from a wide assortment of different topics is not preferred to one devoted exclusively to one topic. We avoid volumes that collect previously published papers unless there is some material value added from bringing the papers together. Also, we refrain from reviewing second or revised editions unless the revisions of the original edition are really substantial. Our policy is not to accept offers to review (and unsolicited reviews of) particular books. We have examined the consequences of an alternative policy and have determined that we lack the resources to deal appropriately with unsolicited reviews. Coauthorship of reviews is not forbidden but discouraged and we ask our invited reviewers to discuss with us first any changes in the authorship or assigned length of a review. AbstractObjective: The purpose of this text is to identify approaches to defining and subsequently reviewing the definitions of uncertainty and risk as interdisciplinary terms which are of key importance in modern management.Methodology: The work is theoretical. The main method used in the research process was the analysis of scientific literature. A one-dimensional logical classification method was also used, in order to categorize approaches to defining uncertainty and risk, satisfying the exhaustive and mutually exclusive criteria in the selection of categories of approaches.Findings: The main results of the work are: 1) identification of approaches to defining uncertainty and risk, 2) interdisciplinary review of definitions of uncertainty and risk indicating the criteria to distinguish between the two, and 3) determination of the meaning of the terms uncertainty and risk in modern management.Value Added: Considering the approaches to defining uncertainty and risk taken from many fields and disciplines of science, this text is a compendium of theoretical knowledge for the proper understanding and meaning of these concepts in management.Recommendations: The research findings can have implications for both management theory as well as the practice of organization management.

Abstract Objective: This article presents a project focused on the stabilization of employment in a multi-generational organization in the scope of human resources –specifically, employee relationship management. Methodology: The type of project was evaluated by taking into account different typological criteria. The employee generations were defined by providing time ranges based on dates of birth. All important project stages were presented according to the newest PMI 2017 methodology, with particular attention to the selection of the model of the project team and the division of tasks within the team. The critical path method was used in the description of the course of project activities. Findings: The method of determination of project success factors was specified. Value Added: In accordance with the title of the article, it was, however, shown how one can combine the identification of the level of project risk (using failure mode and effects analysis – FMEA) and the costs of quality to increase the project effectiveness. Recommendations: Projects of this type are important in these organizations where the risk of loyalty is high, which leads to negative economic implications. The advantages from such projects can, however, affect more than the employer.

Purpose – research on R&D projects implemented at universities shows that many researchers feel that the requirements set on R&D project definition in the process of calls for projects brake the innovativeness and the freedom of research. Thus, the objective of the paper is to propose a soft, fuzzy set based method of R&D project definition, which would allow to evaluate projects in the stage of project calls, but at the same time would not act contrary to the research ideas of the most ingenious and innovative researchers. Research methodology – the proposal is based on the results of over 70 structured interviews with R&D project managers from Polish and French universities. The respondents expressed their critical opinion about the required definition of R&D projects in the application stage of most calls, suggested which elements should be improved and in which way. Most of them criticised the required detail level of projects description and emphasized the uncertainty present in their research. Then we propose to model this uncertainty by means of fuzzy sets. Findings – the result of the research presented in the paper is a new way of R&D project definition, based on the fuzzy theory, adjustable to each R&D project type. The new method of project definition will express the actual uncertainty and innovative potential of each R&D project and thus allow a selection of R&D projects which would maximise their contribution to the university and science development. Research limitations – the proposed approach needs to be validated and verified on the basis of a big sample of a real world R&D project, with the participation of a representative sample of researchers. Another limitation is a highly probable resistance against such an approach among the researchers and research funding institutions, as it requires a deep analysis of the planned research and its context. Practical implications – it is proposed that the method will be used by research funding institutions in project calls. This will increase the efficiency of financial resources spent on research, in terms of value-added per one dollar invested in the research. Originality/Value – the proposed method is the first approach to project definition based on fuzzy numbers and one of very few existing approaches to project definition taking uncertainty into account

In this study the screening of different Xanthomonas strains, isolated from infected crucifers and pepper leaves, for xanthan biosynthesis on semi-synthetic media containing different carbon sources was performed. The success of xanthan biosynthesis was estimated based on xanthan concentration in media and its molecular weight. Glucose and glycerol were investigated as carbon sources in a quantity of 20.0 g/L. Xanthan biosynthesis by different Xanthomonas isolates on two different cultivation media was carried out in Erlenmeyer flasks under aerobic conditions for 168 h. According to the obtained results selection of the carbon source, producing strain and their combination have a statistically significant effect on xanthan quantity and quality. The results obtained in this study indicate that local wild-type Xanthomonas strains isolated from pepper leaves have a great potential for application in biotechnological production of good-quality xanthan on glycerol-based media.

Under the current international economic conditions, where Asian countries are strong competitors in the manufacturing commodities, low-income countries like Mozambique could attempt to compete in industries without smokestacks. Fruits and vegetables, agro-processing goods, and various tradable services are estimated to have contributed 1.9 per cent to annual average gross domestic product growth in 1993–2015, when the aggregate growth was 7.8 per cent. Around 80 per cent of the total labour force is dedicated to primary activities, producing 25 per cent of the aggregated value added in 2013–15. The share of services in total exports was only 17 per cent in 2012–14. Although still relatively small, these industries have potential for growth, if Mozambique follows a diversified growth strategy.
