This research is an experimental study that aims to make a cookies formulation of tempeh flour substituted with red bit flour. The experimental design used was a completely randomized design with subtitution of red bit flour to tempeh flour cookies with different concentrations. The process of making cookies includes mixing flour, mixing margarine, egg, refined sugar then process to mixer, molding, and baking using the oven. The organoleptic test (preference) involved 30 semi-trained panelists. Tempe flour cookies with substitution of red bit flour with 4 formulations, formulation 1 with 0% concentration (control), formulation 2 with 12% substitution of red bit flour, formulation 3 with 15% red bit flour substitution, and formulation 4 with 18% red bit flour substitution. %. The results of the organoleptic assessment scores by panelists were analyzed using Excel 2010 and SPSS with descriptive tests. Based on the results of the analysis, it was found that cookies formulation 2 was the most preferred by panelists in terms of taste, color, smell, and texture. Based on the test of antioxidant activity of cookies formulation 2 30690 µg/mL, its means that it still potential as an antioxidant substance weak as classified. ABSTRAK Penelitian ini merupakan penelitian eksperimen yang bertujuan untuk membuat formulasi cookies tepung tempe yang disubstitusi dengan tepung bit merah. Rancangan percobaan yang digunakan adalah rancangan acak lengkap dengan perlakuan penambahan tepung bit merah pada cookies tepung tempe dengan konsentrasi yang berbeda. Proses pembuatan cookies meliputi pencampuran tepung, pengocokan margarin, telur, gula halus dengan mixer, pencetakan, dan pemanggangan menggunakan oven. Uji organoleptik (kesukaan) melibatkan 30 panelis semi terlatih. Cookies tepung tempe dengan substitusi tepung bit merah dengan 4 formulasi yaitu formulasi 1 konsentrasi 0% (kontrol), formulasi 2 dengan 12% substitusi tepung bit merah, formulasi 3 dengan substitusi tepung bit merah 15%, dan formulasi 4 dengan susbtitusi tepung bit merah 18%. Hasil skor penilaian organoleptik oleh panelis dianalisis menggunakan Excel 2010 dan SPSS dengan uji deskriptif. Berdasarkan hasil analisis didapatkan cookies formulasi 2 adalah yang paling disukai oleh panelis dari segi rasa, warna, aroma, dan tekstur. Berdasarkan hasil uji aktivitas antioksidan cookies formulasi 2 yaitu 30690 µg/mL yang artinya masih berpotensi sebagai zat antioksidan namun tergolong sangat lemah.

This research aimed to determine the effect of maceration time on the antioxidant activity of pegagan leaf extract and to determine the best maceration time with highest antioxidant activity of pegagan leaf extract. The experimental design used was Completely Randomized Design with maceration time duration there were 18, 24, 30, 36, 42, and 48 hours. All of the treatment repeated three times to obtained 18 units of experiments. The data analyzed by analyze of variance, if the treatment had a significant effect followed by The Duncan Test. The results showed that the maceration time treatment had a significant effect on yield, total phenolik, total flavonoid, total tannin and antioxidant activity of pegagan leaf extract. The 24 hour maceration time was the best treatment with antioxidant activity 66.67%, IC50 632.82 ppm, a yield of 24.30%, a total phenolik of 57.85 mgGAE / g, a total flavonoid of 105.28 mgQE / g. total tannin 54.09 mgTAE / g.

Black garlic is a garlic that experiences warming at a certain temperature and time to find higher antioxidant activity. This research aimed to know effect of antioxidant content’s stability of extract BG to pH and temperature. The experimental design used in this research was a completely randomized design with replication, which consisted of two factors. The first factor was pH (4, 6 and 8). The second factor was temperature (30, 50 and 70ºC). Data were analyzed with analysis of variance, followed by Duncan test. The results showed that pH and processing temperature very influential to antioxidant activity, total phenolic and total flavonoid. The results showed that the best treatment was pH 4 and temperature 30ºC which the best resulted antioxidant activity, total phenolic and total flavonoid that stablest. The resulted of antioxidant activity, stability of total phenolic and total flavonoid that were 75,13%, 42,47% and 77,71%. The treatment of pH and processing temperature change compounds of extract black garlic. Myricetin and quercetin appeared on treatment pH 4 with temperature 30ºC and pH 8 with temperature 70 ºC. The treatment of pH and processing temperature of black garlic extract reduced antioxidant activity, total phenol and total flavonoid. pH and temperature form new compounds.

Jelly candy is a favorite snack of various ages from children to adults because it has an attractive color, delicious aroma and taste, and a chewy texture. In this study, papaya juice (Carica papaya L.) was used as a base ingredient for making jelly candy because papaya is a fruit that is very easy to find and has a relatively cheap price. In order to improve the quality of the papaya jelly candy, roselle calyx extract (Hibiscus sabdariffa L.) was also added. Roselle calyx has been known to have high antioxidants because they contain anthocyanin pigments. The purpose of this study was to determine the effect of variations in the addition of roselle calyx extract to the papaya jelly candy. The experimental design in this study was a completely randomized design with variations in the addition of roselle calyx extract by 0% (control), 15%, 30%, and 45%. The parameters tested in this study include chemical, physical, microbiological, and organoleptic qualities. The results of the research that have been carried out show the addition of 45% roselle calyx extract can produce the best papaya jelly candy based on water content, total titrated acid, antioxidant activity, total anthocyanin, texture, color, and microbiological tests which include total plate count and numbers of yeast molds. ABSTRACTThis study aimed to determine the effect of breadfruit flour and green seaweed flour formulation on the physicochemical and organoleptic characteristics of wet noodles. This study used a completely randomized design (CRD) using the formulations of wheat flour, breadfruit flour and green seaweed flour M1 (70:28:2), M2 (70:26:4), M3 (70:24:6), and M4 (70:22:8). The results show that the formulation of breadfruit flour and green seaweed flour had a very significant effect on improving the organoleptic characteristics of color, aroma, taste, and texture of wet noodles. The best product based on the organoleptic assessment was found in the M4 formulation (70% wheat flour formulation, 22% breadfruit flour, and 8% green seaweed flour) with assessment scores of color, aroma, taste, and texture, reached 3.81 (like), 2.98 (slightly like), 2.92 (slightly like) and 3.84 (like), respectively. The chemical analysis shows that the best wet noodle product contaiend 57.68% water, 1.23% ash, and 0.09% crude fiber. The highest antioxidant activity was obtained in the M4 treatment, which reached 62.50%. Based on the results of the study, the wet noodle product with the formulation of breadfruit flour and green seaweed flour was preferred by the panelists and met the national standards for ash and water contents.Keywords: wet noodle, fermented cassava flour, breadfruit flourABSTRAKPenelitian ini bertujuan untuk menentukan pengaruh formulasi tepung sukun dan tepung rumput laut hijau terhadap karakteristik fisikokimia dan organoleptik mie basah. Penelitian ini menggunakan rancangan acak lengkap (RAL) dengan menggunakan formulasi tepung terigu, tepung sukun dan tepung rumput laut hijau M1 (70:28:2), M2 (70:26:4), M3 (70:24:6), M4 (70:22:8). Hasil penilaian menunjukan bahwa formulasi tepung sukun dan tepung rumput laut hijau berpengaruh sangat nyata terhadap peningkatan uji organoleptik warna, aroma, rasa dan tekstur mie basah. Berdasarkan penilaian organoleptik terdapat pada formulasi M4 (formulasi tepung terigu 70%, tepung ubi sukun 22%, dan tepung rumput laut hijau 8%) dengan skor penilaian terhadap karakteristik organoleptik warna 3,81 ( suka), aroma 2,98 (agak suka), rasa 2,92 (agak suka) dan tekstur 3,84 (suka). Nilai analisis kimia dari produk mie basah terbaik meliputi : kadar air 57,68%, kadar abu 1,23%, kadar serat kasar 0,09%. Aktivitas antioksidan tertinggi pada perlakuan M4 (terigu 70%: tepung sukun 22% : dan tepung rumput laut 8%) sebesar 62,50%. Berdasarkan hasil penelitian, produk Mie basah formulasi tepung sukun dan tepung rumput laut hijau dapat diterima (disukai) oleh panelis dan memiliki kadar abu dan kadar air yang telah memenuhi standar SNI.Kata kunci: mie basah, tepung sukun, tepung rumput laut hijau.

This study aims to determine the effect of the comparison of black tea and red ginger to the characteristics of teabags and know the comparison of black tea and red ginger to get the best characteristics of tea bags. The experimental design used was Completely Randomized Design with comparison treatment of black tea and red ginger which consist by 6 levels : 100%:0%, 90%:10%, 80%:20%, 70%:30%, 60%:40% and 50%:50%. The treatment was repeated 3 times to obtain 18 units of experiment.. The data obtained were analyzed by variance and if the treatment had significant effect followed by Duncan test. The result showed that tea bags with comaparions of 80% black tea powder and 20% red ginger powder is the best treatments with a water content of 7,78%, extract content of 27,13%, total phenol 247,10 mgGAE/g extract, flavonoids 401,72 mgQE/g extract, antioxidant activity 74,68%, color was liked, distinctive aroma of ginger and rather liked, distinctive taste of ginger and rather liked, overall acceptance was rather like. This research was conducted in order to determine the type of solvent and ratio between sample and solvent to produce extract avocado seed with the highest antioxidant activity. The experimental design used in this research was a factorial completely randomized design which consisted of two factors. The first factor was the type of solvent consisting of ethanol, methanol, and acetone. The second factor was ratio between sample and solvent of 1:5, 1;10, and 1:15. The treatment was repeated three time to obtain 27 units of the experiment. Data were analyzed with analysis of variance, followed by Duncan test. The results show that the solvent of acetone and ratio between sample and solvent of 1:15 was highest antioxidant activity with total phenolic 803.60 mg/100g, IC50 was 540.95 ppm, and yield 41.36%.

This study was conducted to determine the effect of different solvents on the antioxidant activity of rice hyacinth extract and to find out the right type of solvent used to extract rice hyacinth with the highest antioxidant activity. The experimental design used in this study was a completely randomized design with various types of solvents as a treatment using maceration method. The treatment consisting of four type of solvents i.e water, ethanol, methanol, and acetone. All treatments were repeated four times to obtained 16 experimental units. The data obtained were analyzed by variance and if the treatment had significant effect then followed by Duncan test. The results showed that the various types of solvent treatments had a very significant effect (P<0.01) on antioxidant activity. The results showed that ethanol solvent had the best treatment which produced an antioxidant activity based on IC50 of 0,49 mg/mL, yield of 26.17%, total phenol content of 11.12 mg GAE/g, total flavonoid content of 8.26 mg QE/g, total tannin content of 5.18 mg TAE/g. This study aims to determine the chemical properties of instant drinks produced and the best concentration by adding noni and red ginger to the manufacture of instant drinks based on organoleptic test results. This research is an experimental study with an experimental design that is used is Factorial Completely Randomized Design (CRD) which consists of two factors, namely the factor A noni fruit, namely: 100 g, 200 g, 300 g. The red ginger B factor is: 75 g, 100 g, 125 g. The chemical analysis results were the highest water content with the addition of 300 g noni fruit concentration 2,8678 and 125 ginger concentration 2,9456, the highest antioxidant activity with the addition of 300 g noni fruit concentration 71,100 and red ginger concentration 125 g 70,0178, and from the alkaloid test all treatments in instant drinks contain positive alkaloids. The results of organoleptic color, aroma and taste are preferred by panelists with the addition of 100 g of noni fruit and the concentration of red ginger 125 g.

Soursop leaf tea is a health drink that contains steroid compounds, terpenoids, flavonoids, kumari, tannins, and alkaloids. The flavonoids and tannins in soursop leaves act as antioxidants. Since it has an unpleasant aroma, cinnamon is added to add scent and flavor. This study aimed to determine the effect of cinnamon powder on the soursop leaf tea's antioxidant activity. This study employed the completely randomized design method (CRD) with two factors: the soursop leaves and cinnamon powder concentrations. This study consisted of four treatments, namely SP0 (100% soursop leaves), SP1 (90% soursop leaves and 10% cinnamon powder), SP2 (80% soursop leaves and 20% cinnamon powder), and SP3 (70% soursop leaves and 30% cinnamon powder) within three repetitions. The proximate test was focused on antioxidant activity analyzed by ANOVA at α = 5%. The organoleptic test covered the color, taste, aroma, and other overall preferences by qualitative descriptive tests. The results showed that the highest antioxidant (29.19%) could be found in the SP3 sample (70% soursop leaves and 30% cinnamon powder), while the preferred organoleptic test was the SP2 sample.
