EATING QUALITY OF BEEF FROM YOUNG HEREFORD BULLS AS INFLUENCED BY SLAUGHTER WEIGHT

Objective measurements and subjective evaluations of the eating quality of semitendinosus (ST) and longissimus dorsi (LD) roasts were determined for 32 young (12 to 22-mo) purebred Hereford bulls (four groups of eight) fed a high concentrate ration free choice and slaughtered at average weight of 377 kg for group I, 565 kg for group II, 624 kg for group III, 682 kg for group IV. Intramuscular fat as determined by ether extract increased with increasing slaughter weight. Slaughter weight had no effect on most eating quality characteristics evaluated. Although some differences in palatability were determined they were not large enough to be of practical significance. There was a tendency for panelists to rate the texture (grain) of both types of roasts from slaughter weight groups I and II as superior to the texture of comparable roasts from slaughter weight groups III and IV. In addition, panelists frequently noted the presence of fat in the heaviest (group IV) samples. For ST roasts, residual connective tissue differed significantly between group I and the other weight groups which were similar. There was a slight trend toward increased percent cooking losses with increased slaughter weight but differences were only statistically significant for drip loss of ST roasts. Objective measurements of juiciness (water-holding capacity) and tenderness (Warner Bratzler Shear, Kramer Shear) supported the findings from sensory evaluation. These studies provide evidence that slaughter weight of young Hereford bulls over the range of 377 to 682 kg and 12 to 22 mo of age had only minor effects on cooking and eating quality characteristics, with all the beef samples tested rating moderately desirable to desirable.

AbstractSixty crossbred (Large White × Landrace × Duroc) pigs were used to compare the growth performance, carcass and pork quality characteristics of entire, surgically castrated and immunologically castrated male pigs from two Western Australian commercial genotypes (genotype A : ‘lean’ genotype and genotype B : propensity for increased subcutaneous fat deposition). Pigs from genotype B had a higher average daily gain and a superior food conversion ratio compared with pigs from genotype A. Entire males had lower backfat compared with surgically and immunologically castrated male pigs. Pork from entire males was drier, tougher and had lower overall acceptability scores compared with surgically or immunologically castrated male pigs. Pork from genotype A pigs had a lower m. longissimus thoracis (LT) ultimate pH and higher drip loss compared with pork from genotype B pigs. However, consumer taste panel assessment indicated that pork from genotype A pigs was more tender, had higher juiciness and overall acceptability scores compared with pork from genotype B pigs. Within genotype A, the consumer taste panel preferred pork from surgically castrated pigs compared with either entire or immunologically castrated pigs. Within genotype B, the consumer taste panel preferred pork from immunologically castrated pigs compared with either entire or surgically castrated male pigs. These results indicate that interactions between genotype and castration method can significantly influence eating quality of pork.

The objective was to compare the quality of beef from bulls reared in typical Irish indoor systems or in novel grass-based systems. Bulls were assigned to one of the following systems: (a) grass silage plus barley-based concentrate ad libitum (CON); (b) grass silage ad libitum plus 5 kg of concentrate (SC); (c) grazed grass without supplementation (G0); (d) grazed grass plus 0.5 kg of the dietary dry matter intake as concentrate (GC) for (100 days) until slaughter (14.99 months). Carcass characteristics and pH decline were recorded. Longissimus thoracis was collected for analytical and sensory analysis. Lower carcass weight, conformation and fatness scores were found for grazing compared to CON and SC groups. CON bulls had highest intramuscular fat and lighter meat colour compared with grazing bulls. The SC meat (14 days aged) was rated higher for tenderness, texture, flavour and acceptability compared with grazing groups. CON saturated and monounsaturated fatty acid (FA) concentration was highest, conversely, omega-3 FA concentration was higher for GC compared with CON, while no differences were found in polyunsaturated FA. In conclusion, while market fatness specification was not reached by grazed grass treatments, beef eating quality was not detrimentally affected and nutritional quality was improved.

The purpose of research is increase of beef productivity and beef quality of Simmental calves at introduc-tion in a diet of feeding different doses of the drug Vetosporin suspension. Of the half-yearly animals, 40 males were selected and formed into group IV for the experiment. The differences were only in feeding. The young were fed the studied additive Vetosporin suspension. In this case, the supplement was an addi-tion to the basic diet of animals of the experimental II-IV groups. The volume of the additive added was 0.1; 1.0; and 2 ml per 10 kg of live weight, respectively. Control group I, consumed exclusively a diet that does not contain an additive. Based on the results of the experiment at the age of 18 months. The prevalence of bulls of the experimental live weight over peers was observed, which was 4.4-25.3 kg (0.78-4.67%). The study of the studied indicators after control slaughter in the context of groups showed the superiority of bulls of experimental groups in all the periods studied. It is established that at the age of 15 months. The size of the removable live weight of the youngest of the control group was less by 8.0-19.7 kg (1.75-4.29%) than in the animals of the test groups. In this case, the leading position was occupied by the youngest of group III, the prevalence of which was 0.7-11.7 (0.14 -2.51%). It should be noted that after 3 months a simi-lar picture of the distribution of the studied quantities was observed. As for the output of carcass, we can note the following. Outsider among the animals of the experimental groups was the control group. So the bulls of group I were inferior to those who received the additive by 0.7-1.3%. At 18 months, as well as at 15 months, the dominant position was occupied by gobies of experimental groups. It should be noted that among the animals of the experimental groups the leading place was occupied by the bulls receiving the feed additive in a dose of 1.0 ml per 10 kg of live weight, that is, the youngest of the III group.

It was found that the average live weight of geese at the beginning of the oviposition was (OS – 3% X OS – 3%): goose – 6.10 kg, goose – 7.30 kg, and (OS – 5% X OS – 5♂): goose – 6,30 kg, goose – 7,37 kg. The average weight of OS–3 goose was 39.5 eggs per head, and OS–5 – 41.4 eggs. At the same time, the average weight of eggs in the 1st group was 154.3 g, and in II – 158.5 g. The indexes of the forms in the I group consisted of: the length of the egg – 84.4 mm, the width – 55.4 mm, the index of form 65.6 in the second group respectively – 84.3 mm; 56.3 mm; 66.7 mm. The study of the incubation qualities of eggs indicates that the higher fertility was in the goose of the second group and amounted to 85.3%, which is 0.9% more compared with the I group. It is known that the yield of caterpillars is dependent on fertility and in the 1st group this indicator was 71.8%, which is 4.3% less than in the second group (76.1%). At 9 weeks of age, males of the II group surpassed their peers from the 1st group by chest covering 1.79%., With a body length of 2.08%, and a kilo length of 7.14%. The same tendency was observed in the shoots of the shin and plyusny, so the males of group ІІ in the first indicator dominated the male and group I by 8,19%; in the second indicator males of the II group dominated the males of the I group by 6.68%. At 9 weeks of age, females of group ІІ grouped over their breasts over their peers from the 1st group by 2.40%, with the body length by 3.21%., With the length of the keel – by 2.34%. Length of the leg and shoulders in the females of the 2nd group were the largest and dominated by females and groups I by the first indicator at 5.26%; in the second indicator, females of the second group dominated the females of the I group by 1.08%. Males at all investigated periods had higher levels of total protein in serum than females. It was found that males at all investigated periods had higher levels of total protein in serum than females. Performance indicators of Ohorin gray geese (Group I) consisted of: carcass weight – 39.5 pc. on the head; the weight of eggs – 154.3 g; fertility – 84.4%; deductibility – 71.8%; the live weight of geese in the 9-week-old age is 4.52 kg males and 3.84 kg females; preservation – 90.7%. Obroshinsky gray goose (group II) are characterized by the highest indexes in relation to the first group: for fertility by 4.8%, fertility by 0.9%, output by 4.9%, live weight of geese at 9 weeks of age (males) – 1.99%, (females) by 0.52%, preservation – 2.90%, egg mass – 2.64%. The highest feather-down raw material was obtained at the age of 18 in geese I group. The basic indices of blood of the examined geese were within the acceptable limits of the norm.

The aim of this study was to evaluate the effect of organic Se from Se-enriched alga (Chlorella spp.) and Se from Se-enriched yeast on concentrations of Se in serum and tissues, and serum GSH-Px activities and carcass characteristics in finishing pigs. The pigs were on experimental diets for a period of 3 months before slaughter with different Se supplements at the concentration of 0.3 mg Se per kg of feed. In group I (n = 12) the feed was supplemented with inorganic sodium selenite; in group II (n = 12) with organic Se from Se-enriched yeast; in group III (n = 12) with organic Se from Se-enriched alga, Chlorella spp. and pigs in group IV (n = 11) received a non-supplemented basal diet. The organic Se sources did not differ in serum Se and serum GSH-Px activities. Significantly higher Se concentrations in muscle (P < 0.01) and in the heart (P < 0.01) were found when Se from Se-enriched yeast was given, compared to the group of pigs that received Se from Se-enriched alga Chlorella spp. The Se content in livers and ovaries did not differ between the two organic Se sources. The use of both organic Se forms resulted in a higher accumulation in muscle tissue compared to the inorganic Se form. No differences in meat quality characteristics were found among the experimental groups. It is concluded that Se from Se-enriched alga, Chlorella spp. had a lower accumulation in muscle tissue than Se from Se-enriched yeast, and it did not affect meat quality.

The quality characteristics of semitendinosus (ST) and longissimus dorsi (LD) roasts from 18 young and 6 mature cow carcasses subjected to low-voltage (110 V) electrical stimulation (ES) were determined. ES was applied for either 4 min or 5 min. Evaluations were conducted on meat obtained from young control sides (no ES) aged 48 h, from young and mature ES sides aged 48 h and from mature ES sides, aged 7 days. Data obtained from mature control sides (no ES), aged 48 h and 7 days, reported in a previous study, served as a reference point for mature ES meat. ES caused a reduction (P < 0.01) in pH values 1 and 4 h postmortem. At 24 h, the pH of ST and LD muscles from control and ES carcasses were similar. Cooking losses of roasts were not affected by ES, ES duration or increased aging. Trained panelists detected no significant effects of ES, ES duration or aging time on palatability. Consumer panel judgements of ST roasts were similar to those of the trained judges. Data from instrumental measurements of juiciness (water-holding capacity), tenderness (OTMS) and softness (penetrometer) for ST and LD roasts support sensory results. These studies show no differences in cooking and eating quality of ST and LD roasts attributable to low voltage ES. The palatability of meat from mature ES carcasses was judged to be similar to that of comparable meat from young control carcasses. For meat from young carcasses, there was no advantage in increasing ES duration. In addition, roasts from mature ES carcasses aged for either 48 h or 7 days were similar. There is great variation in lamb carcass quality due to there being many breeds and crosses involved in lamb production. Breed of lamb appears to influence the pattern of development of the important carcass components, and thus the carcass quality, when comparison is made at equal weights. Plane of nutrition may also affect the growth rate, carcass composition and eating quality of lambs of the same genotype. It was planned to study the effect of both breed and diet on growth performance, carcass and meat quality characteristics by feeding two different diets to the lambs of two different breeds similarly managed from birth to slaughter.

AbstractCarcass and eating quality characteristics of crossbred wether and female lambs sired by Charollais (C), Suffolk (S) and Texel (T) rams out of Mule ewes (Bluefaced Leicester ♂ × Scottish Blackface ♀ or Swaledale ♀J)were evaluated in a study carried out over a 3-year period in an upland flock. A total of 10 unrelated rams of each breed were used as sires. Lambs (no. = 280) were selected for slaughter at the same estimated subcutaneous fat level on four occasions within each year (i.e. at weaning in July and at approx. monthly intervals thereafter). Following slaughter, the left side of each carcass was physically dissected. A loin joint from lambs slaughtered in the 2nd and 3rd years of the study (no. = 184) was used to evaluate eating quality.Suffolk-sired lambs were heavier at slaughter (S: 42·2; C: 41·0; T: 40·7 (s.e. 0·35) kg) but had similar killing-out proportions compared with the other two breeds (S: 444; C: 450; T: 452 (s.e. 26) g/kg). Texel-sired lambs had higher lean proportion (S: 543; C: 550; T: 567 (s.e. 4·4) g/kg) and lower total carcass fat proportion (S: 240; C: 242; T: 233 (s.e. 5·3) g/kg) compared with S and C sired lambs. Bone proportion was similar for C and T lambs but was higher for S (S: 199; C: 191; T: 191 (s.e. 2·1) g/kg). Lean: bone (S: 2·75; C: 2·90; T: 2·99 (s.e. 0·037)) and lean:fat (S: 2·38; C: 2·40; T: 2·54 (s.e. 0·034)) ratios were higher for T-sired lambs. Female lambs were lighter (40·4 v. 42·2 (s.e. 0·24) kg), and had proportionately more intermuscular fat than wethers (122 v.118 (s.e. 1·3) g/kg) but the sex differences for other tissue proportions were small. Carcass weights and total carcass fat proportions increased and lean proportions decreased across the four slaughter dates. There were no effects of breed or sex on eating quality. However, samples from lambs slaughtered at weaning were judged to be more tender than those slaughtered later in the season.

Antituberculosis is the most liver damage causes. Rifampicin and Isoniazide, in combination, are toxic compounds. Isoniazide and rifampicin metabolits causes lipid peroxidation. The hepatoprotective effect of rosella calyx water extract on liver damage induced with Isoniazide-rifampicin evaluated by examination of malondialdehid levels in the liver organ. 25 male wistar rats divided into 5 groups, ie group I (INH-rifampicin + rosella water extract 250 mg/kgBW), group II (INH-rifampicin + rosella water extract 125 mg/kgBW), group III (INH-rifampicin + rosella water extract 62.5 mg/kgBW),  group IV (healthy control) and group V (Isoniazide-rifampicin). MDA liver levels were analyzed after 35 days of treatments. The test results of each group are, group I has mean MDA levels 0.023912 + 0.011 mg/ml, group II 0.023526 + 0.009 mg/ml, group III 0.027168 + 0.007 mg/ml group IV 0.03437 + 0.009 mg/ml and group V 0.236846 + 0.118 mg/ml. The kruskal-wallis test showed significantly value 0.008 (p 0.05) and Post hoc Mann U whitney test showed that group V was significantly different to group I, II, III, and IV (p = 0.008) respectively, roselle extract can be used as a hepatoprotector antioxidant to improve the tuberculosis drug consumer quality of life through improved health by lowering lipid peroxidation that causes liver damage.
