Carcass characteristics and tissue-mineral contents of steers fed supplemental chromium

This study investigated the effects of supplemental chromium (Cr) (0 or 0.2 mg kg−1 from high-Cr yeast) on performance, carcass characteristics and tissue-mineral contents of growing–finishing steers fed corn silage supplemented with either urea–corn or soybean meal during the growing period and a high-grain diet during the finishing period. Ninety-six Charolais-crossed steers, divided into four treatment groups with 24 animals each, were fed for a 70-d growing period followed by a 68-d finishing period. After continuous supplemental Cr, steers were commercially slaughtered and their carcass characteristics were evaluated. Tissue samples, including loin-eye lean and rib fat, liver and kidney, were analyzed for Cr and other minerals (P, Ca, Mg, Fe, Zn and Cu). Supplemental Cr had no effects (P > 0.05) on average daily gain (ADG), dry-matter intake, (DMI), feed efficiency (ADG/DMI), and carcass characteristics, including dressing percentage, loin-eye area, backfat thickness, marbling score, kidney fat and liver weight. Proportion of lean, fat and bone in rib sections was not affected (P > 0.05) by Cr supplementation. Supplemental Cr also did not affect (P > 0.05) total-tissue Cr and other mineral concentrations. However, supplemental Cr increased (P < 0.05) the Cu level of livers in steers fed urea–corn supplements during the growing period. This study showed that continuous supplementation of Cr (0.2 mg kg−1) to unstressed growing-finishing steers had no effect on carcass composition and several minerals in various tissues. Abstract One-hundred thirty-two finishing steers (300 ± 2.7 kg body weight [BW]) predominately of Angus, Simmental, and Shorthorn breeding were used to study the effect of metabolizable protein (MP) intake on growth performance, carcass characteristics, and feeding behavior. Steers were stratified by initial BW across five pens and randomly assigned to one of four dietary treatments to supply an average of 626, 906, 1,209, and 1,444 g MP/d (n = 33 per treatment). Feed intake and feeding behavior were measured using radio frequency identification tags and the Insentec feeding system. For feeding behavior, a visit was defined as each time the Insentec system detected a steer at the feed bunk. A meal was defined as eating periods by intervals no longer than 7 min. Steers were fed until they reached an average BW of 598 ± 3.1 kg. Average daily gain (ADG) responded quadratically (P &lt; 0.01) with ADG increasing in steers fed 906 g MP/d and plateauing thereafter. Dry-matter intake (DMI; kg) responded quadratically (P = 0.009) with DMI increasing with MP intake up to 1,209 g/d MP and decreasing thereafter. Gain to feed ratio (G:F) increased linearly (P = 0.04) and tended (P = 0.10) to respond quadratically, as G:F increased up to 906 g MP/d and plateaued thereafter. A quadratic response (P = 0.04 and P = 0.02, respectively) was observed for marbling score and 12th rib subcutaneous fat thickness with steers fed 1,209 g MP/d having the greatest marbling score and back fat thickness. A quadratic effect for visits and meals per day was observed (P &lt; 0.01) with steers fed the 1,209 g MP/d treatment having the least visits and meals per day. In addition, time eating per visit responded quadratically (P = 0.05) with time increasing from 626 to 906 g MP/d. There was a linear increase (P ≤ 0.02) in time eating per meal and per day with increasing MP intake. A quadratic effect (P &lt; 0.03) was observed for DMI per visit, meal, and minute with steers fed 1,209 g MP/d having the greatest DMI. In summary, steers fed 626 g MP/d had increased visits and meals per day. However, DMI per visit, meal, and minute were greater in steers fed 1,209 g MP/d. A day × treatment interaction (P &lt; 0.001) was observed for plasma urea N as concentrations increased to a greater extent over time in the higher MP treatments than in the lower MP treatments. These data indicate that MP supply (from deficient to excess) influences growth performance, carcass characteristics, and feeding behavior of finishing steers.

SummaryThe carcass characteristics of a total of 43 infertile bulls were oompared with those of 42 steers from five independent trials. In most cases there was no significant difference between the bulls and the steers for dressing percentage, or fleshing index. Bulls were generally found to have greater hide percentages than steers, the difference being very highly significant (P < 0·001) in one of the trials and significant (P < 0·05) in another. Eye musole area expressed relative to caroass weight was greater in the bulls, the difference being significant (P < 0·05) in three of the trials. The depth of fat over the eye musole and the hind to fore-quarter weight ratio were greater in the steer carcasses. Head weights were found to be significantly greater (P < 0·05) and caul and kidney fat weights less (P < 0·05) in bulls than in steers in the one trial where these parameters could be measured.Carcass composition was estimated by the three-rib sample joint teohnique in four of the trials, and in these the bulls had a greater percentage of bone and muscle, but a lower peroentage of fat than the steers, the differences being significant in most oases. In the fifth trial composition was estimated by half carcass dissection. This, too, showed bulls to have a greater percentage of bone and muscle and a lower percentage of fat, the differences being highly significant (P < 0·01) and very highly significant (P < 0·001) respectively. On a fat-corrected basis the estimated retail value of the carcasses favoured the bulls by about $20.00 each.The studies, conducted over a range of nutritional conditions, showed that non-castration favoured muscle growth while suppressing fat deposition, and that this advantage was more pronounced when growth rates were high.

The degree to which growth patterns are modified after a period of food restriction affects the compositional changes of the carcasses(Carstens et al., 1992), furthermore, the growth rate has a direct effect on the physical properties of meat (Fishell et al., 1985). The objective of this experiment was to evaluate the effects of a severe food restriction at a early stage of maturity on the slaughter characteristics and meat quality of Belgian Blue bulls.Twelve Belgian Blue bulls (dual purpose type) weighing 233 kg were offered two different planes of nutrition during the growing period. Six bulls (Group-) received a restricted diet so that their average daily gain was 0.34 kg/d (Group+) during 202 days. By contrast six other bulls were given a more conventional growing diet and their average daily gain was 1.13 kg/d. Both Groups were fattened with similar diet and slaughtered when the live weight was close to 600 kg. Carcass weight was measured and killing-out proportion calculated, the composition of the carcass was estimated after dissection of ribs 7, 8, 9 removed 48 h post-mortem.

Objective: The objective of this experiment was to evaluate the effect of shade allocation and shade plus fan on growth performance, dietary energy utilization and carcass characteristics of feedlot cattle under tropical ambient conditionsMethods: Two trials were conducted, involving a total of 1,560 young bulls (289±22 kg BW) assigned to 24 pens (65 bulls/pen and 6 pens/treatment). Pens were 585 m<sup>2</sup> with 15 m fence line feed bunks. Shade treatments (m<sup>2</sup> shade/animal) were: i) limited shade (LS) to 1.2 m<sup>2</sup>shade/animal (LS<sub>1.2</sub>); ii) limited shade to 2.4 m<sup>2</sup> shade/animal (LS<sub>2.4</sub>); iii) total shade (TS) which correspond to 9 m<sup>2</sup>/animal, and iv) total shade equipped with fans (TS+F). Trials lasted 158 and 183 days. In both studies, the average weekly maximum temperature exceeded 34°C.Results: Increasing shade allocation tended (p = 0.08) to linearly increases average daily gain (ADG), and dry matter intake (DMI, quadratic effect, p = 0.03). This effect was most apparent between LS<sub>1.2</sub> and LS<sub>2.4</sub>. Shade allocation, per se, did not affect gain efficiency or estimated dietary net energy (NE). Compared with TS, TS+F increased (p<0.05) ADG, gain efficiency, and tended (p = 0.06) to increase dietary NE. There was a quadratic effect of shade on <i>longissimus</i> area and marbling score, with values being lower (p<0.01) for LS<sub>2.4</sub> than for LS<sub>1.2</sub> or TS. Likewise, marbling score was lower for TS+F than for TS. Percentage kidney, pelvic, and heart (KPH) linearly decreased with increasing shade. In contrast, KPH was greater for TS than for TS+F.Conclusion: Providing more than 2.4 m<sup>2</sup> shade/animal will not further enhance feedlot performance. The use of fans in combination with shade increases ADG and gain efficiency beyond that of shade, alone. These enhancements were not associated with increased DMI, but rather, to an amelioration of ambient temperature humidity index on maintenance energy requirement.

Objective: The aim of this study was to determine the effect of pineapple cannery by-product (PCB) level on the growth performance and carcass characteristics of finishing Hanwoo steers.Methods: The feeding stage was divided into early and late finishing stages. A total of 60 castrated Hanwoo steers (13.9±0.8 months old, 418.8±36.5 kg initial body weight [BW]) were blocked by initial BW and then randomly allotted into 12 pens (five head/pen). The pens were randomly assigned to control (CONT), low PCB (LPCB), or high PCB (HPCB) treatments. These diets contained 0%, 1.5%, or 3.0% of PCB (on a dry matter [DM] basis; as-fed basis was 0%, 10.6%, or 21.2%), respectively.Results: For the early finishing stage, body weight gain (BWG) and average daily gain (ADG) of the CONT and LPCB feeding groups were greater (p<0.05) than those of the HPCB feeding group. In addition, there were linear and quadratic effects on BWG and ADG with increasing dietary PCB level (p<0.05). The gain to feed (G:F) ratio tends to quadratically decrease with an increasing PCB level in the early finishing stage (p = 0.076). Growth performances of late finishing stage were not affected by PCB level. The marbling score of the LPCB feeding group was similar to that of the CONT feeding group. However, there was a linear decrease (p< 0.05) in marbling score and quality grade among treatments as PCB was increased in the diet. In the <i>longissimus</i> muscle free amino acid profile, histidine composition increased linearly (p<0.05) with an increasing level of PCB.Conclusion: The level of PCB 1.5% DM in diet can be used for finishing steers without any adverse effects on growth and carcass performances. However, there were some negative effects on growth and carcass performance in the HPCB feeding group.

Abstract The objective was to evaluate growth performance and carcass characteristics for feedlot cattle fed two sources of rumen protected capsaicin at two dose rates. A total of 450 steers, stratified by BW, were assigned into 30 pens. Pens were randomly assigned to receive 1 of 5 treatments containing (DM basis) of 86.2% barley grain, 6.0% barley silage, 6.2% canola meal, and 1.6% vitamin and mineral supplement. Treatments contained no additive (CON) or included a low or high dose of Nexulin (100 mg/d for NEXLO and 330 mg/d for NEXHI) or CapsXL (77 mg/d CAPLO or 250 mg/d for CAPHI). Steers averaged 507 kg BW at the start of the study and 686 kg at the end of the study (69 days on feed) with no differences among treatments (P &gt; 0.28). Dry matter intake, ADG, gain:feed, dressing percentage, backfat thickness, and rib-eye area were not affected by treatment (P &gt; 0.33). Steers fed CAPLO and NEXLO tended (P = 0.07) to have lesser marbling scores than CON, CAPHI and NEXHI. The proportion of steers in Canadian yield grades 1 and 2 did not differ among treatments, while those in yield grade 3 were greater (P = 0.03) in NEXLO (29%) than the CON (10.0%) and NEXHI (12.2%) treatments, with those fed CAPLO (20%) and CAPHI (19%) being intermediate but not different. Treatment did not affect the proportion of steers in quality grades B4, A, or prime, but tended to increase the proportion of steers grading AAA (P = 0.08) and decrease the proportion grading AA (P = 0.06). Overall, the data from this experiment suggest the potential for capsaicin to affect carcass yield grade, marbling score and quality grades without affecting DMI, ADG, or dressing percentage.

This study evaluated the effects of including meal from glyphosate-tolerant (Roundup-Ready®) canola (RRC) in barley-based diets for lambs on apparent digestibility of the diets, growth performance of the lambs, and carcass quality and composition. Four isonitrogenous diets were prepared that included canola meal [6.5%, dry matter (DM) basis] from four different sources (two commercially available canola blends, COM1 and COM2; a transgenic line, RRC and the parental non-transgenic line from which RRC was derived, PAR). Apparent digestibilities of the four diets were determined using eight mature wethers (67.8 ± 2.3 kg) in a replicated Latin square with four 21-d periods. No aspect of digestibility (DM, fibre, or nitrogen balance) was influenced by canola source. The growth trial involved 60 early-weaned Arcott lambs (30 ewes; 30 wethers; initial age approximately 2 mo; initial weight 21.5 ± 1.0 kg). The lambs were blocked by weight and gender for assignment to treatments, and fed the diets until reaching or exceeding 45 kg body weight. Intake of DM was similar among lambs fed COM1, COM2 and PAR diets, and between PAR and RRC (COM1, COM2 > RRC, P < 0.05). Diet did not affect (P > 0.05) average daily gain or feed efficiency. Carcass yield grade was higher (P < 0.05) for COM1 and COM2 diets than for PAR or RRC, although carcass composition did not differ (P > 0.05) between PAR and RRC. Canola source did not affect (P > 0.05) meat tenderness, as determined by shear force, drip loss or intramuscular fat content. Meat colour o f RRC-fed lambs did not differ from that of all other treatment groups. In this study, including canola meal prepared from glyphosate-tolerant canola did not alter diet digestibility, feed efficiency, growth performance, carcass characteristics or meat quality of lambs. ObjectivesCattle can be managed differently during the backgrounding segment, which may alter long-term animal and carcass characteristics. Therefore, the objectives of this study were to 1) measure carcass composition over time, and 2) determine the effect of different backgrounding diets on animal growth and carcass characteristics.Materials and MethodsAngus and Angus × Simmental crossed calves (n = 65) were stratified by dam age, birth date, weaning weight, breed, and sex post weaning in a completely randomized design to one of three treatments: (1) perennial pasture (PP; grazing quack grass, orchard grass; smooth brome grass, red clover, and alfalfa); (2) summer annual cover crop (CC; grazing cereal oats, purple top turnips, hunter forage brassica, and graza forage radish); and (3) dry lot (DL; bunk fed a haylage ration consisting of 28 NEm Mcal/50.8 kg DM) during backgrounding for 55 d. Concluding backgrounding, the CC and PP treatments were transported to pens where all treatments were sorted by gender and acclimated to a finishing ration over a period of 14 d and continued receiving 3 step-up diets over the next 25 d. Two pens during the finishing segment were utilized to house heifers and steers, respectively. The heifers were top dressed with melengestral acetate till harvest, which was determined by targeting a common backfat thickness per treatment. From backgrounding to harvest, cattle were weighed to determine body weight (BW), average daily gain (ADG) and hip height (HH) measurements were recorded every 28 d. Five periodic carcass ultrasound measures were recorded to evaluate ultrasound rib eye area (uREA), rib fat thickness (uRFT), and percent intramuscular fat (uIMF). At harvest, carcass measurements included hot carcass weight (HCW), LMA, 12th rib backfat (FT), kidney, pelvic and heart fat (KPH), marbling and maturity score and objective color (L*, a*, b*). Statistical analyses were conducted using mixed model procedures and animal weaning weight was used as a covariate. Least square means were computed and separated using least significant differences when treatment effects were significant at α ≤ 0.05.ResultsCattle ADG, uREA, uRFT, and HH did not differ (P ≥ 0.05) among treatments from backgrounding to harvest (Table 2). Cattle in DL were heavier (P ≤ 0.05) in BW than CC and PP, which were similar (P ≥ 0.05). Percent uIMF was greater (P ≤ 0.05) for DL and similar (P ≥ 0.05) to PP though CC was lower (P ≤ 0.05) and similar (P ≤ 0.05) to PP.ConclusionTreatments utilizing different backgrounding diets influence average body weights and ultrasound intramuscular adipose. Cattle grazing forages have lighter body weights and lower ultrasound intramuscular adipose though, cattle grazing perennial pastures were most variable in carcass ultrasound intramuscular adipose.Table 2Least squares mean performance responses and ultrasound-measured composition (averaged across all periodic measurements) according to the backgrounding treatment1

Aim of study: Cull ewes are characterized by poor body condition, low body weights and tough meat texture. This work aimed to investigate the effect of distillated myrtle leaves (MDL) intake on body weight (BW) gain; carcass characteristics and meat quality of Barbarine cull ewes.Area of study: Northwest of TunisiaMaterial and methods: 27 Barbarine ewes were assigned into 3 groups receiving 500 g of oat hay and 750 g of concentrate control group (C), while they were given concentrate and pellets, containing 87% MDL, as substitute to hay in MHay group; for MConc group, they were fed hay, concentrate and pellets containing 30% MDL in partial substitution to concentrate. At the end of the fattening period (90 days), ewes were slaughtered.Main results: The dry matter intake was higher (p<0.05) for MConc and C groups. The average daily gain was significantly higher for C and MConc than MHay groups (113 and 107 vs. 87 g, respectively). Ewes fed MHay and MConc had a significantly lower feed conversion rate than Control group (12.5 vs. 15.4). Dietary treatment had no significant effect on carcass joint’s weight and proportions. The dressing percentage and carcass tissue composition were similar for all groups. The ultimate pH, water cooking loss and color parameters values were unaffected by the type of diet.Research highlights: These findings revealed that MDL could substitute, in ewes feeding, up to 87% to hay or up to 30% to concentrate without negative effects on body weight, carcass characteristics and meat quality.

Abstract The negative impacts of stress on gastrointestinal (GIT) barrier function can result in compromised animal growth and health. Aspirin is known to cause mucosal injury leading to increased gut permeability and tight junction damage and can be used as a model to study leaky gut in cattle. The objective of this study was to determine the long-term impact of aspirin induced chronic leaky gut on cattle growth and carcass attributes. Two treatments were evaluated in 2 studies: control (no aspirin) or 0.25% of the diet DM aspirin fed daily. Diets consisted of 50% corn, 24% dried distillers grains, 20% corn silage and 6 % supplement on a DM basis. In experiment 1, sixteen Angus x Simmental heifers, allotted by BW and breed composition, were fed diets for 154 d. On day 155, heifers were dosed with 1 L of a 180 mM Cr-EDTA solution using an esophageal tube and had urine collected every 1.5 to 3 h for 48 h for analysis of Cr as a measure of gut leakiness. In experiment 2, ninety-six Simmental x Angus steers (355.0 ± 14.8 kg) were allotted by body weight and breed composition and fed treatment diets for 159 d. Weight was recorded monthly and serum was collected on d 159 and analyzed for lipopolysaccharide binding protein (LBP), interleukin-6 (IL-6), serum amyloid A (SAA), haptoglobin, and aspartate aminotransferase (AST). Data were analyzed using the MIXED procedure of SAS. Heifers fed 0.25% aspirin in experiment 1 excreted more Cr into urine compared to heifers not fed aspirin (overall treatment effect, P = 0.01). In experiment 2, aspirin tended to increase serum LBP (P = 0.06), but had no effect on concentrations of IL-6, haptoglobin, SAA, or AST (P ≥ 0.25). Aspirin tended to decrease average daily gain (P = 0.10), decreased hot carcass weight and rib-eye area (P ≤ 0.05), and increased fat thickness, marbling score, and yield grade (P ≤ 0.02). Aspirin tended to increase KPH% (P = 0.10) and had no effect on liver abscesses (P ≥ 0.80). This study indicates that leaky gut induced by long-term administration of aspirin has negative impacts on feedlot performance and carcass composition. The negative impact of aspirin induced leaky gut on animal performance suggests that chronic leaky gut caused by other factors (subacute acidosis, stress) may be a significant problem for the feedlot industry.
