This study explored performance differences between corporate-owned and operated and franchised outlets in the quick-service restaurant (QSR) industry. While studies have shown that there is a performance difference favouring franchisees, the reasons for this difference have not been explained. Using the Resource-Based View of the Firm, the operational differences between two ownership modes within the same franchise ecosystem were assessed. The study used qualitative data collected from twenty interviews with a broad range of stakeholders across a single South Africa quick-service restaurant brand that included company-owned and operated stores and franchised operations. The study identified a range of performance factors: franchisee motivation, franchisee empowerment and flexibility, manager focus, opportunity realisation, corporate rigidity and tactical restaurant management that contribute to enhancing the entrepreneurial resources and orientation that, along with strategic flexibility, provide franchisees with a performance advantage. This study has implications for those in the QSR sector and the hospitality industry in general, detailing what drives or hinders firm performance. This research has value for theoreticians in its novel application of the Resource-Based View of the Firm theory to a franchise-based entrepreneurial environment.

This chapter seeks to provide a better understanding on the predictors of green human resource management which can result in improved environmental and financial performance across hospitality industry. The proposed model has been constructed from the perspective of external pressure (i.e., normative) and internal pressure (manager's environmental concerns) by using the Institutional Theory and Resource Based View Theory. The chapter examines the antecedents of sustainability in hospitality industry in terms of improved financial and environmental performance. It therefore expands the level of understanding on mechanisms which leads to corporation sustainability. While the chapter is written with a focus on hospitality industry, the proposed model is applicable to corporations across other sectors.

Purpose The purpose of this paper is to report on a study that examines the sale and provision of healthy beverages across four sectors of the hospitality industry: restaurants, cafes, pubs and quick-service/takeaways. Specifically, the research investigates perceptions of demand for healthy products, challenges to distribution and strategies for increasing supply. In addition, business managers’ attitudes and behaviours with regard to offering healthy beverages, including probiotic beverages (i.e. kombucha, kefir, etc.), are explored, as these are among the fastest growing drinks category. Design/methodology/approach Data were collected in 2018 through 400 telephone interviews with hospitality business managers from Australia (n=250) and New Zealand (n=150). Data were analysed through SPSS and Stata using descriptive statistics and Probit regression, with a binary outcome variable of “sell/ do not sell” probiotics to consumers. Findings Results suggest that the business’ decision to sell healthy beverages is influenced by perceptions of consumer demand, profit margins, shelf life of the products and if locally produced. Originality/value The findings from this exploratory study present new insights on how hospitality firms respond to consumer demand for healthy options, and the factors influencing their decision to incorporate healthier beverages in their menus.

This study investigated whether the TOMI (Stott, Moyes, & Henderson, 1984), a motor skills test recommended for the identification of children who are physically awkward (Sugden, 1985; Wall, Reid, & Paton, 1990), contains biased items. Findings of a study by Causgrove and Watkinson (1993) indicated that an unexpectedly high proportion of girls from Grades 3 to 6 were identified as physically awkward, and the authors suggested that the TOMI may be biased in favor of boys. In the present study, this suggestion was investigated through comparison of performances of TOMI subtest items by boys and girls from Grades 1 to 6. Chi-square analyses on each of the eight test items revealed significant performance differences between boys and girls on the two ball skills tasks of catching and throwing (p < .0001) at Age Bands 3 and 4; a significantly greater proportion of boys than girls age 9 to 12 years passed the catching and throwing tasks. A significant performance difference was also found on the tracing task at Age Band 1, with more girls passing tracing than boys. Implications for future research requiring the identification of children who are physically awkward are discussed.

Vegetarianism is characterized by a great expansion among consumers as well as food producers and suppliers, which significantly affects supply in the hospitality business. Although vegetarians are perceived as a homogenous group, they are a varied and heterogeneous group, depending on the consumed foodstuffs, which requires hospitality workers to offer a wide variety of meals and combinations of plant origin. This is the reason why this research aims to show attitudes of restaurant management towards vegetarian cuisine and to examine the orientation of restaurants towards vegetarian meals, as well as challenges faced by employees in the hospitality industry. The basic task is to examine and present attitudes of hospitality management towards vegetarian food. The aim of the overall research is to get a better insight into awareness and attitudes of hospitality management towards foods of vegetarian origin, which is reflected in the restaurant offer.

ABSTRAKPenelitian ini bertujuan untuk menganalisis kinerja perempuan di industri perhotelan khususnya di departemen tata graha (housekeeping)  sebagai room maid, karena isu kesetaraan gender masih menjadi tantangan di seluruh dunia. Sampel pada penelitian ini adalah seluruh room maid berjumlah sepuluh (10) orang yang bekerja di Holiday Inn Express Jakarta Wahid Hasyim. Metode penelitian ini adalah kombinasi pendekatan kuantitatif dan kualitatif. Data kuantitatif diukur menggunakan kuesioner penilaian kinerja staff yang dinilai oleh 3 orang atasan (2 supervisor dan 1 executive housekeeper) dengan skala likert. Sedangkan data kualitatif yakni observasi dan wawancara dengan tamu dan atasan. Hasil penelitian menunjukkan Room Maid memiliki kinerja yang baik berdasarkan penilaian atasan dari 4 (empat) indikator kinerja yaitu kualitas kerja, kuantitas kerja, tanggung jawab, inisiatif, dan kerjasama. Indikator tanggung jawab memiliki nilai tertinggi, hal ini menunjukkan bahwa kinerja room maid dapat diandalkan. Secara keseluruhan tamu juga puas atas layanan yang diberikan room maid selama menginap. Penelitian ini yang menunjukkan bahwa perempuan dapat disetarakan dengan laki-laki meskipun pada pekerjaan yang didominasi aktifitas fisik. Hal ini berarti perempuan juga memiliki potensi yang sama untuk duduk di posisi manajerial suatu organisasi. Implikasi praktis dalam penelitian ini adalah saran bagi para manajemen di industri perhotelan untuk dapat memberikan kesempatan lebih luas kepada perempuan dikarenakan memiliki kinerja yang dapat diperhitungkan. Limitasi penelitian ini adalah hanya menganalisis kinerja room maid maka dari itu, penelitian lebih lanjut dapat menguji sampel yang lebih luas dan di lokasi yang berbeda. Kata Kunci: Kesetaraan Gender, Perempuan, Perhotelan, Pariwisata, Room Maid, Housekeeping WOMEN AT HOSPITALITY INDUSTRY: ROOM MAID PERFORMANCE OF HOLIDAY INN EXPRESS JAKARTA WAHID HASYIM ABSTRACTThis study aims to analyze the performance of women in the hotel industry especially in the housekeeping department as room maid because the issue of gender equality is still a challenge around the world. The sample in this study were all ten (10) maid room people who worked at the Holiday Inn Express Jakarta Wahid Hasyim. This research method is a combination of quantitative and qualitative approaches. Quantitative data were measured using a staff performance appraisal questionnaire which was assessed by 3 superiors (2 supervisors and 1 executive housekeeper) with a Likert scale. Meanwhile, qualitative data is observation and interviews with guests and superiors. The results showed that Room Maid has a good performance based on the superior's assessment of 4 (four) performance indicators, namely work quality, work quantity, responsibility, initiative, and cooperation. The responsibility indicator has the highest value, this shows that the performance of the room maid is reliable. Overall guests are also satisfied with the services provided by the room maid during their stay. This research shows that women can be equal to men even in physical activity tasks. This means that women also have the same potential to have equal position in managerial level. The practical implications of this research are suggested to the management in hospitality industry in providing wider opportunities for women because they are reliable. The limitation of this study is that it only analyzes the performance of the room maid. In response to this special issue, concerned with methods and measurements, a comprehensive review of the last 5 years of qualitative research was conducted in the top five journals that primarily publish articles pertaining to the hospitality industry. A total of 197 articles were read and analyzed for this review with a focus on the state of trustworthiness in the contemporary hospitality literature. An outline of the methods, techniques, and successes are presented in this review as are recommendations for scholars, journal editors, journal reviewers, and our partners in industry who use qualitative data for many reasons including but not limited to employee satisfaction surveys, market focus groups, and employee exit interviews. In addition, the relatively novel and nascent ideas regarding empirical rigor such as transparency and replicability are introduced to the hospitality field.

This research has a purpose to analyze the performance of sharia and conventional mutual funds, particularly equity mutual funds in Indonesia during 2008 and 2013 crisis periods. Within 2008 crisis period, the data set comprises of 51 equity mutual funds in which 4 were sharia mutual funds while 47 others were conventional mutual funds. Moreover, within 2013 crisis period, the data set comprises of 110 equity mutual funds in which 12 were sharia mutual funds while 98 others were conventional mutual funds. To measure the mutual funds' performance, three methods were used, which are Sharpe, Treynor, and Jensen alpha methods. Furthermore, to test whether there is any performance difference between those two types of mutual funds, the author used Mann-Whitney U test. The results indicated that in the 2008 crisis period, the entire samples cannot really withstand from the crisis. In comparison, generally the conventional equity mutual funds managed to give a better performance than the sharia equity mutual funds. Moreover, there is no performance difference between sharia and conventional equity mutual funds. Meanwhile, in the 2013 crisis period showed a more diverse result. In comparison, generally the sharia equity mutual funds managed to develop its performance during this particular crisis period compare to the previous period. Apparently, there was a performance difference between those two types of mutual funds in the 2013 crisis.

The research aimed at identifying the organizational capabilities that influence the export performance of SMEs in Zimbabwe, as well as the strategies that can be adopted by SMEs to enhance their export performance. A mixed-methods study was carried out with a sample size of 345 SMEs in Harare, comprising food processing, leather products, and textiles and four (4) policy advocates and four (4) export business analysts. Questionnaires were directed at the SME owner-managers and an interview guide was used to collect qualitative data. The results reveal that, although distinctive capabilities play a pivotal role in enhancing the export performance of SMEs; its impact on Zimbabwean manufacturing SMEs is not significant. The findings are envisaged to provide insights on how SMEs in Zimbabwe can embrace organisational capabilities to enhance export performance.
