AbstractPulses form an important part of agriculture in India given that the country is the largest producer, consumer and importer of pulses. Owing to their natural resilience to extreme weather conditions, low water requirements and being environmentally benign, pulses have been traditionally a smallholder’s crop. However, with poor price realization, farmers are switching towards other remunerative crops such as sugarcane, soybean, among others. Unlike rice and wheat, pulses are not covered by the regular public procurement system which makes marketing of pulses at fair and remunerative prices a challenge for the farmers. Pulses are no longer a poor man’s diet given the escalating consumer prices. Nonetheless, it is considered as an important source of protein (given the large vegetarian diet base in India), consumption of which is being promoted to address the observed protein gap in the diets. Over time, per capita availability of pulses has declined like other traditional cereals. With changing consumption patterns and emerging dietary deficiencies, there is scope for enhancing consumption of pulses through traditional and value-added products.

Psoriasis is a chronic inflammatory skin disease. Immunological, genetic, and environmental factors, including diet, play a part in the pathogenesis of psoriasis. Metabolic syndrome or its components are frequent co-morbidities in persons with psoriasis. A change of eating habits can improve the quality of life of patients by relieving skin lesions and by reducing the risk of other diseases. A low-energy diet is recommended for patients with excess body weight. Persons suffering from psoriasis should limit the intake of saturated fatty acids and replace them with polyunsaturated fatty acids from the omega-3 family, which have an anti-inflammatory effect. In diet therapy for persons with psoriasis, the introduction of antioxidants such as vitamin A, vitamin C, vitamin E, carotenoids, flavonoids, and selenium is extremely important. Vitamin D supplementation is also recommended. Some authors suggest that alternative diets have a positive effect on the course of psoriasis. These diets include: a gluten-free diet, a vegetarian diet, and a Mediterranean diet. Diet therapy for patients with psoriasis should also be tailored to pharmacological treatment. For instance, folic acid supplementation is introduced in persons taking methotrexate. The purpose of this paper is to discuss in detail the nutritional recommendations for persons with psoriasis.

Background. People following a vegetarian diet can obtain all the essential nutrients from a variety of foods. Among the nutrients, protein, iron, calcium, zinc, and vitamins B12 and D3 require special attention. Objective. To assess the knowledge of dietary recommendations among different groups of vegetarians and the diet they follow. Material and methods. The study involved a total of 390 subjects (360 women and 30 men), aged 18–60 years, who were following different vegetarian diets. The study was conducted in November 2020 via Facebook using the Computerassisted web interviewing (CAWI) method. Participation in the study was voluntary and anonymous, and sample selection was intentional (participants were members of groups for vegetarians in Facebook). Statistical analysis was carried out using the Chi2 test, using Statistica 13.3 (at p=0.05). Results. To develop the results, the respondents were divided into 4 groups according to their diet: vegan, pescovegetarian, lactovegetarian, and people following other types of diets. The body mass index of nearly 2/3 of the respondents was within the normal range, and more than 80% of the respondents rated their health as good or very good. An analysis of the frequency of consumption of food products showed that, regardless of the type of vegetarian diet they followed, the participants adhered to the principles of proper nutrition. The respondents who rated their nutritional knowledge as very good were more likely to consume vegetables, fruits, legumes, and whole-grain cereals, and rarely consumed sweet and salty snacks, alcoholic and energizing drinks, or fast food. Vegans more frequently consumed fruits, vegetables, legumes, vegetable fats, and vegetable substitutes for meat and dairy products compared to other vegetarians. In addition to plant products, pesco- and lactovegetarians included selected animal-derived products in their food rations, thus skillfully diversifying the diet. More than 80% of the vegetarians used dietary supplements, mainly vitamins D and B12. Conclusions. Regardless of the type of vegetarian diet followed, the participants seemed to be aware of how to balance their diet and the ingredients that should be supplemented, even though a vast majority of them did not consult a diet specialist.

Proper health knowledge and adequate motivation for health activities are key factors that influence an individual to adopt a healthy behavior. Health promotion positively influences progressive behaviors that seek to advance health potential, to continuously improve one’s lifestyle. There are many health promotion indications constantly encouraging people to eat healthier food. Based on the successful experience of a non-profit organization promoting a healthier vegetarian diet, this research identifies the operating factors that lead to the success of health promotion. The formulation and implementation of the health promotion strategy must be combined with the key success factors in order to accomplish the objectives. This study assessed seven factors, evaluated using the proposed method. The proposed Decision Making Trial and Evaluation Laboratory (DEMATEL) method constructs the cause and effect model of health promotion, and places forward suggestions and strategies for improvement based on the evaluation of the results. This research compared the original DEMATEL with a Modified DEMATEL (M-DEMATEL) to identify the success factors of health promotion. According to the results of both methods, “leadership”, “communication channel” and “budget” are the most important and influential factors when promoting healthy diets. The results have shown the connection and the difference between the two methods. The main purpose of this research is not to determine which method is the best method, instead, to derive the combined effect of both methods.

Abstract Objectives: There are reports that vegetarians, due to the specificity of their diet, may be at risk of orthorexia nervosa (ON), although researchers' opinions are not consistent. The aim of the study was to determine the relationship between the motivation to use vegetarian diet and the personality traits as well as the tendency to ON. Methods: The study group comprised 480 vegetarians aged 18-40 years (414 women) divided into 3 groups: G1 - semi-vegetarians (n=60), G2 - lacto-ovo-vegetarians, ovo-vegetarians, lacto-vegetarians (n=238) and G3 - vegans, raw foodists and fruitarians (n=182). The questionnaire determining the motivation for vegetarian diet, Neuroticism-ExtraversionOpenness - Five Factor Inventory Personality Inventory and Bratman Test of Orthorexia were used. Results: No significant differences in the level of ON risk were observed between the groups. BMI was significantly lower in G3 than in G1 and G2. In G3 vegetarian diet was used for the longest time, and the highest level of ethical and health motivation to undertake this diet compared to the other respondents was seen (p<0.0001). The study revealed the lowest level of agreeableness in the G1. The neuroticism, extraversion, conscientiousness and ethical motivation to diet were positive predictors of ON, while agreeableness and experience with diet were its negative predictors (F=9.26, p<0.001, R2=0.12).Conclusion: It is concluded that personality traits, type of motivation to undertake a vegetarian diet and diet duration are associated with the risk of ON in vegetarians.Level of Evidence: Level V, cross-sectional descriptive study

Attaining healthy behaviors is essential at any life stage, particularly childhood, due to the strong link between children’s lifestyle and the subsequent adult state of health. This multidisciplinary study aimed to assess lifestyle behaviors of Austrian pupils of secondary schools I and II, with a specific focus on PA habits and diet types based on a large sample. In total, 8845 children/adolescents participated in the short standardized online survey on relevant health-related aspects nationwide. Valid and complete data was provided by 8799 pupils, including 1.14% of the eligible 771,525; 63% girls, 76% having a normal body weight, 70% attending secondary schools II, and more pupils/students living in rural vs. urban areas (3:1 ratio). Across the total sample, 11.8% were considered overweight/obese with a higher prevalence of overweight/obesity in boys than girls (15.5% vs. 9.6%) and urban vs. rural participants (13.9% vs. 10.8%; p < 0.05). The majority of participants (84.5%) reported a mixed diet, while 7.2% and 8.5% reported a vegan and vegetarian diet, respectively. Vegans reported a lesser alcohol intake (p < 0.05) compared to non-vegan pupils (no difference in dietary subgroups for smoking). Although overall PA and dietary behaviors suggest an appropriate health status among Austrian youth, attention should be focused on policies to increase healthy lifestyle habits at best through a dual approach to health permanently combining regular PA, sports, and exercise with a healthy diet, which would contribute to matching the current recommendations for improving individual and public health.

Abstract Research supports the role of diet in the onset and progression of Parkinson disease (PD); however, there is no specific dietary pattern recommended for PD. This is partially due to a paucity of in-depth data on the dietary practices of this population. Therefore, the purpose of this study was to qualitatively explore the dietary practices and motivators of older adults with PD. Eleven dyadic semi-structured interviews with older adults and their care-partners were conducted via Zoom about their dietary practices and motivators. Interviews were audio-recorded and transcribed verbatim, and data were thematically analyzed using NVivo 12 software. The following themes were identified: 1) Intentionally making healthier choices on a regular basis; 2) Following a specific dietary pattern; for example, the Mediterranean diet, ketogenic diet, vegetarian diet, and/or intermittent fasting; 3) Limiting or avoiding certain foods, food components, and/or food groups, such as dairy, gluten, sugar, animal meat, and/or alcohol; 4) Purchasing or growing organic produce; and 5) Adjusting the timing of their protein intake to their medications. Their PD diagnosis and symptoms were reported as the primary motivators for following their respective diets. Overall, older adults with PD may be motivated by their diagnosis to modify their dietary intake; however, there are a variety of patterns or restrictions they may be adhering to. These results support the need for a consensus on the dietary recommendations for this patient population.
