Development of the Sports Energy Drink «Inca Cola»

Основная задача, возлагаемая на спортивные энергетические напитки - это снабжение атлетов дополнительным импульсом внутренней энергии. В составе разработанного спортивного напитка «Inka Cola» в качестве источника биологически активных веществ использовали экстракт семян южноамериканского кустарника - гуараны. Специфическая черта этого растения заключается в высокой концентрации кофеина в его семенах, содержание которого примерно в 4-5 раз выше, чем в зернах кофе. Наличие в составе напитка «Inka Cola» компонентов, содержащихся в экстракте семян гуараны, позволяет снизить усталость атлетов и обеспечить длительное поддержание высокого уровня их физической и когнитивной активности. В качестве другого источника биологически активных веществ был включен экстракт травы готу-колы, которая произрастает в странах Юго-Восточной Азии. Компоненты, входящие в состав этого продукта, позволяют бороться с эмоциональными расстройствами, способствуют улучшению памяти и восстановлению нервных клеток в мозге человека, а также обладают широким спектром противовоспалительных, иммуностимулирующих, антибактериальных и антиоксидантных свойств. С целью повышения энергетической ценности и улучшения вкусового восприятия напитка «Inka сola» в его состав была включена изомальтулоза - изомер сахарозы с пониженным значением гликемического индекса; для повышения физиологического воздействия на организм спортсменов биогенные минеральные компоненты - калий и магний; для создания гармоничного вкусового восприятия напитка - регулятор кислотности (лимонная кислота) и привлекательных реологических свойств напитка - загуститель (ксантановая камедь). С целью формирования цвето-ароматического образа напитка «Inka cola» в его состав был включен ароматизатор «мохито» и конгруэнтный, то есть соответствующий ему по своему сенсорному восприятию, пищевой краситель. По отзывам спортсменов, использовавших напиток «Inka cola» в течение нескольких недель, у них снижалась утомляемость, им легче становилось воспринимать и усваивать информацию, а также отмечалось усиление физической и умственной выносливости. The main goal of sports energy drinks is to provide athletes with an additional impulse of internal energy. In the composition of the developed sports drink «Inka Cola» as a source of biologically active substances was used an extract of the seeds of the South American shrub - guarana. A specific feature of this plant is the high concentration of caffeine in its seeds, the content of which is about 4-5 times higher than in coffee beans. The inclusion of guarana seed extract in the «Inka Cola» drink composition helps to reduce fatigue of athletes and ensure long-term maintenance of a high level of their physical and cognitive activity. An extract of the gotu-kola herb, which grows in the countries of Southeast Asia, was used as another source of biologically active substances. The constituents of this extract allow to fight emotional disorders, improve memory and restore nerve cells in the human brain. They also have a wide range of anti-inflammatory, immunostimulating, antibacterial and antioxidant properties. In order to increase the energy value and improve the taste perception of the «Inka Cola» drink, isomaltulose, an isomer of sucrose with a reduced glycemic index, was included in its composition; to increase the physiological impact on the athletes were used important biogenic mineral components - potassium and magnesium; to create a harmonious taste perception of the drink - acidity regulator (citric acid) and attractive rheological properties of the drink - thickener (xanthan gum) were included. The formation of the color-aromatic image of the drink «Inka cola» was carried out by using in its composition of the flavoring product «mojito» and congruent food coloring. According to the reviews of athletes who used the «Inka Cola» drink for several weeks, their fatigue decreased, it became easier for them to perceive and assimilate information, as well as an increase in physical and mental endurance was noted.

The drone brood contains a large number of substances with antioxidant activity. These substances require stabilization and strict adherence to storage conditions. Among these substances are unique decenoic acids, the content of which is an indicator of the quality of drone brood and products based on it. The ability of drone brood to reduce the manifestations of oxidative stress is shown. There are dietary supplements for food and drugs based on drone brood, which are used for a wide range of diseases. Together with drone brood, chitosan-containing products, propolis, royal jelly can be used. They enrich the composition with their own biologically active substances and affect the preservation of the biologically active substances of the drone brood. Promising are the products containing, in addition to the drone brood, a chitin-chitosan-melanin complex from bees, propolis, royal jelly. The chitin-chitosan-melanin complex in the amount of 5% in the composition of the adsorbent practically does not affect the preservation of decenic acids, while in the amount of 2% and 10% it somewhat worsens. The acid-soluble and water-soluble chitosan of marine crustaceans significantly worsens the preservation of decenoic acids in the product. Drone brood with royal jelly demonstrates a rather high content of decenoic acids. When propolis is introduced into the composition of the product, the content of decenoic acids increases according to the content of propolis.

Silver birch, Betula pendula Roth, is one of the most common trees in Europe. Due to its content of many biologically active substances, it has long been used in medicine and cosmetics, unlike the rare black birch, Betula obscura Kotula. The aim of the study was therefore to compare the antioxidant properties of extracts from the inner and outer bark layers of both birch trees towards the L929 line treated with acetaldehyde. Based on the lactate dehydrogenase test and the MTT test, 10 and 25% concentrations of extracts were selected for the antioxidant evaluation. All extracts at tested concentrations reduced the production of hydrogen peroxide, superoxide anion radical, and 25% extract decreased malonic aldehyde formation in acetaldehyde-treated cells. The chemical composition of bark extracts was accessed by IR and HPLC-PDA methods and surprisingly, revealed a high content of betulin and lupeol in the inner bark extract of B. obscura. Furthermore, IR analysis revealed differences in the chemical composition of the outer bark between black and silver birch extracts, indicating that black birch may be a valuable source of numerous biologically active substances. Further experiments are required to evaluate their potential against neuroinflammation, cancer, viral infections, as well as their usefulness in cosmetology.

An interest in plants of Amelanchier genus is stimulated by the necessity of search for plant sources rich in biologically active substances and possessing the ability to influence different physiological processes in a human organism. The article gives information about places of growth of different species of Amelanchier (Amelanchier Medic) and about the fact that its fruits contain high concentration of free sugars, relatively low level of organic acids, sufficient amounts of various vitamins and provitamins and a complex of mineral substances. Nutritive and biological value of Amelanchier fruits in complex may produce a beneficial effect on different biochemical and physiological processes of normal vital activity of a human organism. The data are given about a positive influence of enteral introduction of polysaccharides isolated from Amelanchier fruits, on different physiological processes that enhance adaptational reserves of an organism of experimental animals. In particular, it was shown that watersoluble polysaccharide complex (WSPC) of Amelanchier fruits activates erythropoiesis increasing the amount of erythrocytes and hemoglobin in blood of experimental animals and raises concentration of iron. WSPC improves physical working capacity and increases the body mass of experimental animals. Addition of watersoluble polysaccharide complex of Amelanchier fruits to blood of a healthy donor increases thermal, osmotic and peroxide resistance of erythrocyte membranes thus protecting cells against damage under action of adverse factors in the experiment. Fruits of plants of Amelanchier genus may be recommended to be used as a food additive or a product in dietary and prophylactic therapy.

This article deals with the phytochemical, morphological and anatomical investigation of ethanol-based extracts derived from the leaves and stems of the Aegopodium alpestre. The vegetative organs of A. alpestre were conserved according to Strasburger-Fleµming method using a 1:1:1 mixture of alcohol-glycerin-water. A total of 1200 ethanol-based extracts (2 from leaves and 2 from stem tissues per plant) were prepared using the Soxhlet extractor. All extracts were used to identify organic and inorganic compounds in the leaves and stems of the studied plant. Contents of biologically active substances, microelements, vitamins and amino acids were determined. This article is the first paper to display very high concentration and diversity of vitamins (6 types), micronutrients (5 types), and aminoacids (13 types) in the leaves and steams of A. alpestre. Findings conclude that identification of biologically active substances in the above the ground vegetative organs of A. alpestre may be a common practice in the future. Considering the study results, A. alpestre may be used as a medicinal plant on a large scale. For this, the cultivation practice needs to be scaled up.

The use of infusions and extracts from domestic plant materials is a promising direction in the development of functional beverages since they contain a wide range of substances of various pharmacological properties. Drinks fortified with physiologically active natural components maintain a certain level of this content in human body. They can have a healing or prophylactic effect. However, there is a lack of technologies for the effective production of biologically active substances from plant materials. Moreover, the development of cultivated botanical medicinal plant species remains quite poor. The present study features the qualitative and quantitative composition of biologically active substances of medicinal plants that are endemics of Siberia. They are Rhodiola rosea (Rhodiola rosea L.) and maral root (Rhaponticum carthamoides). The paper introduces a method for increasing their biosynthetic activity. An experiment helped to select a composition of the nutrient medium for the cultivation of callus cultures of Rhodiola rosea (Rhodiola rosea L.) and maral root (Rhaponticum carthamoides) in vitro, which contributed to an increase in the biosynthesis of biologically active substances. For callus cultures of Rhodiola Rosea (line R.r-1k) the following composition was used: mineral base – MS; sucrose – 30 g; inositol – 100 mg; thiamine – 1.0 mg; pyridoxine – 1.0 mg; Ca-panthetonate – 10 mg; kinetin – 0.05 g; naphthyl acetic acid – 0.1 g; 2.4-D – 0.5. For callus cultures of maral root (line R.c -2k): mineral base – SH; sucrose – 30 g; inositol – 100 mg; thiamine – 5.0 mg; pyridoxine – 0.5 mg; nicotinic acid – 5.0 mg; kinetin – 0.1 g; indoleacetic acid – 1.0 g. The authors developed a technology for the production of functional whey-based tonic drink fortified with extract of carotenoids isolated from the fruits of mountain ash and the extract of biologically active substances Rhodiola rosea and maral root. The presence of biologically active substances in the plant and medicinal raw materials gives the drink antioxidant and bactericidal properties, as well as helps to raise the overall state of the organizm and strengthen the immune system.

Technologies of isolation and concentration of biologically active substances, developed in the middle of the 20th century, need adjustment and adaptation to modern conditions both to increase the activity of substances and for greater economic efficiency. The aim of the research is the comparison of dynamics of biologically active compounds extraction from porcines pancreas in two methods: the saline method based on 0.9% sodium chloride solution, and the acidic method based on 2.4% trichloroacetic acid solution. Also the purpose of research is to assess the possibilities for further optimization of technologies. The total protein concentration based on the biuret reaction in the samples taken during the extraction, as well as the calculation and analysis of the point degrees and rates of extraction are chosen as the controlled parameters. Local maxima of the protein yields into the extractant media at the 60th, 135th and 255th minute were recorded during saline extraction; and at the 75th and 135th minute during acid extraction. Also the proteomic profile of the extracts was studied. Wide range of compounds with molecular weight of less than 52 kDa was found in extracts based on physiological saline solution, and protein substances of whole presented range of molecular weights in trichloroacetic acid based extracts were considered. The predominance of low molecular weight protein fraction of interest was noted also in this method of extraction in comparison with the other methods of extraction. According to the UniProt database, we assume availability of probable compounds with a molecular weight of less than 30 kDa in the purified acidic extract. The presence of some proteins absent in the final saline extract was noted. The acidic erythrograms showed a weak degrading effect of both types of extracts on the membranes of rat erythrocytes, as well as the cytoprotective effect of acidic ultrafiltrates (less than 3 kDa). The obtained results prove a better efficiency of trichloroacetic acid extraction method used for obtaining a mixture of a wide range of compounds, including biologically active substances of low molecular weight.

Introduction. Antioxidant system is one of the main cellular mechanisms of adaptation. It is able to neutralize the destructive effect of free radicals, both external and internal. Functional products, especially of meat origin, can provide necessary antioxidant properties. Some types of plant raw materials possess a high content of polyphenol complexes with antioxidant properties. Therefore, introduction of phytonutrients into the composition of meat products can help to expand the range of foods with an antioxidant effect. Daurian rosehip is rich in biologically active substances and can increase their safety during processing. The research objective was to study the possibility of immobilization of Daurian rosehip antioxidants by protein-lipid inclusion. Study objects and methods. The research featured fruits of Daurian rosehip, its aqueous alcoholic extract, and protein-lipid complex. Results and discussion. The article presents experimental data on the chemical composition of Daurian rosehip. The optimal method with the best antioxidant results was a microwave phytoextraction by an aqueous alcoholic solution at a power of 800 W for 6–7 min. The antioxidants were immobilized by including the protein-lipid complex into the gel. The experiment demonstrated excellent functional and technological characteristics of the resulting system. Conclusion. The research revealed the optimal modes of microwave extraction of biologically active substances of Daurian rosehip. The rosehip extract was included into the protein-lipid complex and immobilized antioxidants, thus increasing their efficiency.

The medicinal plant Dactylorhiza maculata (L.) Soó (family Orchidaceae) is used to treat gastritis, colic, gastrointestinal tract, and bladder diseases. This study aimed to investigate the properties and characteristics of the in vitro Dactylorhiza maculata extract. The recommended parameters for producing Dactylorhiza maculata extract were determined: temperature 60 °C, process duration 60 min, hydro module 1:10. It is recommended to carry out the extraction using an aqueous ethyl alcohol solution with a mass fraction of the parent substance of 70%. It was found that such biologically active substances as rutin, quercetin, 3,3’,4’,5,5’,7-hexahydroxyflavonone, 3,3’,4’,5,5’,7-hexahydroxyflavonone-3-O-glycoside, gallic acid, and ferulic acid were dominant in Dactylorhiza maculata. A high phosphorus content was noted (2410.8 mg/kg dry matter). The studied Dactylorhiza maculata samples contained a large number of organic acids and water-soluble vitamins. The tested extracts were safe in terms of the content of heavy metals, pesticides, aflatoxin B1, and radionuclides, as well as pathogenic and opportunistic microorganisms; the content was significantly lower than the threshold limit values. The studied complex of biologically active substances from Dactylorhiza maculata extract samples had antimicrobial properties. It was found that the antioxidant activity of the samples was 217.89 ± 10.89 mg AA/g (AA—ascorbic acid). The high content of bioactive substances and the antimicrobial and antioxidant properties of Dactylorhiza maculata extract samples determine the application potential of this plant as a substitute for growth stimulants and feed antibiotics in the production of feed additives, aiming to increase the physiological and immune status of livestock and poultry.

Species of Betonica L. genus are widespread in Ukraine and contain different groups of biologically active substances: hydroxycinnamic acids, flavonoids, tannins, iridoids, terpenoids, steroids, essential oil, organic acids, vitamin K, nitrogen-containing compounds, phenylethanoid glycosides. Species of Betonica L. genus show a wide range of pharmacological activity (anti-inflammatory, antioxidant, choleretic, diuretic, sedative, antitumor, antihypertensive, etc.) and phenolic compounds are one of the most important and promising groups of biologically active substances of these plants. The aim. The aim of the work was to conduct a comparative study of the phenolic compounds of the herb of Betonica L. genus species of flora of Ukraine. Materials and methods. The object of the study was the herb of Betonica peraucta and Betonica brachydonta harvested in the phase of mass flowering of the plant in Ivano-Frankivsk region. The study of phenolic compounds was carried out by paper chromatography, HPLC and spectrophotometry. Results. 7 components of tannins, 4 flavonoids, 5 hydroxycinnamic acids, 2 coumarins were identified and quantified by HPLC in the studied raw material. The quantitative content of the main groups of phenolic compounds in the herb of Betonica peraucta and Betonica brachydonta was determined by the method of absorption spectrophotometry: polyphenols – 5.96 % and 4.82 %, tannins – 1.62 % and 0.68 %, flavonoids – 2.07 % and 1.13 %, hydroxycinnamic acids – 7.01 % and 3.58 %, respectively. Conclusions. As a result of the conducted studies it was found that the content of phenolic compounds in the herb of Betonica peraucta is significantly higher than in the herb of Betonica brachydonta. Therefore, this species is promising for further research and creation of new drugs
