The production of lyophilized foods is a market with great growth potential, for providing important preservation characteristics, such as stability at ambient temperature, versatility of the product and preservation of the chemical compounds. Given the functional effects of peanut powder extracts, this study aimed to quantify the bioactive compounds and determine physical and chemical characteristics, comparing samples with and without skin. After obtaining the aqueous peanut extract the samples were frozen at -18 °C for 24 h. The formulated extracts were dried in a benchtop lyophilizer operating at temperature of -55 °C for a period of 48 hours. The powder extracts were disintegrated in a multiprocessor for 30 seconds and the samples were physically and chemically evaluated. The powder extracts were classified as non-hygroscopic, exhibiting poor fluidity and intermediate cohesiveness in samples with skin, and high cohesiveness in samples without skin. The powders showed agglomerated particles, with irregular and non-uniform shape. Potassium was the mineral found in largest amounts, as well as oleic and linoleic fatty acids. The particles of the powders exhibit a spherical shape, showing the presence of amorphous surfaces, in which there is no repetition of geometric forms. The peanut powder extracts are classified as non-hygroscopic, have poor fluidity, intermediate cohesiveness in samples with skin and high cohesiveness in samples without skin.

Silver halide grains (AgX, X=Cl,Br,I) are commonly recognized as important entities in photographic applications. Depending on the preparation specifications one can grow cubic, octahedral, tabular a.o. morphologies, each with its own physical and chemical characteristics. In the present study crystallographic defects introduced by the mixing of 5-20% iodide in a growing AgBr tabular grain are investigated. X-ray diffractometry reveals the existence of a homogeneous Ag(Br1-xIx) region, expected to be formed around the AgBr kernel. In fig. 1 a two-beam BF image, taken at T≈100 K to diminish radiation damage, of a triangular tabular grain is presented, clearly showing defect contrast fringes along four of the six directions; the remaining two sides show similar contrast under relevant diffraction conditions. The width of the central defect free region corresponds with the pure AgBr kernel grown before the mixing with I. The thickness of a given grain lies between 0.15 and 0.3 μm: as indicated in fig. 2 triangular (resp. hexagonal) grains exhibit an uneven (resp. even) number of twin interfaces (i.e., between + and - twin variants) parallel with the (111) surfaces. The thickness of the grains and the existence of the twin variants was confirmed from CTEM images of perpendicular cuts.

Camelina sativa L is a cruciferous oilseed plant. This plant is cultivated as an oilseed crop mainly in Europe and in North America and over the past years the cultivation has arranged in our country. The analyzed oil is obtained from the seeds of Camelina sativa L, growing in Bornuur, Tuv province. The goal of this study was to determine the physical and chemical characteristics and fatty acids composition of Camelina sativa L seed oil cultivated in Mongolia. According to our analysis total lipid was determined 38.52 %, moisture 4.80 % and total mineral elements 4.02 %, respectively. Mineral elements in Camelina sativa L seeds contain calcium (0.56 %), phosphorous (1.22 %), potassium (1.39 %), magnesium (0.53 %) in dominated amounts; iron, zinc, manganese and copper in trace amounts. Eight nonessential amino acids in seeds of this plant with total amount of 75.9 % were identified; phenylalanine was detected in highest amount among the all identified amino acids, while lysine, tryptophan and arginine are followed. The following characteristics in Camelina sativa seeds oil were determined. The refractive index was 1.4774 at 20°C, the peroxide value of fresh oil was 0.03 meq H2O2 /kg, saponification value 185.8 mg KOH/g, iodine value 143.33 g J2 and acidic value 6.27 mg KOH /g. Carotenoid was determined as 16.77 mg %, by spectrometry in Camelina sativa seeds oil. The analysis of fatty acids composition showed that there are 12.5 % saturated and 87.5 % unsaturated fatty acids. In particular, oleic acid (C18:1) 14.0 %, linoleic acid (C18:2) 9.0 %, α-linolenic acid (C18:3) 10.5 % and gondoic acid (C20:1) 32.8 %, were composed the major part of unsaturated fatty acids. After Nile tilapia skin was preserved using the methods of freezing and dry salting, characteristics of skin gelatin were evaluated with regard to yield, rheological features and physical and chemical properties. Preservation was performed after filleting, at which time skins were either frozen (-18°C) for 7 days or salted (25°C) for 7 days. Although no differences (p > 0.05) were observed with respect to humidity, protein, lipid, ash and calcium levels, gelatin from salted skins had a higher concentration of iron relative to frozen skins. Further, twenty-three fatty acids were detected in salted skins compared with merely three found in skin derived gelatin. Of amino acids found, glycine, alanine, proline and arginine were the most abundant. Hydroxyproline abundance in salted and frozen skin gelatin were 8.76% and 8.71%, respectively. In addition, salted skin gelatins had a greater accumulation of saturated fatty acids and lower rates of monounsaturated fatty acids. Salted skin gelatin had the highest yield (18g × 100g-1), gel strength (200 g) and viscosity (19.02mPas) when compared to the yield (17g × 100g-1), gel strength (12.7g) and viscosity (9.16 mPas) of frozen skins. Results show that gelatin from dry salted skin had the best yield and also had relatively better rheological properties, more iron, and better coloration relative to gelatin obtained from frozen skins of Nile tilapia.

Vitamin A Palmitate-loaded Nanostructured Lipid Carriers were prepared by High Pressure Homogenization (HPH) technique. The influences of storage conditions such as time and temperature on the physical and chemical storage stability of VAP-NLCs were studied in details. Preparation and physicochemical properties of VAP lipid nanoparticles were investigated using various analytical equipments such as TEM, photon correlation spectroscopy (PCS), laser diffractometry (LD) and ultraviolet spectrophotometer. The respective optimal HPH pressure and cycles were 70MPa and 5 cycles, so VAP-NLC dispersions under the optimized condition gave rise to the entrapment efficiency (EE) of 99.8%, PI of 0.234, mean diameter of 144±1.7 nm (2% VAP loading capacity). In addition, VAP lipid nanoparticle has a distinct spherical shape, its particle sizes were around 60–330 nm according to VAP contents and zeta potential values -18~-23 mV. Furthermore, the pH of VAP-NLC dispersion was near to 7.0. This study showed that VAP-NLC could hopefully be applied for food products.

The mangabeira (Hancornia speciosa G.) is a native Brazilian species in the process of domestication. It has several potential uses. In recent years the populations of mangabeira have become fragmented and, to conserve their genetic resources, Embrapa Tabuleiros Costeiros has, since 2006, maintained a Mangaba Genebank, which currently has 299 individuals distributed across 27 accessions. In one of these accessions (CP), first fruiting was observed to occur at 13 months, indicating precocity. The current project was developed with the intention of morphologically characterizing the CP accessions and evaluating the extent of genetic diversity between genotypes, based on genetic markers associated with fruiting precocity. Morphological variation in crown and leaf shape, growth habit, total height, stem diameter and canopy height were investigated. For molecular characterization, 18 CP accession genotypes were used, all from Sergipe State, Brazil, and 11 ISSR markers were studied that generated 62 fragments with 91.4% polymorphism. The fruits have physical and chemical characteristics suitable for in natura consumption and also for processing. UPGMA dendrogram analysis showed the genotypes CP2 and CP6 to be most similar and CP10 the most divergent within the CP accessions. The results showed the existence of polymorphism, and genetic divergence among genotypes, thus reinforcing the importance of constant germplasm characterization, which guarantees information on gene sources for future use, while providing information concerning potential parents that can be used in breeding programs as well as the identification of duplicates.

A presente pesquisa teve por objetivo a obtenção e caracterização de produtos derivados do caju. Para tanto, produtos da castanha-de-cajueiro comum e do pedúnculo de caju do clone CCP76 foram processados e submetidos a análises físicas e químicas. Mediante prensagem da amêndoa de castanha-de-caju obtevese a torta parcialmente desengordurada (36,41% de proteínas, 26,57% de lipídios totais e 7,86% de fibra digestiva total) e o óleo (82,74% de ácidos graxos insaturados, predominando o ácido oléico - 60,30% e o linoléico - 21,53%). Do pseudofruto do caju foi obtido o suco clarificado e concentrado a vácuo (teor de ácido ascórbico de 966,13 mg/100 g de suco) e a fibra de caju (61,21% de fibra digestiva total). Concluiu-se que os produtos originários do caju apresentam elevado potencial para a elaboração de diferentes produtos alimentícios em virtude da diversidade e riqueza na composição química da castanha e do seu pseudofruto. OBTENTION AND CHARACTERIZATION OF THE MAIN CASHEW PRODUCTS Abstract The objective of the present research was the obtention and the characterization of cashew derived products. For that, products of common cashew nut and from the peduncles of cashew from the clone CCP76 were processed and submitted to physical and chemical analysis. By pressing the cashew nut it was obtained a partially defatted meal (36.41% of proteins, 26.57% of lipids and 7.86% total dietary fiber) and the oil (82.74% of unsaturated fatty acids, predominantly oleic acid - 60.30% and the linoleic - 21.53%). From cashew fruit it was obtained a clarified and concentrated juice (ascorbic acid content of 966.13 mg/100 g of juice) and cashew fiber (61.21% of total dietary fiber). It was concluded that the products originated from cashew showed high potential for the elaboration of different food products by virtue of the diversity and richness of the cashew nut and fruit chemical composition.

The purpose of this study was to characterize 26 banana accessions of the active genebank of Embrapa Cassava and Tropical Fruits (Brazil) for agronomic, physical and physicochemical characteristics. The plant height of the diploid 028003-01 and triploid Walha was short. Regarding the number of fruits and bunch weight, the triploids Caipira, Thap Maeo and the tetraploids Ambrósia and Calipso performed particularly well. Total carotenoid contents were highest in the diploids Jaran and Malbut. The total contents of flavonoid and polyphenol, two natural antioxidants, were highest in tetraploid Teparod. Wide genetic variability was detected for most agronomic, physical and chemical characteristics of the fruits of the banana accessions, enabling the planning of breeding for the development of hybrids with short stature, high yield, pest resistance and high carotenoid, flavonoid and/or polyphenol contents.

The objective of this research was to develop Mucuna pruriens jelly formula to be suitable and easily edible for Parkinson’s patients. The recipe of jelly consisted of M. pruriens seed dry extract as an active ingredient, gelatin, glycerin, citric acid, sodium benzoate, steviol, coffee flavor, and purified water. The jelly was analyzed for physical and chemical characteristics by microscopy and UV-Vis spectrophotometry. It was found that pH of the M. pruriens jelly was 4.77. The microscopic characteristics showed that the jelly texture had a consistent distribution of various components (2.53 particles/cm2), with different particles sizes. The observation of the physical macroscopic characteristics found that M. pruriens jelly had dark brown color, smooth surface, and elastic texture, hence suitable for consumption. The analysis of physical stability by observing the changes of appearance with naked eyes for 4 weeks at 30 °C and 4 °C showed that M. pruriens jelly had physical stability at 4 °C better than at 30 °C. The chemical analysis of L-dopa by UV-Vis spectrophotometry revealed that M. pruriens jelly contained a sufficient amount of L-dopa i.e. 542 mg/piece. This research could be developed to be a health product for Parkinson’s patients by taking 2 pieces per day in the morning since the therapeutic dose for Parkinson’s disease is 1000 mg of L-dopa total/day (single dose in the morning).

The objective of this study was to evaluate the effect of harvest at different times of day on the chemical and physical characteristics of vegetable-type soybean BRS 267 cultivar, harvested at the R6 stage (seed development) and to compare it with that on the grains harvested at the R8 stage (maturation). The pods of the BRS 267 cultivar were harvested at the R6 stage (at 8:00 AM, 12:00 AM, and 6:00 PM), the color parameters were evaluated, and the grains were analyzed for chemical composition, activity inhibitor trypsin, phytic acid content, starch, sugars, fatty acids, and isoflavones. No differences were observed among the different harvest times in terms of the chemical constituents of vegetable-type soybean BRS 267 cultivar harvested at the R6 stage. Isoflavones content did not change with different harvest times, and the aglycone forms (daidzein, glycitein, and genistein) were found in smaller quantities at the R6 stage compared to the R8 stage. The color of the pods of soybean BRS 267 cultivar, harvested at the R6 stage did not change with different harvest times. The grains harvested at the R6 stage had lower protein content, phytic acid, and sucrose and higher levels of lipids, carbohydrates, starch, glucose, fructose, stachyose, and linolenic acids than those collected at the R8 stage. The different times of harvest did not affect the quality of the vegetable-type soybean BRS 267 cultivar harvested at stage R6. Nevertheless, it is recommended to harvest in the morning, when the temperature is milder, like other vegetables, to facilitate and optimize its marketing and in natura consumption.
