The aim of the study was to examine whether there are non-tariff barriers (NTB s) in Poland’s trade with neighboring countries and in what amounts. For this purpose, a gravitational model of international trade was used, in which the parameters of selected variables were estimated in 4 agri-food sectors: agricultural raw materials, dairy products, food, fruit and vegetables, and meat products. The estimation of NTB s was the smallest in all sectors mentioned in Poland’s exports to Slovakia. The largest restrictions except for the dairy sector occur in Poland’s trade with Ukraine. The largest non-tariff barriers in Poland’s trade with neighbors occur in the agricultural raw materials sector, and the smallest in meat products. In addition, the model confirmed the veracity of the Linder hypothesis.

Consumption of dairy and meat products rich in valuable and essential nutrients holds a special place in the diet of the population of all ages. Along with sufficient and balanced consumption of meat and dairy products the issue of their security and quality is no less important. There is a trend of reducing the production volumes of beef and veal, caused by the decrease in demand for this type of meat, which is more expensive than pork and poultry. Industrial enterprises, producing finished meat products on the basis of cattle meat, should choose one of two strategies of resource provision: creation of the own raw material zone due to the local producers and transport links or formation of long-term import contracts. The production of pork and poultry is growing. Production of sausages and similar products from meat is reducing, which is caused by the fact that a part of households refuses to consume finished meat products with added preservation agents, coloring agents, color stabilizers, flavor intensifiers, soy, protein, etc. Taking this into account, national producers of finished meat products should review the approaches to security and quality of their produce. Otherwise, their main threats will be a further reduction of supply and loss of a market niche. An acute problem of the national dairy processing industry is the growing deficit of milk raw material. The main reason for insufficient production volumes of milk by agricultural producers is a low purchasing price offered them by national dairy processing enterprises. Therefore, it is necessary to stimulate domestic demand for the finished dairy products in order to revitalize investment activity of milk processing enterprises and to increase purchasing prices of milk raw products, in the first place, at the cost of special social care programs for low-income people. Key words: dairy-and-meat industry, beef and veal, pork, poultry meat, sausages and similar products from meat, gastronomic culture, milk raw materials, deficit, dairy products, milk products, SCSU, purchase prices, food aid.

Probiotic products available in the markets today, are usually in the form of fermented milk products. Dairy consumption have been limited by lactose intolerance and the cholesterol content in dairy products. Besides, traditions and economic reasons that limit the use of dairy fermented products in some developing countries promote the idea of using of alternative raw materials as vehicles for the probiotic agents. For these reasons meat products, cereals, legumes, fruits and vegetables may be potential substrates, where the healthy probiotic bacteria will make their mark, amongst consumers. To develop of these products is a key research priority for food design and a challenge for both industry and science sectors. In this study, information’s were given about non-dairy probiotic foods and highlighting the researches done in this field.

The results of Veterinary Expertise of food according to Zhytomyr Regional State Veterinary Laboratory (2014–2015rr.) And state laboratories Veterinary Expertise of household markets. Zhytomyr and Zhytomyr region. The main reason for culling offal 2014–2015 gg. Were invasive disease, including 658 (3.45%) patients in the study Fasciolosis products of slaughter cattle, 5033 –  echinococcosis (3.59%) and 413 (0.29%) – Metastrongillosis in pigs. In terms of safety and quality (content of toxic elements, pesticides, mycotoxins, antibiotics) sausage and cooked sausage highest, grade 1 and 2 met the regulatory requirements. For sanitary indicators in 4.4% of samples of meat products were isolated Escherichia coli in 11.1% – mesophilic aerobic and facultative anaerobic microorganisms. They can, under appropriate conditions, cause food poisoning, so sausage wares have been directed to disinfection by evaporation and translated into lower grades. We conducted bacteriological tests of meat samples availability of enterobacteria, MAFAnM (mesophilic aerobic and facultative anaerobic bacteria) and bacteria of the genus Salmonella immediately after slaughter showed that the number of microorganisms on the surface of the ink was: kind of Enterobacteriaceae 28,5 ± 1,1 × 105 CFU/cm2, mesophilic aerobic and optionally anaerobic microorganisms (MAPANM) – 38.8 ± 1.05 CFU × 103/cm2. Salmonella from carcass was not detected. The dairy product safety guarantor in Ukraine remains a system for monitoring sanitary hazards and residual amounts of toxic substances. In order to eliminate the risk of dangers to the consumer of dairy products, it is necessary to improve the control system of raw materials used for manufacturing products, according to safety indicators at all stages of production. Therefore, we consider it appropriate to draw the attention of specialists of veterinary medicine in the veterinary and sanitary conditions of milk and dairy products, gain control in government laboratories vetsanekspertizy household markets using antibiotics and in slaughtered animals to prevent a realization of substandard products, improve the sanitary condition of the storage and implementation of animal Products, prevention of invasive and non-contagious diseases in cattle and pigs.

The article raises the problem of ensuring metrological traceability of the measurement results of indicators of quality and nutritional value for food products and food raw materials: water (moisture), nitrogen (protein, crude protein), fat, ash and carbohydrates. The problem under consideration can be solved by applying reference materials of food composition, traceable to state primary measurement standards GET 173-2017 and GET 176-2019 and primary reference measurement procedures (PRMP), for attestation of measurement procedures and accuracy checking of measurement results. The article discusses the results of the PRMP development of mass fraction of fat, ash and carbohydrates in food products and food raw materials, as well as mass fraction of crude fat (oil content) in oil crops seeds and products based on them. The paper also presents metrological characteristics of reference materials of composition of dry dairy products, grain-milk dry porridges for nutrition of babies, grain dry porridges for nutrition of babies, egg powder, freeze-dried meat products, animal feed. The results of the work allow for building a chain of metrological traceability from GET 173-2017, GET 176-2019 and PRMP to routine measurement procedures, thereby ensuring the uniformity of measurements of nutritional value of food products.

The article analyzes the problems in the Russian milk and dairy products market in the context of the global economic crisis: overproduction of milk in the main exporting countries, lower purchase prices for raw milk, lower prices for commodities in the world and in Russia in 2020, trend to reduce demand for dairy products on the world market in medium term, a decrease in total demand for dairy products in the Russian market with a decrease in the purchasing power of the population, a change in the structure of consumption. An assessment of new opportunities and threats to the development of the industry was carried out: on the part of consumers — rising food prices, lower incomes; from the perspective of dairy producers — reduction in purchase prices, increased requirements for raw materials for the production of products with extended periods, labor shortages, the likely reduction in state support as a result of lower prices for hydrocarbons, attempts to regulate prices; on the part of processing enterprises — reduction of demand, reduction of prices for finished goods following world prices. The investment priorities in dairy cattle breeding and the main forms of improving state support for the industry, ensuring the effective adaptation of milk producers to new economic conditions, increasing the sustainability of the industry with increasing macroeconomic risks, are substantiated.

Current trends in meat and meat products exports are considered. The dynamics and structural changes in meat exports by types and degree of processing (beef and veal, pork, poultry, finished meat products) are analyzed. The paper proves that in recent years, only meat and edible poultry by-products have taken a competitive position in the world market. Accordingly, the dynamics of exports of this type of meat is positive, and the share of these products in the structure of exported meat is the largest (86.09%). Possible threats to the growth of import dependence on certain types of meat products, in particular, chilled and frozen beef and veal, pork, are indicated. The rating of the largest countries-importers of meat and meat products (by types) from Ukraine is built, their share in the structure of meat exports is determined. Changes in the geographical structure of exports have been studied, which indicate a low level of diversification of the geography of exports of certain types of meat (pork, beef). At the same time, a positive development of the geographical structure of poultry meat exports (exported to more than 100 countries) was revealed. Problems of the export potential development in the meat industry of Ukraine are revealed. In particular, the problems of livestock development (outdated technologies and production techniques that reduce the efficiency and productivity; inefficiency of the organization of purchase and processing of meat, which leads to reduced breeding in small businesses and households; inefficiency of state incentives, etc.) and industrial meat production (lack of raw materials, obsolescence of fixed assets and production technologies, poorly developed logistics, etc.). The solution of these problems requires: a systematic approach, which will encourage the cooperation of agricultural and industrial production, cooperation with importers of meat products and protection of domestic producers in the domestic and international markets, creating a favorable investment and information environment that will promote the meat industry development.

This article presents the results of studying the impact of housing and feeding conditions on broiler chickens of Hubbard RedBro cross, as well as the quality of products obtained when using floor and cage content, in a farm. It established that when receiving a mixed feed of own production using feed raw materials grown on a farm without the use of pesticides, a statistically significant decrease in potentially dangerous substances for animal health is recorded. Compared with factory feed, it has reduced the content of pesticides by 14 times, and mercury and arsenic by 24 times, cadmium by five times, and lead by ten times. The results of the study of economic indicators of growing Hubbard RedBro cross broiler chickens, as well as the chemical composition and quality of carcasses, indicated that there was no significant difference between the floor and cell conditions of keeping. Still, the use of a diet based on eco-feeds contributed to a statistically significant decrease in the concentration of toxic metals in the muscles of the poultry of the experimental groups. As a result, it found that the use of the studied compound feed in the diets of broiler chickens increased the indicators of Biosafety and ensured the production of environmentally safe ("organic") poultry meat products.
