Berries are wealthy in bioactive compounds like phenolic compounds and flavonoids that are deemed antioxidants and are great important to health. This research was performed to examine, recognize and compare bioactive compounds in certain types of berries and their antioxidant activity. The data show that blue berry, black berry and Egyptian black mulberry contain the highest content of most bioactive compounds such as phenolic compounds, flavonoids and tannins, while long mulberry and red currant berry have the lowest content for most of these compounds. They therefore, contain the highest value of antioxidant activity. The chemical composition of the berries varies depending on cultivar, variety, location of growth, environmental conditions and harvest time, as well as post-harvest treatments therefore the composition differed from berry fruit to another. Thus, berry fruits are very useful in nutrition to protect the body from many diseases because of its containment of these compounds, which act as free radicals scavenger that harm the body and thus rid the body of many harmful toxins.

Blackberry (Rubus fruticosus spp) is a fruit that has a significant antioxidant activity, due to its content in anthocyanins and antioxidant compounds. Emerging technologies are required as the thermoultrasound technique that ensures microbial reduction and release of compounds with antioxidant properties. The objective of this study was to evaluate changes in the antioxidant content and fatty acid profile of blackberry juice when it is subjected to conservation treatment (pasteurization and thermoultrasound). The blackberry juice and the extracted oil of blackberry juice with n-hexane (control, pasteurized and thermoultrasonicated) were evaluated in antioxidant activity, fatty acid profile and antioxidant content. The thermoultrasound juice had the highest (p < 0.05) amount of total phenols (1011 mg GAE/L), anthocyanins (118 mg Cy-3-GlE/L); antioxidant activity by ABTS (44 mg VCEAC/L) and DPPH (2665 µmol TE/L) compared to the control and pasteurized samples, as well as, as well as, oil extract of obtained of the thermoultrasound juice presented high antioxidant activity (177.54 mg VCEAC/L to ABTS and 1802.60 µmol TE/L to DPPH). The fatty acid composition of the oil extract showed the presence of myristic, linolenic, stearic, oleic, and linoleic acid, the fatty acid profile was similar in the different samples with the exception of stearic acid where this was higher in control sample. The thermoultrasound treatment can be an alternative to pasteurization treatments because keeps and releases antioxidant bioavailable compounds, preserving their fatty acids.

Extracts and their concentrates can be considered as a source of biologically active ingredients of food products and as food additives to increase the consumption of useful substances of berries. The benefits gained from their use lead to the development of advanced technologies that can allow them to be extracted from the feedstock without significantly compromising the biological activity from the feedstock. In this paper, we studied the content of antioxidants and their activity in concentrated extracts of cranberry (Vaccinium Oxycoccus), sea buckthorn (Hippophae rhamnoides L.), blackberry (Rubus fruticosus), viburnum (Viburnum opulus L.) and mountain ash (Sorbus aucuparia L.) berries. For all extracts, the total content of phenolic compounds, flavonoids and anthocyanins, antioxidant activity according to the DPPH method and iron-reducing antioxidant activity (FRAP) were determined. Concentrated extracts of viburnum contain the largest amount of phenolic compounds (9.3±0.3 mol HA/l), flavonoids (1.96±0.08 mol K/l) and anthocyanins (0.26±0.02 mol CG/l) among the studied extracts. There is also a high total content of phenolic substances and flavonoids in blackberry and rowan extracts (5.7 mol HA/l, 1.33 mol K/l and 4.7 mol HA/l, 192 mol K / l, respectively). The antioxidant activity of the extract of viburnum berries showed a directly proportional dependence on the content of biologically active compounds in it: DPPH-method-2.4 mg / ml; FRAP-method-39.99 mmol Fe2+ / kg. Also, high levels were found in concentrated extracts of blackberries, sea buckthorn and mountain ash. It is the extracts of viburnum, blackberry and mountain ash that are recommended to be used in the production of food products to enrich them with biologically active substances and give them antioxidant properties. Cranberry and sea buckthorn extracts can be used in combination with other extracts.

In Europe, blackberry (Rubus fruticosus L.) fruits are cultivated for fresh or processed products, and the leaves are collected for medicinal uses mainly from wild-grown populations. In this study, mineral composition, total phenolic content (Folin-Ciocalteu’s method), and total antioxidant capacity (ferric reducing ability of plasma, FRAP) of blackberries were determined during the harvest period. Leaves and fruits were harvested from wild-grown and cultivated plants at the same locations. Results showed that sampling time and growing place influenced the element composition. Concentration of Ca, Fe, K, Mg, P, Zn was significantly higher in cultivated fruits, however, content of Al, Cu, Mn was higher in wild-grown samples. Total phenolic content (TPC) and FRAP values in the leaves increased slightly during the vegetation period. Fruits were harvested at the same maturity stage, their TPC and FRAP level were not influenced by the harvest time. TPC and FRAP levels were higher in blackberry fruits than that in leaves. Significant differences were obtained for TPC and FRAP between wild and cultivated plants, both parameters were higher in the cultivated blackberries. Positive linear correlation was found between the TPC results of wild and cultivated blackberry leaves and fruits, and the same was true for FRAP values. Between TPC and FRAP also a strong positive relationship was observed both in leaves and fruits. Our findings suggest that cultivated blackberry fruits had higher mineral level and antioxidant properties than the wild ones; however, the antioxidant power of leaves from wild populations was similar to that of cultivated plants.
