This research aimed to examine the effect of a microbial transglutaminase preparation (Activa® GS, Ajinomoto Co., Inc, Japan) on the structure formation of the myofibrillar protein system of a deep-sea fish species – the giant grenadier – after the addition of various protein substrates. The low content of proteins and their low water-holding capacity in this fish, subjected to various processing methods, leads to significant losses in the initial mass and decreased gelation ability in the muscle tissue system. Various concentrations of transglutaminase were used but these did not ensure the restructuring of the initial muscle tissue of the grenadier. Additional protein substrates with different molecular weights and amino acid composition were added, including gelatin, milk casein, hydrolysates of the skin and milt of the fish, and whole bivalves, which were used to create a firm structure. It was shown that the introduction of gelatin and casein at a concentration of 5% led to the formation of a firm, thermostable structure under the action of the enzyme, while hydrolyzed proteins with low molecular weight at their various concentrations enhanced the expression of water and formation of the fluid consistency. The ability of gastrointestinal tract proteases (pepsin and trypsin) to digest did not depend on the formation of protein-to-protein cross-linking in these combined products. The influence on the growth of the Tetrahymena pyriformis ciliates test culture also showed the high degree of product availability. The technology of molded products based on fermented minced muscle tissue of grenadier with added casein, both in the form of semi-finished products and in the form of ready-to-eat products, was developed. To improve the overall understanding of the fish diversity and spatial patterns of major coral reefs in the South China Sea, fish assemblage composition, dominant species, biodiversity indices, and multivariate analysis of community structure were reported for four major coral reefs based on hand-line survey data in May and September 2018. A total of five orders, 21 families, 45 genera and 121 species of fish were recorded with Perciformes (78.5%) being the most diverse. The highest number (5) of dominant species was found near Chenhang Island while the lowest (2) number was detected at Zhubi Reef. The highest abundance index (7.21) occurred at Zhubi Reef, while the Shannon–Wiener diversity (4.80), Pielou’s evenness (0.81), and Simpson’s dominance (0.95) indexes were all highest at Qiliangyu Island. Based on cluster analysis and non-metric multi-dimensional scaling (NMDS), fish communities varied more spatially than seasonally. Our results led us to hypothesize that the habitat complexity and level of anthropogenic disturbance were the main factors affecting the composition of reef-dwelling fish on each coral reef. Topography was likely responsible for most variation in the spatial pattern of fish diversity.

The microalgae Phaeodactylum tricornutum (PT) contains valuable nutrients such as proteins, polyunsaturated omega-3 fatty acids (n-3 PUFA), particularly eicosapentaenoic acid (EPA) and some docosahexaenoic acid (DHA), carotenoids such as fucoxanthin (FX), and beta-glucans, which may confer health benefits. In a randomized intervention trial involving 22 healthy individuals, we administered for two weeks in a crossover manner the whole biomass of PT (5.3 g/day), or fish oil (FO) containing equal amounts of EPA and DHA (together 300 mg/day). In an additional experiment, sea fish at 185 g/week resulting in a similar EPA and DHA intake was administered in nine individuals. We determined the bioavailability of fatty acids and carotenoids and assessed safety parameters. The intake of PT resulted in a similar increase in the n-3 PUFA and EPA content and a decrease in the PUFA n-6:n-3 ratio in plasma. PT intake caused an uptake of FX that is metabolized to fucoxanthinol (FXOH) and amarouciaxanthin A (AxA). No relevant adverse effects occurred following PT consumption. The study shows that PT is a safe and effective source of EPA and FX—and likely other nutrients—and therefore should be considered as a future sustainable food item.

Since the earliest development of the eye (and vision) around 530 million years ago (Mya), it has evolved, adapting to different habitats, species, and changing environmental conditions on Earth. We argue that a radiation environment determined by the atmosphere played a determining role in the evolution of vision, specifically on the human eye, which has three vision regimes (photopic-, scotopic-, and mesopic vision) for different illumination conditions. An analysis of the irradiance spectra, reaching the shallow ocean depths, revealed that the available radiation could have determined the bandwidth of the precursor to vision systems, including human vision. We used the radiative transfer model to test the existing hypotheses on human vision. We argue that, once on the surface, the human photopic (daytime) and scotopic (night-time) vision followed different evolutionary directions, maximum total energy, and optimum information, respectively. Our analysis also suggests that solar radiation reflected from the moon had little or no influence on the evolution of scotopic vision. Our results indicate that, apart from human vision, the vision of only a few birds, rodents, and deep-sea fish are strongly correlated to the available radiation within their respective habitats.

The objective of this study was to establish the occurrence of Vibrio parahaemolyticus and Staphylococcus aureus in several species of sea fish and mussels (Mytilus galloprovincialis). The study included a total of 33 samples of frozen sea fish and 64 samples of fresh wild and farmed mussels purchased from the stores. V. parahaemolyticus was isolated and confirmed via PCR in 2 (6%) fish samples (Atlantic cod and Alaska pollock) and 20 (31%) mussel samples. S. aureus was also isolated and confirmed via PCR in 2 (6%) fish samples (Argentine hake and Atlantic cod). Significant differences were found in the total bacterial contamination between wild mussels (6.54 log cfu/g) and farmed mussels (6.69 log cfu/g). Total V. parahaemolyticus count did not show significant differences either between wild (4.45 log cfu/g) and farmed mussels (4.99 log cfu/g). In wild mussels the S. aureus count was found to be 4.50 log cfu/g, while in farmed mussels it was 3.14 log cfu/g. The occurrence of V. parahaemolyticus and S. aureus in fish and mussels presents a risk to the consumer’s health.

To improve public health, it is necessary to produce products that include natural ingredients with antioxidant properties. In foreign and domestic practice, there is a significant number of multifunctional additives of plant origin, which combine the ability to improve the antioxidant and flavoring properties of finished products. The development of the technology of meat and fish formed semi-finished products of the Ayurvedic direction is relevant today. The main raw materials for the production of batches of meat and fish formed were poultry meat, sea fish – hake, pollock, ocean saithe, haddock, which have the greatest amount of protein. As a result of a comparison of the chemical composition of fish and meat raw materials, organoleptic studies, it was found that the most optimal ratio was the samples in which chicken fillets and ocean fish fillets – haddock were used in a ratio of 50 : 50 %; pollock – In a ratio of 60 : 40 %. To extend the shelf life of the developed meat and fish formed, we have chosen extractive cardamom oils and a mixture of rosemary and thyme. Four variants of formulations were developed with the addition of extractive oils of cardamom and a mixture of rosemary and thyme in the amount of 2, 3, 5 and 8 % to the mass of raw minced meat. As a result of organoleptic studies, a comparative analysis of the average ratings of each sample using different amounts of fish raw materials, it was found that among the additives presented, the best is a mixture of extractive oils of rosemary and thyme with, namely, a sample of meat and fish formed semi-finished products using haddock fish fillets and a sample in the composition which includes pollock fillet with a blend of rosemary and thyme extractive oils. Also, microbiological studies of samples of meat and fish formed were carried out with the addition of a mixture of extractive oils of rosemary and thyme. Based on the results of microbiological studies, the safety and quality of the developed products have been confirmed.

This research is a design of a display cabinet cooling system with integrated energy from PLN electricity and solar power. This equipment is used for displaying marine fish and other fresh sea food in restaurants or cafes in support of Balinese culinary specialties, namely grilled fish and seafood which are very well known and can be a very extraordinary carrying capacity for Bali tourism. This cooling system is designed to be able to maintain the temperature of the cooling room (cabin) up to -5 oC. This is in accordance with the standards for storing fresh sea fish and sea food in a temperature range of -2oC to 2oC, where fish and sea food are still in a very fresh condition for an average of 1 week. Other standards to maintain product freshness also require room humidity between RH 90% – RH 95%. Furthermore, data collection on system performance is carried out using the commissioning test method to determine the initial performance achievement of the tool so that its shortcomings can be evaluated which will be developed and corrected in further research. From the research, it is found that the temperature achievement is very good, the solar and PLN integration system with the Automatic Transfer Switch (ATS) control system has also worked well where the switch occurs when the battery charging condition is below 30% or below 10V. However, something that has not been achieved is the humidity in this system, the average relative humidity (RH) is 50% so that the final condition of the product becomes dry on the surface of the fish. This relatively low humidity is due to the fact that it still relies on the humidity increase system by opening the cooler cabin door. In the next development, the right humidifier system will be designed for this display cabinet system.

Several volcanic islands and submarine volcanoes exist in the sea connecting the Izu-Bonin Islands with the Mariana Islands, with trenches and islands formed by the submergence of the Pacific Plate under the Philippine Sea Plate. Although designated as a Marine Protected Area (MPA) in December 2020, the seamounts’ biodiversity has not been sufficiently researched. Therefore, direct observations and specimen sampling were conducted on four seamounts in this area using a remotely operated vehicle (ROV), autonomous underwater vehicle (AUV), and baited cameras (BCs). The ROV survey was conducted for 2–4 days on each seamount and divided into shallow and deep areas. During the expedition, 20 orders and 51 families of 81 deep-sea fish species were observed, including several potentially undescribed species, new genus or species records from Japanese waters, new depth records, new ecological information, and several rare fishes. The fish fauna and biodiversity abundance clearly differed among the seamounts; the seamount with a hydrothermal vent had the lowest diversity among the four seamounts. In shallow water, 23, 7, and 12 species were recorded only by ROV, AUV, and BC, respectively, indicating that combining these methods is beneficial for understanding the fish fauna of seamounts.
