AbstractJams are preparations of fruits whose main preserving agent is sugar. Due to this, health concerns of consumers have resulted in a sugar reduction, and its replacement using alternative sweeteners and introducing new ingredients enhancing nutritional properties. In this study, four types of fruits jams (plum, strawberry, apple, and peach), with or without sugar, were prepared using two microalgae biomass, Arthrospira platensis (Spirulina) and Chlorella vulgaris, and Dunaliella salina extract as ingredients at different mix levels of concentrations, 0.10%–0.10%–0.05% respectively, for plum; 0.04%–0.00%–0.01 respectively, for strawberry; 0.06%–0.04%–0.00% respectively, for apple and 0.00%–0.01%–0.04% respectively, for peach. Physicochemical, rheological, and textural parameters were evaluated. Substitution of sugar/fructose syrup in the jam’s preparation caused changes in pH values, solid soluble content, and rheological and textural properties compared to sugar jams. Using sugar or sweeteners as isomalt, stevia and sucralose and microalgae biomass or extract showed significant changes in colour coordinates, however, these differences were not perceptible by the human eye. Jams containing microalgae biomass-extract showed higher G', G'', G*, and η* values than their corresponding control samples. All the jams presented weak-gel characteristics, distinguishing fruit jams. However, the results of weak-gel model analysis suggest that the influence of the different ingredients in the food system depends not only on their concentration but also on the interactions in the gel structure. Strawberry and apple jams showed no significant differences between microalgae biomass-extract samples and control samples, for both sugar and no sugar added jams being the best-obtained samples.

Aim. To determine the response of the populations of Erysipelothrix rhusiopathiae and Leptospira interrogans pathogenic microorganisms to the impact of broadleaf cattail (Thypha latifolia) root diffusates. Methods. Aqueous solutions of T. latifolia root diffusates were sterilized by vacuum fi ltration through the fi lters with 0.2-micron pore diameter. The experimental samples contained cattail secretions, sterile water, and cultures of E. rhusiopathiae or L. interrogans. The same amount of sterile water, as in the experimental samples, was used for the purpose of control, and the same quantity of microbial cultures was added in it. After exposure, the density of cells in the experimental and control samples was determined. Results. Root diffusates of T. latifolia caused an increase in cell density in the populations of E. rhusiopathiae throughout the whole range of the studied dilutions (1:10–1:10000). In the populations of the 6 studied serological variants of L. interrogans spirochetes (pomona, grippotyphosa, copenhageni, kabura, tarassovi, canicola), the action of broadleaf cattail root diffusates caused the decrease in cell density. A stimulatory effect was marked in the experimental samples of the pollonica serological variant of leptospira. Conclusions. The populations of E. rhusiopathiae and L. interrogans pathogenic microorganisms respond to the allelopathic effect of Thypha latifolia by changing the cell density. The obtained results provide the background to assume that broadleaf cattail thickets create favorable conditions for the existence of E. rhusiopathiae pathogen bacteria. The reduced cell density of L. interrogans in the experimental samples compared to the control samples observed under the infl uence of T. latifolia root diffusates suggests that reservoirs with broadleaf cattail thickets are marked by the unfavorable conditions for the existence of pathogenic leptospira (except L. pollonica).

<P>Background: The high amounts of fat, sugar and calorie existing in dairy desserts can lead to increase the risk of health problems. Therefore, the development of functional and dietary forms of these products can help the consumer health. </P><P> Objective: This study aims to investigate the effects of &#954;-carrageenan, modified starch and inulin addition on rheological and sensory properties of non-fat and non-added sugar dairy dessert. </P><P> Methods: In order to determine the viscoelastic behavior of samples, oscillatory test was carried out and the values of storage modulus (G′), loss modulus (G″), loss angle tangent (tan &#948;) and complex viscosity (&#951;*) were measured. TPA test was used for analysis of the desserts’ texture and textural parameters of samples containing different concentrations of carrageenan, starch and inulin were calculated. </P><P> Results: All treatments showed a viscoelastic gel structure with the storage modulus higher than the loss modulus values. Increasing amounts of &#954;-carrageenan and modified starch caused an increase in G′ and G″ as well as &#951;* and a decrease in tan &#948;. Also, firmness and cohesiveness were enhanced. The trained panelists gave the highest score to the treatment with 0.1% &#954;-carrageenan, 2.5% starch and 5.5% inulin (sucralose as constant = 0.25%) and this sample was the best treatment with desirable attributes for the production of non-fat and non-added sugar dairy dessert. </P><P> Conclusion: It can be concluded that the concentration of &#954;-carrageenan and starch strongly influenced the rheological and textural properties of dairy desserts, whereas the inulin content had little effect on these attributes.</P>

Lactic Acid Bacteria (LAB) have a great potential as bio-preservatives. The live cells and supernatant Lactococcus lactis subsp. lactis induced bacteriological changes in Onchorhynchus mykiss fillet by spray and immersion methods was studied during vacuum- packaged storage at 4 °C for 15 days. 40 kg of O. mykiss were prepared from a culture farm in Oshnavieh (Northwest Iran) and 112 fillet samples (100g) were prepared by aseptic method. L. lactis subsp. lactis (PTCC1336) bacteria was cultured in MRS culture medium. Its supernatant (2%, 4%) was extracted and 106 CFUml-1 dilutions of LAB were prepared and tested on the fillets to enhance their shelf life. All samples were evaluated regarding to growth of psychrotrophic, psychrophilic, mesophilic bacteria, molds and yeasts. Four characteristics including of odor, flavor, texture and color of fillets after and before cooking were evaluated for sensory analysis on days 1, 5, 10 and 15 and compared with control samples. The 4% supernatant and live bacteria were more effective than that of 2% and control (P<0.05). The amounts of corrosive bacteria in 4% and live cells in storage time were less than human consumption limits (7log CFUg-1), whereas in control and 2% supernatant treatments were more than that limits. The results showed that increasing the percentage of supernatant was more effective on bacteriologic factors and enhanced sensory characteristics of rainbow trout fillets (P<0.05).

The rise of global attention toward sustainability and sustainable development (SD) has provided increased incentives for research development and investment in these areas. Food systems are at the center of human needs and global population growth sustainability concerns. These drives and the need to provide quantified support for related investment projects led to the proliferation of sustainability metrics and frameworks. While questions about sustainability definition and measurement still abound, SD policy design and control increasingly need adequate quantified support instruments. This paper aims to address this need, contributing to a more consistent and integrated application of food system sustainability metrics and quantified management of the implemented solutions. After presenting the relationships between sustainability, resilience, and robustness and summarizing food system sustainability quantification developments so far, we expose complexity sciences’ potential contributions toward SD quantified evaluation, addressing prediction, intangibles, and uncertainty issues. Finding a paramount need to make sense and bring existing sustainability metrics in context for operational use, we conclude that the articulated application of multiple and independent modeling approaches at the micro, meso, and macro levels can better help the development of food SD policies and implemented solution quantified management, with due regard to confidence levels of the results obtained.

Abstract Nonchemical high-pressure steam treatments have been intensively researched and commercialized to produce chemical-free wood products with enhanced properties. However, the utilization of high-pressure steam involves vapor-phase reactions using high-temperature steam generated at the expense of high energy input. In this research, influences of reaction media (steam and hot-compressed water) and temperature (100°C and 140°C) during thermal treatment on physical properties and drying behavior of yellow-poplar (Liriodendron tulipifera) heartwood were compared. The length, width, and thickness of the samples were 22.53 mm, 17.18 mm, and 16.72 mm, respectively. After the treatment, the samples were dried under an isothermal temperature condition of 105°C. Data on moisture content and time of drying from drying experiments were fitted with unsteady-state molecular transport equations to calculate overall liquid diffusion coefficients. Dimensions, weight, and true volume of samples were measured for green, thermally treated, and dried samples and the values were used to calculate selected physical characteristics. Additionally, selected mechanical properties were evaluated for samples conditioned to 13 percent moisture content. Results showed that intensified hot-compressed water-treated and control samples had the highest and lowest saturated moisture contents (101% and 44%), respectively, immediately after treatments. Intensified steam-treated and control samples had the highest and lowest total porosity (95% and 82%), respectively. Furthermore, mild hot-compressed water-treated samples showed the greatest compression strength (47.8 MPa) at 13 percent moisture content. Except for steam treatment at 140°C, other treatments significantly decreased the diffusion coefficient. Collectively, samples treated with hot-compressed water at 100°C showed the most improved mechanical properties.

Composite millet palm jaggery (CMPJ) muffins were prepared by replacing all-purpose flour with composite millet flour at different level (0:100, 50:50, 30:70) and replacing cane sugar completely with palm jaggery. CMPJ muffins and control muffins with cane sugar (APFS) were analyzed for Physico-sensory and textural properties (TPA). Incorporation of millet flour and wheat flour at the ratio 70:30 resulted in an acceptable product with good sponginess which is one of the desirable properties of muffins. The moisture content of muffins prepared with palm jaggery was found to be higher (21.84±0.01%) than muffins prepared with sugar (19.58 ±0.01%). The lightness of the crumb and crust (37.58±0.08, 28.89±0.11) of CMPJ muffins were found to be lesser than control muffins (58.34±0.20, 35.30±0.99), whereas redness of crumb and crust was found more in CMPJ muffins (9.18±0.07, 12.12±0.22) than APFS muffins (6.56±0.15, 10.61 ±0.15) which is due to the brown colour of palm jaggery. The muffins with jaggery had lower pH and sensory score and higher water activity (aw) than muffins with sugar. TPA results showed that CMPJ (6270±7.2 g) were slightly harder than APFS (4729±4.7). Microbial analysis (Total plate count, Yeast and mold count) for CMPJ muffins was found to be safe for consumption upto 12 days without added preservative. It is concluded that CMPJ muffins (without preservative) can be an alternative to APFS without affecting the quality parameters of the product.

In this work the suitability of several plant species for phytoremediation under natural and artificially installed conditions was studied. Brassica napus, Medicago sativa, Zea mays, Triticum aestivum, and Hordeum vulgare were grown in pots with sewage sludge from Sindos Main WWTP in Thessaloniki and from Sindos Industrial WWTP in Thessaloniki, Greece. The first series of experiments included comparing measurements of various parameters for the above mentioned plants and the sludge to those for control samples (the same plants growing in compost). It was shown that shoot growth was less reduced in T. aestivum and H. vulgare than in the other plant species studied. B. napus had lower germination tax, followed by M. sativa with the lowest germination tax. Generally B. napus, giving less biomass production than Z. mays and T. aestivum, is characterised by a higher ability to accumulate heavy metals like Cd, Cu, Ni, Pb, Zn, Cr, As and Hg. The second series of experiments included comparing measurements of various parameters of B. napus grown in sludge and treated each 7 days with metal solutions of Ni, Zn and Pb containing 10-2mg/l, 10-4mg/l, 10-6mg/l of each metal, to those for control plants treated with double distilled water. Results showed that shoot growth of B. napus were increased at treatments with lower concentrations of metals (10-6 mg/l) and control (treatment with d-distilled water). At the same time uptake of metal ions was increased with the concentration of the solution, i.e. at higher concentrations (10-2 mg/l). It is truly for Pb and Zn, transfer coefficient TC of which (indicates a plant’s potential to concentrate a metal) was quite high 15 % and 7 % correspondingly. It was noticed that B. napus has high ability to accumulate Cr, from the other hand it did not accumulate Ni (at present case).

Subsamples of termite mound soil used by chimpanzees for geophagy, and topsoil never ingested by them, from the forest floor in the Mahale Mountains National Park, Tanzania, were analysed to determine the possible stimulus or stimuli for geophagy. The ingested samples have a dominant clay texture equivalent to a claystone, whereas the control samples are predominantly sandy clay loam or sandy loam, which indicates that particle size plays a significant role in soil selection for this behaviour. One potential function of the clays is to bind and adsorb toxins. Although both termite mound and control samples have similar alkaloid-binding capacities, they are in every case very high, with the majority of the samples being above 80%. The clay size material (<2 μm) contains metahalloysite and halloysite, the latter a hydrated aluminosilicate (Al2Si2O4·nH2O), present in the majority of both the termite mound soil and control soil samples.Metahalloysite, one of the principal ingredients found in the pharmaceutical Kaopectate™, is used to treat minor gastric ailments in humans. The soils commonly ingested could also function as antacids, as over half had pH values between 7.2 and 8.6. The mean concentrations of the majority of elements measured were greater in the termite mound soils than in the control soils. The termite mound soils had more filamentous bacteria, whereas the control soils contained greater numbers of unicellular bacteria and fungi.
