Enhancing pork flavor and fat quality with swine raised in sylvan systems: Potential niche-market application for the Ossabaw hog

Our global food supply becomes more vulnerable as we continue to lose diverse genetic resources. The Ossabaw hog is a feral breed that is unique to North America, a distant relative to the renowned Iberian hog and is considered an endangered swine breed. The objective of our farmer participatory project was to examine the meat and fat characteristics of Ossabaw hogs raised in alternative management systems for niche-market application. At one farm, eight Ossabaw pigs were randomly assigned to a grass pasture and fed a free choice corn–soy (CS) ration or placed in a mixed hardwood forest plot and provided free choice peanuts in the shells (P), alfalfa pellets (A) and mast from the mixed hardwoods (diet collectively referred to as PAM). The two diets had no effect on Ossabaw production data or pork quality characteristics; however, fat profiles were altered. Ossabaws weighed approximately 70 kg when harvested at 400 days and produced chops with small loin eyes (21–23 cm2) and minimal evidence of intramuscular fat deposits (1%). The unsaturated fatty acid (USFA) to saturated fatty acid (SFA) ratio improved from 1.6 to 2.6 (P<0.01) as a result of feeding the PAM diet. Forest-finished Ossabaw pork was considered more flavorful by food critics and renowned chefs than that of conventionally fed animals. Mast from hardwoods offers the possibility of enhancing pork flavor for niche markets and using a renewable forest resource as a food source. For farm two, eight Ossabaw gilts and eight crossbred progeny (from European breeds) were randomly assigned to one of the two dirt-lots and fed free choice a CS ration or PA diet (same ration as mentioned above with no mast). Ossabaw hogs grew nearly one-third as fast as the crosses and weighed approximately 80% of the crosses' harvest weight at twice their age. Loin eye areas of the crosses were nearly twice as large as the Ossabaws while the subcutaneous back fat deposition was nearly half. Compared to the CS diet, the PA ration decreased SFA by 23% while polyunsaturated fatty acids (PUFA) increased by 60%. The USFA to SFA ratios improved from 1.5 to 2.2 (P<0.01) when PA diets were fed. Differences (P<0.05) in USFA profiles were observed for breed effects; Ossabaws had 8% higher levels of monounsaturated fatty acids and 18% lower PUFA levels than the crosses. When adjusted for breed effects, no differences in sensory characteristics for the CS versus PA diets were detected by a trained panel. Ossabaws were more flavorful than the crosses (2.3 versus 1.6); (P<0.05).

In order to establish a chemical fingerprint of vanilla diversity, thirty samples of V. planifolia J. W. Moore and V. tahitensis G. Jackson cured beans from seven producing countries were examined for their aroma and fatty acid contents. Both fatty acid and aroma compositions were found to vary between vanilla species and origins. Vanillin was found in higher amounts in V. planifolia (1.7-3.6% of dry matter) than in V. tahitensis (1.0-2.0%), and anisyl compounds were found in lower amounts in V. planifolia (0.05%) than in V. tahitensis (1.4%-2.1%). Ten common and long chain monounsaturated fatty acids (LCFA) were identified and were found to be characteristic of the vanilla origin. LCFA derived from secondary metabolites have discriminating compositions as they reach 5.9% and 15.8% of total fatty acids, respectively in V. tahitensis and V. planifolia. This study highlights the role of the curing method as vanilla cured beans of two different species cultivated in the same country were found to have quite similar fatty acid compositions.

The aim of this research was to determine fatty acid profiles in piglet brain, skin, and muscle, and in the milk of sows fed fat with different saturation grades during gestation and lactation. At 42 days of gestation, 50 multiparous sows were randomly allocated to one of two treatments, namely a diet containing pork lard (n = 25) and a diet containing soybean oil (n = 25). The fats were provided at 3.6% during gestation and at 4% during lactation. The experimental diets were offered through the weaning of the piglets. The fatty acid profile of the milk was determined fourteen days after parturition. At weaning (21 days postpartum) and seven days later, one of the piglets (n = 64) from 16 sows allocated to each treatment was selected at random to determine fatty acid profiles in brain, skin and muscle. Saturated and monounsaturated fatty acids were higher in the diet with pork lard than in that with soybean oil, in which the polyunsaturated fat content was higher. A higher saturation of fatty acids was found in milk from the sows that consumed pork lard, which contained more saturated fatty acids than the milk from sows that consumed soybean oil. The fatty acid profiles in muscle and skin of the piglets were affected by the diet of the sows. However, the fatty acid profile of the piglets’ brains was not affected by the diet of their mothers. The fatty acid composition of newly emerged Ips paraconfusus Lanier shows no sexual dimorphism and is approximately as follows: C14:0, 0.5%; C16:0, 23.0%; C16:1, 6%; C18:0, 3%; C18:1, 55%; C18:2, 9%; C18:3, 2%. Both sexes, but particularly the female, use up fatty acids, particularly the monounsaturated acids, during reproduction. Isotope from 1-14C-acetate injected into newly emerged females appeared in all saturated and monounsaturated fatty acids within 30 min. There was evidence of de novo synthesis of C14:0 and C16:0, chain elongation of C16:0 to C18:0, and desaturation of C16:0 and C18:0 to yield C16:1 and C18:1 respectively.

Genetic parameters were estimated for fatty acid composition of subcutaneous beef fat of 1573 animals which were the progeny of 157 sires across seven breeds grown out on pasture and then finished on either grain or grass in northern New South Wales or in central Queensland. There was genetic variation in individual fatty acids with estimates of heritability for the proportions of C14 : 0, C14 : 1c9, C16 : 0, C16 : 1c9, C18 : 0 and C18 : 1c9 fatty acids in subcutaneous beef fat of the order of 0.4 or above. Also substantial correlations between some fatty acids were observed. Genetic correlations between fatty acids and fat depth at the P8 site suggested that much of the genetic variation in fatty acid composition was related to changes in fatness. Selection for decreased fatness resulted in decreased proportions of C18 : 1c9 with concomitant increases in C18 : 0, C14 : 0 and C16 : 0. This suggested that selection for decreased fatness at a given weight will result in a decrease in the proportions of monounsaturated fatty acids in the subcutaneous fat in the carcass with a corresponding increase in the proportions of saturated fatty acids.

Fatty acid profile and the related nutritional indices of the breast, thigh and drumstick muscles were studied at three farms, suppliers of ROSS 308 line of broilers, slaughtered at the age of 42 days. The proximate chemical composition of the commercial slaughter cuts revealed contents between 16.26�22.78% for proteins and 1.80�7.45% for total lipids, the breast having the highest protein and ash content and lowest values for fat and moisture. The obtained values were mainly affected by region (P[0.001). Meat fatty acid profile was affected (P[0.001) by commercial slaughter regions (CSR) and by the interactions between CSR and supplier farms (Farm A, B, and C) at different levels. The obvious findings highlighted that Farm B supplied broilers with a delivered higher content of beneficial fatty acids (LA, LNA, AA, EPA, and DHA) in breasts and drumstick, while for thigh, Farm C had the best results. The content of total saturated fatty acids (SFAs), monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (MUFAs) had the highest level in the thigh (P[0.001).

Dolabella auricularia are found in the waters of Indo - Pacific and has active compound in health, which until now is still limited information about nutritional content from sea hare. The aim of this research were to determine morphometric and chemical characteristic D. auricularia which includes the proximate, amino acids, fatty acids and minerals. The composition of fatty acid were measured by gas chromatography (GC), amino acids were measured by high performanced liquid chromatography (HPLC), and mineral was measured by atomic absorption spectrophotometer (AAS). The sea hare contained 9 essential amino acids and 6 non essential amino acids. The highest essential amino acid was arginine (1.61%) while the highest non essential amino acids was glycine (3.02%). Sea hare contained 26 fatty acids such as saturated fatty acids 5.33%, monounsaturated fatty acids 2.11% and polyunsaturated fatty acids 4.10%. The high mineral was calcium 68100 mg/kg.

This study studied the content and composition of the total lipid, lipid classes and fatty acids in 13 brown seaweed Sargassum species collected from Con Dao and Van Phong, Vietnam. The total lipid has a low content and varies among species from 0.10–1.70% of the fresh weight. From 13 species, seven lipid classes including polar lipid (Pol), free fatty acids (FFA), sterol (ST), hydrocarbon and wax (HW), triacylglycerol (TG), diacylglycerol (DG), and monoalkydiacylglycerol (MADG). Using the GC-FID technique, we have identified 29 fatty acids classified into 3 groups of saturated fatty acid, monounsaturated fatty acids, polyunsaturated fatty acids with an average content of 44.93%, 24.57% and 27.44%, respectively. Among those, many value fatty acids have been detected with high content such as C18:3n-3, C20:4n-6, 20:5n-3, and 22:6n-3. The lipid of 13 brown seaweed Sargassum species also fully contains omega-3,6,9 fatty acids with the content of 9.28%, 16.28% and 16.63%, respectively.

Abstract In this report, we have compared the fatty acid composition of the endemic Lake Baikal amphipods Ommatogammarus albinus (Dybowsky, 1874) and Parapallasea lagowskii (Dybowsky, 1874). Specimens were sampled using the deep-water manned submersible “Mir” at the oil-methane seeps of Cape Gorevoy Utes and at a hydrothermal vent in Frolikha Bay. High levels of monounsaturated fatty acids and relatively low levels of saturated and polyunsaturated fatty acids were detected in the studied amphipods, with oleic and palmitic acid representing the main fatty acid components. The habitat of the amphipods exerted a profound effect on their fatty acid profile: the amphipods of Gorevoy Utes contained higher levels of linolenic 18:3n3 and arachidonic 20:4n6 acids, while the amphipods of Frolikha Bay contained higher levels of eicosapentaenoic 20:5n3 and docosahexaenoic 22:6n3 acid. Based on these findings, we suggest that the amphipods’ diet in different areas of Lake Baikal determines their fatty acid composition.

In recent years, there has been growing interest in the biomass of unicellular algae as a source of valuable metabolites. The main limitations in the commercial application of microbial biomass are associated with the costs of production thereof. Maize silage is one of the main substrates used in biogas plants in Europe. The effects of sterilized agricultural liquid digestate (LD) from methane fermentation of maize silage on the growth rates, macro and micronutrient removal efficiency, lipid content, and fatty acid profile in Auxenochlorella protothecoides were investigated. The results indicate that A. prothecoides can proliferate and accumulate lipids with simultaneous reduction of nutrients in the 1:20 diluted liquid digestate. The rate of nitrogen and phosphorus removal from the liquid digestate was 79.45% and 78.4%, respectively. Cells growing in diluted liquid digestate exhibited the maximum lipid content, i.e., 44.65%. The fatty acid profile of A. prothecoides shows a decrease in the content of linolenic acid by 20.87% and an increase in oleic acid by 32.16% in the LD, compared with the control. The liquid digestate changed the content of monounsaturated fatty acids and polyunsaturated fatty acids. The cells of A. protothecoides growing in the liquid digestate were characterized by lower PUFA content and higher MUFA levels.
