Enzymatic browning affects the sensory and nutritional quality of fresh-cut apples and limits their shelf-life. Yerba mate ( Ilex paraguariensis), a plant widely consumed in South America as an infusion, could potentially be used in minimally processed fruits and vegetables as a natural additive to prevent browning, due to its high content of phenolic compounds with antioxidant capacity. The effects of the concentrations of ascorbic acid, citric acid, and yerba mate in an aqueous dipping solution on the instrumental color parameters, antioxidant capacity, and sensory quality of “Granny Smith” fresh-cut apples were modeled and the solution was optimized to obtain treated apples with maximum antioxidant capacity and minimum browning, without affecting the natural flavor of the fruits. The optimal composition obtained (1.2% yerba mate  + 0.9% citric acid + 1.0% ascorbic acid) increased the antioxidant capacity of the apples by 36%. The sensory acceptability test carried out on the “Granny Smith” fresh-cut apples treated with the optimal dipping solution showed that more than 78% of the surveyed consumers liked the color, flavor, and texture of the apples.

To assess ameliorative effects of Ascorbic acid (AA) and Allium sativum ethanol extract (ASEE) on renal parenchyma of gentamicin-induced nephropathic rats. Thirty Wistar rats (weighing between 180-205 g) were randomly divided into five groups (A-E).  These include Group A administered with 0.9% Normal Saline (0.5 ml/kg body weight (b.w.)), Group B administered with gentamicin (GM, 200 mg/kg b.w.) intraperitoneally (i.p.), Group C administered with GM (200 mg/kg b.w.) i.p. and AA (200 mg/kg b.w.) orally, Group D administered with GM (200 mg/kg b.w.) i.p. and ASEE (200 mg/kg b.w.) orally and Group E administered with GM (200 mg/kg b.w.) i.p. and AA (200 mg/kg b.w.) orally and ASEE (200 mg/kg b.w.) orally. All administrations were done once daily for a period of ten (10) days. The body weight of study animals was recorded at the beginning and end of study period. After the study period, renal tissue of study animals was harvested, weighed, processed, stained using H & E technique. Stained sections were examined under microscope for histopathological changes within the renal parenchyma and were scored using image-J software. The results of this study showed that exposure to GM results into significant (P < 0.05) reduction in body and renal tissue weight. However, therapeutic exposure to AA and ASEE either as individual or combined treatment regimen culminated into relatively null body and renal tissue weight loss among treatment groups C-E. In addition, exposure to GM precipitates prominent histopathological changes within renal parenchyma of study animals.  As observed with body and renal tissue weight changes, treatment with AA and ASEE also comparatively ameliorate GM-induced nephropathy within renal parenchyma of study animals in treatment groups. The findings of this study therefore showed that AA and ASEE exhibit ameliorative effect on the renal parenchyma of gentamicin-induced nephropathic rats either as distinct or combined treatment regimen.

The effects of 1-methylcyclopropene (MCP), sanitizer and their combination on ethylene action, microbial growth and storage life of fresh-cut cilantro were studied. Fresh cilantro was treated with 1.5 μL·L-1 MCP for 18 hours at 10 °C. The treated and nontreated cilantro leaves were cut and washed in water, chlorine, and mixed solution of sodium chlorite and citric acid (SANOVA). Samples were dried, packaged with 29.2μmol·kg-1 Pa s oxygen transmission rate films, and stored for 14 days at 5 °C. Results indicated that MCP affected respiration rate of fresh-cut cilantro and the headspace gas composition (O2 and CO2) of sample packages. The combined treatment had lower tissue electrolyte leakage and ethanol concentration, and delayed color changes during storage. SANOVA and the combination of MCP and SANOVA were effective in reducing aerobic microbial population and coliform population. Samples treated with MCP and SANOVA had good quality with high overall quality score at the end of storage.

This study investigates the antioxidant components (total carotenoids, lycopene, β-carotene, total phenols, flavonoids, ascorbic acid and total vitamin C) as well as the hydrophilic and lipophilic antioxidant activities (HAA and LAA) of tomato genotypes consisting of one ordinary cultivar Rio Grande and the two high-lycopene breeding lines HLT-F71 and HLT-F72. The correlation of nutritional value to L∗, a∗, b∗ colour indexes and a∗/b∗ ratio was also investigated in whole and fresh cut tomato fruits. Except for β-carotene content, significant differences were found among cultivars for antioxidants. The berries of both HLT-lines recorded higher antioxidant contents, HAA and LAA (TEAC and FRAP assays) than Rio Grande. Under controlled conditions, HLT-F72 reached the highest levels of total carotenoids (165.5 mg β-ca Eq per kg fw), lycopene (150.1 mg per kg fw) and total phenolics (549.7 mg GAE per kg fw). However, HLT-F72 exhibited the highest levels of ascorbic acid (193.3 mg per kg fw), total vitamin C (271.6 mg per kg fw) and flavonoids (450.5 mg RE per kg fw). Line HLT-F71 showed the highest HAA (148.0 µM Trolox per 100 g fw and 4.2 mM FRAP per g fw) and LAA values (258.5 µM Trolox per 100 g fw and 3.2 mM FRAP per g fw respectively). Colour readings in red ripe fresh cut tomato berries particularly a∗, b∗ and the ratio a∗/b∗ could represent an indicator not only for lycopene but also for other phytochemicals and resulting antioxidant activities. HLT-Lines may serve as a starting point for the development of semi-determinate growth habit tomato cultivars with higher functional quality.
