The aim of this study was to develop a chitosan/cellulose nanofibril (CNF) nanocomposite and evaluate its effect on strawberry’s postharvest quality after coating. From the results of color, thickness, and scanning electron microscopy (SEM) and permeability to water vapor analyses, the best film formulation for coating strawberries was determined. Three coating formulations were prepared: 1% chitosan, 1% chitosan + 3% CNF, and 1% chitosan + 5% CNF. The strawberries were immersed in the filmogenic solutions and kept under cold storage (1 ± 1°C). The color of the film was not affected by increased concentration of cellulose nanofibrils; however, the thickness and water vapor permeability were affected by the CNF addition. The coating with the highest CNF concentration performed better in reducing fruit mass and firmness loss. The color was positively influenced by the addition of the coating, regardless of formulation, as well as soluble solid content, PG enzymatic activity, and the fruit appearance. The pH and titratable acidity showed no significant difference among treatments. It was observed that the vitamin C, phenolic compounds, and anthocyanin content, as well as the PAL activity and the antioxidant activity (except for % protection), were affected by chitosan coating, however not by the addition of CNFs.

In this study, we fabricated polyvinyl alcohol (PVA)/chitosan (CS) bilayer films by casting and investigated the effects of preparation conditions and CS content (2, 2.5, or 3 wt.%) on the ability of these films to preserve packaged strawberries. The best performance was achieved at a CS loading of 2.5 wt.% (ultrasound time, 25 min); the strain and stress values were 143.15 ± 6.43% and 70.67 ± 0.85 MPa, respectively, oxygen permeability was 0.16 ± 0.08 cm2·m2·day−1·MPa−1, water vapor permeability was 14.93 ± 4.09 g·cm−1·s−1·Pa−1, and the shelf life of fresh strawberries packaged in the PVA/CS 2.5 wt.% bilayer film was determined to be 21 days at 5 ± 2 °C and a relative humidity of 60 ± 5%. Treatment with PVA/CS bilayer films prevented the decrease in the firmness of strawberries during storage (21 days). The evaluated physicochemical parameters (weight loss, decay, firmness, titratable acidity, soluble solid content, ascorbic acid content, and color) indicated that treatment with PVA/CS bilayer films led to better maintenance of the fruit quality. We believe that our study makes a significant contribution to literature because it paves the way to the fabrication of smart packaging materials and facilitates the commercialization of fresh strawberries as an important health food.

The objective of this study was to develop and characterize a pH indicator based on chitosan (C) and starch (S) including anthocyanins from eggplant to indicate food quality changes through the detection of changes in the pH of packaged food products. Anthocyanins were extracted with solvents including ethanol and water (7:3, V:V) (EgP-E) and water (EgP-W) in acidic pH. The pH indicator films were obtained incorporating anthocyanin as 1.5 g extract/100 g film solution. The optical, mechanical and water vapor permeability properties were used to characterize the pH indicator films. The total monomeric anthocyanin content and phenolic content of extract solutions were also determined. Color variations of pH indicator films were measured by a colorimeter after immersion in different pH buffers (pH 2.0–10.0). Initially, dried C films and S based films were observed in a violet color and a magenta color, respectively. C and S films with anthocyanins showed color variations from pink (in acidic pH) to bluish-green (in neutral pH) and to violet (in basic pH) in different pH values. The water vapor permeability of films with anthocyanins was higher than films without anthocyanins. Additionally, C and S based films including anthocyanins extracted with water showed better permeability values. Abstract The accumulation of petroleum polymers compromises biodiversity and causes environmental problems. Nanocellulose enhances biodegradability and can improve the physical-mechanical performance of materials. The objective was to produce and characterize hybrid films composed of bacterial cellulose (BC) and plant nanocellulose from Eucalyptus (Euc) or Pinus (Pin). Films were produced by the casting method using filmogenic suspensions with different cellulose nanofibrils (CNFs) proportions from both the sources (0, 25, 50, 75 and 100 %). CNFs suspensions were characterized by transmission electron microscopy. The morphology of the films was analyzed using scanning electron microscopy. In addition, the transparency, contact angle, wettability, oil and water vapor barrier and mechanical properties were also evaluated. The contact angles were smaller for films with BC and the wettability was greater when comparing BC with plant CNFs (0.10 °  s − 1 {\text{s}^{-1}} for 75 % Euc/25 % BC and 0.20 °  s − 1 {\text{s}^{-1}} for 25 % Euc/75 % BC). The water vapor permeability (WVP) of the 100 % BC films and the 25 % Euc/75 % BC composition were the highest among the studied compositions. Tensile strength, Young’s modulus and puncture strength decreased considerably with the addition of BC in the films. More studies regarding pre-treatments to purify BC are needed to improve the mechanical properties of the films.

The use of local raw materials for the production of biodegradable films can simultaneously contribute to the development of the Amazon and global sustainability. This work aimed to evaluate the physical and mechanical performance of chitosan-based bionanocomposite films reinforced with different loads of cellulose nanofibrils obtained from açaí ( Euterpe oleraceae Mart.) under two nanofibrillation degrees. Nanofibrils were obtained by 3 and 21 passages in a grinder defibrillator. The films were produced by casting with nanofibril reinforcement at 5 wt.%, 10 wt.%, 15 wt.%, and 20 wt.%. The increase in the nanofibril level and nanofibrillation degree reduced water vapor absorption (75.20% to 51.93%), water solubility (28.33% to 17.91%), and density (0.87 g.cm−3 to 0.61 g.cm−3). The water vapor permeability decreased with higher nanofibril loads for both 3-pass (47.30% to 43.61%) and 21-pass (49.82% to 44.48%) reinforced films, but not with nanofibrillation degree. The increase in 3-pass nanofibril level decreased tensile strength (8.18 MPa to 7.88 MPa), modulus of elasticity (867.62 MPa to 670.02 MPa) and elongation at break (0.02 mm.mm−1 to 0.01 mm.mm−1). However, the opposite effect happened to 21-pass nanofibrils, with increases from 9.16 MPa to 9.73 MPa and from 502.00 MPa to 1119.62 MPa for tensile strength and modulus of elasticity, respectively. Meanwhile, the maximum elongation at rupture did not vary. It was concluded that chitosan-based bionanocomposite films reinforced with 20 wt.% of 21-pass nanofibril were more resistant, except for water vapor permeability. Adding coarser nanofibrils enhanced this property. The 3-pass nanofibrils reinforcement enables water solubility, which benefits other packaging applications.

We fabricated a novel chitosan-carboxymethyl cellulose (CMC) layer-by-layer assembly system to facilitate the postharvest quality of the fresh produce. Fourier transform infrared spectroscopy (FTIR), TA-XT2 texture analyzer, water vapor permeability (WVP) analyzer, and scanning electron microscopy (SEM) were applied to compare the properties of chitosan and layer-by-layer assembly. The strategy involved the optimization of water vapor permeability, puncture strength, and elasticity properties of multiplayer polymer coating. Results showed that the lemon (Citrus limon (L.) Burm. f.), coated by chitosan-CMC layer-by-layer assembly, displayed significantly higher lemon firmness and vitamin C content with excellent morphology, as well as inhibited weight loss and flesh browning. This study could provide support for quality maintenance in the fruit and vegetable industry and make a significant contribution to the utilization of the natural polysaccharide as a viable resource.

Abstract Baicalin, an active flavonoid ingredient of Scutellaria baicalensis Georgi, was extracted by heat reflux extraction and showed the same significance UV absorption property with standard baicalin. Active films were prepared from polyvinyl alcohol (PVA) containing baicalin extract by casting method. The effect of baicalin extracts on the UV-blocking, optical, antioxidant property, water vapor permeability, swelling and mechanical properties of the films were studied. UV–vis transmittance spectra showed that PVA films incorporated with baicalin extract blocked ultraviolet light range from 280–400 nm even with low concentration of baicalin (0.5 wt%) and maintain the high transparency in visible spectrum. The outstanding UV-blocking properties of PVA films incorporated with baicalin extract were also confirmed by Rhodamine B degradation. Baicalin conferred antioxidant properties to PVA films as determined by DPPH radical scavenging activity. Due to the interaction between hydroxy groups of baicalin and PVA molecule, water vapor permeability, swelling and elongation at break of the films were decreased accompanied with the increasing in tensile strength and Young’s modulus. FTIR reveal that the interaction between PVA molecules was significant changed by the introduction of baicalin. These results suggest that PVA film incorporated with baicalin extract can be used for the development of functional protective film.

Kefiran is an exopolysaccharide classified as a heteropolysaccharide comprising glucose and galactose in equimolar quantities, and it is classified as a water-soluble glucogalactan. This work aimed to investigate the effect of different extraction conditions of kefiran on the structural and physical properties of the edible films obtained. Fourier-transform infrared spectroscopy and scanning electron microscopy were performed, together with a determinations of moisture content, solubility, water vapor permeability and degree of swelling. The kefiran films presented values of the water vapor permeability between 0.93 and 4.38 × 10−11 g/m.s.Pa. These results can be attributed to the development of a more compact structure, where glycerol had no power to increase the free volume and the water vapor diffusion through their structure. The possible conformational changes in the kefiran film structure, due to the interspersing of the plasticizers and water molecules that they absorb, could be the reason for producing flexible kefiran films in the case of using glycerol as a plasticizer at 7.5% w/w. Moreover, it was observed that the extraction conditions are a significant factor in the properties of these films and their food technology applications.

The studied samples were prepared from polyethylene (PE) polymer which was coated with modified polycaprolactone (PCL) film in order to obtain bilayer films. Thin PCL film was modified with casein/aluminum oxide compound to enhance vapor permeability as well as mechanical and thermal properties of PE/PCL films. Casein/aluminum oxide modifiers were used in order to achieve some functional properties of polymer film that can be used in various applications, e.g., reduction of water vapor permeability (WVTR) and good mechanical and thermal properties. Significant improvement was observed in mechanical properties, especially in tensile strength as well as in water vapor values. Samples prepared with aluminum oxide particles indicated significantly lower values up to 60%, and samples that were prepared with casein and 5% Al2O3 showed the lowest WVTR value.

The cracking of sweet cherries causes significant crop losses. Sweet cherries (cv. Bing) were coated by electro-spraying with an edible nanoemulsion (NE) of alginate and soybean oil with or without a CaCl2 cross-linker to reduce cracking. Coated sweet cherries were stored at 4 °C for 28 d. The barrier and fruit quality properties and nutritional values of the coated cherries were evaluated and compared with those of uncoated sweet cherries. Sweet cherries coated with NE + CaCl2 increased cracking tolerance by 53% and increased firmness. However, coated sweet cherries exhibited a 10% increase in water loss after 28 d due to decreased resistance to water vapor transfer. Coated sweet cherries showed a higher soluble solid content, titratable acidity, antioxidant capacity, and total soluble phenolic content compared with uncoated sweet cherries. Therefore, the use of the NE + CaCl2 coating on sweet cherries can help reduce cracking and maintain their postharvest quality.
