In recent years, there has been a steadily growing demand for animal protein. Consumer awareness is also growing every year, which is why breeders are obliged to provide animals with the best possible environmental conditions that will determine the productivity of animals and the quality of raw materials obtained from them. Today's consumer is looking for not only the highest quality food but also the one that will characterize health-promoting properties. Therefore, food is sought, which will be characterized by a favorable profile of fatty acids and a high content of biologically active ingredients, such as vitamins or minerals. One of the most effective methods of enriching food with these ingredients is their supplementation in feed. However, it should be remembered that the form in which such a component will be delivered is very important. High hopes are associated with the possibility of using organic forms of macro- and micronutrients, which are sometimes better absorbed than inorganic salts. The aim of the work was to collect and systematize knowledge related to the possibility of enriching food of animal origin with micronutrients using additional feed containing these ingredients in organic form.

To attain better feed utilization, longer preservation, easier manipultion and higher production and better quality of food of animal orgin as the final goal, besides raw materials, feed mixes contain numerous pronutrients (additives), added to perform different effects, in a narrower sense, the term pronutrient implies heterogenous substances, which have no diverse effects and have to be efficient in the manner of use. Basically, all pronutrients have to reach the goal of keeping optimal animal health status and to increase production of food of animal origin without adverse and negative effects. The development of biotechnology had a great part in the appearance of natural alternatives which are able to fulfil and satisfy the high demands of highly productive animals, as well as those of the consumer lobby and environmental protection movements. Growth promoters based upon physiological mechanisms and production potential of the animal have an unquestionable adventage, not only because of the lack of residues in food of animal origin; but also because of their ecological safety and decrease of envirnomental pollution by undigested materials. Demand continues to grow for "all natural", non-pharmaceutical feed additives with growth enhancing effects in food animals. Special attention is paid to minerals (anorganic and organic sources), growth stimulators (antibiotics, probiotics prebiotics), substances for better feed utilization (enzymes, acidifers) adsorbents.

The quality of raw materials and goods of animal origin depends first of all on the safety of feed, their balance in terms of the main nutrients and digestibility by the body. As a rule, the lower the quality and safety of feed, the lower the productivity of all types of animals and poultry. The quality of feed is influenced by all stages of their production: growing conditions, harvesting and storage, processing technologies, canning and preparation for feeding. Where high-quality feed is used in diets, maximum productivity and high realization of the genetic potential of animals are obtained. During the storage and processing of plant and animal raw materials its physic and mechanical, biochemical, sanitary and microbiological properties change. This can be avoided only by observing the sanitary and hygienic requirements for bagging, harvesting, and storing feed. The quality of feed is confirmed by its physical, chemical, organoleptic, microbiological and other indicators, which determines the variety of feed control methods at all stages of their turnover. In this connection, the development and strengthening of control over the quality and safety of feed and feed additives is one of the important tasks of modern animal feeding science. The purpose of the work was to carried out a comparative assessment of four samples of the starting compound feed SK-3 for piglets of different producers. The experimental part of the work has been carried out in the laboratory of veterinary expertise at the compound feed plant LLC “Athens-Volga”. For the study of compound feed an average sample was taken from each sample, separating from the combined sample using a hand scoop according to Federal standard 13496.0-2016. Methods of sampling. Quality and safety control was carried out according to organoleptic, physic and chemical, microbiological indicators and the content of mycotoxins in compound feed. Monitoring of compound feed of the compared samples of the starting compound feed for piglets SK-3 according to the studied indicators has shown that all samples meet the sanitary and hygienic requirements of Federal standard of our country.

Animal has a direct impact on the quality of meat, milk and eggs in a positive and negative sense. Over the composition of a meal for animals can manipulate the quality of products of animal origin and can be achieved by a variety of nutritional, sensory, chemical, physical and physiological characteristics. The use of medicine in intensive and extensive farming is a big and risky to the quality of food and thus health. In organic farming of animals is not allowed to use medicines. Because are increasingly looking for natural healing resources. Herbs provides, in the manufacture of animal feed, a real opportunity to increase value through the use of different functional additions. Addition food for animals, really can improve its functionality in terms of a physiological effect. In developed countries in Europe is very strong trend of replacing synthetic antibiotic drugs based on medicinal herbal preparations. As herbal feed additives may be used drug (finely divided dry medicinal herbal raw materials), herbal extracts or herbal isolate (e.g. essential oil). The paper gives a short overview of the most important potential of herbal medicinal materials with antibacterial activity, antiinflammatory, digestion-stimulating, laxative, antidiarrhoeal, choleretic etc. activities that have an approved application in human medicine and which can be added to animal feed for use in different animal health disorders. The use of herbs is more current and all higher, in human and veterinary food industry.

The article deals with the possibility of using feed additives in the feeding of broiler chickens and the peculiarities of their effect on the poultry organism. Contemporary data on the biological role of nutrients and energy in the feeding of broiler chickens are presented. The characteristics of the main feeds for poultry and the ways of reducing their prime cost in the conditions of broiler farms are given. The basic principles of effective feeding of poultry with forages of different content of metabolic energy and crude protein are considered, taking into account their assimilation in the body. Provided compound feed recipes and practical tips. It is established that high growth rate of broiler chickens in the start and groove periods (5–39 days) is provided by high-protein compound feeds – 23% (1–2 weeks), 21% (3–5 weeks) and exchange energy of 298 kcal and 305 kcal, respectively. With further cultivation in the finish forage the protein content in the forage decreases and the level of metabolic energy increases (up to 309 kcal). However, for each cross applies its own technology of cultivation and different rates of nutrients in raw materials. It is clear that effective breeding of broiler chickens is not possible without the proper rationing and use of protein and feed energy. Of course, provided that the supply of biologically active substances also corresponds to the normalized amount. Thus, the quality of poultry products is directly dependent on the quality of feed and the efficiency of transformation of feed energy into products.

In 2007, the aim of an Ányos Jedlik program and call for tenders was to support application-oriented, strategic research and development projects, which can increase the competitiveness of the Hungarian economy. In the framework of our project, we intended to examine whether non-protected antioxidants – in this case: vitamin E and lycopene – used as feed-additives can increase the antioxidant content of milk. The milk with anincreased level of vitamin E and lycopene content can be used for producing functional foods which will represent competitive products on the current market of milk products. Our results show that the use of vitamin E as feed-additive can significantly increase the amount of vitamin E in the milk. The use of lycopene as feedadditive also gave good results. At the beginning of the experiment, the lycopene content of the milk was below the detection limit, while in the post-feeding milk samples the lycopene became detectable. Based on our results, we are of the opinion that further experiments and analyses are needed regarding the quality of food of animal origin and animal health.

Background. The deficiency of essential nutrients in the human body is the root cause of reduced efficiency, general resistance of the body to various diseases. That is an urgent problem in the context of the spread of coronavirus infection. In this regard, the search for opportunities to meet the needs of the population in food products that contain biologically active substances (BAS) through the use of high-value and at the same time available plant raw materials is extremely important. Marigolds attract special attention among such raw materials. The aim of the work is to study the chemical composition and evaluate the consumer properties of Tagetes L. varieties, zoned in the Kiev region, to prove the possibility of increasing the biological value of pasta by adding to their recipe powder from marigold inflorescences. Materials and methods. The object of research is pasta of B group (noodles). Inflorescences of marigolds of different varieties gathered during the flowering period in July-September 2019–2020 in the territory of Vasylkiv and Obukhiv districts of Kyiv region, Ukraine were used as enriching plant raw materials. The quality of finished pasta was assessed by organoleptic and physicochemical indexes (moisture content and titratable acidity). The content of mineral elements in the fine powder of marigold inflorescences was determined on the EXHERT-3L device, the quantitative composition and BAS identification – by spectrophotometric analysis on the device Specord-200 Analytic Jena UV-vis. The integrated quality index of pasta products was calculated taking into account the importance factors of individual indexes. Results. Comparing the obtained results, we can state that all the studied varieties – Gold Kopfen, Orange Flame, Hawaii, Equinox are characterized by high biological value, regardless of the area of collection. As a result of calculated and experimental studies it was determined that the addition of 7 % of the supplement does not provide the required supply of vitamins and minerals. Replacing the flour in the recipe by 20 % significantly improves the mineral composition, but deteriorates the taste and aromatic properties of pasta. The most optimal and rational amount of added additive is 15 %, as it improves the organoleptic properties of pasta and enriches their BAS. Conclusion. The usage of non-traditional vegetable raw materials, in particular powder from marigold inflorescences, which is rich in biologically active substances, allows not only to expand the range, improve the quality of finished products, but also increase the biological value of the product. The optimal amount of additive –powder from marigold inflorescences, was defined. It is 15 % by weight of flour in the production of noodles. This concentration allows not only to improve the organoleptic properties, but also to increase the content of biologically active substances – vitamins, micro- and macronutrients. The usage of non-traditional natural raw materials (powder from marigold inflorescences) allows to abandon artificial colorsand give the finished pasta a pleasant colorand aroma.

The relationship between the civilisation illnesses and incorrect nutrition can be considered as demonstrated. The functional foods having one or several nutritional- biological advantage can contribute to the healthy nutrition and to improving the quality of life. Beside the healthy nutrition it is an another important requirement that the food does not contain pathogens or substances of chemical and biological origin namely it has to be safe. In this publication the foods of animal origin were investigated in the point of view of public health hazards arising during their production and processing.The contamination and infection of food raw materials, the consequence of chemical substances getting in or developing it the food, the judgement of food deviring from genetically modified or cloned animals are discussed.

For correctly assess the effectiveness and safety of the use of sorption-detoxifying agents and feed additives intended for animals receiving feed with an excess content of toxicants, it is necessary to take into account the background levels of radionuclides, toxic elements, pesticides and other technogenic and natural pollutants in the studied substances. The need for such studies is due both to the existence of areas with a naturally elevated level of natural toxicants in the sources of raw materials for the production of additives and drugs, and to the increasing anthropogenic influence, accompanied by the entry of xenobiotics into environmental objects. In series of radiometric studies, the specific activity of technogenic and natural radioactive isotopes (90Sr, 137Cs, 40К, 226Ra, 232Th) in a number of sorption-detoxifying and biologically active substances and preparations used in animal husbandry and veterinary medicine as part of feed additives and pharmacological agents was determined. It was found that in 43% of the studied samples, the level of specific activity of 1,1Sr in 3-90 times higher than allowed by the current standards. The maximum level of 90Sr, equal to (137±9) Bq/kg, was detected in perlite. The specific activity of 137Cs did not exceed the permissible level: in mineral sorbents its amount reached (40±7) Bq/kg, in organic and complex sorbents – (24±4), and in feed additives – (29±8) Bq/kg. The maximum levels of 40K were (1429±83) Bq/ kg in minerals (radionite) and (2613±100) Bq/kg in organic substances (lignohumate). The levels of 226Ra and 232Th did not exceed (153±13) and (79±13) Bq/kg, respectively, and were higher in the mineral samples.

Исследовано влияние сочетания нетрадиционных видов сырья – жидкого виноградного сахара и куркумы на качество хлеба из пшеничной муки. Проведена оптимизация дозировок этих рецептурных компонентов по выходным параметрам – удельному объему и формоустойчивости готового изделия. Оптимизацию рецептурного состава хлеба проводили с использованием методов математической статистики и дифференциального исчисления. Построены математические модели в виде регрессионных уравнений. Обработку экспериментальных данных выполняли по статистическим критериям Стьюдента, Кохрена и Фишера при доверительной вероятности 0,95. Дана графическая интерпретация регрессионных уравнений. Оптимизацию рецептурного состава хлеба проводили методом свертывания частных критериев в обобщенный аддитивный критерий. Определены оптимальные значения факторов: дозировка, % к массе муки, жидкого виноградного сахара – 2,50, куркумы – 2,75, обеспечивающие получение изделий с наилучшим сочетанием значений удельного объема и формоустойчивости. На основе полученных данных разработана рецептура и способ производства хлеба «Мерита» профилактической направленности (ТУ 9110–515–02068108–2019), характеризующегося улучшенным качеством и повышенной пищевой ценностью за счет дополнительного внесения биологически активных нутриентов. The influence of a combination of non-traditional raw materials – liquid grape sugar and turmeric on the quality of wheat flour bread has been studied. Optimization of the dosages of these prescription components according to the output parameters – specific volume and dimensional stability of the finished product was carried out with using methods of mathematical statistics and differential calculus. Mathematical models in the form of regression equations are constructed. The experimental data were processed according to the statistical criteria of Student, Cochran, and Fisher with a confidence probability of 0,95. Optimization of the formulation composition of bread was carried out by the method of folding partial criteria into a generalized additive criterion. The optimal values of the factors are determined: dosage, % by weight of flour, liquid grape sugar –2,50, turmeric – 2,75, ensuring the production of products with the best combination of specific volume and dimensional stability. On the basis of the obtained data, the formulation and method of production of bread «Merita» of a preventive orientation (Technical specifications 9110–515–02068108–2019) were developed. The product has improved quality and increased nutritional value due to the additional introduction of biologically active nutrients.
