Araçá fruit extracts were dried at different air conditions, and an investigation of the impact of drying on the volatile composition and antioxidant activity of araçá extracts was conducted. The effective moisture diffusivity varied between 8.542 × 10−8 and 13.34 × 10−8 m2/min. Fruit extracts dried at 50°C and 2.0 m/s had the highest total antioxidant activity (1916.10 mgascorbic acid/100 garaçá). The highest phenolic content (556.28 mgGAE/100 garaçá) was obtained when fruits were dried at 40°C and 1.5 m/s, but the resulting extract contained high amounts of 5-hydroxymethylfurfural (HMF), a contaminant formed in sugar-rich foods as a result of heating. Araçá extracts had similar qualitative profiles of volatile compounds by GC-MS, with caryophyllene being the most abundant terpene, followed by 2,3-dihydro-3,5-dihydroxy-6-methyl-4H-pyran-4-one, selina-3,7(11)-diene, γ-terpinene, γ-cadinene, and α-salinene. HMF corresponded to the major peak in all chromatograms, proving that thermal drying affected the quality of the extracts.

To determine and compare total antioxidant activity (TAA) and phenolic content (TPC) of Sansevieria trifasciata leaves’ extract with different fruits’ extract (Guava, Indian plum and Indian gooseberry) and fruit juices (Pomelo, Orange, and Beetroot) on the basis of two extraction methods, total phenolic content and antioxidant activity were analysed by Folin-Ciocalteu’s and Phosphomolybdate assay, respectively and expressed as equivalent to catechin. The extraction process of selected samples was done by using both decoction extraction method (DEM) and microwave-assisted method (MAE) of water solvent. Among both techniques of extractions, MAE exhibited significantly higher TPC and TAA than DEM. Compared to Sansevieria trifasciata plant extracts, there was a strong positive correlation coefficient (á<0.05) between the total phenolic contents and antioxidant activities of different fruit juices and fruit extracts in both the classical (DEM) and modern (MAE) techniques. Sansevieria trifasciata possesses a considerable amount of phenolic compounds and antioxidant activity concerning different fruit juices and fruit extracts which directly associated with health-promoting potential and appears as possible drug development for antioxidant. Among all extract and juices, Indian gooseberry possesses the greatest total phenolic content and antioxidant activity due to its higher TPC.

The bioactive compounds, as well as the in vitro antioxidant activity of two Savoy cabbage cultivars, Dama and Leticia, grown in west of Spain under similar conditions were identified, quantified and compared. We found that cv. Dama presented in general betters results when compared with cv. Leticia. Cv. Dama presented higher concentrations of chlorophyll a (2.26 mg/100 g fresh weight), total phenolic content (102.71 mg of chlorogenic acid equivalent/100 g fresh weight) and total intact glucosinolates (195.22 &micro;mol of sinigrin equivalent/100 g fresh weight). Thus, cv. Dama exhibited higher values of in vitro antioxidant activity. &nbsp;

This study was conducted to evaluate the effect of adding different levels of rocket salad seeds powder to the diet on seminal plasma traits of roosters subjected to oxidative stress induced by hydrogen peroxide. A total of 60 Hy – line laying breeder roosters 57 weeks old were used in this study. Roosters were randomly distributed into 5 treatments with 3 replicates each. Each replicate constituted of 4 roosters (12 roosters for each treatment). Experimental treatments were as following: T1: Males fed control diet and normal water, T2: Males fed diet supplemented with 3 gm rocket salad powder / kg of diet + 0.25 ml hydrogen peroxide (0.5%) / litter of water, T3: Males fed diet supplemented with 3 gm rocket salad powder / kg of diet + 0.5 ml hydrogen peroxide (0.5%) / litter of water, T4: Males fed diet supplemented with 3 gm rocket salad powder / kg of diet + 1 ml hydrogen peroxide (0.5%) / litter of water, and T5: Males fed control diet and drink tap water supplemented with 1 ml hydrogen peroxide (0.5%) / litter of water. Males were treated with hydrogen peroxide (6%) and rocket salad for 12 weeks starting from 59 week of male ages. Results revealed that treated the roosters with hydrogen peroxide without adding rocket salad powder to the diet of these roosters (T5) resulted in highly significant (p< 0.01) decrease as regards concentrations of phospholipids, cholesterol, glutathione, the activity of superoxide desmutase and catalase, and total antioxidant activity in seminal plasma and highly significant (p< 0.01) increase concerning concentrations of tyrosine and malondialdehyde as compared with control group (T1) and rocket salad powder treatments (T2, T3, T4) after 12 weeks of experiment. However, supplementing diet of roosters with rocket salad powder (T2, T3, T4) resulted in highly significant (p< 0.01) increase with relation to concentrations of phospholipids, cholesterol, glutathione, the activity of superoxide desmutase and catalase, and total antioxidant activity in seminal plasma and highly significant (p< 0.01) decrease respecting concentrations of tyrosine and malondialdehyde as compared with (T5) In conclusion adding rocket salad powder to the diet of roosters had important role in limiting the negative effect of oxidative stress induced by hydrogen peroxide on seminal plasma quality of roosters. Therefore, dietary supplementation with rocket salad powder could be used as one of important tools for improving semen quality of roosters.

The present study aimed to determine the total polyphenol content and total antioxidant activities of ten selected seasonal fruit extracts grown in Sri Lanka. The aqueous refluxed fruit extracts (4h) were used at the initial concentration of 0.05 g/mL. The total polyphenol content was determined according to the Folin-Ciocalteu method. The total antioxidant activity was evaluated by DPPH (2, 2-diphenyl-2-picrylhydrazyl), FRAP (ferric reducing power) and TBA (thiobabituric acid assay) assays with L-ascorbic acid as the reference compound. The total polyphenol content of the fruit extracts varied from 0.81±0 to 17.54±0.50 mg GAE (gallic acid equivalents) per gram of dry weight. The antioxidant activities ranged in IC50 of 46.60±0.60 to 367.90 ± 4.90 μg/mL, 3.41±0.02 to 50.46±1.02 µM, 30.62±0.50 to 182.64±0.90 mg AAE (L-ascorbic acid equivalents) per gram of dry weight for DPPH, FRAP, TBA assays, respectively. All aqueous fruit extracts exert dose dependent in vitro antioxidant activities in different degrees. Among the selected fruit extracts S. carophylatum, P. zeylanica, A. comosus exert relatively high total antioxidant activity together with high total polyphenol content. Hence, the selected fruit extracts are deserved to be as potent sources for antioxidant lead compounds in the development of nutraceuticals using the above edible fruits.

A methanolextract of the leaves of Parabaena sagitatta Miers and its petroleum ether, carbon tetrachloride, dichloromethane, ethylacetate and aqueous soluble partitionates were evaluated for antioxidant activity by 1,1-diphenyl-2-picrylhydrazyl (DPPH), Folin-Ciocalteau reagent and phosphomolybdenum total antioxidant assays by using butylated hydroxytolune (BHT) and ascorbic acid as standards. The dichloromethane soluble fraction demonstrated the presence of significant amount of phenolic compounds 61.06 ± 0.54 mg GAE/g of extract and also has moderate antioxidant activity IC50 50.62 ± 0.25 ?g/ml. A positive correlation (R2), 0.969 was observed between total phenolic content and total antioxidant activity of P. sagitatta. Extracts of leaves, fruits and seeds of olive tree cultivars of Trás-os-Montes e Alto Douro (Portugal) were analysed by reverse phase HPLC with diode array detection and mass spectrometry (MS). This methodology allowed the identification of some common phenolic compounds, namely, verbascoside, rutin, luteolin-7-glucoside, oleuropein and hydroxytyrosol. Moreover the hyphenation of HPLC with MS enabled the identification of nüzhenide in olive seeds. An oleuropein glucoside was also detected in olive tree leaves. The total phenolic content was determined with the Folin Denis reagent and the total antioxidant activity with the ABTS method. There is a correlation between total antioxidant activity and total phenolic content with the exception of the seed extracts analysed. The apparent high antioxidant activity of seed extracts may be due to nüzhenide, a secoiridoid that is the major phenolic component of olive seeds. These results suggest a possible application of olive seeds as sources of natural antioxidants.

AbstractConsumers are increasingly interested in innovative products enriched with nutrients that counteract the development of civilisation-associated diseases. Thus, the development of new functional nutrient-enriched food products that meet consumer needs is therefore necessary. The aims of this study were to develop a novel shortbread cookie product by addition of red grape skin extract and oat β-glucan and to evaluate the influence of these modifications on physico‐chemical properties and consumer’s acceptance. The red grape skin extract used in this product is a source of polyphenols which are beneficial for human health and extend product shelf life. β-glucan is a soluble fraction of dietary fibre that helps to lower reduce blood cholesterol and glycemic levels. The influence of grape skin extract, β-glucan and a combination of both on the β-glucan content, colour and texture parameters, thermal properties, total antioxidant activity, total phenolic content, volatile compounds profile and sensory properties of shortbread cookies was analysed. Product with modified formulations had higher total antioxidant activity, total phenolic content and were was more thermally stable than control samples. The obtained innovative functional products were characterized by an increased content of oat β-glucan, which is desirable from a nutritional point of view. The DSC measurements showed higher oxidative stability of cookies enriched with β-glucan and red grape skin extract. The additives caused significant changes in the colour and profile of volatile compounds of the finished final product but did not affect the sensory acceptance among consumers. The use of these additives represents a development in food technology that may be valuable in the food industry to increase the nutritional value and extend the shelf shelf-life of bakery products.

Rosa canina L. is a rich fruit on bioactive substances which provides them with high antioxidant potential, like phenolic acids, flavonoids, condensed tannins. The aim of this study was to estimate and characterize the phenolic content, flavonoids content, condensed tannins content obtained from rose hips fruits in five extracts (water, 50% v/v ethanol, 70% v/v ethanol, 80% v/v methanol, apple vinegar) to examine their antioxidant activity by two reliable methods: Total antioxidant activity and DPPH. Surprisingly, in our results, the highest polyphenol, flavonoids content and condensed tannins was observed in vinegar extract 55,51±1,16 mg GAE/g dw, 22,15±0,45 mg QE/g dw, 12,37±0,16 mg AAE/g dw respectively. Furthermore, the vinegar extract was the most effective to chelating the radical DPPH (IC50% = 0,336±0,005µg), and have the highest total antioxidant activity (7,88±0,19mg AAE/g dw). The current research showed that the vinegar was more effective than the methanol, ethanol, water for polyphenols, flavonoids, tannins extraction.
