Persimmon is one of the most popular and favorite fruits not only in Georgia, but also in other countries. People love it for its unique specific taste and high nutritional value. There are more than 500 types of persimmon, properties and tastes which depend on the persimmon growing conditions. The purpose of this project was to study the persimmon fruit chemical composition, the regularity in the quantity changes of the bioactive substances and technical-economical persimmon parameters during its storage and technological processing; to develop a highly profitable and efficient composite production technology for a new assortment of products and high quality beverages. Organoleptic and chemical tests of 12 persimmon fruit varieties were made. The content and composition of sugars, polyphenols, pectin, and tanning substances, were defined; and the relation of these parameters to the fruit maturity degree, the dynamics of their change in the ripening and storage process were determined. In addition, we determined the content of sugars ( inverted, total, saccharose), tanning substances (free, total), polyphenols and nitrogen through a spectrophotometric method, dry solids through a refractometric method, pectin (total, soluble, protopectin) and acidity through a potentiometric method, and cellulose through a chlorite method. The feasibility of the persimmon fruit industrial processing was established. Persimmon fruit of Khachia and Khiakume varieties were proved to be the best raw material for the industrial production of a fruit alcohol and beverages. It should be noted here that persimmon fruit must be harvested in November when they have a dark orange colouring and their dry solids content reaches 18%, inverted sugars make up 16-16.5%, and the acidity is 0.12%. For concentrate production, persimmon must be harvested in October when the fruit are yellow and their tanning and colouring substances reach 1.24%, and pectin substances make up 0.77%. The fruit sugars are glucose and fructose, generally in equal quantities. Tanning substances, leicoantocianes, in particular, are responsible for the tart taste; the lower their content is, the less the tart taste is felt, moreover, ripe fruit are less tart in flavour which is due to the tanning substances getting bound with high molecular substances. All the 12 persimmon varieties cultivated in Georgia can be used as raw material, including substandard and overripe fruit that are not marketable and do not have a long shelf life.

Introduction. With the development of the food and processing industry, the matter of environmental pollution is becoming more and more acute. Environmental protection is based on the principle of rational use of natural resources and sustainable technology. Vegetable pomace is a secondary raw material; its amount depends on the production technology and equipment. The observed positive trend in the gross harvest of vegetables in open ground can increase the number of vegetable processing enterprises and the capacity of existing enterprises. Eventually, waste will start accumulating at processing sites, and it will have to be used as raw materials. The present paper features the content of biologically active substances in pomace of carrots and beets grown on the territory of the Siberian region and introduces options for their further use in functional foods. Study objects and methods. The research featured carrot pomace of the varieties Losinoostrovskaya, Nantskaya, and Queen of Autumn, as well as beet pomace of varieties Cylinder and Bordeaux. All the samples were harvested in the Kemerovo region in 2019. Determination of physical and chemical parameters was carried out using standard methods. Carotenoids, flavonoids, β-cyanine were studied using spectrometry and photocolorimetric method. Results and discussion. The experiment featured the content of bioactive substances in pomace of carrots and beets obtained during industrial processing. The content of carotenoids in carrots (mg of β-carotene per 100 g of dry weight): for Losinoostrovskaya variety – 23.56 ± 0.23; Nantskaya – 25.32 ± 0.18; Queen of Autumn – 20.78 ± 0.25. Flavonoid content (mg of catechol equivalent per 100 g of dry weight): Losinoostrovskaya – 12.02 ± 0.37; Nantskaya – 13.45 ± 0.56; Queen of Autumn – 11.50 ± 0.48. The content of β-cyanine in beets (mg per 100 g of dry weight): Cylinder – 100.0 ± 8.5; Bordeaux – 35.0 ± 1.8. The nutritional value of carrot and beet pomace with a mass fraction of moisture was 10%. The nutritional value of vegetable pomace is due to the high content of dietary fiber; therefore, the raw materials can be considered for functional food production. The content of biologically active substances in vegetable pomace (flavonoids, carotenoids, β-cyanines) can enhance the functional orientation of this secondary raw material when used in food technologies for the production of food of high nutritional value. Conclusion. The results obtained will make it possible to use the biochemical potential of plant raw materials in many aspects, as well as to obtain new functional food products, thereby expanding the range of healthy foods.

The book under review is a concise but fairly in-depth study of the prospects for export diversification from the Less Developed Countries (henceforth labeled as LDCs) particularly to Developed Countries (henceforth labeled as OCs). Given the multiple problems faced by the LOCs in exporting to the OCs - protectionist policies with regards to manufactured exports, volatility of prices obtained for raw material exports, etc. - the study analyses the potential for following an intermediate route. The important issues in the export of semi -processed and wholly processed raw materials are discussed. 111ese issues range from the problems and potentials for the location of processing facilities in the LOCs to the formulation of appropriate policies to encourage an export of processed goods rather than raw materials. Such policies will be useful both in solving the balance of-payments problems of the LDCs and in attaining the goal of the Lima Declaration and Plan of Action on Industrial Development and Co-operation, that called for 2S percent of world industrial production to be located in the LOCs by the year 2000.

The valorification of the marine biomass is an important resource for many industries like pharmaceutical, supplying raw material for the extraction of bioactive substances (vitamins, sterols and collagen), cosmetics, biofertilizers and wastewater treatment. In the last years a special attention has been given to the use of macroalgae. The aim of this study was to emphasize the capacity of two representative green algae species frequent presents on the Romanian shore, Ulva lactuca (L.) and Cladophora vagabunda (L.) Hoek, to remove two usual detergents from wastewater. The green algae washed, dried at room temperature, macerated to powder were introduced into different filter paper for comparison, then immersed in waste water treated with different concentrations of detergents. Tap water was used for the experiment. The results show that Ulva lactuca (L.) species is suitable than Cladophora vagabunda (L.) Hoek species, for wastewater treatment.

AbstractVarved clay deposits from ice-dammed lakes are a particularly important and broadly applied raw material used for the production of high-quality ceramics (red bricks, roof tiles, etc.), but the mineralogy and geochemistry of these sediments are not fully understood. The aim of the present study was to determine the chemical and mineralogical composition of ice-dammed lake sediments of the Lębork deposit. Major-element analysis of the compositions of selected samples from the ice-dammed lake clays was performed by X-ray fluorescence (XRF) and trace elements were determined by inductively coupled plasma-mass spectrometry. The mineralogical composition of clay samples was determined by X-ray diffraction (XRD). Analyses of the chemical composition of the ice-dammed lake clays of the Lębork deposit showed that the dominant component was SiO2 with a mean content of 56.13 wt.%; the second most abundant component was Al2O3, with a mean content for the entire deposit of 11.61 wt.%. Analysis by ICP-MS indicated the presence of rare earth elements (REE), e.g. cerium, neodymium, lanthanum, and praseodymium; their mean contents are: 56.9, 27.0, 26.3, and 7.3 ppm, respectively. Mineralogical analysis of the varved clays identified quartz, muscovite, calcite, and clay minerals – illite, kaolinite, and montmorillonite. The material filling the Lębork basin is characterized by small lateral and vertical variability in chemical composition. The results of the present study may be of considerable importance in determining the parent igneous, metamorphic, and sedimentary rocks, the weathering products of which supplied material to the ice-dammed lake, as well as in determining the mechanisms and character of the sedimentation process itself.

Celiac disease (CD) is defined as an autoimmune pathology mediated by specific antibodies and is associated with genetic factors, which causes an inflammatory process of the intestinal mucosa in response to gluten ingestion. A study was conducted to evaluate some gluten-free cookie formulations using rice and green banana flour as raw material, and to evaluate the acceptance and chemical composition of the cookies elaborated. Three different cookie formulations were prepared to contain 100% rice flour, 50% rice flour and 50% green banana flour and 100% green banana flour. The following sensory attributes were evaluated: crispness, flavor, and overall impression, using the 9-point hedonic scale and purchase intention using the 5-point structured scale, to check the acceptance of cookies. The chemical composition of the formulation most accepted by sensory analysis was quantified. Sensory evaluation showed that all cookie formulations were accepted; however, the increase of the green banana flour content has resulted in lower acceptance, which may be due to the slightly bitter flavor that green banana flour gives the product. The most accepted cookie formulation had 15.78% protein, 0.80% ash, 4.31% moisture content, 12.35% lipid, and 66.77% carbohydrate. These nutritional characteristics are following Brazilian legislation. Therefore, all cookie formulations have marketing potential, which is very important, especially for people with gluten sensitivity.

This work describes the role of chemical composition and curing conditions in geopolymer strength, leachability of chemical elements and porosity. The study focuses on geopolymer material prepared from calcined kaolinite claystone, which is not studied frequently as a raw material for geopolymer production, although it has a high application potential as it is easily commercially available and allows preparation of geopolymers with low viscosity. The composition of geopolymers and their curing methods were selected considering their ease of use in the praxis. Therefore, the potassium water glass itself was used as alkali activator without any KOH or NaOH addition. Chemical composition was changed only by the density of water glass in the range of 1.2 to 1.6 g·cm−3. Geopolymers were cured at a temperature within the range of 5 °C–70 °C to speed up the solidification process as well as by microwave radiation. High compressive strengths were obtained for geopolymers with the highest densities of the water glass (1.5 and 1.6 g·cm−3) in dependence on various curing conditions. Higher strengths were achieved in the case of samples where the solidification was not accelerated. The samples cured at lower temperatures (5 °C) showed lower porosity compared to the other curing types. The lowest leachability of Si and alkalis was reached for the samples with water glass density 1.5 g·cm−3.
