The data on feeding dairy cows of an energy protein concentrate (EPC) are presented. EPC consists of grain of narrow-leaved lupine, flax, triticale, subjected to heat treatment on a press extruder. The effect of EPC on the change in milk production of cows was determined. The inclusion of extruded concentrate based on lupine grains in the diets of cows made it possible to obtain an increase in milk. Concentrate based on lupine, flax, triticale is equal in biological value to full-fat soy, and at a much lower cost.

O trabalho teve por objetivo verificar diferenças entre rendimento do concentrado proteico e proteína bruta da folha da mandioca (Manihot esculenta Crantz), obtidos a partir de três variedades comerciais: branca, cascuda e vermelha. As manivas foram plantadas seguindo o delineamento experimental inteiramente casualizado com três repetições. Nas comparações entre as variedades, considerou coletas escalonadas pós-plantio, realizadas aos 12, 14 e 16 meses. O concentrado proteico foi obtido a partir da farinha das folhas inteiras e submetido ao método de termo - coagulação ácido e a proteína bruta pelo método padrão AOAC. Os dados foram submetidos a análise de variância e comparados pelo teste de Tukey - 5% de probabilidade. Os resultados não indicaram diferença significativa entre as médias obtidas para rendimento de concentrado proteico. Para a variável porcentagem de proteína bruta a variedade Branca foi a que apresentou maior valor, com média de 46,25%, seguida pela Cascuda e Vermelha, 44,52% e 37,30%, sucessivamente. Conclui-se que outros estudos devem avaliar condições que possam influenciar no teor de proteína foliar, como clima e solo, e, avaliar os níveis de ácido cianídrico de cada variedade, indicando qual das três é a melhor para a extração do concentrado proteico das folhas. Palavras chaves: Manihot esculenta Crantz, variedades comerciais, concentrado proteico, proteína bruta. ABSTRACT: The study aimed to assess the differences between income protein concentrate, crude protein of cassava leaf (Manihot esculenta Crantz), obtained from three commercial varieties: white, red and cascuda. The cuttings were planted following the completely randomized design with three replications. Comparisons between the varieties considered after planting staggered collections, held on 12, 14 and 16 months. The protein concentrate was obtained from flour of whole sheets and subjected to the term method - acid coagulation and crude protein by AOAC standard method. The data were submitted to ANOVA and Tukey test - 5% probability. The results indicated no significant difference between the mean values obtained for protein concentrate income. For the variable percentage of crude protein White variety showed the highest, with an average of 46.25%, followed by cascuda and Red, 44.52% and 37.30%, successively. Optimization of the formulation of synbiotic yogurt ice cream low-lactose using lactose-free protein concentrate of buttermilk and yogurt with low lactose content is the goal of expanding the range of low-lactose dairy products and improving the functional and health properties of ice cream. Low-lactose ice cream formulation optimization was performed using a gradient numerical method, namely conjugated gradients (Conjugate Gradient). The optimization algorithm is implemented in Mathcad. An array of data with a set of indicators for the choice of a rational ratio of lactose-free protein concentrate of buttermilk and yogurt base and inulin content for ice cream mixtures is presented. The influence of the ratio of the main components of the mixtures on the foaming ability, which determines the quality of the finished product, has been studied. An important indicator is taken into account - the concentration factor of buttermilk, which is additionally purified from lactose by diafiltration. The graphic material presented in the work clearly demonstrates that the rational ratio of yogurt base and lactose-free protein concentrate of buttermilk, obtained by ultrafiltration with diafiltration purification at a concentration factor of FC = 5 is 40.6: 59.4. The content of additional components included in the recipe of a new type of ice cream is optimized in the work, the mass fractions of which were: inulin - 3.69 %; lactulose – 1 %; ginger - 0.3 %; citric acid - 0.15 %; stabilization system - 0.2 %. The chemical composition and quality indicators of the mixture for ice cream low-lactose synbiotic yogurt, consisting of raw materials in the optimal ratio, were determined. The lactose content in the test sample of the ice cream mixture was 0.99%, the antioxidant activity was 3.1 times higher than in the mixture for traditional yogurt ice cream. The most likely number of lactic acid microorganisms, CFU / cm3 is (2.8 ± 0.9) · 108, the number of bifidobacteria, CFU / cm3 is (2.5 ± 0.2) · 109. The results of the research will be implemented in dairy companies in the production of ice cream.

In order to fi ll the existing protein defi ciency in the rations of farm animals in particular dairy cows it is necessary to input feed lupins as widely as possible in crop rotations. Lupin is a very versatile forage crop it can be used in feed as herbage, in the form of haylage, silage, in compound feed as a protein additive, as well as a green manure crop to increase soil fertility. Questions of protein nutrition should be to be quickly resolved, both in the production of protein and in its standardized rational use. Unbalanced protein rations increase feed consumption per unit of production, thereby increasing its prime cost. In the world soya is generally recognized as a protein feed, but in the Kaliningrad region as in most of regions in our country, it does not maturate being a heat-loving crop. Under these environments the inclusion of extruded lupine grain in the composition of energy-protein concentrates for the production of compound feed has become an alternative to replacing expensive soya. The researches have been carried out it the cattle farm of LLC “Temp” in the Guryevsky area in the Kaliningrad region (March-May 2019) on feeding lactating cows energy-protein concentrate from extruded grain of narrow-leaved lupine, fl ax, triticale, subjected to heat treatment on a press extruder. For this purpose two groups of lactating cows of Black-and-White breed (control and experimental) have been formed using the method of pairs of analogs per 11 heads in each. Cows of the control group have received the main ration of the farm, and cows of the experimental group in addition to the main ration have received compound feed with extruded energy-protein concentrate based on lupine. As a result of research, the positive infl uence of energy-protein concentrate based on lupine in compound feed on the dairy productivity of cows has been established. Recipes of concentrate and compound feed with concentrate for lactating cows, the volume of inclusion of components in the concentrate and in the compound feed have been calculated. During the experiment, the milk yield in the experimental group of cows has increased by 62,4 kg or 8,0 %, than in the control group. From the cows of the experimental group the conditional profi t has been received in the amount of 1684,8 rubles per head.
