An experiment was conducted to compare the effect of dietary sodium selenite and selenomethionine on selenium and α-tocopherol concentration in breast meat, oxidative stability of meat in broilers, and on growth performance, but only as an unimportant criterion in this case. Sexed broiler cockerels Ross 308 were allocated to 3 dietary treatments, each comprising 100 chickens. The basal diet was supplemented with 0 (control) or 0.3 mg/kg Se from sodium selenite (SS) or selenomethionine (SM). Dietary supplementation with SM increased (<I>P</I> < 0.05) body weight, but only by about 3%. Breast muscle Se concentration was increased (<I>P</I> < 0.05) by both Se sources, but more by SM (1.32 mg/kg dry matter; 0.47 mg/kg DM in control). The concentration of Se in excreta was 3 times higher with SS supplement than with SM supplement. Dietary Se supplementation increased (<I>P</I> < 0.05) the α-tocopherol content of breast meat from 25.9 mg/kg DM in the control to 33.2 mg/kg DM when SM supplementation was used. Furthermore, lipid peroxidation decreased compared to the control. The inclusion of SM in the diet reduced (<I>P</I> < 0.05) malondialdehyde (MDA) values in breast samples after 0, 3, and 5 days of cooler storage, whereas SS decreased (<I>P</I> < 0.05) the MDA of breast meat after 0 and 3 days of storage. The results of this experiment indicate that selenomethionine in the diet of broilers is capable of simultaneously increasing the content of selenium and vitamin E in broiler meat plus its stability in storage.

The effect of supplementing dietary selenium (Se) and vitamin E was investigated in 330 24-week-old laying hens. The hens were fed a basal diet containing Se and &alpha;-tocopherol at 0.11 and 26 mg/kg, respectively, or a diet supplemented with Se at 0.3 mg/kg and vitamin E between 0 and 625 mg/kg. Se was supplied as Se-methionine or sodium selenite. The eggs were collected for analysis during the third, seventh and eleventh weeks of the experiment. Supplementation of either form of Se significantly increased the Se concentration in egg yolks and whites, with a more pronounced effect caused by Se-methionine. The egg yolk &alpha;-tocopherol concentration paralleled the dietary &alpha;-tocopherol concentration. At a high dietary &alpha;-tocopherol concentration (632 mg/kg), the retinol content in egg yolks from hens fed Se-methionine increased significantly. Supplementation of Se-methionine significantly increased the &alpha;-tocopherol content in the eggs in the third and seventh weeks of the experiment. A moderate decrease in yolk cholesterol was observed in hens fed Se-methionine and &alpha;-tocopherol at 119 mg/kg. The concentration of products from lipid peroxidation (thiobarbituric acid-reactive substances, TBARS) in egg yolks increased marginally during the refrigerated storage of the eggs for 2 weeks. The effect of dietary vitamin E on TBARS formation was generally small, although a more significant effect was observed at the highest dose tested.

This study examined the effects of supplementation of dietary sodium selenite and sodium enriched alga <I>Chlorella</I> on growth performance, selenium concentration in breast meat and excreta, activity of glutathione peroxidase in meat, and oxidative stability of meat in broilers. Sexed broiler cockerels Ross 308 were allotted to 3 dietary treatments, each comprising 100 chickens. The basal diet was supplemented with 0 (control) or 0.3 mg/kg Se from sodium selenite (SS) or Se-<I>Chlorella</I> (SCH). Dietary supplementation with SCH increased (<I>P</I> < 0.05) body weight. The breast muscle Se concentration was increased (<I>P</I> < 0.05) by SCH (0.70 mg/kg DM; 0.36 mg/kg DM in control) supplementation, but not (<I>P</I> > 0.05) by SS (0.49 mg/kg DM) supplementation. The concentration of Se in excreta was highest in the SS group. The activity of GSH-Px in breast meat was significant <I>P</I> < 0.05) in all treatments (0.16 U/g in control, 0.30 U/g in SS and 0.23 U/g in SCH group). The inclusion of SCH in the diet enhanced the oxidative stability of meat expressed as reduced malondialdehyde (MDA) values in breast meat after 0; 3 and 5 days storage in refrigerator at 3 to 5°C.

The paper reports data from four experiments (EXP). Broiler cockerels Ross 308 were allocated to 3 or 5 (EXP 4) dietary treatments comprising 300 (3 replicated pens of 100 chicks per pen), 50, 50&nbsp;or 100&nbsp;chickens. The EXP lasted 42, 38, 42 and 38 days. All basal diets contained adequate ingredients. The inclusion of 0.5% caprylic acid (CA) in diets reduced (<I>P </I>&lt; 0.05) body weight (EXP 1). The results of EXP 3 and 4 indicated that the diet supplemented with 0.25% CA and 30 mg vitamin E (total vitamin E concentration 50&nbsp;mg) resulted in similar BW like the basal diet, but the increased supplemental vitamin E to 150 mg (EXP 3) or to 100 mg (EXP 4) decreased (<I>P </I>&lt; 0.05 and <I>P </I>&lt; 0.001) BW and increased mortality. No differences were found between the fat and crude protein contents in dry matter of breast meat. Higher vitamin E doses in feed mixture significantly (<I>P </I>&lt; 0.001) increased the content of vitamins soluble in fats in breast meat – vitamin E (from 28.54 in the control to 80.28&nbsp;mg/kg of dry matter) and vitamin A (from 0.34 to 0.44 mg/kg of dry matter). The&nbsp;addition of caprylic acid significantly decreased the speed of lipid oxidation measured after 3&nbsp;(<I>P </I>&lt; 0.02) and 5 (<I>P </I>&lt; 0.05) days of storage in refrigerator at a temperature from 2.5 to 4°C. On the contrary, higher vitamin E doses and basal diet without CA supplement increased the oxidation of lipids.

Context Selenium (Se) is an essential trace element and plays pivotal roles in poultry nutrition. Aims The present study was designed to compare the impact of dietary supplementation of different sources of Se on growth performance, Se concentration of breast meat, and immune response of broiler chickens. Methods In total, 300 1-day-old as hatched broilers were randomly allocated to six dietary treatments, with five replicates of 10 birds per each. The experimental diets were as follows: (1) corn–soybean meal-based diet supplemented with 0.30 mg/kg of sodium selenite, (2) basal diet supplemented with 0.30 mg/kg of Se-enriched yeast, and (3–6) basal diet supplemented with 0.15, 0.30, 0.90 and 1.50 mg/kg of nano-Se respectively. Humoral immunity was assessed by antibody titer against a 5% sheep red blood-cell suspension and cellular immunity was measured by administration of phytohaemagglutinin-p at 38 days. Key results Results indicated that during the periods from 1 to 10 days, from 11 to 24 days, from 25 to 42 days and from 1 to 42 days, average daily gain, average daily feed intake, and feed conversion ratio did not differ among the treatments (P &gt; 0.05). Assessment of orthogonal contrasts at the whole phase of feeding showed that the average daily gain in the broilers fed organic Se was significantly (P &lt; 0.05) higher than that in those fed inorganic Se, as well as nano-Se in comparison to organic Se; such effects were not observed in earlier feeding stages. Se supplementation significantly increased the Se concentration of breast muscle (P &lt; 0.0001). The birds that received 1.50 mg/kg of diet nano-Se showed higher (P &lt; 0.05) total immunoglobulin and IgG titers in primary and secondary immune responses against sheep erythrocytes respectively. Toe web swelling after 24 h and 48 h of receiving phytohaemagglutinin-p was not affected by Se supplementation (P &gt; 0.05). Conclusions In conclusion, the addition of nano-Se gave better results than did inorganic (sodium selenite) and organic (yeast selenium) forms of Se in performance traits, breast meat Se concentration and antibody response of broilers. Implications Novel elemental nanometer particulates, including nano-Se, exhibit new characteristics and a different mode of actions in comparison with organic and inorganic forms of Se sources in poultry diets. Inclusion of the nano form of Se in broiler diets and study of productive performance, immunity responses and meat quality leads to improve balanced broiler diets formulation in view of Se.

The aim of this research was the visual characterization and investigating the effects of Alternaria spp. contaminated wheat grains in the starter stage of broilers nutrition on productive parameters and oxidative stress. The research was divided into two phases. Bunches of wheat in post-harvest period of year 2020 was collected from a various locality in Serbia and Albania. In the first phase, collected samples were visual characterized by Alternaria spp. presence by color measurement methods. Gained results are conferred in the range of the color properties of grain color properties of Alternaria toxins. Wheat grain samples were significantly different (p < 0.05) in terms of all measured color parameters (L*, a*, b*). Classification of field fungi in analyzed wheat grain samples showed that the significant field fungi were Rhizopus spp., followed by Alternaria spp., and Fusarium spp. In the second phase, biological tests with chickens were carried out during the broiler chickens’ dietary starter period in the first 14th days of age. At the beginning of the experiment, a total of 180-day-old Ross 308 strain broilers were equally distributed into three dietary treatments, with four replicates each. Dietary treatments in the experiments were as follows: basal diet without visual contamination of Alternaria spp. with 25% wheat (A1), a basal diet with visual contamination of Alternaria spp. with 25% wheat from Serbia (A2), basal diet with visual contamination of Alternaria spp. with 25% wheat from Albania (A3). The trial with chickens lasted for 14 days. After the first experimental week, wheat infected with Alternaria spp. in treatment A2 and A3 expressed adverse effects. The highest body weight of chickens of 140.40 g was recorded in broilers on control treatment A1 with statistically significant differences (p < 0.05) compared to treatments A2 (137.32 g) and A3 (135.35 g). At the end of the second week of test period, a statistically significant (p < 0.05) difference in body weight of broiler chickens could be noticed. The highest body weight of 352.68 g was recorded in control treatment A1, with statistically significant differences compared to other Alternaria spp. treatments. The lowest body weight of chickens was recorded in treatment A3 (335.93 g). Results of feed consumption and feed conversion ratio showed some numerical differences between treatments but without any statistically significant differences (p > 0.05). Alternaria spp. contaminated diet increased glutathione (GSH), glutathione reductase (GR), alanine aminotransferase (ALT), and aspartate aminotransferase (AST) and decreased peroxidase (POD) and superoxide dismutase (SOD) serum levels, respectively. Built on the achieved results, it can be concluded that the wheat contaminated with Alternaria spp. in broilers nutrition negatively affected growth, decreased oxidative protection and interrupted chicken welfare in the first period of life.

A trial was conducted with 175 day old Ross broiler chicks to evaluate the effectiveness of Alisma canaliculatum (Water plantain or Theksa), Laminaria japonica (Sea tangle or Dashima) and Cornus officinalis (Cornelain cherry or Sansuyu) medicinal plants treated with probiotics in replacing antibiotic. Three medicinal plants were prepared in dry and flour form with treatment of probiotics. The groups were control (basal diet), antibiotic (basal diet + 0.05% OTC, oxytetracycline), Water plantain treated with Probiotics (WPP) 0.5%, Sea tangle treated with Probiotics (STP) 0.5% and Cornelian cherry treated with Probiotics (CCP) 0.5% in basal diet. The broilers were distributed in a completely randomized design having 5 replications with 7 chicks per replication in wire cage. The data were analyzed by SAS package program. Addition of three medicinal plants in broiler diets didn’t show negative effect on growth and feed conversion efficiency in broilers. Significantly highest protein percentage in broiler meat was found in groups fed the three medicinal plants treated with probiotics (WPP, STP and CCP) compared with other groups (P<0.05). Crude ash also increased significantly by the three medicinal plants addition compared to control especially in breast meat (P<0.05). Addition of probiotics treated with medicinal plants had similar beneficial effects on most of the observed parameters to those found in antibiotic-fed groups, so it implies that these three medicinal plants can be the possible alternatives to antibiotic for broiler production.Asian J. N-3 fatty acids are essential for normal growth and development, and may play an important role in prevention of coronary artery disease, hypertension, diabetes, arthritis, other inflammatory and autoimmune disorders and cancer in humans (Simopoulos, 1999). Fatty acid profiles of broiler meat may be modified by adding fish oils to the diet (Lopez-Ferrer et al., 2001). When meat is enriched with PUFA, particularly n-3 long-chain fatty acids (C≥20), all sources of added vegetable oils seem to be less effective than marine oils (Bou. R et al., 2004). The purpose of this experiment was to study the effect of dietary fish oil on fatty acid composition of thigh and breast meat in broiler chickens.

Supplementation of selenium as sodium selenite results in an increase in hepatic organic solvent-soluble lipofuscin pigments, the metabolic end products of lipid peroxidation. Weanling mice fed a basal diet containing 0.05 ppm selenium had a significant increase in hepatic organic solvent-soluble lipofuscin pigments and glutathione peroxidase activity following supplementation of an additional 0.1 ppm selenium as sodium selenite from 5 to 9 months of age. Normal levels of vitamin E (30 mg/kg) were insufficient to protect against the oxidative effect of this increased dose of selenite. However, 10 times the normal level of vitamin E markedly suppressed this oxidative effect.

An experiment with broiler chickens was conducted to compare the relative bioavailability of liquid methionine hydroxy analogue free acid (MHA-FA) with that of DL-methionine (DLM) during fattening to 35 days of age. Ross 308 male chicks were allotted to 9 treatments, each consisting of six replicates of 140 birds/pen. Four graded levels (0.04, 0.08, 0.16, and 0.28 %) of MHA-FA or DLM products (weight/weight comparison) were added to a maize-wheat-soyabean meal basal diet deficient in sulphur amino acids. The criteria of response were body weight, feed conversion ratio, carcass yield and breast meat yield. Significant responses to graded levels of both methionine sources were observed in all response criteria. Using a multi-exponential model describing the dose-response relationships, the bioavailability estimates of MHA-FA relative to DLM on a weight-to-weight basis were 68, 70, 54 and 59 % for body weight, feed conversion, carcass yield and breast meat yield, respectively. If MHA-FA was compared with DLM on equimolar basis its bioavailability was 77.7, 79.0, 59.3 and 64.6 for body weight, feed conversion, carcass yield and breast meat yield, respectively. The bioavailability of MHA-FA for carcass yield and breast meat yield was significantly (P < 0.05) lower than that of DLM on a weight-to-weight and on equimolar basis.

This experiment was designed to determine the meat quality and lipid profile of broiler chickens fed diets containing turmeric (Curcuma longa) powder (Tur) and cayenne pepper (Capsicum frutescens) powder (Cay) as antioxidants. Two hundred and forty three (two-week old) Abor Acre broiler chicks were randomly allotted to nine treatment groups of 27 birds each, consisting of three replicates of nine birds each in a completely randomised design. Three levels of Tur (0, 2 and 4 g/kg) and three levels of Cay (0, 1 and 2 g/kg) were used to provide nine dietary treatments.  Meat quality indices such as cook and refrigerated losses, water absorptive power, etc were measured and determined at the 8th week. Broiler Chickens fed the basal diet had highest meat dry matter, protein content and least (p<0.05) meat pH, cook and refrigeration loss values. Meat triglyceride and meat malondialdehyde value was best (p<0.05) in treatments fed dietary 2 g/kg Cay, while chickens fed 2 g/kg Cay, 2 g/kg Tur + 1 g/kg Cay and 2 g/kg Tur + 2 g/kg Cay had better meat lipoprotein values. For meat sensory characteristic, meat flavour of broiler chickens fed diets containing 2 and 4 g/kg dietary Tur, were  moderately liked while overall flavour was best (p<0.05) in groups fed the basal diet with no dietary additive. It was evident in the study that the dietary inclusions of the test ingredients limited lipid oxidation, thus improved storage duration and meat flavor.
