Abstrak Penelitian ini bertujuan mengetahui kombinasi terbaik tepung ubi jalar merah dengan ragi sebagai pakan sinbiotik, yang dicampur ke ransum broiler. Jumlah materi yang digunakan sebanyak 100 ekor ayam broiler. Parameter yang diamati berupa organ pencernaan, yang diamati terdiri dari gizzard (rempela), usus halus, usus besar. Metode penelitian terdiri dari persiapan yaitu membersihkan bagian dalam kandang ataupun lingkungan sekitar kandang dengan menggunakan desinfektan kandang, pemeliharaan ayam broiler selama 35 hari, dan perlakuan  pada penelitian menggunakan ransum ayam  pedaging yang dicampur tepung ubi jalar dan ragi tape, yang dibedakan menjadi enam macam ransum perlakuan, dengan taraf tepung ubi jalar dan ragi tape yang berbeda-beda. Hasil penelitian kombinasi pemberian tepung ubi jalar merah dengan ragi sebagai sinbiotik tidak memberikan pengaruh nyata terhadap pertambahan bobot organ pencernaan ayam broiler (Gizzard, Usus Halus, Usus Besar). Level pemberian terbaik menunjukkan bahwa berat gizzard terdapat  pada P2 = 103 gram, berat usus halus terdapat pada P4 = 106 gram, berat usus besar terdapat pada P2 = 86 gram, masing_masing  memperlihatkan sebagai berat yang baik atau unggul dengan berat yang tertinggi dibandingkan dengan berat gizzard yang memiliki berat yang berbeda. Kesimpulan dari hasil penelitian bahwa  pemberian perlakuan tidak berpengaruh nyata terhadap berat organ pencernaan ayam broiler.   Kata kunci : Tepung Ubi jalar, Ragi, Terhadap Pertumbuhan Berat Organ Ayam Broiler   Abstract The study aims to find out the best combination of red sweet potato flour with yeast as sinbiotic feed which is miked to the broiler ration. The amount of material used is 100 broiler chickens. The parameter that is observed is digestive organs; qizzard, small intestive, large intestive. The methodology of the research is quantitative. It contains of preparation of cleaning the insside of cage or the envivonment around the cage by using disintecting the cage, the maintenance of broiler chicken for 35 days, and the treatment in the research is using broiler rations miked with sweet potato flour and yeast of tape, six kinds of treatment rations, with different levels of sweet potato flour and yeast of tape. The results of the research of the combination of red sweet potato with yeast as a sinbiotic is it does not give significant effect to inccrease of broiler gastrroinstestinal weight (qizzard, intestine, colon). The best level of administration shows that the weight of qizzard was found at P2=103 gram, in P4=106 gram, the weight of the large intestine or colon is found ad P2=86 gram, pach of it shows that the good weight or superior weight of the highest compared to the weight of the highest compared to the weight of different weight of qizzards. The conlusion of the research is there is no real effect to broiler disentive organ weight in the treatment.

This study aims to examine the use of red sweet potato flour on slaughter weight, percentage ofcarcass weight, and abdominal fat in broiler chickens fed with additional red sweet potato flour. Thisresearch was conducted in April to May 2018, housed in the Raman Farm enclosure in Puosu JayaVillage, Konda District, Konawe Selatan District. The material used in this study was 64 weeks oldbroiler chickens, with 64 feed ingredients used as the concentrate, corn, bean, sweet potato flour. Theequipment used is a scale, a colony cage made of wire-lined wood and measuring 4m x 2m, which isdivided into 16 plots and the size of each 1m x 0.5m, each story is equipped with a place to eat anddrink, 40-watt incandescent balloons and other equipment such as scales, ovens, sample grinders,basins, plastics, and gutters. This study was designed using a complete randomized design with fourtreatments and four replications, where four treatments consisted of P0 basic ration (Control), P1:basic ration containing 4% red sweet potato flour, P2: elemental percentage containing 6% red sweetpotato flour, and P3: basic ration contains 8% red sweet potato flour. The variables observed in thisstudy were cutting weight, carcass percentage, and abdominal fat of broiler chickens. The results ofthe analysis of variance showed that the administration of red sweet potato flour had no significanteffect (P> 0.05) on the percentage of carcasses and abdominal fat of broiler chickens. Broiler chickenaged five weeks. It was concluded that the provision of different red sweet potato flour in feed did notsignificantly affect slaughter weight, carcass weight, and abdominal fat percentage of broilerchickens. There is a tendency for broilers fed with red sweet potato flour to have heavier cut weights,a more significant portion of carcasses and an increase in the level of red yam, and a decrease inabdominal fat content and the addition of red yam levels in the feed.

The accumulation of industrial by-products increases the use of sweet potato waste for ruminants, but ruminal pH characteristics are still not well known. The objective was to assess the fluctuation of ruminal pH in sheep supplemented with different levels of sweet potato flour inclusion in their diet. Four rumen-fistulated sheep were used; they were fed a diet based on ryegrass haylage (Lolium multiflorum) and sweet potato flour (Ipomoea batatas), provided according to the level of inclusion in the total diet (0, 0.5, 1.0 and 1.5%). Approximately 80 ml of ruminal fluid was collected for reading on a bench pH meter. Statistical data analysis was run on Statistical Analysis System (SAS Institute INC. Cary, NC, USA), and statistical difference was considered for p < 0.05. The animals that received 1.5% of sweet potato flour in their diet presented acid rumen pH; the 1.0% group presented rumen pH acidification in the first 6 hours after feeding, and the 0.5% level of inclusion did not change the rumen environment. It is concluded that the inclusion of 0.5% sweet potato flour in sheep diet proved to be an efficient energy supplementation strategy.

ABSTRACT: This study evaluated the effects of different levels of substitution of ground corn by sweet potato flour on intake, digestibility, microbial protein synthesis and total Nitrogen (N) retention in sheep fed mixed diets based on corn silage. Eight castrated male sheep were used, kept in metabolic cages. The animals received fixed proportions of oat hay, corn silage and soybean meal. The control group (0%) received only ground corn, while the other groups received different levels of inclusion of sweet potato flour (SPF) to replace ground corn, in the proportions of 33%, 66%, and 100%. The 0% and 33% groups had lower neutral detergent fiber (NDF) intake than the 66% and 100% groups. There was a trend (P = 0.07) of effect of treatments on crude protein (CP) intake with a significant positive linear effect (P = 0.03). There was a trend (P = 0.07) for treatment effects in N intake with a significant positive linear effect (P = 0.03). The other parameters as urine N excretion (P = 0.91) and feces N excretion (P = 0.16) were not affected by the replacement of ground corn by SPF. Moreover, there was no effect on N retention (P = 0.43) and on efficiency of N use (P = 0.69). Adding SPF to a diet instead of corn did not alter the microbial protein parameters. The inclusion of sweet potato flour did not cause changes in the protein metabolism of animals, suggesting it can be used instead of corn.

  Abstract This research was conducted at the Faculty of Animal Husbandry Field Laboratory Kanjuruhan Malang began in March 2016 to april 2016. The material used is 100 broiler chickens aged 1 day. The purpose of this study was to determine the effect of yeast tape on potato epung jalardalam feed on carcass percentage and abdominal fat weight. The method used is experiment with completely randomized design (CRD) using 6 treatments and each treatment was repeated 3 times. The treatments used in this study are basal feed without the addition of sweet potato flour (P0) and the basal feed given the addition of sweet potato flour 1.5% (P1), 2 3% (P2), 4.5% (P3), 5 , 4% (P4), 6% (P5), 7.5% (P6). The results showed the addition of sweet potato starch flour give effect to the percentage of carcass and abdominal fat weight in all treatments. Abstrak Penelitian ini dilaksanakan di Laboratorium Lapang Fakultas Peternakan Universitas Kanjuruhan Malang mulai bulan maret 2016 sampai bulan april 2016. Materi yang digunakan adalah 100 ekor ayam broiler yang berumur 1 hari. Tujuan penelitian ini adalah untuk mengetahui pengaruh pemberian ragi tape pada epung ubi jalardalam pakan terhadap presentase karkas dan berat lemak abdominal. Metode penelitian yang digunakan adalah percobaan dengan Rancangan Acak Lengkap (RAL) dengan menggunakan 6 perlakuan dan setiap perlakuan diulang sebanyak 3 kali. Perlakuan yang digunakan dalam penelitian ini yaitu pakan basal tanpa penambahan tepung ubi jalar (P0) dan pakan basal yang diberikan penambahan tepung ubi jalar 1,5% (P1), 2 3% (P2), 4,5% (P3),5,4% (P4),6% (P5),7,5% (P6). Hasil penelitian menunjukkan penambahan tepung tepung ubi jalar memberikan pengaruh terhadap presentase karkas  dan berat lemak abdominal pada semua perlakuan.

This study aimed to determine the proximate compositions and functional properties of sweet potato flour from different varieties cultivated in Sabah, Malaysia, namely Jepun, Kairot and Kaladi. The results showed that the moisture content of all flour samples was below 14%. The fat and protein content of Jepun sweet potato variety were significantly different (p<0.05) as compared with Kairot and Kaladi sweet potato varieties. The ash and dietary fibre content of Kairot sweet potato flour were higher (p<0.05) compared to Jepun and Kaladi flours. In addition, Kaladi sweet potato had the highest carbohydrate content (82%). There were significant differences (p<0.05) in the values of L*, a* and b* for all sweet potato flours. The Jepun sweet potato flour had the highest foaming capacity, water absorption capacity, oil absorption capacity, swelling power and viscosity. Rapid Visco analyser revealed that significant differences were observed for pasting parameters such as peak viscosity, trough viscosity, breakdown viscosity, final viscosity and setback viscosity. The gelatinisation properties showed that Kairot sweet potato flour had the highest onset temperature, conclusion temperature and enthalpy while Kaladi sweet potato flour had the highest peak temperature.

<p>Sweet potato is one type of tubers found in Indonesia. <em>Hybrid</em> of sweet potato flour is obtained from the modification of the processing by fermentation using lactic acid bacteria. The purpose of this study was to determine the nutritional and antioxidant content of various types of <em>hybrid</em> sweet potato flour. This research is an experimental laboratory with a true-experiment design. The experiment was arranged in a complete randomized block design (RCB) with three replications. The treatments are 6 types of sweet potatoes which include purple sweet potato Var.Antin 1, purple sweet potato val.local, white sweet potato, orange sweet potato, Japanese purple sweet potato Var.Ayamurasaki and cilembu sweet potato. The study included the fermentation process using lactic acid bacteria (Acetobacter xylinum) addition concentration of 5%, siege, analysis of nutrient content (water, ash, protein, fat, fiber and carbohydrates) and antioxidant activity of various types of <em>hybrid</em> sweet potato flour. The results showed that various types of <em>hybrid</em> sweet potato flour significantly affect the nutritional content which includes water content, ash content, fat content, protein content, fiber content and total carbohydrate. The result of antioxidant activity in various types of <em>hybrid</em> sweet potato flour after fermentation treatment in a concentration of 5% Acetobacter xylinum ranged from 29,383-53.7929%. The lowest value obtained at cilembu <em>hybrid</em> sweet potato flour and the highest value was obtained from the Japanese <em>hybrid</em> sweet potato flour var.Ayamurasaki.</p>

The objective of the study was to determine the concentation ratio between purple sweet potato flour and wheat flour in order to produce purple sweet potato cookies having particular nutritional content and preffered by consumers. A completely randomized experimental design was applied in this study. One experimental factor which was ratio of purple sweet potato flur and wheat flour consisting five level of treatments, was as signed i,e 100%: 0%, 80:20%, 60%:40%, and 20%: 80% respectively. Variables measured were chemical composition (protein, fat, moisture, anthocyanin content) and sensory properties (colour, taste, texture, overall likeness). Results showed that most variables were influenced by the ratio of sweet potato flour and wheat flour, excluding moisture content. The ratio of 80% sweet potato flour : 20% wheat flour resulted in cookies with good characteristics and mostly preffered by parelists. Anthocyamin content of this particular cookies (80%: 20%) was similar to that of sweet potato flour.  Keywords: cookies, purple sweet potato flour, wheat flour   ABSTRAK  Penelitian ini bertujuan untuk menentukan konsentrasi tepung ubi jalar ungu dan tepung terigu yang tepat untuk menghasilkan kue kering ubi jalar ungu dengan kandungan gizi tertentu dan disukai. Rancangan yang digunakan adalah rancangan acak lengkap yang terdiri satu faktor dengan lima taraf perlakuan yaitu : Perbandingan tepung ubi jalar ungu dan tepung terigu 100% : 0%, 80% : 20%, 60% : 40%, 40% : 60%, 20% : 80%. Peubah yang di amati adalah komposisi kimia (penentuan kadar protein, kadar lemak, kadar air, kandungan antosianin) dan uji organoleptik (warna, rasa, tekstur, tingkat kesukaan). Hasil penelitian menunjukan bahwa perlakuan perbadingan tepung ubi jalar ungu dan tepung terigu mempengaruhi peubah-peubah yang diamati, sedangkan untuk kadar air tidak berbeda nyata. Berdasarkan hasil penelitian perlakuan perbandingan tepung ubi jalar ungu dan tepung terigu 80% : 20% dapat menghasilkan kue kering yang terbaik dan disukai. Kandungan antosianin kue kering ubi jalar dengan formulasi 80 : 20% tidak berbeda jauh dengan kandungan antosianin tepung ubi jalar. Kata kunci: kue kering, tepung terigu, tepung ubi jalar ungu
