Abstract Background: In ruminants, due to the hydrogenation of the rumen, muscles contain a large amount of saturated fatty acids (SFA), which have a negative effect on meat quality. Linseed as a common oil crop which is rich in polyunsaturated fatty acid (PUFA), it affected the deposition of PUFA. Unfortunately, PUFA can exert a negative influence on the oxidative stability of meat. Fortunately, linseed is not only rich in PUFA, but also rich in phenols, which are a good source of antioxidants. Therefore, linseed may be can serve as an effective feed additive to improve meat quality of sheep. The aim of this investigation was to establish the effects of dietary linseed supplementation on carcass traits, meat quality, muscle fiber characteristics and antioxidative capacity of sheep. Results: Results of this study indicated that linseed supplementation significantly increased the loin-eye area, crude protein and ash. Reduced pH24h, L* and shear force. Moreover, linseed supplementation affected the relative content and enriched the kinds of volatile flavor substances. Increased mRNA expression of MyHC I and MyHC IIx, and a decrease in cross-sectional area (CSA) and muscle fiber diameter was also observed. Additional changes included enhanced activity of succinic dehydrogenase (SDH), decreased activity of lactate dehydrogenase (LDH), increased total antioxidative capacity (T-AOC) activity. The mRNA expression of glutathione peroxidase (GSH-PX) and catalase (CAT) were increased while malondialdehyde (MDA) decreased. Conclusions: The results suggest that linseed is an effective feed additive in improving meat quality. The underlying mechanism(s) for its effectiveness may be partly due to a change in muscle fiber characteristics and antioxidative capacity.

The experiment was conducted to investigate the effects of dietary supplementation with Puerarin on meat quality, muscle antioxidant ability, and muscle fiber characteristics of beef cattle under a hot environment in summer. Thirty-two 15 ± 1.5-month-old Jinjiang bulls (291.65 ± 8.84 kg) were randomly divided into four groups with dietary Puerarin at 0 (control), 200 (Pue200), 400 (Pue400), and 800 (Pue800) mg/kg in the feed concentrate (n = 8). The feeding trial lasted for 60 days after a 10-day adaptation period (July 1–September 8); the average values of temperature, relative humidity and temperature, and humidity index were 30.68°C, 68.05%, and 81.81, respectively. The growth performance on day 40 of the experiment period was calculated. After 60 days' experimental period, four Jinjiang cattle per treatment from the control group, Pue400 group, and Pue800 group were slaughtered. Compared with the control group, the Pue400 and Pue800 groups improved the growth performance of beef cattle; the Pue800 group elevated the activities of superoxide dismutase, total antioxidant capacity, and glutathione peroxidase in the M. longissimus thoracis (LT) muscle. In the control group, the cell membrane was incomplete, and most of the mitochondria were elongated and in a fission state, while in the Pue400 and Pue800 groups, the cell membrane was clear and complete, and the mitochondria presented with round and oval shapes. Compared with the control group, the Pue400 and Pue800 groups reduced the shear force of the LT muscle, and the Pue400 group decreased the muscle fiber diameter and the myosin heavy-chain (MyHC)-IIb gene expression. Furthermore, the Pue400 and Pue800 groups decreased the ratio of AMP/ATP, the Pue800 group reduced the AMP-activated protein kinase α2 mRNA expression, and the Pue400 group improved the nuclear respiratory factor 1 mRNA expression. These results indicated that dietary supplementation with Puerarin might be beneficial to the meat quality of heat-stressed beef cattle by improving muscle antioxidant ability and reducing the MyHC-IIb muscle fiber composition. Based on the results of this study, we recommended 400 mg/kg Puerarin in the feed concentrate of beef cattle (~300 kg) for mitigation of heat stress.

AbstractTo evaluate the relationship between muscle fiber characteristics and the quality of frozen/thawed pork meat, four different muscles, M. longissimus thoracis et lumborum (LTL), M. psoas major (PM), M. semimembranosus (SM), and M. semitendinosus (ST), were analyzed from twenty carcasses. Meat color values (lightness, redness, yellowness, chroma, and hue) changed due to freezing/thawing in LTL, which showed larger IIAX, IIX, and IIXB fibers than found in SM (P < 0.05). SM and ST showed a significant decrease in purge loss and an increase in shear force caused by freezing/thawing (P < 0.05). Compared with LTL, SM contains more type IIXB muscle fibers and ST had larger muscle fibers I and IIA (P < 0.05). PM was the most stable of all muscles, since only its yellowness and chroma were affected by freezing/thawing (P < 0.05). These results suggest that pork muscle fiber characteristics of individual cuts must be considered to avoid quality deterioration during frozen storage.

There is a growing demand by the modern consumer for meat containing less fat and lower levels of saturated fatty acids, which are considered to increase the risk of coronary heart disease. In southern Italy, the Gentile di Puglia breed is one of the most common on farms, and the light lambs are often consumed. The study evaluates the effect of a diet containing extruded linseed (Linum usitatissimum) on growth performances, carcass traits, and meat quality in Gentile di Puglia light lambs. Thirty-six male lambs are weaned at about 20 days of age, and divided into three groups—each group is either fed a control diet (C), a diet containing 3% extruded linseed (L), or a diet containing 3% extruded linseed and 0.6% oregano (Origanum vulgare) (L + O). The lambs’ growth performances and the slaughtering and dissection data did not differ between groups. Dietary treatments have no significant effect on the quality and chemical composition of Longissimus lumborum (Ll). The mount of linoleic acid in Ll meat is significantly higher in the L group, and this positively affected the total content of n-3 Polyunsaturated Fatty Acid, as well as the n-6/n-3 ratio. The good results obtained concerning the sensory traits meet the requirements of the market’s consumer.

The supplementation of rumen bypass fat (RBF) has remained one of the preferred approaches used to decrease undesirable saturated fatty acids (FA) and increase beneficial unsaturated FA in the meat. This study was planned to evaluate the influences of rumen bypass fats on meat quality, fatty acid and metabolic profiles in male Dorper sheep (n = 36) with 24.66 ± 0.76 kg (mean ± standard error) initial body weight. Treatment comprised a basal diet (30:70 rice straw to concentrate) with no added RBF as a control (CON), basal diet with prilled fat (PF), basal diet with prilled fat plus lecithin (PFL) and basal diet with calcium soap of palm fatty acids (CaS). The findings revealed that cooking loss, drip loss and shear force in longissimus dorsi (LD) muscle were not affected by RBF supplementation, while meat pH was significantly higher in the CaS on aging day 1. However, the diet supplemented with prilled fat and lecithin modified the meat’s fatty acid profile significantly by increasing unsaturated fatty acids and decreasing saturated fats. The relative quantification of the major differentiating metabolites found in LD muscle of sheep showed that total cholesterol, esterified cholesterol, choline, glycerophosphocholine and glycerophospholipids were significantly lower in CaS and PFL diets, while glycerol and sphingomyelin were significantly higher in CaS and PFL diets. Most of the metabolites in the liver did not show any significant difference. Based on our results, the supplementation of protected fats did not have a negative influence on meat quality and the meat from Dorper sheep fed prilled fat with lecithin contained more healthy fatty acids compared to other diets.

ABSTRACT Context: Quality of life (QOL) assessment in patients with epilepsy (PWE) is increasingly recognized as an important component in the management of epilepsy. Aims: The objective of the present study was to assess influence of sociodemographic, clinical and pharmacotherapy characteristics collectively on QOL in adult PWE. Settings and Design: This was a cross-sectional, observational study in patients with confirmed diagnosis of epilepsy. Materials and Methods: QOL was assessed using modified QOLIE-10 questionnaire for epilepsy. Univariate and multiple regression analysis were done to determine factors associated with poor QOL, respectively. Results: There were 451 PWE, with a mean age 27.3 ± 8.15 years, 251 (56%) males and 191 (42%) had monthly income < 5000 Indian national rupees (INR)/month. The QOLIE score was 64.1 ± 15.97 (Mean ± SD). The univariate analysis showed factors such as lower monthly income, focal epilepsy, seizure frequency, antiepileptic drug (AED) polytherapy, conventional AEDs and frequent adverse drug reactions (ADRs) had significant negative influence on various domains of QOLIE-10 questionnaire. Multiple regression analysis showed seizure frequency as a significant predictor of most QOL domains and overall score, while ADRs as a significant predictor of all the domains. Seizure type was a predictive factor for domains like emotional well-being and overall score. Conclusion: Present findings showed patients on monotherapy had better QOL while those having lower monthly income, having focal epilepsy and who received conventional AEDs had negative influence on QOL scores. Further, higher seizure frequency and occurrence of ADRs were significant predictors of all the domains of QOL in PWE.

Objective: This study aimed to characterize the nutritional quality of breakfast consumed by the low-income Brazilian population. Methods: A cross-sectional study was conducted with a sample of 1547 low-income individuals attending 36 Community Restaurants (CRs) in Brazil. Food consumption was analyzed by the frequency of food groups presented in the 24 h recall for three days. The nutritional consumption consisted of the analysis of the total energetic value (TEV) and the macronutrients, fibers, monounsaturated fatty acids, saturated fatty acids, trans fatty acids, calcium, and sodium. The nutrients were evaluated considering the percentage of contribution concerning the daily recommendation of consumption. Results: Among the 4641 breakfasts expected to be consumed and reported, 17.2% (n = 797) of the consumers did not consume breakfast. Therefore, we analyzed the 3844 breakfasts. The analysis of food groups showed a high consumption of dairy and cereals, and low consumption of fruits, roots/tubers, and meat/eggs. The percentages of energy contribution of the macronutrients in the TEV were adequate for a balanced diet. The mean intake of monounsaturated fatty acids was low, and the contribution percentages of saturated fatty acids and trans fatty acids were within the recommendations. The mean fiber intake of the breakfast was low, agreeing with the result of low fruit consumption. Calcium intake covered 73.49% of that expected for this meal, and sodium intake was adequate in breakfast. Conclusion: The individuals studied consumed a nutritionally balanced breakfast. Although dairy was one of the most consumed groups, calcium consumption was low, indicating the need to consume higher portions of food sources of this nutrient.
