Introduction. Nutrition has a significant impact on human health, performance, well-being, and lifespan. The research objective was to develop formulations for functional compositions of seafood cryoconcentrates. Study objects and methods. The study featured concentrates obtained by cryotechnology from carcasses of Pacific squid (Todarodes pacificus), muscular shell of cucumaria (Cucumaria japonica), scallop mantle (Mizuhopecten yessoensis), octopus skin (Octopus dofleini), milt of Pacific herring (Pacific herring), and Japanese kelp (Laminaria japonica), as well as their multicomponent mixes. The content of biologically active substances was determined by the spectrophotometric method. The safety and biological value were biotested on Tetrahymena pyriformis. Results and discussion. The dry seafood concentrates had a high content of protein, minerals, and biologically active components, i.e. hexosamines, triterpene glycosides, carotenoids, nucleic acids, etc. The seafood cryoconcentrate mixes were divided into fortifying, restoring, immunomodulating, and mineral. Their chemical composition varied greatly, depending on the functional aim of the mix. For instance, the protein content varied from 28.8 to 57.6%, lipids – from 3.1 to 6.9%, carbohydrates – from 15.0 to 35.9%, minerals – from 10.9 to 22.9%, and hexosamines – from 2.2 to 5.6%. The experiments made it possible to substantiate the composition of the dry mixes. The compilation principle was based on the chemical profile of the raw material, as well as on the choice of biologically active substances. All the dry seafood concentrates showed a high relative biological value. However, the values differed, depending on the type of raw material: from 65.5% for the scallop mantle sample to 86.3% for the octopus skin sample. The difference could be explained by the chemical composition of the cryopowders and their availability to ciliate enzymes. Conclusion. The research resulted in formulations and functional mixes of dry seafood concentrates obtained by cryotechnology. The dry seafood concentrates can be used both independently and as functional compositions. The developed mixes demonstrated rather high content of animal proteins, minerals, and biologically active substance, e.g. hexosamines, triterpene glycosides, carotenoids, nucleic acids, etc. Their functional compositions proved to have excellent sensory properties; they are biologically safe for human consumption and have a high relative biological value.

The Medicinal Lovage (Levisticum Officinale) grows almost everywhere. In order to use Levisticum Officinale in economic needs, including in medicine, a number of countries are specially engaged in its cultivation. The analysis of the scientific literature revealed a large number of publications confirming the diverse chemical spectrum of rhizomes, roots and herbs of the medicinal lovage. In this regard, it is used as a medicinal raw material and is included in a number of European Pharmacopoeias. For medical purposes, all parts of this plant that contain biologically active substances can be used. Levisticum officinale contains various phytochemical compounds and secondary metabolites – terpenoids, flavonoids, essential oils, phthalides, polyacetylenes, coumarins, phenylpropanoids, alkaloids, tannins, phenolic acids, polyacetylenes. All of them have properties that can have a therapeutic effect on the organism. The composition of essential oils of Levisticum Officinale is the most studied. It is mainly represented by monoterpene hydrocarbons, sexwiterpenes and phthalides. There are some differences in the chemical composition of Levisticum Officinale. Most scientists agree that such a discrepancy may be related to the period and process of harvesting plant raw materials, age, genotype of the plant, climatic conditions and place of growth, as well as the method of extraction and the method of identification and quantitative determination of biologically active substances. Therefore, there is a problem of a single universal system of preparation and further use of raw materials. The development of modern methods for analyzing the raw materials of lovage and the study of its chemical composition creates prerequisites for expanding its use as a medicinal plant.

Species of the genus Iris in the scientific literature, recognized as rich sources of secondary metabolites. However, in chemical terms, Iris sibirica L. is poorly understood. The purpose of this study is a comparative analysis of the chemical composition of plant material of Iris sibirica L. to optimize the timing of collection in the conditions of Altai region.The object used samples of leaves and rhizomes and roots of I. sibirica varieties Cambridge and Sterkh variety, harvested in the vicinity of the city of Novoaltaisk.As a result of these tests the ash content from I. sibirica spring collection 1,3 times more than in autumn. The method of emission spectrometry revealed the presence of 26 elements. Of them macro – 4, microelements and ultramicroelements 8 – 14. Regardless of the variety of plant organs as observed the accumulation of Al. In a raw spring collection piling up Ba and Zn, and in the fall of Sr and Mn. In the studied samples I. sibirica cultivars Siberian crane Cambridge and the concentration of Cu, Pb, Cd, Cr and As exceeded the permissible level for dietary Supplements and tea on plant-basedWith the aim of obtaining flavonoids plant I. sibirica better harvest in the spring, and for optimal coumarins is the autumn collection. Tannins more is accumulated in the rhizomes with roots, and triterpenoid glycosides in the grass. The yield of essential oil from I. sibirica depends on weather conditions of vegetation period, time of procurement of raw materials and on plants and can be increased by 2–3 times.The study of element distribution and synthesized biologically active substances in the process of development of I. sibirica cultivars Siberian crane and Cambridge during the vegetation period has allowed to identify the vegetative phase with maximum accumulation, and organs of plants, accumulation of these biologically active substances.

It is well–known that cranberry is an especially rich and heterogenic source of phytochemical substances. Modern technologies allow to produce food products of wild fruits and berries, but they use their diverse and useful chemical composition insufficiently. The aim of the work was in studying features of the chemical composition and content of biologically active substances in cranberries, harvested at the territory of Ukraine, and the influence of processing technologies of cranberry on main indicators of its chemical composition at producing juices. It was established, that the maximal extraction of biologically active substances is possible at juices production using biocatalysis method, because the essential part of functional elements in the raw material is in the bound condition and is a base of cellular walls that is why it is expedient to disturb nativity and integrity of these natural biopolymers. There was experimentally grounded the influence of a processing technology on the quality of cranberry juice. There was studied the phenol composition of cranberry composition and influence of different ways of fermentolysis on PS extraction. It was confirmed by results of the study of the fraction composition of phenol substances, that their maximal extraction is achieved after the enzymatic processing of pulp and momentary heating to inactivate the effect of enzymatic preparations. It was proved, that enzymatic biocatalysis of cranberry pulp also favors the essential increase of the output of organic acids (lemon, apple, amber), sugars (fructose, glucose), sorbite polyalcohol and also phenol substances of cranberries. The mechanism of the enzymatic complex influence on cranberry pulp at fermentolysis was demonstrated. The use of products of cranberries processing at food products manufacturing will allow: to enrich the chemical composition, to compensate deviations of functional–technical properties of the raw material and to introduce resource–saving technologies. Based on the researches there were substantiated perspectives of using juices and marc of cranberry in different branches of the food industry: non–alcoholic, meat processing and at manufacturing products of the restaurant industry.


This article presents the results of the studies aimed at intensifying the process of extracting biologically active substances (BAS) from medicinal vegetative raw material using the method of maceration with the use of microwave treatment and exposure to ultrasound. The comparative analysis of the obtained data about the yield of BAS has shown that the method of maceration in combination with ultrasound treatment (UT) is the most efficient for extracting the BAS from extracts under the following conditions of extraction: extractant — water, intensity of UT — 100 W/cm2; duration of UT — 10 seconds; treatment frequency — every 10 minutes; and total duration of extraction — 60 minutes. The use of these parameters allows intensifying the process of extraction by increasing the biological value of the extract due to the additional BAS extraction.

Silver birch, Betula pendula Roth, is one of the most common trees in Europe. Due to its content of many biologically active substances, it has long been used in medicine and cosmetics, unlike the rare black birch, Betula obscura Kotula. The aim of the study was therefore to compare the antioxidant properties of extracts from the inner and outer bark layers of both birch trees towards the L929 line treated with acetaldehyde. Based on the lactate dehydrogenase test and the MTT test, 10 and 25% concentrations of extracts were selected for the antioxidant evaluation. All extracts at tested concentrations reduced the production of hydrogen peroxide, superoxide anion radical, and 25% extract decreased malonic aldehyde formation in acetaldehyde-treated cells. The chemical composition of bark extracts was accessed by IR and HPLC-PDA methods and surprisingly, revealed a high content of betulin and lupeol in the inner bark extract of B. obscura. Furthermore, IR analysis revealed differences in the chemical composition of the outer bark between black and silver birch extracts, indicating that black birch may be a valuable source of numerous biologically active substances. Further experiments are required to evaluate their potential against neuroinflammation, cancer, viral infections, as well as their usefulness in cosmetology.

Background. The deficiency of essential nutrients in the human body is the root cause of reduced efficiency, general resistance of the body to various diseases. That is an urgent problem in the context of the spread of coronavirus infection. In this regard, the search for opportunities to meet the needs of the population in food products that contain biologically active substances (BAS) through the use of high-value and at the same time available plant raw materials is extremely important. Marigolds attract special attention among such raw materials. The aim of the work is to study the chemical composition and evaluate the consumer properties of Tagetes L. varieties, zoned in the Kiev region, to prove the possibility of increasing the biological value of pasta by adding to their recipe powder from marigold inflorescences. Materials and methods. The object of research is pasta of B group (noodles). Inflorescences of marigolds of different varieties gathered during the flowering period in July-September 2019–2020 in the territory of Vasylkiv and Obukhiv districts of Kyiv region, Ukraine were used as enriching plant raw materials. The quality of finished pasta was assessed by organoleptic and physicochemical indexes (moisture content and titratable acidity). The content of mineral elements in the fine powder of marigold inflorescences was determined on the EXHERT-3L device, the quantitative composition and BAS identification – by spectrophotometric analysis on the device Specord-200 Analytic Jena UV-vis. The integrated quality index of pasta products was calculated taking into account the importance factors of individual indexes. Results. Comparing the obtained results, we can state that all the studied varieties – Gold Kopfen, Orange Flame, Hawaii, Equinox are characterized by high biological value, regardless of the area of collection. As a result of calculated and experimental studies it was determined that the addition of 7 % of the supplement does not provide the required supply of vitamins and minerals. Replacing the flour in the recipe by 20 % significantly improves the mineral composition, but deteriorates the taste and aromatic properties of pasta. The most optimal and rational amount of added additive is 15 %, as it improves the organoleptic properties of pasta and enriches their BAS. Conclusion. The usage of non-traditional vegetable raw materials, in particular powder from marigold inflorescences, which is rich in biologically active substances, allows not only to expand the range, improve the quality of finished products, but also increase the biological value of the product. The optimal amount of additive –powder from marigold inflorescences, was defined. It is 15 % by weight of flour in the production of noodles. This concentration allows not only to improve the organoleptic properties, but also to increase the content of biologically active substances – vitamins, micro- and macronutrients. The usage of non-traditional natural raw materials (powder from marigold inflorescences) allows to abandon artificial colorsand give the finished pasta a pleasant colorand aroma.

Abstract At present, the preservation of the consumer properties of berry products is an urgent problem. Use of fresh garden strawberries is limited by a short storage period and seasonality. Under optimal storage conditions in a normal atmosphere, the average shelf life of strawberries is from 2 to 9 days depending on the variety. To meet the needs of the population in garden strawberries and meet the physiological needs in a unique complex of biologically active substances, strawberries are subjected to different processing methods. Drying being a type of fruit and berry products processing has the following advantages: a significant increase in the shelf life of products, a decrease in the mass and storage volumes of dried berries, preservation of minerals, carbohydrates, dietary fiber, antioxidants, bioflavonoids and many biologically active compounds in berries. Modern drying technologies allow preserving the content of essential vitamins to its full extent. Comparison of two technologies for drying garden strawberries has established that vitamins and other biologically active substances are well preserved in berries. Berries dried by convective vacuum-impulse method (CVI) are recommended to be used for food enrichment.

The content of the major groups of biologically active substances in flowers of 7 Campanula species, cultivated in the forest-steppe of Western Siberia, were investigated for the first time. Freshly collected flowers were found to contain 0.06-0.15 % of catechins, 0.31-3.17 % of flavonols, 3.31-6.47 % of tannins, 3.10-15.57 % of pectic substances, and 0.66-16.4 mg% of carotenoids calculated per absolute dre weight of raw material. The amount of ascorbic acid was 36.9-114.0 mg% per wet weight. The data indicate that Campanula flowers are promising for the production of phenolic compounds, the development of food additives and fresh consumptions a seasoning.

As know, all wood material is recycled only half, and the rest of it remains unused. In practice, wood waste is most often plowed or burned, at a time when such wood is a valuable natural raw material that can compensate for the needs of a number of sectors of the economy. In this regard, the problem of recycling waste from the woodworking industry is very relevant today. Wood waste contains a large amount of substances capable of exhibiting biological activity. In particular, such biologically active substances include betulin, which is found in birch bark, which, due to its many advantages, has found wide application in medical, perfumery, cosmetic, food and other industries. For the rational use of wood and wood materials, it is necessary to develop new technologies and equipment for processing wood into products that are in demand for mankind. The paper provides an overview of the processing of birch bark. The relevance and prospects of birch species as a raw material for the chemical industry have been established. An installation for obtaining biologically active substances from wood waste is presented.
