Based on the results of a research undertaken among young people (18-30 years), students of the Faculty of Economic Sciences of the Vasile Alecsandri University of Bacau, this paper reveals their preference for local or foreign brands (on the Romanian market) for various categories of food products. It is also highlighted their views on certain essential evaluation criteria for food products (sanogenetic potential, value for money, appearance, taste, availability within commercial network, promotions, image), comparing Romanian and foreign products. The survey shows that the preference for Romanian brands applies particularly to: eggs, bakery products, grain mill, milk and dairy products, fruits and vegetables, meat and meat products (over 50% of the investigated people). A large proportion of young people believes that Romanian products are tastier and healthier than foreign ones, the better image enjoyed by foreign brands being a result of the promotion and packaging of products and not the quality of product; they also believe that Romanian brands are insufficiently promoted nationally, perceiving offer of imported products as being broader than the local one. The research was conducted on a sample of 100 students selected by the group sampling scheme and has an exploratory role for the community of 18-30 years people in Romania, offering, for it, only an indicative perspective on the raised issues.

Meat foods matter very much in the feed of man and fold considerable part her food ration. In many countries of the world meat is the basic object of food industry. In our state that determines basic legal and organizational principles of providing of quality and safety of meat products, food products made from them for life and health of population and prevention of negative in fluence on an environment in case processing, packing and moving through the custom border of Ukraine. By the most effective method of providing of safety of food products presently the system НАССР, that is base on implementation of requirements of DSTU 4161–2003, sconfessed in the world, that included general principles of functioning of the system, and also requirements of Regulation of European Parliament and Advice №852/2004. In terms of safety and quality cooked sausages (manufacturer PE «Matviychuk A.V.» Zhytomyr region), sausages (manufacturer SPE «Argon» t. Vinnitsa), small sausages (manufacturer SPE «Marshalok», t. Belaya Tserkov Kiev region) meet the requirements laid down DSTU 4436:2005 and hygienic in the production of these types of meat products. Our country has the Law of Ukraine «On basis principles and requirements for safety and quality of food», which spelled out the need to carry out inspections on compliance with hygienic and sanitary requirements in the production of safe and quality of food. The highest protein content was found in cooked (by the standards according to DSTU 4436:2005 – 12%). Fat content, moisture, starch and sodium chloride were well within the norms set of regulations for there meat products. Also safety measure as sodium nitrite content in sausage products did not exceed permissible levels (less than 0,005 %). MAFAnM lowest content was found in cooked sausages and sausages – 1.21·102 ± 28.82 и 2.82·102±42.54 КUO/g. In small sausages MAFAnM content was increased slightly – 1.16·103±29.67 КUO/g. The content of toxic elements in the investigated samples of meat products was within acceptable levels in accordance with DSTU 4436:2005 and radionuclide 137Cs and 90Sr – did not exceed permissible levels set by GN 6.6.1.1–130–2006.

Awareness is a prerequisite in the development of successful brands; in this paper are highlighted, for certain categories of common food products, brands enjoying the highest spontaneous awareness among young people. On the basis of this work are some of the results of a direct research conducted on a sample of 100 students, aged between 18 and 30 years. Common foods are intended for current consumption, serving to meet the dietary needs of consumers. Thus, we studied certain categories of food products with characteristics which make them fall within the common products category: milk and dairy products, meat and cooked meat (except fish), fish and eggs, canned meat (including pate), canned vegetables, bakery, milling products, pasta, breakfast cereals, sugar, eggs, nuts and seeds, oil, margarine. The conducted research has an exploratory character.

The growing interest in producing healthier animal products with a higher ratio of polyunsaturated to saturated fatty acids, is associated with an increase in lipoperoxidation. For this reason, it is essential to attenuate oxidative deterioration in the derived products. Natural antioxidants such as polyphenols represent a good candidate in this respect. The first part of the review highlights the occurrence, bioavailability, and the role of polyphenols in food-producing animals that, especially in intensive systems, are exposed to stressful situations in which oxidation plays a crucial role. The second part offers an overview of the effects of polyphenols either supplemented to the diet of monogastric and ruminants or added directly to meat and dairy products on the physicochemical and sensorial properties of the product. From this review emerges that polyphenols play an important, though not always clear, role in the quality of meat and meat products, milk and dairy products. It cannot be ruled out that different compounds or amounts of polyphenols may lead to different results. However, the inclusion of agro-industrial by-products rich in polyphenols, in animal feed, represents an innovative and alternative source of antioxidants as well as being useful in reducing environmental and economic impact.

Abstract Background Front of pack nutrition labelling is part of United Kingdom government’s programme of activities aiming to tackle diet-related diseases. There are several front of pack labelling formats available and they differ in the information they deliver. This study assessed the frequency of usage of front of pack food labelling systems on food products in the United Kingdom grocery market. It also measured the healthiness of some foods in the online market by categorising them according to their nutrient contents. Methods Five hundred food products in five categories [(1) cereals and cereal products, (2) dairy products, (3) beverages, (4) packaged meats and meat products, and (5) pre-packaged fruits and vegetables] from three main United Kingdom retail websites were investigated. A simple random sampling method was used for product selection according to the categories on the retailers’ websites. The healthiness of foods was also assessed by categorising them into ‘healthier’, ‘moderately healthy’ and ‘least healthy’ based on fat, saturated fat, salt and sugar contents. Results The total number of label types assessed comprises 19.6% of Guideline Daily Amounts or Reference Intakes and 43.8% had a combination of Traffic Light and Reference Intakes (hybrid label). Slightly over a quarter (27.4%) of products included nutritional information in a grid or table, 3.4% of the foods had two of any of the following: Health Logo, Reference Intakes and Traffic Light labels, and 5.8% did not have any Reference Intakes, Traffic Light, Health Logo or Hybrid label. Most of the foods assessed were manufactured in the United Kingdom with only 30.8% imported from 32 countries across four continents. Conclusions Traffic Light and Guideline Daily Amounts were the most used front of pack labelling formats on the assessed food product. A higher number of assessed products belonged to the “moderately healthy” and “healthier” categories than the “least healthy”. The imported foods that were found in the United Kingdom retail market showed that food choices could be made from the diverse food types.

Purpose. The aim of the article is to develop scenarios of consumption of the main types of organic livestock products in Ukraine. These scenarios should include the creation of an effective institutional environment aimed not only at strict quality control, but also at stimulating the modernization of production, the implementation of environmentally friendly technologies and genetic technologies for the production of safe products. Methodology / approach. The methodological basis of the study is an integrated (systemic) approach, which allows forecasting more accurately the reproduction of the processes of quality supply of organic livestock products, taking into account the factors that affect it. Methodological aspects of calculations in forecasting the capacity of new segments of the organic market (which replace the market segments of traditional or mass products) are based on criteria of rational consumption, taking into account the influence of such factors: potential of organic livestock production in Ukraine, number of households (consumers), income of households (consumers), differentiation of household incomes (consumers), prices for organic livestock products, prices for livestock products originating from the traditional (mass) sector, consumer confidence in the quality assurance system for livestock products (including state quality control systems), consumer confidence in the organic certification system of livestock products. Results. The main factors influencing the consumption of organic livestock products in Ukraine are identified, among which the main ones are the price and quality of products. The reasons of low rates of production of livestock products development with protected geographical names and organic products in Ukraine are described. In particular, it is substantiated that due to the high cost, complexity of production technologies, high cost of certification, the long transition period to organic production, the production of organic livestock products does not reach potential. Originality / scientific novelty. The forecasting of the capacity of the organic sector is made under the conditions of partial or complex implementation of measures aimed at improving the quality of livestock products with the definition of inertial, innovative and systemic scenarios. The authors identified the system scenario as a priority. According to the systemic variant in Ukraine for the period up to 2025 the forecasted capacity of the internal market for organic meat and meat products (in terms of meat) will amount to 3.26 bln UAH; organic milk, dairy products and butter (in terms of milk) will amount to 2.65 bln UAH; organic eggs will amount to 0.47 bln UAH. In general, the market potential capacity of the main types of organic livestock products (at prices in 2019) will be 6.38 bln UAH (0.2 bln Euro) or 151.9 UAH (4.9 Euro) per one person. This is much less than the current European figure of 50 euros per person. In the potential consumer market, the share of organic livestock products in accordance with the systemic version of the solution of the quality problem will be from 1.6 % (meat and meat products) and 1.5 % (milk and dairy products) to 2.3 % (eggs), which is much lower than European indicators. Practical value / implications. Scenario forecasting of the dynamics of potential demand for organic livestock products allows understanding the pace of development of the domestic market of organic products, justification of measures and tools to stimulate domestic organic production, determining the impact of these measures on the capacity of the organic market. Otherwise, a significant market share of organic livestock products and food products of animal origin, including milk and dairy products, will be filled by imported products of European producers. The authors identified as a priority systemic scenario for the development of consumption of the main types of organic livestock products in Ukraine.

Dietary fibre can be used in many functional foods like drinks, beverages, bakery, and meat products. effect of different processing treatments (like cooking, canning, grinding, boiling, frying) change the physico-chemical properties of dietary fibre and improves their functionality. Dietary fibre can be analytical by different methods, mainly by: enzymic gravimetric and enzymic- chemical methods. This paper presents the classification, applications, and functions of dietary fibre in different food products.

Nowadays, consumer’s awareness regarding edible and functional coatings used in the food industry is increasing because of their novel approach on prolonging the shelf life of agri-food products that during storage, are subjected to a loss of quality attributes, which inevitably contributes to food waste. In order to combat this problem, functional coatings and edible films can be used because of their capability to extend the shelf life of food products by providing gas and water barrier properties and delaying microbial spoilage. The aim of this study is to review the literature and outline the most recent findings and developments regarding edible and functional coatings used in the food industry. Functional and edible coatings can be applied on different types of food products, like meat products, different kinds of cheeses and fruits and vegetables. mainly because they help maintain the organoleptic proprieties, such as aroma, taste and appearance and prologue their shelf life. The new concept of functional coatings and edible packaging has significantly influenced the marketing and safety aspects of food products and further studies and developments are needed to improve these technologies.

The growing interest of consumers to find products with greater health benefits has led to multiple research works focused on product developments with antioxidant-rich foods by creating safe, acceptable, and high-value nutrition, even in those foods susceptible to deterioration, in order to replace synthetic preservatives with natural ones. Bee products are an alternative addition for food products (dairy and meat products, coating fruits, and alcoholic and non-alcoholic drinks), which can improve the final quality of the food for the benefit of the consumer. The aim of this review was to provide detailed information on the main findings of innovative food products based on the addition of bee products by highlighting their physicochemical and functional properties and their behavior throughout storage.

Abstract The results presented in this study were obtained during the implementation of the Interreg-IPA CBC project Traditional and Standard Quality - TASQ (HUSRB/1602/41/0146). The main goal of this project was quality standardization and certification of traditional food products in order to expand their market presence within the Serbia and Hungary cross-border region, using innovative processing and marketing techniques. In order to achieve that, the TASQ quality assurance system was developed, and the common certification mark Q was registered by Intellectual Property Office (IPO) in both cooperating countries. Numerous traditional food products were collected and analysed for nutritional and sensory quality as well as for safety. In total, 158 products across nine groups of traditional foodstuffs (meat products, dairy products, honey, vegetable oils, processed fruits and vegetables, juices/beverages, pasta and baker’s wares, confectionery, spices and teas) were certified with gold, silver or green Q mark, representing the quality level. A new internet platform (www.tasq.rs) was developed with the purpose to help traditional food producers to promote and sell their products on a wider market. The assigned trademark is clearly indicated for each certified product within the producers’ profiles on TASQ internet platform, and represents a guarantee of product quality intended to raise customer confidence.

The meat industry takes a leading place among all branches of the food industry. At the same time, meat and its processed products are a serious factor in the spread and increased risk of listeriosis, salmonellosis, campylobacteriosis, botulism, poisoning with staphylococcal enterotoxin, escherichiosis, protozoa. One of the mandatory requirements for the quality of food products is their safety for human health and stability during storage and sale. Of particular importance to the consumer is the microbiological safety of food products, the provision of which is the main task of bacteriological control at enterprises producing meat and meat products
