The article presents the results of determining the content of flavonoids, anthocyanins, tannins and ascorbic acid in the leaves of Cotinus coggygria Scop, growing under conditions of varying degrees of technogenic pollution. The conformity of the leaves of C. coggygria, collected in the Donetsk region, to the requirements of regulatory documentation for the content of active substances was evaluated. The content of cadmium and lead in the plant materials was determined; its environmental safety was evaluated.

Medicinal plants (Cotinus coggygria, Dactylorhiza maculata, Platanthera chlorantha) growing in various territories (Kaliningrad, Moscow, and Minsk regions) were the objects of research. This paper presents a study of the chemical composition of these plants. To analyze the qualitative and quantitative composition of biologically active substances, the method of high-performance liquid chromatography was used. Atomic absorption spectrometry was used to study the content of trace elements. The content of organic acids and vitamins was determined by capillary electrophoresis using the Kapel-105/105M capillary electrophoresis system with high negative polarity. Extracts of medicinal plants were obtained on a Soxhlet apparatus using 70% ethanol as an extractant. It was found that among the biologically active substances in the plants under discussion, hyperoside, rutin (C. coggygria), Ferulic acid and Gallic acid (D. maculata), triene hydrocarbon (3,7-Dimethyl-1,3,6-octatriene), unsaturated alcohol (3,7-Dimethyl-2,6-octadien-1-ol), and benzyl acetate (P. chlorantha) prevailed. Samples of these medicinal plants contained trace elements (phosphorus, potassium, calcium, sodium, magnesium, and sulfur) and many aliphatic organic acids (succinic acid, benzoic acid, fumaric acid, citric acid, oxalic acid, and tartaric acid). The largest amount of biologically active substances and secondary metabolites of the studied plants from the Eastern Baltic is associated with climatic and ecological differences from other regions. The composition of these plants determines the potential of their use in feed additives for livestock and poultry as part of measures to improve the quality of livestock products. The use of medicinal plants for the production of feed additives is relevant in terms of improving regional economies, as well as improving the quality of life and nation’s health by providing ecologically clean livestock products.

The popularity of herbal remedies and medicines, with the participation of biologically active substances from plants is traditionally high. The annual increase of the domestic market for herbal remedies is due to the preservation and modernization of production capacities for processing of medicinal vegetative raw materials in Ukraine, introduction of modern scientific developments, a large natural resource base of medicinal plants and attracting investments in the development of this industry. The aim of our work was the study of the domestic market of medicines of plant origin, which includes herbal remedies, substances and preparations with the participation of biologically active substances from plants. The object of the study was domestic medicines of plant origin that are registered in Ukraine for 2012–2017. The study used the analytical, statistical methods, and the results of its own resource studies of medicinal plants. Phytopharmaceutical market of Ukraine is actively developing due to the attraction of new types of medicinal plants and expanding the range of medicines. The number of domestic drugs with the participation of biologically active substances from plants has increased by 17.4% compared with 2014. It is established that as of 1 January 2017 in Ukraine was 1 141 the form of medicinal drugs of plant origin. Of them: 645 – domestic products, 496 – foreign. Most of the herbal drugs in the pharmaceutical market of Ukraine are made from wild and cultivated domestic raw materials.

The content of the major groups of biologically active substances in flowers of 7 Campanula species, cultivated in the forest-steppe of Western Siberia, were investigated for the first time. Freshly collected flowers were found to contain 0.06-0.15 % of catechins, 0.31-3.17 % of flavonols, 3.31-6.47 % of tannins, 3.10-15.57 % of pectic substances, and 0.66-16.4 mg% of carotenoids calculated per absolute dre weight of raw material. The amount of ascorbic acid was 36.9-114.0 mg% per wet weight. The data indicate that Campanula flowers are promising for the production of phenolic compounds, the development of food additives and fresh consumptions a seasoning.

The aim of the research was to study the variability of the content of polysaccharides and flavonoids of Bidens cernua herb, depending on the terms of harvesting, drying conditions and place of growth on the territory of the Republic of Belarus. It was shown that the maximum polysaccharide content was observed in the phase of budding and mass flowering of the plant. Unlike polysaccharides, the content of flavonoids in the budding phase was significantly lower than in the mass flowering phase (p<0.05), which accounts for the maximum content of flavonoids, and in particular, luteolin-7-O-glucoside. The highest polysaccharide content was noted for raw plant materials undergone natural drying or at 40 and 60 °C without ventilation. An increase in the drying temperature or the use of ventilation during drying led to a significant decrease in the content of this group of biologically active substances. The content of flavonoids of Bidens cernua herb, dried at elevated temperature with ventilation, regardless of the drying temperature used, was higher than the content of this group of biologically active substances in comparison with samples of raw plant materials subjected to natural drying (p<0.05). A higher flavonoid content was also noted for Bidens cernua herb, dried without ventilation at 40 and 60 °C. The content of polysaccharides and flavonoids of Bidens cernua herb, depending on the harvesting region, varied between 35.64–90.52 mg/g and 23.11–49.86 mg/g, respectively, and was most dependent on the amount of precipitation per year region. Based on the results obtained, it is recommended to harvest Bidens cernua herb during mass flowering and to dry at 40 °C without ventilation.

The use of infusions and extracts from domestic plant materials is a promising direction in the development of functional beverages since they contain a wide range of substances of various pharmacological properties. Drinks fortified with physiologically active natural components maintain a certain level of this content in human body. They can have a healing or prophylactic effect. However, there is a lack of technologies for the effective production of biologically active substances from plant materials. Moreover, the development of cultivated botanical medicinal plant species remains quite poor. The present study features the qualitative and quantitative composition of biologically active substances of medicinal plants that are endemics of Siberia. They are Rhodiola rosea (Rhodiola rosea L.) and maral root (Rhaponticum carthamoides). The paper introduces a method for increasing their biosynthetic activity. An experiment helped to select a composition of the nutrient medium for the cultivation of callus cultures of Rhodiola rosea (Rhodiola rosea L.) and maral root (Rhaponticum carthamoides) in vitro, which contributed to an increase in the biosynthesis of biologically active substances. For callus cultures of Rhodiola Rosea (line R.r-1k) the following composition was used: mineral base – MS; sucrose – 30 g; inositol – 100 mg; thiamine – 1.0 mg; pyridoxine – 1.0 mg; Ca-panthetonate – 10 mg; kinetin – 0.05 g; naphthyl acetic acid – 0.1 g; 2.4-D – 0.5. For callus cultures of maral root (line R.c -2k): mineral base – SH; sucrose – 30 g; inositol – 100 mg; thiamine – 5.0 mg; pyridoxine – 0.5 mg; nicotinic acid – 5.0 mg; kinetin – 0.1 g; indoleacetic acid – 1.0 g. The authors developed a technology for the production of functional whey-based tonic drink fortified with extract of carotenoids isolated from the fruits of mountain ash and the extract of biologically active substances Rhodiola rosea and maral root. The presence of biologically active substances in the plant and medicinal raw materials gives the drink antioxidant and bactericidal properties, as well as helps to raise the overall state of the organizm and strengthen the immune system.

The article concerns the research of the herb Common Agrimony (Agrimonia eupatoria L.) use in the kvass manufacture, because the plant has a high content of flavoring and biologically active substances (flavonoids, tannins, arbutin, etc.). Researchers used standard, adopted in the brewing and soft drinks industry test methods and methods of processing obtained results. To produce kvass with the best quality characteristics, a man has to use Agrimonia eupatoria L. extract. In order to obtain this extract with the maximum amount of flavoring and biologically active substances (polyphenolic substances, ascorbic acid) a man must macerate 3-5 mm cut grass using purified water as a solvent in a ratio of 1:10 at a temperature of 40 ± 3 °C for 5-6 hours. Agrimonia eupatoria L. extract is an opaque brown liquid with a weak greenish tint, weakly expressed sweet-apricot aroma and taste; the mass fraction of dry substances is 3.0 ± 0.1 %; acidity – 2.5 ± 0.2 units; the content of polyphenolic substances is not less than 13.5 mg / 100 cm3; the content of ascorbic acid – not less than 4.5 mg / 100 cm3 . The authors developed kvass technology, including the preparation of kvass wort and Agrimonia eupatoria L. extract separately, its blending, fermentation, cooling, clarification and bottling. Based on the organoleptic and physical and chemical parameters obtained during the study, the researchers recommended the optimal ratio of kvass wort and Agrimonia eupatoria L.: 90:10 – 80:20. They developed regulated quality indicators of the new kvass: appearance – a transparent foaming liquid with opalescence, without foreign inclusions; color – brown with greenish tones; aroma and taste – refreshing, sweet and sour, bread, with light tones of Agrimonia eupatoria L. extract. The use of an aqueous extract from the herb Agrimonia eupatoria L. in the kvass production enables to get products with original organoleptic characteristics
