Background. The problem of lactose intolerance is becoming widespread, especially in Ukraine it affects 15–35 % of the population. Dairy products are a valuable source of essential nutrients, that’s why it is impossible to completely rule out them from the diet. To solve this problem, it is important to develop technology for dairy products that are free of lactose or with reduced content. The aim of thework is to analyze the world market of low-lactose dairy products and to identify the factors which influence on the formation of such a market in Ukraine. Materials and methods. The subject of the study is the market segment of lactose-free and low-lactose dairy products. Methods of analysis and synthesis, statistical methods of evaluation, scientific generalization and comparison of data are used. Results. The formation of a healthy food market is characterized by gro­wing demand for special food products with regulated nutrient composition, in particular for dairy products, lactose-free or with its reduced content. However, in Ukraine, this market is still in its infancy. Today in country there are 160 units of lactose-free and low-lactose dairy pro­ducts. The volume of imported products in the general range is 68.13%. Kefir and sour cream have the largest share in the formation of the domestic market of low- and lactose-free dairy products, and domestic yogurts have the smallest part. Therefore, the saturation of the market with domestic yogurt, free of lactose, or with its reduced content, is an important area of the development of the Ukraine’s dairy industry. The restriction of natural food resources negatively affects the formation of the domestic market of low-lactose dairy products. In 2020, milk production decreased by about 7 %, due to the unstable economic situation caused by quarantine restrictions in the context of the COVID-19 pandemic. That’s why today the problem of complete collection and rational use of secondary raw milk in the production of food products dominates., especially dairy products of the "free-from" category. Conclusion. The need to create new technologies for low-lactose dairy products using local bioavailable raw materials is essentially due to their high demand and a narrow range of domestic products. The priority directions of development of the domestic market of low-lactose and lac­tose-free dairy products are offered in the context of the state policy of introduction of resource-saving and increase of volumes of high-quality production of domestic production.

Проанализированы проблемы на рынке молока и молочных продуктов России в условиях глобального экономического кризиса: перепроизводство молока в основных странах-экспортерах, снижение закупочных цен на сырое молоко, снижение цен на биржевые товары в мире и России в 2020 году, тренд на уменьшение спроса на молочные продукты на мировом рынке в среднесрочном периоде, снижение общего спроса на молочные продукты на внутрироссийском рынке при падении реальных доходов населения, изменение структуры потребления. Проведена оценка новых возможностей и угроз для развития отрасли: со стороны потребителей — рост цен на продовольствие, снижение доходов; с позиции производителей молока — снижение закупочных цен, рост требований к сырью для производства продукции с увеличенными сроками годности, дефицит рабочей силы, вероятное сокращение господдержки в результате снижения цен на углеводороды, попытки регулирования цен; со стороны перерабатывающих предприятий — сокращение спроса, снижение цен на готовую продукцию вслед за мировыми ценами. Обоснованы приоритеты инвестирования в молочном скотоводстве и основные формы совершенствования государственной поддержки отрасли, обеспечивающие эффективную адаптацию производителей молока к новым экономическим условиям, повышение устойчивости отрасли при усилении макроэкономических рисков. The article analyzes the problems in the Russian milk and dairy products market in the context of the global economic crisis: overproduction of milk in the main exporting countries, lower purchase prices for raw milk, lower prices for commodities in the world and in Russia in 2020, trend to reduce demand for dairy products on the world market in medium term, a decrease in total demand for dairy products in the Russian market with a decrease in the purchasing power of the population, a change in the structure of consumption. An assessment of new opportunities and threats to the development of the industry was carried out: on the part of consumers — rising food prices, lower incomes; from the perspective of dairy producers — reduction in purchase prices, increased requirements for raw materials for the production of products with extended periods, labor shortages, the likely reduction in state support as a result of lower prices for hydrocarbons, attempts to regulate prices; on the part of processing enterprises — reduction of demand, reduction of prices for finished goods following world prices. The investment priorities in dairy cattle breeding and the main forms of improving state support for the industry, ensuring the effective adaptation of milk producers to new economic conditions, increasing the sustainability of the industry with increasing macroeconomic risks, are substantiated.

At present, the development of new technologies in the food industry and the creation of a wide range of qualitatively new products with a directed change in the chemical composition and properties is an important direction, which contributes to improve population's nutritional system. Particularly, at present the introduction of resource-saving, import-substituting technologies into production, which allow the rational use of secondary raw materials, preserve the country's food security and expand the range of functional food products, is important. The purpose of the research is the possibility of joint use of raw milk, raw cream, milk processing by-products, biologically active plant raw materials and the development on their basis of a technology for an enriched cheese product of the "Ricotta" type with functional properties in order to introduce import-substituting technologies, improve the structure nutrition of the population. The objects of research were raw milk, cheese whey, fermented cheese whey, milk-whey mixture, barley malt extract. The most optimal time of biomodification, the concentration of the introduced biologically active additive, the amount of proteolysis have been established. The need for biomodification by a consortium of probiotic bacteria in order to improve the nutritional value of the product.

Import substitution is a process of gradual displacement of foreign goods in the domestic market by analogues of domestic production. In Russia, the need to accelerate the development of national production of agricultural raw materials and food products has been discussed since the beginning of the second decade of this century, since the increasing share of foreign goods in the national consumption of products on the domestic market has become a signal of a violation of the country’s food security indicators. The State authorities made the appropriate necessary decisions, which were implemented. This issue became particularly relevant after 2014, when Russia suddenly faced sanctions against it from the United States and its NATO allies. This led to the adoption of the counter-embargo, stimulated the development and implementation of additional eff orts to develop import substitution in our country. In a fairly short period of time, our country has achieved very signifi cant results in increasing its independence from imports, primarily in the food market, in particular in eliminating the shortage of meat and dairy products. The domestic market has become fully secured due to the national production of poultry, pork, many types of vegetables, and confectionery. The national production of beef and dairy products has expanded. This made it possible to signifi cantly reduce the import supply of such goods. The authors consider and analyze the current trends and features of this process. For a number of food products, Russia has become a major exporter on the world market, capturing major positions in the world market of wheat, sunflower oil, fats, a number of other food products, as well as fertilizers. The demand for Russian food products on a large scale is presented by China, the countries of the Middle East, and North Africa. Nevertheless, there are still unresolved problems in the country, which the authors point out. In particular, it is necessary to make eff orts to reduce import supplies of seeds, seedlings, breeding cattle, highly specialized agricultural machines, food equipment, to expand the development or purchase of technologies for processing agricultural products, the production of food additives and other imported components for the processing industry. Of course, there will remain some types of tropical agriculture, which the country will continue to import, since it is impractical to develop their production in Russia for climatic reasons.

A recent tendency in Ukraine is the changes in the structure of food consumption, which are caused by the reduced consumption of some product groups and by their decreasing quality. A persisting problem is that affordable and easy-to-consume food products made with due consideration of the needs of patients with certain categories of diseases can hardly be found on the domestic market. The products present on the domestic market are all imported, available in a limited assortment, very expensive, and not customised to suit all the specific needs of human metabolism. Approaches to the nutrition of patients with certain types of nutrition-dependent and non-infectious diseases have been analysed. It has been established that аn effective component in the diet of patients with non-infectious diseases can be plant-based milk analogues. It has been determined how important it is to use domestic raw materials: it will contribute to expanding domestic production, will help the gross domestic product growth, and will reduce the product’s costs, thus reducing the costs of diagnostic and treatment procedures. It has been established that the assortment of plant-based milk analogues is constantly expanding. The vegetable raw material conventionally used to make this product group has been analysed. It has been shown that fenugreek seeds can be most effectively used to make special food products (in particular, plant-based milk analogues) for the nutritional support of patients with non-infectious diseases. This is feasible due to the availability of the raw material, simple cultivating conditions, the chemical composition of the product (e. g. a wide range of biologically active substances), low costs of the product when it is made from domestic raw materials, and the simple production technology. It is expected that manufacture of milk analogues from fenugreek seeds will widen the assortment of this product group, and satisfy the target consumers’ needs of safe and high quality products that offer an alternative to imports.

Ten media, commonly used for the detection and isolation of streptococci of sanitary significance in water, dairy and other food products, were compared to establish a plating medium for the enumeration of enterococci in dairy products. To make all media suitable for comparison by the agar plate method, agar was added to those media which initially were recommended for use as broths. Criteria used in selecting the medium were high recovery, selectivity but not undue inhibition of enterococci and ease in obtaining and interpreting results. The recovery data of three different platings of enterococcus cultures were statistically analyzed. In this manner, one medium was eliminated on the basis of low recovery. Six of the remaining nine media were eliminated because they permitted the growth of non-enterococcus cultures. Two of the three media then remaining were eliminated because they allowed one S. bovis culture to grow. In addition, these media showed considerable variation in size and color of enterococcus colonies. The medium selected, the Citrate azide medium of Reinbold, Swern and Hussong (13), was modified by increasing the azide concentration. This did not result in undue inhibitory effects. It was further tested by obtaining recovery data for 158 known enterococcus cultures. High selectivity was demonstrated by showing that 408 colonial isolates from plates of raw milk, cheese and butter could be identified as enterococci.

The article presents the results of studies obtained in the study of the quality of milk processed with the use of high-frequency acoustic cavitation and dairy products produced with its use. The research was carried out with the use of General scientific and special research methods in the laboratory of the Department of technology of storage and processing of animal products of the K. A. Timiryazev and in the accredited laboratory of technochemical control of the all-Russian research Institute of dairy industry. It is shown that the treatment of cow's milk-raw materials high-frequency ultrasonic vibrations (above 45 kHz), the generated electric ultrasonic device immersion type pulse impact ouzo "Activator-150", the number of bacteria of group of intestinal sticks (coliforms) decreased by almost 40%, which allows to make a conclusion about the appropriateness of the selected method of exposure for the destruction of microorganisms E. coli and coliform bacteria. Processed, using high-frequency acoustic cavitation, cow's milk was used for the production of brine cheese-cheese. It is shown that cheese cheese had a high nutritional value, which is due to the preservation of essential substances in the raw material (in particular, calcium, which in the production of cheese cheese precipitates if pasteurized milk is used), elastic consistency, safety of consumer characteristics - microbiological and physico-chemical.

Received in revised 08.08.2020 Methods based on the analysis of proteins and DNA molecules are more and more used to assess the composition of food products. Proteins research methods include immunological, electrophoretic and chromatographic ones. The analysis of DNA molecules is most often used to identify the species affiliation of food components. This is due to the stability of their structure compared to proteins, as well as their presence in most biological tissues. The results of studies evaluating methodological approaches for the application of the PCR diagnostic method to identify the composition of food products and the possibility of their use for monitoring dairy products have been shown. The objects of research were samples of cow, goat, sheep milk, as well as milk samples of different animal species mixed in various ratios. DNA was extracted from milk samples according to a unified technique for the separation of DNA molecules in milk and dairy products. The work also considers the possibility of using the PCR diagnostic method to identify the raw material origin of the product. To evaluate the measurement methods, artificially created samples of raw milk were used, which were cow, goat and sheep milk, a mix of three types of milk in different ratios. As a result of the research, the main method has been chosen as the real time PCR method, which has reliability, high sensitivity, sufficient rapidity, with the possibility of using it for dairy multicomponent products with a complex structural matrix, as well as products that have undergone deep technological processing.

Nowadays, there is a growing consumer interest in food products, made from vegeta-ble raw materials. The article is devoted to an actual topic related to the choice of plant mate-rials, based on its nutritional and biological value, in order to create functional beverages. The analysis of the world market of vegetable analogues of milk was implemented. Based on the literature, the following raw materials were analyzed: cashew nuts, cannabis fruits, sesame and poppy seeds, almond kernels, buckwheat seeds and oats, soybeans. The data on nutritional value, vitamin-mineral and amino acid composition, as well as the composition of fatty acids of the specified raw materials was presented. The conclusion is made about the perspective of its use for the manufacture of drinks, alternative cow’s milk. The article reflects the results of research work on the creation of a functional drink based on sesame seeds, provides information about the nutritional value and biochemical composition of the drink, made on the basis of this raw material. Sesame milk when used regularly can help prevent diseases of the car-diovascular system, the gastrointestinal tract, the musculoskeletal system.

The urgency of the problem being investigated is conditioned by the issues of rational use of natural resources in the conditions of transition of the economy to the trajectory of sustainable development. The analysis of conceptual views on this issue points to many arguments, which indicates a divergence of theoretical positions. The purpose of the article is aimed at the formation of a resource-saving strategy and the concepts of “cleaner production”, which are one of the decisive ways in increasing the efficiency of the use of natural resources. In recent years, this process is significantly intensified, which is associated with the extraction, processing and transportation of oil and gas, which are a dangerous source of possible environmental complications. The manifestation of increased attention to the problem being investigated is based on an understanding of the main role of resource saving in market conditions. The leading approach to the study of this problem was the structural reorganization of existing production facilities and the creation of new ones based on the integrated use of petroleum raw materials, taking into account the introduction of innovative processes. The main components of scientific novelty are directions that have been further developed and containing elements of a real increase in scientific knowledge. The main results of the article are aimed at justifying the development of all components of resource-saving links. The materials of the article can be used to improve the state policy in the field of resource saving, using the principles and tools of the “cleaner production” concept, as well as in teaching courses in economic theory, the theory of resource-saving management.

The specialization of countries in the world market is the basis of international trade. The theoretical foundations of global specialization are formed by the concepts of international trade, absolute and comparative advantages, opportunity costs. The export specialization of Ukraine and its agricultural sector is determined by six types of agri-food products: corn, wheat, barley, rapeseed, sunflower oil and cake, which provide almost a third of national and over 70% of agri-food exports of the country. Thus, Ukraine's agri-food exports mainly consist of raw materials and is hyperspecialized. Specialization and internationalization of agri-food production and exports of Ukraine are intensifying: the country’s share in global exports of these products is growing, the dependence of domestic farmers on imports of many types of production resources is critically increasing. At the same time, the share of the import component in Ukraine's exports of plant products is relatively small. The current model of Ukraine's global agri-food specialization needs to be adjusted. This is necessary both to preserve the natural resource potential of agricultural production and to ensure the development of the industry in line with modern global socio-economic trends. To do this, it is first necessary to expand the lists of agricultural products and importing countries, intensify the involvement of domestic producers in global value chains, as well as to increase the share of in-depth processing products. Achieving the set goals necessitates the development of transport and logistics infrastructure and the formation of an effective institutional environment in the country. All this should improve the conditions for conducting agrarian business and motivate it to comply with natural resource constraints and the development of production for deep processing of agricultural raw materials. In order to increase the number of importing countries and expand the scale of exports of domestic agri-food products, it is also necessary to intensify international trade and economic cooperation.
