The article presents experimental materials on the study of changes in the whey and cottage cheese physicochemical properties which are made from the milk of Ukrainian black-and-white dairy cows with different kappa-casein genotypes during storage. The experimental part of the work was carried out in the conditions of a pedigree plant for breeding Ukrainian black-and-white dairy breed of the «Profintern» unit of the State Enterprise «Gontarivka» in the Institute of Animal Science of the National Academy of Agrarian Sciences (NAAS). Based on the analysis results of the chemical composition, there were no significant differences between the groups for most indicators during storage in the period from the first to the 15th day, although in absolute values they can be placed in the following order: cottage cheese made from milk of cows with the BB genotype, AB and AA. It was found that the concentration of active acidity, similar to most quality indicators of cottage cheese, was determined at the beginning of storage by a higher value in cows with genotype BB by 0.9 and 0.5% compared to animals with genotypes AA and AB. With the extension of the shelf life, the rate of acid formation tended to decrease and on the 15-th day was 3.8–3.1%, compared the initial values. In contrast, the difference between the samples from the representatives with the BB and AA genotype in terms of the activity of hydrogen ions during this period was 1.6% and the AB genotype – 0.9%. Despite the fact that the duration of storage had a negative effect on the hydrogen ions’ concentration in cottage cheese, made from cow’s milk with different genotypes of kappa-casein, its moisture-retaining properties, on the contrary, have improved. It was found that cottage cheese and whey, regardless of the cows’ genotype at the kappa-casein locus, during storage have a relatively stable composition and meet the requirements of the current DSTU. The recommended shelf life is 15 days. The best combination of the studied parameters in the production of BB genotype cows reflects the higher course of metabolic processes in the body, which led to an improvement in its quality.

These results of clinical and biochemical status of the herd of dairy cows PAF «Nefedivske» Kamenets–Podolsk district of Khmelnitsky region. The aim was to determine the clinical and biochemical status of the herd of dairy cows and its results to develop measures correcting the violations. Work performed at the PAF «Nefedivske» Kamenets–Podolsk district of Khmelnitsky region. The object of the research were lactating cows, black and white breeds, ages 4 – 6 years and daily milk yield 16 – 18 liters of milk.Survey livestock lactating cows clinically infected animals, which noted the following symptoms: drowsiness animals, reducing distortion and appetite, dullness and disheveled hair cover; delay molting; decrease skin resilience, dry it and thickening; anemic visible mucous membranes; reducing the number of periods and bovine milk production. Serum lactating cows found high content of inorganic phosphorus and iron, and low content of copper and zinc, which constitutes a violation of mineral metabolism. Patient’s hemocytopoesis animals found violations that characterized olihochromemia, decreased hematocrit values and average concentrations of hemoglobin, indicating the development of hypochromic anemia. According to the results of biochemical blood tests in lactating cows installed hipoproteinemia, hipoalbuminemia, and high activity of transaminases and alkaline phosphatase, indicating a violation of metabolic processes in the body sick animals. These results indicate the need for the development and management of correcting the violations of metabolism in dairy cows.

The present study was undertaken to study the relationship between different body measurements and to develop unobservable factors (latent) to define which of these measurements best represent body conformation in the dairy cows. Biometrical observations were recorded on 109 Red Steppe dairy cows randomly selected from State Enterprise «Breeding reproducer «Stepove» (Mykolayiv region, Ukraine) during the 2001–2014. Principal Component Analysis (PCA) was used to account for the maximum portion of variation present in the original set of variables (body traits in cow) with a minimum number of composite variables through STATISTICA software. Most of the pairwise phenotypic correlations among the exterior traits in dairy cows were positive and significant. The Pearson’s correlation coefficients of the body measurements ranged from 0.215 (chest depth – cannon circumference) to 0.889 (height at withers – rump height). In factor solution of the Principal Component Analysis, two (latent) which explained 48.5% of the generalized variance were extracted. The first principal component (PC1) explained general body confirmation and explained 33.5% variation. It was represented by significant positive loading for height at withers, rump height, diagonal length from point of shoulder to pin bone, chest depth, chest circumference etc.). The second principal component (PC2) accounted for an additional 15.0% of the generalized variance and was interpreted as an indicator of body shape (e.g., endomorphic vs. ectomorphic). It was represented by significant negative loadings for height at withers, rump height, diagonal length from point of shoulder to pin bone, but significant positive loadings for chest width, chest depth, chest circumference and cannon circumference. The study also revealed that factors extracted from the present investigation could be used in breeding programs of the dairy cattle.

Endophytes are fungi of the genus Neotyphodium that live in symbiosis with grasses. The effects of this symbiosis can be both negative and positive. The negative effect may be due to alkaloids produced by endophytes that in higher concentrations are toxic to animals. The most common alkaloids produced by Neotyphodium fungi are ergovaline and lolitrem B. The current state of knowledge on the settlement of grasses by these fungi in Poland is rather small. It has been observed that fungi from the genus Neotyphodium occurring in a pasture sward can produce alkaloids. The average ergovaline content in grass from the permanent pasture in some areas exceeded the threshold level above which disease symptoms in animals may occur. The aim of this paper was to present a clinical case of ergovaline intoxication in a herd of 30 dairy cows. Out of the 30 animals, in 10 self amputation of the tails and visual disturbances were observed. Ergovaline poisoning was diagnosed on the basis of the results of analysis of the sera of infected animals by mass spectrometer. It enabled detecting a specific fraction in the serum of sick cows that was identified as ergovaline. The case of ergovaline poisoning confirmed by laboratory tests indicates that in some areas poisoning with this alkaloid may be a significant problem in the breeding of ruminant animals, which should be considered in the differential diagnosis of diseases with necrosis of the terminal parts of the body and decreased milk production

Summary. Mycotoxins exert a negative effect on large horned cattle through a decrease in feed intake. Extreme drought conditions during the cultivation and harvest of crops included in the diet of cows can lead to a dangerous increase in the concentration of aflatoxin B1, a highly toxic and carcinogenic substance from the group of mycotoxins from microscopic fungi Aspergillus, mainly Aspergillusflavus and Aspergillusparasiticus. As a result, milk will be contaminated with aflatoxin M1 (AFM1). In LLC AF Khutorok Timashevsky District Krasnodar Territory in an experiment on dairy cows with the inclusion of aflatoxin B1 (AFB1) contaminated feed in the diet, established the minimum dose of aflatoxin B1 in feed in the amount of 2 mg / head per day. The minimum amount of aflatoxin B1 in the diet caused the appearance of a secondary metabolite - aflatoxin M1 in cow's milk. Aflatoxin M1, formed in the body of dairy cows by a metabolic route from aflatoxin B1 introduced with food, was excreted in milk for 72 hours. It was found that with the addition of a broad spectrum mycotoxin adsorbent based on glucans of the cell wall of yeast and algae to the diet, the AFM1 content in milk decreased (on average by 60%). In addition, when this adsorbent was added to diets, the average level of AFM1 in milk was 3 times lower compared to the control. The rate of excretion of AFM1 from the body of cows was determined. Its maximum amount of 0.15800 mcg / kg was excreted in milk during the third day from the last summer AFV1. When storing grain fodder, the content of mycotoxins should be determined and a constant analysis should be carried out according to microbiological safety indicators.

The objective of this work was to evaluate the association of bimodality of milk flow curves with microbiological status of mammary glands and parity of cows. We selected 167 primiparous and 148 multiparous Lithuanian Black and White dairy cows in 2nd to 4th month of lactation. The bimodality of milk flow was determined in 22.2% primiparous and in 38.6% multiparous cows (P less than 0.001). The most prevalent pathogens of mastitis were Staphylococcus aureus (15.3%), other staphylococci (22.2%) and streptococci (5.8%). Prevalence of mastitis pathogens in multiparous cows was 1.4 times and the bimodality of milk flow curves –1.7 times higher in comparison with primiparous cows (P less than 0.001). The bimodality of milk flow curve was mostly associated with the prevalence of Streptococcus agalactiae and Staphylococcus aureus (P less than 0.001). The increased frequency of mastitis pathogens (21.5%) in cows with the bimodal milk flow curves supports the negative effect of bimodality on udder health of cows (P less than 0.001).

The research was performed on 100 cows of Black and White Polish Holstein-Friesian breed. The studied cows were under a visual and tactile evaluation of body condition using a BCS (Body Condition Scoring) method performed on the day of parturition as well as 30th day of lactation. The observation results of the body condition changes during that period were juxtaposed with FPR. The value of that indicator was determined on the base of control milking performed on the 30th day of lactation. The aim of the research was defining the relationship between the value of FPR and the changes of cows’ body condition between the day of parturition and 30th day of lactation. The statistically significant differences (P < 0.05) of FPR value in dependence of the changes in cows’ body condition between the parturition day and 30th day of lactation were determined.

It has been experimentally proven that the strength and direction of the connection between the linear type traits evaluation of the Ukrainian black-and-white dairy breed cows and their body build depends on the type of the build and the sign of the exterior. The study was conducted in 2018 on a breeding plant of the Ukrainian Black-and-White Dairy breed SPC named Shchorsa in Kiev region (n=89). Differentiation of cows on types of their body build was conducted by the method proposed by Chernenko (low-capacity, mid-capacity and high-capacity types) and Kolesnik (by the massiveness index – on the friable and dense, the bone index – delicate and rough, the wide-breast and wide-rump indices – on narrow-body and wide-body types). It was found that the cow-heiferswere well-developed, had intermediate stature and optimum body condition score, deep body, and wide, slight slope rump. They alsohad desirable rear legs, set and foot angle but some toe-out, the udder was well-balanced. Under the good total score of the exterior of studied cows there were some animals with short stature (134– 136 cm), very wide rump, straight rear legs side view and toe-out, extremely steep foot angle, loose fore udder attachment, deep udder below hocks and front teat placement inside of quarter. The degree of development of the studied linear traits of cow-heifers confirms their in-herd variability. The variability of the exterior traits varies from 10,7 % (body depth) to 38,6 % (stature). In addition to the stature of a significant variability was characterized of angularity (22,4 %), rear legs set (22,5 %), body condition score (21,8 %), as well as traits that describe udder: rear udder attachment (31,4 %), udder depth (32,6 %) and front and rear teat position (31,3 % and 25,1 %, respectively). The high variability of linear traits indicates the possibility of effective their selection. As a result of the research, it has been established that the strength and direction of the correlations between the linear type traits evaluation of Ukrainian Black-and-White Dairy breed cows and the type of their body build depends on the type of the body build and the linear trait. The low-, mid- and high-capacity bodies build types (according to Chernenko) reliably correlate with chest width (r=0,58) and body depth (r=0,48), rear legs rear view (r=0,30), the central ligament (r=0,28), udder depth (r =-0,22) and teat length (r=0,25), P˂0,01–0,001. Friable and dense bodies build (according to Kolesnik) were most strongly associated with stature (r=-0,28), chest width (r =-0,70), and body depth (r=-0,38), as well as with rear legs rear view (r=-0,23), P˂0,05...0,001; delicate and rough bodies build – with stature (r=-0,51), angularity (r=-0,22),rump width (r=-0,35), udder depth (r=-0,27) and rear udder attachment (r =0,20), P ˂ 0,05–0,001; narrow-body and wide-body types – with chest width (r=0,30) and rump width (r=0,23), P˂0,05–0,01. Linear type trait evaluation of cows depends on the body build. The strength and direction of the correlations between types of body build and linear traits showed that the most informative is the classification of the body build by low-, mid- and high-capacity according to Chernenko – on the average η2x=17,5 %. The less informative – by narrow-body and wide-body types according to Kolesnik – η2x=7,6 %. The classification of cows on delicate-rough, narrow-body and wide-body types (according to Kolesnik) according to informativeness and reliability can have the intermediate position – η2x=10,0–11,5 %. The strongest influence on the body build has the cows’ height (η2x=27,9 % on average for all studied types of body build), chest width (η2x=33,5 %), body depth (η2x=21,8 %), rump width (η2x=24,1 %) and rear legs (η2x=18,7 %). The presence of the body colour polymorphism in the tropical invasive pest giant African snail is reported for the first time from South India. Three different body colour polymorphs were recognised viz. grey, black and white. The grey body colour is the most common polymorph. The black and white colour polymorphs are found to be in almost equal proportions in the reported localities with the grey counterparts. The cytochrome oxidase subunit I (COI) sequences of the three colour polymorphs are found to be identical. The presence of the body colour polymorphism in south India may be attributed to the avian predation and other selection pressures.

The estimation of the first-born cows of Ukrainian Black-and-White dairy breed by the exterior type in the leading breeding herds of Cherkassy region by the method of linear classification (n = 566) has been carried out. The results of the evaluated animals by the 100-score system indicate that within the group of traits, the average level of assessment is "good with the plus". The animals have been differed by the good development of group features characterizing the dairy type (82.4 score), body condition (83.5 score), limbs (82.8 score), udder (82.7 score) and overall score (82.8 score). The degree of development 18 descriptive traits of the exterior of cows, has been predicted by the method of linear classification, indicates their significant intraherd variability. Animals have the moderate height, deep body and angularity. The rump angle, the angle of hock joint and the teats length, according to the variability of scores in the range of 17.8–22.4%, have an average optimal development. The level of scores for the rear width (5.9 score), attachment of the fore (6.3 score) and the rear parts (6.0 score) of the udder testifies to their good development. The body structure of the cows-firstborn has a sufficient description of the type traits that determine their milk yield. At the present stage of selection and breeding work due to the use of bull-sires different origins and breeding value on the local population livestock with significant genotype diversity, the degree of influence each of the hereditary factors in the overall variability of linear features has a scientific and practical significance. In our studies, the force of influence conditional bloodiness of the Holstein mother's breed in the overall fraction of variability of linear type traits within the exterior complexes and the overall assessment takes a significant percentage - from 24.9 to 31.5 with a high degree of reliability according to Fischer's criterion. Among the descriptive traits, the proportion of influence the conditional bloodiness of mother, which is confirmed by high statistical confidence, ranges from 14.4 to 19.8%, and refers to the traits important for breeding. The level of coefficients of influence the father's breeding value in the total phenotypic variability for some of the linear traits is high and reliable. First of all it concerns group traits of the exterior, the development of which is determined by the pedigree value of father by 37.1–41.8%, and the overall assessment of type – by 46.6%. The coefficients of influence father's breeding value in most of the descriptive traits have high reliability (P < 0,001). The coefficients of the force of influence father, depending on the heredity of Holstein for the linear traits of almost the same level as his pedigree value. Since in this case the organized factor is purebreed Holstein and crossbreed bulls-sires of domestic selection, the positive role of Holstein heredity in improving the exterior type of cows has been traced realistically. The necessity of linear breeding, as an effective method in the system of dairy cattle breeding, has been substantiated by reliable values of the coefficients of the force of influence of father's line on the linear traits of offspring (3.4–29.5%). Despite the significant variability of coefficients of the force of influence on the linear traits, most of them have a high level of reliability within the evaluated body parts important for selection. The effect of cows belonging to the maternal line on the development of features of the body structure is insignificant and unreliable (5.3–9.2%). In the process of breeding aimed at improving cows of dairy herd by the exterior type, the pedigree value of parents has been assessed according to the method of linear classification of their daughters and their belonging to perspective genealogical formations.

The main goal of dairy breeds selection should be improving breeding and productive qualities of animals under modern conditions. The majority of farms, using native breeds to produce milk, has created optimal conditions for keeping and feeding, selection and matching, growing of replacements etc. Further improvement of created native dairy breeds for economically useful traits occurs at total use of purebred Holstein bulls (semen) of foreign selection. In order to realistically assess milk productivity (milk yield, fat content in milk and fat yield) of Ukrainian Black-and-White and Red-and-White Dairy cows should be conducted a comparative analysis of Holstein cows under the same conditions of feeding and keeping. It was established that Ukrainian Red-and-White Dairy cows were characterized by the highest milk yields for 305 days of all lactations, taken into account, the among three investigated breeds. Their milk yield during the first lactation was 5933 kg of milk, during the second – 6393 kg, the third – 6391 kg and during higher lactation – 6650 kg. Ukrainian Black-and-White Dairy cows were second by milk yield (except for the second lactation), during the first lactation – 5932 kg of milk, the third – 6462 kg and higher – 6541 kg, and Holstein cows were third, during the first lactation – 5794 kg of milk, the second – 6381 kg, the third – 6335 kg and higher – 6469 kg. The fat content was almost the same and varied within 3.49-3.58% in milk of Ukrainian Red-and-White Dairy cattle, 3.50-3.60% in milk of Ukrainian Black-and-White Dairy cattle and 3.50-3.56% in Holsteins’ milk. The difference between the breeds was within 0.01-0.04%. All the investigated breeds had predominance in fat yield for three lactations over standards of these breeds: Ukrainian Red-and-White Dairy cows from 75.1 to 93.4 kg, Ukrainian Black-and-White Dairy cows – 75.1-89.0 kg respectively and Holstein cows – 41.9-60.2 kg. It was found different level of positive correlation between milk yield and fat yield in all the cases and high correlation (r = 0.604-0.921, P < 0.001) in five cases (41.7%) Negative correlation coefficients indicate that selection of animals to higher milk yield in the herd will decrease the second trait – fat content in milk. Positive and highly significant correlation between milk yield and fat yield indicates that selection of cows in the herd to higher milk yields will increase fat yield. It was revealed that bulls were among the factors impacted the milk productivity (milk yield, fat content, fat yield) of three investigated breeds. So, the force (η²x) of father’s impact on milk yield was15.4-47.9%, fat content – 22.0-43.4% and fat yield – 14.9-47.7% taking into account a lactation and a breed. The force of lines impact (η²x) was second; it was on milk yield 6.1-24.5%, fat content – 4.1-17.1 and fat yield – 5.8-23.5%. The force of breeds impact (η²x) was last; it was on milk yield 0.3-2.9%, fat content – 0.2-0.3% and fat yield – 0.6-2.7%. So, the comparative studies of milk productivity of Ukrainian Red-and-White and Black-and-White Dairy cattle with Holsteins indicate that under similar conditions of feeding and keeping, these native breeds can compete with Holstein cattle. The milk yield for 305 days of higher lactation was 6650 kg of milk in Ukrainian Red-and-White Dairy cows, 6541 kg in Ukrainian Black-and-White Dairy cows and 6469 kg in Holsteins. It was found the inverse correlation r = -0.025-0.316 between milk yield and fat content in milk in most cases. Selection and matching of animals in the herd should be carried out simultaneously on these traits. It was found positive repeatability of milk yields between the first and second, the third and higher lactations (rs = 0.036-0.741), indicating the reliability of forecasting increase in milk productivity during the next lactations in all herd. Bulls have the greatest impact (η²x) on milk productivity among the factors taken into account: milk yield – 15.4-47.9%, fat content in milk – 22.0-43.4% and fat yield – 14.9-47.7%.
