The present study was aimed to analyze the antioxidant activity of spinach (Spinacia oleracea) extract in oxidative stabilization of refined, bleached and de-odorized (RBD) corn oil (CO). Corn oil was supplemented with three different concentrations 600, 1200 and 1800 ppm of methanolic spinach extract and then stored at 25oC and 60oC. Different oxidation measuring parameters such as peroxide value (PV), free fatty acid (FFA) value, iodine value (IV), conjugated dienes (CD), conjugated trienes (CT) and para-anisidine value (PAV) were examined. The potency of spinach extract as natural antioxidant was found to be as effective as the synthetic antioxidants BHA and BHT used as standards and highest stabilization was observed in the order CO-1800>CO-1200>CO-BHT> CO-BHA>CO-600>CO-control. The results showed a significant effect of spinach extract in enhancing the oxidative stability of corn oil. Bangladesh J. Sci. Ind. Res.54(4), 375-382, 2019

Four different corn oil samples including stripped (SCO, Control), refined (RCO), stripped corn oil enriched with rosemary extract (SCO+ROS) and ascorbyl palmitate (SCO+AP) were exposed to microwave (MWH) and conventional heating (CVH). For both heating methods, peroxide value (PV) and conjugated dienes increased at up to 230 °C, at which temperature hexanal (HEX) and conjugated trienes started to increase instead. Kinetic analysis revealed that PV and HEX formation were first ordered and the reaction rate among the samples was as follows: Control > SCO+ROS > RCO > SCO + AP for PV and SCO + ROS > RCO > SCO+AP > Control for HEX. The unsaturated fatty acid contents of CVH and MWH treated samples showed 9.5 and 12.9% reduction in SCO, while they were 2.9 and 7.7% in RCO, 3.6 and 6.1% in SCO + ROS, and finally 4.0 and 4.8% in SCO + AP. It was concluded that MWH led to a more severe deterioration and that the antioxidant activity of ROS was superior to that of AP for both heating methods.

The aim of the study was to investigate the antioxidant properties of sage oil macerates (M) in cod liver oil (CLO) during process oxidation catalyzed by UV radiation. CLO was not only subject to oxidative stabilization but also used as a solvent for active ingredients of sage. Macerates were obtained by combining the sage with CLO, homogenization, maceration, and filtration. The effect of different maceration times (0, 3, 6, 8, 10, 13, and 15 days) and different concentrations of macerate addition (5%, 10%, 25%, and 50%) on the CLO oxidation degree, which was determined by peroxide value (PV), anisidine value (AV), and Totox index, was evaluated. Additionally, the total content of polyphenols in macerates by the Folin-Ciocalteu method, antioxidant activity DPPH, and color was determined. The macerates showed antioxidant properties in CLO. The best effect was shown by the initial macerate (maceration time 0, M0), which in 25% concentration significantly inhibited oxidative processes in CLO. It was also characterized by high content of polyphenols and antioxidant activity of DPPH. Sage macerates can effectively inhibit oxidation of fish oils and prolong their durability.

Many herbs have antioxidant activity, which can replace the use of potencionally harmful synthetic antioxidants. Sunflower oil fortified with eight different plants and stored at room temperatur in my experiment. Specified intervals with determination of peroxide value, FFA, iodine value, anisidine value and TOTOX value followed the quality of the sunflower oil.

The antioxidant activity of pomelo peels was evaluated with different organic solvents. Minimum yield (11.1%) was obtained with chloroform +methanol (2:1), maximum yield (21.6%) with methanol whereas (15.9%) with ethanol and (12.7%) with hexane were observed. The maximum scavenging activity of (ethanolic pomelo peel extract) 88.8 % was observed at 14mg/ml concentration. Antioxidant activity of ethanolic pomelo peel extract was evaluated by calculating free fatty acid, iodine value and p-Anisidine value of peanut oil during 21 days of storage period at room temperature. Samples were drawn and analyze periodically after 7 days and after 21 days of storage, peanut oil containing 1500 and 2000 ppm pomelo peel extract, be revealed lower free fatty acid values (2.66, 2.15%), and p- anisidine value (6.6, 4.68) and higher iodine value (52.8, 51.46) than control peanut oil sample (free fatty acid 9.32%, p- anisidine value 9.85 and iodine value 33.9). From the results, it could be concluded that natural antioxidants extracted from pomelo peel could be added to fat and oil to increase their shelf life by preventing oxidative rancidity.

The specific activities of acetyl-CoA carboxylase and fatty acid synthetase were measured in the cytosol fraction of livers from chicks fed various levels of corn oil, cottonseed oil, corn-oil free fatty acids, or crude (79%) oleic acid. Activities of both enzymes were depressed by the addition of fat to a fat-free basal diet. The ratios of synthetase to carboxylase activity were greater than unity when up to 4% fat was fed, but less than unity when 8% or higher levels of fat were fed. The depressions of the activities of these enzymes appeared to be unrelated to the dietary level of linoleate. In in vitro experiments, 2 μM concentrations of palmityl-CoA or oleoyl-CoA depressed acetyl-CoA carboxylase activity. Concentrations of 20 μM of these acyl-CoA esters did not affect the activity of fatty acid synthetase.

The demand for natural products isolated from microalgae has increased over the last decade and has drawn the attention from the food, cosmetic and nutraceutical industries. Among these natural products, the demand for natural antioxidants as an alternative to synthetic antioxidants has increased. In addition, microalgae combine several advantages for the development of biotechnological applications: high biodiversity, photosynthetic yield, growth, productivity and a metabolic plasticity that can be orientated using culture conditions. Regarding the wide diversity of antioxidant compounds and mode of action combined with the diversity of reactive oxygen species (ROS), this review covers a brief presentation of antioxidant molecules with their role and mode of action, to summarize and evaluate common and recent assays used to assess antioxidant activity of microalgae. The aim is to improve our ability to choose the right assay to assess microalgae antioxidant activity regarding the antioxidant molecules studied.

The purpose of this study was to determine the unsaturated fatty acid compounds of studied oils, physico-chemical parameters, and the behavior of the four oil types during oxidation and heating. This is a part of a large study effectuated on Carnia sunflower hybrids, PR64H91, PR65A22 and PR64H45 obtained through cold pressing. We followed the evolution of the UV absorption correlated with the peroxide value. The peroxide value has been presented an increased value in the first 12 heating hours, but after this period of time, it has been decreased due to the high temperature instability of the early formed hydro-peroxides. The absorbance between 220-230 nm and the specific absorbance on 232 and 270 nm (characteristic of the conjugated dienes and trienes) have increased along the experiment period. The results were compared with those from regular sunflower oil.
