Hempseed (Cannabis sativa L.) cake is a by-product after cold-pressing of oil from the hempseed, which is rich in protein and fiber. This study investigated the effect of hempseed cake incorporation on the physicochemical and antioxidant properties of reconstructed potato chips. Varying levels of hempseed cake (0, 5%, 10%, 15%, and 20%) were added, and the results showed that the addition of hempseed cake at 20% level significantly increased the protein and total dietary fiber content from 2.74 ± 0.62 g/100 g to 9.66 ± 0.28 g/100 g and from 2.76 ± 0.31 g/100 g to 13.57 ± 0.42 g/100 g, respectively. In addition, a 20% reduction in lipid content was observed in the 20% hempseed cake addition group. Furthermore, lightness value (L*) was significantly reduced from 72.23 ± 1.22 to 46.40 ± 1.76, while the hardness was enhanced with a higher level of hempseed cake supplementation in the potato chips sample. Compared with the control (no hempseed cake), the supplement of 20% cake increased the total phenolic content from 0.19 ± 0.01 to 0.26 ± 0.01 mg GAE/g. The ABTS radical scavenging rate was also significantly enhanced with the increased levels of hemp cake. However, the peroxide value and TBARS results showed that the addition of hempseed cake accelerated the lipid oxidation in the sample, possibly due to the highly unsaturated fatty acid residues in the hempseed cake. The results suggested that more research is needed for the incorporation of hempseed cake in potato chips.

Minyak goreng sawit kemasan merupakan salah satu kebutuhan pokok masyarakat yang dikonsumsi hampir setiap hari yang dijual dalam bentuk kemasan. Sangat penting bagi kita untuk mengetahui mutu dari minyak goreng sawit kemasan yang kita komsumsi agar kesehatan tubuh bisa tetap terjaga. Penelitian ini bertujuan untuk menguji mutu minyak goreng sawit kemasan X dan Y berdasarkan persyaratan Standar Nasional Indonesia (SNI) dan menentukan mutu minyak goreng sawit kemasan yang lebih baik. Parameter uji yang dilakukan adalah uji Free Fatty Acid (FFA), Moisture & Impurities (M & I), Iodine Value (IV), Peroxide Value (PV), dan Colour. Hasil penelitian menunjukan bahwa nilai parameter uji dari minyak goreng sawit kemasan X dan Y secara berturut – turut adalah 0,072 % dan 0,073 % untuk kadar FFA. Kadar  M&I sebesar 0,043 % dan 0,046 %. Nilai IV sebesar 60,837 g I2 / 100 mg minyak dan 59,023 g I2 / 100 mg minyak. Nilai PV sebesar 0,098 Mek O2/Kg dan 0,102 Mek O2/Kg. Nilai Colour  sebesar 2,5/51 Merah/Kuning dan 2,0/51 Merah/Kuning. Semua parameter uji yang dilakukan telah sesuai dengan SNI kecuali uji Colour warna kuning dan diperoleh minyak goreng sawit kemasan X lebih baik mutunya daripada Y.

Cooking oil can only be used two or three times, more than that the oil is deemed unsuitable and can harm our health. The reason is, every time the cooking oil is used for frying, an oxidation reaction that is triggered by heat occured and causes the chemical chain bonds in cooking oil become unstable and forms hydroperoxides. The hydroperoxide found in used cooking oil increases the peroxide value. In which, the suitability of cooking oil is based on the peroxide value. In order to reduce the peroxide value in used cooking oil, in this study, Ampo is used as an adsorbent to adsorb the peroxide compound. The procedure used in this study includes a preliminary analysis of the used cooking oil to determine the initial peroxide value. After that, the Ampo adsorbent is activated with 1N Citric Acid to open the pores on the surface of the Ampo. Activated Ampo will then be mixed into 200 ml of used cooking oil with a magnetic stirrer with a stirring speed of 300 rpm and with a temperature of 50oC. The adsorption process was carried out by varying the mass variables of Ampo into 70, 75, 80, 85, and 90 grams, and stirring time of 30, 60, 90, 120, and 150 minutes. After the adsorption process is completed, the cooking oil that has been filtered by the Ampo adsorbent will be analyzed to get the final peroxide value. By knowing the peroxide value before and after the adsorption process, the adsorption isotherm can be calculated. The adsorption process of used cooking oil with Ampo adsorbent proved to reduce the peroxide value, in which stirring times and adsorbent masses were the influential variables in the study. The best result was obtained with 60 minutes stirring time and mass of 75 grams. This condition provided a peroxide value of 0.99 meq/kg, which means that there was a decrease in the peroxide value by 93%. This result is in accordance with the provisions of SNI 3741-2013, with a maximum peroxide value of 10 meq/kg. The maximum adsorption capacity in this study was obtained from the Freundlich equation of 14.6487 mg/gram

Показана необходимость обеспечения нормативной документацией СО2-экстрактов с целью повышения объективности оценки их качества. Объектом исследований были три образца комплексного СО2-экстракта плодов шиповника и боярышника (фирма «Явента», г. Краснодар). Процентное соотношение масс плодов шиповника и боярышника в исходном сырье составило соответственно 70 : 30. Определены основные органолептические и физико-химические показатели комплексного СО2-экстракта плодов шиповника и боярышника: кислотное число, эфирное число, перекисное число, массовая доля эфирного масла. Величина показателя перекисного числа образца комплексного СО2-экстракта плодов шиповника и боярышника составила 6,8 мэкв/кг и может служить идентификационным признаком подлинности экстракта. Установлено наличие в составе исследованного комплексного СО2-экстракта плодов шиповника и боярышника биологически активных веществ: каротиноидов, токоферолов, ненасыщенных жирных кислот, флавоноидов, терпеновых соединений, подтверждающих целесообразность его использования в рецептурах косметических средств. The necessity to provide normative documentation of CO2-extracts with the aim of increasing the objectivity of assessment of their quality is shown. Three samples of complex CO2-extract of rose hips and hawthorn (firma “Yaventa”, Krasnodar) have been the object of research. The percentage masses of rose hips and hawthorn in the feedstock was accordingly 70 : 30. Main organoleptic and physico-chemical characteristics of complex CO2-extract of rose hips and hawthorn – acid value, ester value, peroxide value, mass fraction of essential oil determined. Values of peroxide value of a sample of complex CO2-extract of rose hips and hawthorn amounted to 6,8 mEq/kg and may serve as identification of the authenticity of the extract. The presence of studied complex CO2-extract of rose hips and hawthorn of biologically active substances: carotenoids, tocopherols, unsaturated fatty acids, flavonoids, terpene compounds, confirming the feasibility of its use in formulations of cosmetic products, was installed.

Abstract The use of fish oil is still not optimal whether it is crude or refined fish oil. One of the alternative uses is processing it into food ingredients or as an ingredient for food product enrichment. The purpose of this study was to evaluate the effect of the combination of catfish oil and vegetable oil on the characteristics of margarine. Refined catfish oil was analyzed for peroxide content, free fatty acids, iodine number, and saponification number. Margarine products are made with the main ingredient of stearin and a mixture of refined catfish oil and corn oil with a ratio of 100: 0; 75:25 and 50:50. The analysis carried out included proximate, peroxide value, color, sensory and microbiology. The results showed that refined catfish oil had a peroxide value of 1.74%, free fatty acids 0.21%, Iodine value 50.48% and saponification value 102.10%. Based on the quality characteristics of margarine, the treatment with a ratio of 50:50 has the best result with a moisture content of 9.03%, 78% fat content, 1.75% peroxide value and have a bright yellow color, conform the margarine standard SNI 01-3541-2002. The results of the analysis of total plate count (ALT) ranged from 1.0x101 to 4.0x101, Stapphylococcus aureus showed that the colony did not grow up to 4.0 X 101. The hedonic test results for the color, taste and aroma of the margarine, panelists preferred the fish oil concentration 50:50 while the panelists preferred margarine with the addition of fish oil 75:25 for the texture.

Abstract The purpose of this research is to identify the characteristics of shredded catfish (Clarias sp) processed with and without cooking oil and determine the shelf life by using the Arrhenius method. The shredded catfish was made by filleting the fish and soaking in a 2% vinegar solution for 10 minutes, and boiling the fillets for 15 minutes in a 2% salt solution mixed with 2% bay leaves and 2% lemongrass with the ratio of fillet: solution (1:2 (w/v)). The cooked fillets were then pressed, shredded into small pieces, and added with spices (2% red onion, 3% garlic, 15% granulated sugar, 1% coriander, 1% galangal, and 0.5% flavoring powder) and 20% coconut milk, then cooked until it dried. The shredded catfish was observed for its proximate values, while the shelf life was determined using the acceleration method (Arrhenius) at three different storage temperatures and day of observation, i.e. at 25°C was for 0, 10, 20, 30, 40 days; at 35°C was for 0, 7, 14, 21, 28 days and at 45°C was for 0, 3, 6, 9, 12 days. The parameters of observation for shredded catfish’s shelf life were peroxide value, Aw, total plate count (TPC), and sensory test (hedonic). The result of proximate value showed that the protein content of shredded catfish with oil was lower than without oil, while moisture content was higher for treatment using oil. The shelf life of shredded catfish with cooking oil was shorter than without cooking oil, estimated for 83 days at 25°C, 55 days at 35°C, 47 days at 45°C, compared to 155 days at 25°C, 103 days at 35°C, and 62 days at 45°C, respectively. This was supported by the panelist’s preferences for shredded catfish without oil at the end of the observation. These results indicate that the use of cooking oil during the cooking process of shredded catfish greatly affects the product’s shelf life.

Consumers demand new biologically natural-active ingredients with a great capacity to promote a healthier advantage and free from toxicity. Pitcher (Nepenthes) is one of the naturally carnivorous climber herbs. Extract from Nepenthes plant contains numerous beneficial bioactivity characteristics. This research compared the impact of 0.05% pitcher extract demonstrated with 10 ppm butylated hydroxyanisole on the accumulation of acid value, peroxide value, carbonyl value and thiobarbituric acid during 12 months of storage. Results showed that there was no significant difference between 0.05% pitcher extract and 10 ppm butylated hydroxyanisole in respect of acid value, peroxide value, carbonyl value and thiobarbituric acid during preservation of the dried squid. Pitcher extract would be a promising alternative to replace synthetic antioxidants to overcome oxidative rancidity in the dried seafood.

This study investigated the sensory, nutritional, and physicochemical characteristics as well as formulation cost of beef sausages formulated with raw pearl millet flour (RaPMF) as an extender. Four treatments were formulated with 0%, 5%, 10% and 15% RaPMF. Ash, carbohydrate, fat, and protein contents of the beef sausages were not influenced (p <0.05) by the RaPMF. The calcium, magnesium, potassium, and pH contents were highest (p <0.05) in the 15% RaPMF beef sausages. Cooking loss was at least (p <0.05) for the 15% RaPMF beef sausages. Formulation of beef sausages with RaPMF did not affect (p >0.05) the sensory properties (week 1), water holding capacity, peroxide value, lightness (week 1), and yellowness (week 1). The formulation cost was least for 15% RaPMF beef sausages and highest for 0% RaPMF beef sausages. As a general conclusion, RaPMF improved the mineral composition of the beef sausages and reduced production costs without compromising its physicochemical and sensory properties.
