The aim of the present study was to determine the physico-chemical properties (dry matter content, combustion heat, electrical properties, total protein, ash, fat and crude fibre contents, selected amino acids, and trace elements), antioxidant content, and sensory profile of Linz biscuits. They were enriched by the addition of powdered carrot, nettle leaves and elderberry fruit, which is 3% of the product. For comparison of results, a control variant without the addition of these components was also prepared. The enriched biscuits showed slightly higher total ash and crude fibre contents in comparison to the control samples. Results for the antioxidant activity and total polyphenol, flavonoid, and phenolic acid contents of the enriched biscuits were higher in all observed parameters than in the control sample with the best results obtained for Linz biscuits enriched with elderberry and nettle powder. In enriched biscuits, higher contents of iron, zinc, and manganese were measured, especially in biscuits with nettle. Linz biscuits with nettle had higher combustion heat values than control samples; the other two sample types had lower values. We found that the resistance, capacitance, and relative permittivity of the enriched biscuits decreased with frequency according to the power regression function. On the contrary, the conductivity increased with an increasing frequency. Electrical properties were mainly influenced by the water content but also by added components.

<p>Thyme (<em>Satureja hortensis</em>) is a popular spice for food, which is also often used as a medicine for various ailments. This paper presents an artificial intelligence method applied for the objective determination of the most important physico-chemical variables affecting the quality of thyme, i.e. Principal Component Analysis (PCA). The results show that the main properties which significantly influence the nutritional value of thyme are moisture (MOIST), dry matter content (DRYM), protein content (PROT) and, to a lesser extent, carbohydrate content (CARB). Humidity is strongly and negatively correlated with the latter three variables. The main variable that ensures the similarity between the thyme samples having the same geographical origin is the monosodium glutamate content, which generates its delicious (umami) taste.</p>

Four types of Obushera, a fermented millet or sorghum beverage: Ekitiribita, Obuteire, Obutoko and Enturire were analyzed for their physico-chemical properties, sugars, organic acids and volatile compounds during fermentation. Standard chemical methods were used to determine the physico-chemical properties of Obushera. The organic acids, carbohydrates, glucose, fructose and maltose were analyzed by highperformance liquid chromatography. The pH of all Obushera varied between 4.00±0.10 and 4.42±0.11 after 4 days of fermentation. The pH of Obuteire, Obutoko and Enturire dropped below 4.5 within one day of fermentation. Acidity ranged between 0.13% (Ekitiribita) to 1.33% (Enturire) after 4 days of fermentation. Dry matter decreased and varied between 5.4 and 22% after 4 days of fermentation. Fermentation resulted into a 20–40% reduction of dry matter in Obutoko, Obuteire and Enturire. Enturire had the highest dry matter content and decreased from 22% to 13%. Fermentation resulted in an apparent increase in protein concentration (5.7– 12.3%). Flavour compounds identified included sugars, organic acids, aldehydes, ketones, alcohols and esters. Enturire contained the highest (p < 0.05) concentrations of most flavor compounds. Sugars (maltose, glucose and fructose) were reduced during fermentation. The predominant organic acids detected were lactate, acetate and succinate and increased with fermentation time. Alcohols identified in Obushera were ethanol, 3-methyl-1-butanol, 2-methyl-1-propanol and 2-methyl-1-butanol and increased during fermentation. Ethanol was the predominating alcohol reaching a maximum of 0.8–1.0% (Obuteire and Obutoko) and 4.5% in Enturire during fermentation. The aldehydes detected in Obushera were acetaldehyde, 2-methyl-1- propanal, 2-methyl-1-butanal and 3-methyl-1-butanal and varied from 0.1 mg kg-1 to 6.8 ± 1.2 mg kg-1. Diacetyl, acetoin and 2,3 pentanedione were the ketones identified in Obushera. Esters detected in Obushera included ethyl lactate, ethyl acetate, ethyl butyrate and isobutyl acetate. Significantly higher (p <0.05) amounts of esters were detected in Enturire than in the other types of Obushera. Principal Component analysis, grouped Obushera into three categories (Ekitiribita, Obuteire/Obutoko and Enturire) based on flavour profile differences.

Abstract Five commercial mustards, made by different manufacturers, were studied to examine their physico-chemical properties and to establish relationships between those properties. Physico-chemical analysis revealed distinct differences between the mustards in the dry matter and extract contents and smaller differences in the protein, fat and ash levels. Two of the investigated mustards did not satisfy the requirements of the relevant Romanian standard regarding dry matter content. Statistical analysis of the results showed significant linear correlations between the dry matter, fat, protein and ash contents of mustards and some parameters of rheological model.

Jerusalem artichoke tubers are known for their high content of nutrients, high acidity, pleasant taste and smell and beneficial effects on health. Thus, the capitalization of food products such as bread with Jerusalem artichoke flour, could be an opportunity to diversify the range of new products. The aim of this research was to elucidate the impact of added Jerusalem artichoke flour (in a concentration of 2.5%, 5%, 7.5% and 10%) in wheat flour bread on the sensory and physico-chemical properties of the finished product. Jerusalem artichoke flour has a high dry matter content and a high content of essential amino acids such as histidine, isoleucine, methionine, phenylalanine and valine. In the results we recommend the replacement of wheat flour with 5% Jerusalem artichoke flour, to obtain a product rich in micro and macronutrients with better organoleptic properties and a longer shelf life, which positively influences human health.

Altogether 19 fodder climbers were collected with local information for their quality, feeding season and preference by livestock from Sunsari district, Nepal. Fodder climbers were distributed under 15 angiospermic families. Among them, 6 climber species were analyzed for dry matter, crude protein, ether extract, crude fibre, N-free extract, total ash and mineral contents (K, Ca, and P). Dry matter content ranged from 24.12 to 45.43%. Crude protein content showed slight variation. Ether extract ranged from 2.13- 4.23%, while Crude fiber content ranged between 18.62 and 22.52%. N-free extract showed narrow variation in the content while Total ash content exhibited a wide variation ranging from 5.67 to 11.52%. Among the minerals, Phosphorus showed distinct variation in the content from 0.19 to 0.46%. Fodder quality assessed by local people was compared with the result of chemical composition. On the basis of local information and chemical composition, Hedera nepalensis and Hedyotis scandens were considered as very good fodder climbers.

Aims: This study investigated the physicochemical assessment of Rivers Kaa and Bodo in Ogoniland, as well as the proximate profile of selected fin and shell fish from these Rivers. Study Design: Random sampling. Place and Duration of Study: Kaa and Bodo communities of Ogoniland, between August and November 2014. Methodology: The physicochemical analysis; pH, temperature (T), biological oxygen demand (BOD), chemical oxygen demand (COD), dissolved oxygen (DO), total suspended solids (TSS), total dissolved solids (TDS), conductivity (C), salinity (S) and total hydrocarbon content (THC), were done. The results were compared to FEPA and APHA permissible limits. Proximate composition was determined using Association of Official Analytical Chemist standard analytical methods. Results: Physicochemical analysis results showed that T (26.5±.010), (26.8±.006) and TSS (8.68±.006), (12.5±.006) for Kaa were lower than Bodo (sp≤0.05), S (7.20±.021), (8.40±.010) and THC (0.25±.015), (3.00±.040) were both lower for Kaa than Bodo, at (p≤0.05), BOD was higher for samples collected from Bodo than samples collected from Kaa (188±.234), (259±.690). The TDS and Conductivity were both higher for samples from Bodo than those from Kaa, while pH and DO were higher for samples collected from Kaa than samples collected from Bodo. The moisture content for all samples collected from Kaa (63.7±.289), (72.5±.488), (75.1±.973), (67.4±.455), were significantly lower at p≤0.05 than the moisture content for samples from Bodo (68.7±.514), (80.6±.476), (86.2±.790), (74.5±.514) indicating that the samples from Kaa are better sources of protein, lipid, and energy than samples from Bodo. The protein, lipid, crude fibre, ash and dry matter content of all samples from Kaa were significantly higher (p≤0.05) than those for samples from Bodo. Conclusion: These findings suggest a contamination of the study sites particularly Bodo with petroleum products. Furthermore, it shows that the protein contents in all samples from Bodo were below the recommended standards, suggesting that the consumption of fishes from the study area particularly Bodo, is unhealthy.

Twelve soil and twelve leaf samples were collected from twelve litchi (Litchi chinensis Sonn.) orchards from different locations of Dinajpur to evaluate some physico-chemical properties and nutrient status of soil, and concentration of nutrients in litchi leaf. The pH of the soil varied from very strong acidic to medium acidic (4.8 - 5.7), organic matter content varied from 0.84 - 1.88%, EC varied from 302.4 - 310.2 μS/cm. The dominant soil textural class was clay loam. The average particle density was 2.49g/cm3. Total N, P, K and S in soils were 0.053 - 0.180%, 0.02 - 0.07%, 0.046 - 0.370 meq/100 g, and 0.015 - 0.028%, respectively. Available N, P, K, S, Zn, Fe, Mn and B in soils 30.40 - 57.8 mg/kg, 10.53 - 14.33 mg/kg, 0.03 - 0.32 meq/100 g, 20.03-34.80 mg/kg, 0.68-1.50 μg/g, 31.8 - 41.5 μg/g, 6.75 - 7.39 μg/g and 0.25-0.51 μg/g, respectively. The concentration of total N, P, K, S, Zn and Mn in the leaf were 1.74 - 2.20%, 0.11 - 0.188%, 0.104- 0.198%, 0.129 - 0.430%, 12 - 14 μg/g and 30 - 74 μg/g, respectively. The overall results indicated that the fertility status of the soils under the litchi plantation in the Dinajpur area are medium fertile. So, farmers could be advised to grow litchi plants after applying amendments to the soils to improve the physico-chemical properties in the Dinajpur area of Bangladesh. Dhaka Univ. J. Biol. В России наблюдается повышенный интерес к продуктам питания, включающим нетрадиционное сырье. Спрос на продукты с добавкой семян конопли (Cannabis sativa L.) обусловлен их питательной ценностью и низкой аллергенностью. Исследованы химические и физико-химические показатели пшенично-конопляной муки, полученной из помольной смеси зерна яровой пшеницы сорта Радмира и семян конопли сорта Сурская в соотношении соответственно 95 : 5, 92,5 : 7,5 и 90 : 10%. В качестве контрольного образца была пшеничная мука без добавок. Размол помольных пшенично-конопляных смесей различного соотношения и зерна пшеницы проводили на мельницах лабораторного помола (МЛП-4) с нарезными (драные системы) и микрошероховатыми вальцами (размольные системы). Исследование химических и физико-химических свойств образцов пшенично-конопляной и пшеничной муки проводили на инфракрасном анализаторе SpectraStar 2500 XL. Установлено, что добавление семян конопли в помольную смесь существенно снижает выход пшенично-конопляной муки по сравнению с выходом пшеничной муки (при добавке 5–7,5% семян конопли выход снижается на 4,3–4,4%, а при добавке 10% семян конопли – на 10,6%), однако повышается содержание жира и белка во всех потоках пшенично-конопляной муки, полученной как с драных, так и с размольных систем. По сравнению с содержанием жира и белка в муке из зерна пшеницы, составившим 1,12 и 11,57% соответственно, при добавлении 5% семян конопли в помольную пшенично-конопляную зерновую смесь средневзвешенное содержание жира в пшенично-конопляной муке составило 3,76%, а содержание белка – 12,74%, при добавлении 7,5% конопли в помольную смесь средневзвешенное содержание жира в пшенично-конопляной муке составило 4,35%, а белка – 12,7%, при добавлении 10% конопли в помольную смесь средневзвешенное содержание жира в пшенично-конопляной муке составило 4,97%, а содержание белка – 12,4%. Повышение содержания жира и белка в пшенично-конопляной муке будет способствовать повышению пищевой ценности хлебобулочного изделия из нее. Increased interest in food products, including non-traditional raw materials, is observe among the population of Russia. The demand for products with the addition of hemp seeds (Cannabis sativa L.) is due to their nutritional value and low allergenicity. Chemical and physico-chemical parameters of wheat-hemp flour obtained from a grind mixture of Radmira spring wheat grain and Surskaya hemp seeds in the ratio: 95 : 5, 92,5 : 7,5 and 90 : 10%, respectively, were investigated. Wheat flour without additives was use as a control sample. Grinding of grind wheat-hemp mixtures of various ratios and wheat grains was carried out in laboratory grind mills with rifled (torn systems) and micro-roughened rollers (grinding systems). The study of chemical and physico-chemical properties of wheat-hemp and wheat flour samples was carried out on the SpectraStar 2500 XL infrared analyzer. It was found that the addition of hemp seeds to the grind mixture significantly reduces the yield of wheat-hemp flour compared with the yield of wheat flour (with the addition of 5–7,5% of hemp seeds, the yield decreases by 4,3–4.4%, and with the addition of 10% of hemp seeds – by 10,6%), however increases the fat and protein content in all streams of wheat-hemp flour obtained from both torn and grinding systems. Compared with the fat and protein content in wheat flour, which amounted to 1,12 and 11,57% respectively, when adding 5% hemp to the wheat-hemp grain mixture, the weighted average fat content in wheat-hemp flour was 3,76%, and the protein content was 12,74%, when adding 7,5% hemp to the grind mixture, the weighted average fat content in wheat-hemp flour was 4,35%, and protein – 12,7%, and when adding 10% the weighted average fat content in wheat-hemp flour in the grind mixture was 4,97%, and the protein content was 12,4%. An increase in the fat and protein content in wheat and hemp flour will contribute to an increase in the nutritional value of a bakery product made from it.

The nutritional and sensory value of Chinese radish, cv. Jarola F1, grown in organic and conventional systems was evaluated. The experiments were based on certified organic land and conventional land of the Czech University of Life Sciences Prague at the experimental station of Troja. Radish was grown in two spacings. Radish from the organic cultivation system exhibited a significantly lower dry matter content compared to the conventional production, 62.4 g/kg <br /> and 68.9 g/kg, respectively. This can be explained by growing under unwoven textile. Furthermore, radish cultivated organically had a significantly lower content of monosaccharides (17.2 mg/kg, while the conventional production contained 26.1 mg/kg) and significantly higher contents of nitrates. The content of vitamin C in organic production tended to be higher (212 mg/kg, in conventional production 169 mg/kg). The crude fibre content or the content of minerals was not significantly affected by the growing system. Growing spacing did not affect the nutritional value. Organically produced radish had better sensorial evaluation. &nbsp;
