Chemical composition and antioxidant activity of juice from immature and mature acerola and of concentrated juice from immature acerola were determined. Tartaric, malic and citric acids and a high content of ascorbic acid were found in all the juices. Vitamin C contents were 4.80, 1.90 and 0.97 g/100 g for the concentrated immature, the immature, and the mature acerola juices respectively. The total phenol contents decreased during ripening, from 3.8 mg of catechin/g for immature acerola juice to 1.4 mg of catechin/g for mature acerola juice. The concentrated immature juice had a content of 9.2mg of catechin/g of juice. Catechin, gallic acid, coumaric acid, syringic acid, caffeic acid and ferrulic acid were detected in immature acerola juice by HPLC analysis whereas mature acerola juice showed only one predominant peak with a retention time similar to that of ferrulic acid. The concentrated juice from immature acerola reduced the oxidation of methyl linoleate by 57.2% while the juice from immature acerola reduced the oxidation by 28.1%. These results stated that the antioxidant potential of the acerola juice depended on its content of phenolic compounds and the vitamin C.

AbstractBackgroundEthanolic, aqueous and lipidic extracts of Spirulina platensis were evaluated for their bioactive substances (polyphenols and fatty acids) and antioxidant activities using two different assays diphenyl-1-picrylhydrazyl (DPPH) and azino-bis (ethylbenzthiazoline-6- sulfonicacid (ABTS)).MethodsThe phenolic compounds amounts were determined by colorimetric assays and were analyzed by high-performance and liquid chromatography (HPLC) method. The identification of phenolic compounds in the extract was accomplished by comparison of their retention times with those of pure standards. The chemical composition of fatty acids in lipidic extract was determined by GC/FIDs and GC/MS method.ResultsThe obtained results revealed that using DPPH, the ethanolic extract recorded the highest activity with (IC50=449 μg/mL ± 83). It was characterized with a high levels of phenolic and flavonoid content 0.33 ± 0.01 mg GAE/g dw and 0.21 ± 0.01 mg quercetin/g dw, respectively. The ethanolic extract showed the presence of caffeic acid, syringic acid, ferulic acid, p-coumaric acid, chlorogenic acid, kaempferol, quercetin and apigenin. Those entire phenolic compounds seem participle synergistically to the pronounced higher activity. To the best of our knowledge, the apigenin (4′, 5, 7,-trihydroxyflavone), a natural compound which is famously known by its potent antiradical activity, was identified for the first time in Moroccan S. platensis only in the ethanolic extract. A high positive correlation (r=0.895) between the antioxidant activity and the chemical composition of ethanolic extract was observed. For ABTS, lipidic extract showed the highest activity with (IC50=740 μg/mL ± 12). A total of 15 fatty acids compounds, amounting 89.73% of the extract were identified. γ-linolenic acid (GLA) (39.02%) and α-linolenic acid (ALA) (13.85%) were the major component and contribute greatly to the antioxidant activity observed. The lipidic extract has a high content of unsaturated fatty acids (70.95%) which are often exhibited very high antioxidant activity since they have two or more double bonds and chain lengths. The aqueous extract either with DPPH or ABTS methods, recorded low antioxidant activity. Its correlation was r=0.499, lower than found in the ethanolic extract.ConclusionsThese results showed that Spirulina platensis could be considered as a valuable source of fatty acids and phenolics with potent antioxidant activity. It may be employed in the manufacture of pharmaceutical drugs as an alternative source of natural antioxidants.

This study compares the content of basic nutrients (proteins, fats, digestible carbohydrates, dietary fiber and ash), steviol glycosides, selected antioxidants (vitamin C, total polyphenols) and antioxidant activity in dried leaves of Stevia rebaudiana Bertoni cultivated in Poland, Paraguay and Brazil and available in the direct sale. The basic chemical composition was determined by standard AOAC (Association of Official Analytical Chemists) methods. Content of steviol glycosides was determined by the UHPLC-UV chromatographic method. Total polyphenols content was expressed as gallic acid equivalent (GAE) and catechins equivalent (CE). Antioxidant activity was measured as ABTS●+ free radical scavenging activity. Dried leaves of S. rebaudiana grown in Poland had significantly higher contents of dietary fiber, and lower protein and ash content, compared to those derived from Paraguay and Brazil. The former had, however, considerably higher contents of total steviol glycosides, stevioside and rebaudioside D, compared to the remaining two plants. In the Paraguay-derived dried leaves, the content of rebaudioside A, C, E and rubusoside was found to be significantly lower. Dried leaves of S. rebaudiana Bertoni, cultivated in Poland, contained substantially more vitamin C and a similar content of total polyphenols, compared to those from Brazil and Paraguay. The examined material from Brazil and Paraguay plantations showed similar antioxidant activity, while that obtained from Polish cultivation was characterized by a significantly lower value of this parameter.

Tropical black bolete, Phlebopus portentosus, provides various nutritional benefits and natural antioxidants to humans. In this study, the chemical composition, phenolic compounds, and antioxidant and antimicrobial activities of fresh mushroom samples and samples stored for a period of one year using different preservation methods (drying, brining, and frozen) were investigated. The results indicated that the brining method significantly reduced the protein and fat contents of the mushrooms. The polyphenol and flavonoid contents of the frozen sample were not significantly different from that of the fresh sample. The results revealed that an inhibition value of 50% (IC50) for the 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay of the extract of the dried and frozen samples was not statistically different from that of the fresh sample. The IC50 value of 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid (ABTS) assay and ferric reducing antioxidant power (FRAP) value in the extract of the frozen sample were not found to be significantly different from those of the fresh sample. Furthermore, the lowest degree of antioxidant activity was found in the extract of the brined sample. Additionally, the antimicrobial activities of the extracts of the fresh and frozen samples were not significantly different and both extracts could have inhibited the growth of all tested Gram-positive bacteria and Pseudomonas aeruginosa.

Dekopon or Hallabong (Citrus reticulate “Shiranui”) is a hybrid fruit that belongs to the citrus fruits. The scientific and commercial interests in dekopon is due to its nutritional composition. The objective of the study was to verify the influence of ethanol as a pretreatment in reducing drying time as well as maintaining nutritional quality (vitamin C, total phenolic compounds, and antioxidant activity) of dekopon slices. The drying with ethanol at 70 °C promoted the greatest reduction in drying time, but the processed pretreated samples at 50 °C presented the highest level of nutritional quality parameters. Berries are wealthy in bioactive compounds like phenolic compounds and flavonoids that are deemed antioxidants and are great important to health. This research was performed to examine, recognize and compare bioactive compounds in certain types of berries and their antioxidant activity. The data show that blue berry, black berry and Egyptian black mulberry contain the highest content of most bioactive compounds such as phenolic compounds, flavonoids and tannins, while long mulberry and red currant berry have the lowest content for most of these compounds. They therefore, contain the highest value of antioxidant activity. The chemical composition of the berries varies depending on cultivar, variety, location of growth, environmental conditions and harvest time, as well as post-harvest treatments therefore the composition differed from berry fruit to another. Thus, berry fruits are very useful in nutrition to protect the body from many diseases because of its containment of these compounds, which act as free radicals scavenger that harm the body and thus rid the body of many harmful toxins.

BackgroundSnakefruit more technically known as ‘Salak’ (Salacca sp) is native fruit of Indonesia regarded as exotic fruit that can consumed not only its flesh fruit but also its skin in the form of extract as it has an efficacy. Extract of snakefruit rind can be proceed into a healthy beverages that contains phenolic compounds which known as natural antioxidants. ObjectiveThis study aimed to describe the content of nutrients such as carbohydrates, proteins, and antioxidants in the extract of snakefruit rind products. This data will be useful as information material to local food industryas well as further research on the processed products for health. Methods This research is a descriptive study that examines the content of carbohydrates, protein, and antioxidants in the extract of snakefruit rind products. Samples were rind of snakefruit with various concentration masses, in water ratio 1%, 5%, 10%, and non compositions. ResultCarbohydrate, protein, antioxidant capacity and IC50 respectively for each composition, are (1) the composition of the 1%: -0.04%; 0.21%; 20.70 ppm, 426.58 ppm; (2) the composition of 5%: 0.82%; 0.20%; 73.40 ppm; 151.41 ppm; (3) the composition of 10%: 0.93%; 0.20%; 110.29 ppm; 87.11 ppm; (4) non composition: 28.14%; 44.90%; 215.10 ppm; 56.10 ppm, and non composition: 1.00%; 0.00%; 25.73 ppm; 92.18 ppm. The most potential nutrient compound in extract of snakefruit rind is the antioxidant, which produced as beverages like tea product. The composition of 10% is the most active category of antioxidant activity, whereas 5% in medium category, and composition of 1% in weak category. Carbohydrates and proteins compound are gradually lower in each composition, caused by boiling process due to the process of water dilution. ConclusionsThis study revealed that extract of snakefruit rind can produced as healthy beverages (such as tea), as it is a potential wastes treatment for local food products. The extract of snakefruit rind consist of nutrition just like proteins, carbohydrates which are great for health and also contains lots of a powerful antioxidant and works well to prevent cardiovascular disease, strokes, and even cancer, prevent allergies, increase fertility, and boost immunity. Abstract Phenolic compounds are natural antioxidants and can be found with abundance in fruits and vegetables. One of the first methods created for analyzing phenolic compounds was the Folin-Denis method; and hereafter, the Folin Ciocalteu method was developed and recently, one of the most recent method is the Fast Blue. Due to the importance of these compounds in food, this work aimed to determine the total phenolic compounds in three fruits, such as: Passion Fruit, “Palmer” mango and “Pera” orange. In addition, these fruits were analyzed through three different determination methods. Furthermore, the content of vitamin C, soluble solids, titratable acidity and pH of these fruits were evaluated. Based on the results, it was verified that there was no difference among the values of vitamin C, soluble solids and TA in relation to those found in the literature. When comparing the three methods (Fast Blue BB, Folin-Ciocalteu Reagent and Folin-Denis Reagent), the results showed a difference in the phenolic compounds that may be related to the distinct reagents used in each method and its different action.

Cucurbitaceae is a family of health-promoting plants due to their compounds with beneficial effects. The aim of this study was to analyze, for the first time, the chemical composition, the antioxidant activity and the metal chelating properties of fruit juices obtained from four different species of the Cucurbitaceae family cultivated in Romania, namely Momordica charantia, Cucumis metuliferus, Benincasa hispida and Trichosanthes cucumerina. The samples of juice were analyzed by high-performance liquid chromatography (HPLC) and all the four species displayed high levels of the two triterpenes, oleanolic and ursolic acids, and also in phenolic compounds, including catechin, (−)-epicatechin and gallic acid. The juices demonstrated significant antioxidant activity against the free radical 2,2-diphenyl-1-picrylhydrazyl (ranging from 20 to 95%,), a good iron binding ability (ranging from 7.45 ± 0.28% to 86.95 ± 0.97%) and also promising antioxidant potential against the ABTS radical (ranging from 4.97 to 32.60 μETx/mL juice). Our findings raise interesting questions for further research on Cucurbitaceae fruit juices and, consequently, their very good antioxidant potential suggests these fruits should be further explored for their protective effect against oxidative damage. This is the first time the chemical composition and antioxidant activities of fruit juices from these four Romanian Cucurbitaceae varieties have been investigated.
