AKTIVITAS ANTIOKSIDAN TUMBUHAN SURUHAN (Peperomia pellucida [L.] Kunth) ABSTRAK Penelitian ini bertujuan untuk mempelajari aktivitasantioksidan tumbuhan suruhan, dengan mengukur  total antioksidan tumbuhan pada keadaan segar dan kering, serta tanpa dan dengan pemanasan.  Total antioksidan diukurmenggunakan metode FRAP (Ferric Reducing Antioxidant Power) dan absorbansinya dibaca padaspektrofotometer UV-Vis dengan panjang gelombang 593 nm. Hasil penelitian menunjukkan bahwa total antioksidan ekstrak suruhan kering sebesar 3,25 mmol/100g dan ekstrak suruhan segar 0,21 mmol/100g. Total antioksidan tertinggi pada ekstrak suruhan kering dengan pemanasan 4,05 mmol/100g, diikuti oleh ekstrak suruhan kering tanpa pemanasan 2,44 mmol/100g, ekstrak suruhan segar dengan pemanasan 0,35 mmol/100g dan ekstrak suruhan segar tanpa pemanasan 0,08 mmol/100g. Penelitian ini menyimpulkan bahwa kandungan total antioksidan ekstrak suruhan kering lebih tinggi daripada ekstrak suruhan segar, dan pemanasan pada suhu 100oC selama 15 menit meningkatkan total antioksidan dalam ekstrak tumbuhan suruhan. This study concluded that the total antioxidant of dried extract of Peperomia p. was higher than the fresh extract, and heating at 100 °C for 15 min increase total antioxidant of the plant extract. Objectives: Antioxidant activity was studied in naturally dried seed extract and hot air oven dried extract of Actinidia deliciosa and Psidium guajava using ferric reducing antioxidant power (FRAP) assay method. Methods: The dried powdered seed of A. deliciosa and P. guajava 10 g was dissolved in 100 ml of ethanol in four different conical flasks S1 (for naturaly dried seeds of A. deliciosa), S2 (for hot air oven-dried seeds of A. deliciosa), S3 (for naturally dried seeds of P. guajava), and S4 (for hot air oven-dried seeds of P. guajava). The extract was carried out in shaker at 120 rpm for 72 h at room temperature by mild shaking. The extract was taken out and centrifuged at 4000 rpm for 10 min, the supernatant was taken out. The supernatant was placed in a water bath at 95°C for the solvent to evaporate and stored at room temperature. Results: According to the FRAP results, P. guajava which was naturally dried and extracted has shown the highest antioxidant activity (sample 3) then followed by the samples S4, S1, and S2. The least activity is observed in the sample (S2). Conclusion: By comparing the antioxidant activity between the A. deliciosa and P. guajava with the help of FRAP assay results, P. guajava has the highest amount of vitamin C (responsible for antioxidant activity) when compared to that of the A. deliciosa.

The occurrence and content of some polyphenols and the antioxidant activity of compounds present in grape berries, stems and leaves of <i>Vitis vinifera</i> L. were evaluated. Three white and three blue varieties of grapevine were investigated. The contents were determined of <i>trans</i>-resveratrol, <i>trans</i>-piceid, caftaric acid, tryptophan, catechin, epicatechin, total polyphenols, and flavanols, both in healthy material and in the samples of the plant material infested with microorganisms (<i>Botryotinia fuckeliana</i> Whetzel anamorph <i>Botrytis cinerea</i> Pers.; Uncinula necator (Schw.) Burr; <i>Plasmopara viticola</i> (Berk. & M.A. Curtis) Berl & De Toni). The antioxidant activity of the extracts obtained was determined by different methods: FRAP (Ferric Reducing Antioxidant Power), DPPH (2,2-diphenyl-1-picrylhydrazyl radical) and TAC-PCL (Total Antioxidant Capacity of Photochemiluminescence). The content of <i>trans</i>-resveratrol varied between 0.3–2.3 mg/kg and 0.7–12.1 mg/kg in non-infested and infested grape berries, respectively. The content of <i>trans</i>-piceid between 0.6–2.9 mg/kg and 1.5–6.3 mg/kg in non-infested and infested grape berries, respectively. The content of trans-resveratrol varied between 2.5–10.3 mg/kg and 3.7–20.9 mg/kg in healthy and in infected leaves, respectively. The content <i>trans</i>-piceid varied between 11.3–58.4 mg/kg and 18.5–60.9 mg/kg in the healthy and in the infected leaves, respectively. The highest content of trans-resveratrol was found in stems (16.3–276.3 mg/kg). In young lateral shoots, the highest levels of <i>trans</i>-piceid (12.6–99.7 mg/kg) and caftaric acid (474–2257 mg/kg) were determined. The infested grape berries showed a higher antioxidant activity, which was most closely correlated with the content of total polyphenols (correlation coefficient = 0.8336–0.9952).

Cedrus atlantica Manetti Tar was analyzed by gas chromatography coupled to mass spectrometry, it was subjected to analyzes to know their total polyphenolic and condensed tannins contents, also their Ferric-reducing antioxidant power and Total antioxidant capacity. Chemical characterization identified 88 constituents where Himachalene and α-atlantone isomers (14.51 % - 4.07 %), Calacorene (3.52 %) and ar-Turmerone 3.35 %, were the major components, the total polyphenolic content and condensed tannins contents were 57.15 ± 0.15 milligrams equivalent of gallic acid /g tar and 4.41 ± 0.05 milligrams equivalent of catechin /g tar respectively .This extract showed remarkable Ferric-reducing antioxidant power with effective concentration equal to 50 ± 0.075 mg /mL ± 0,00028 and total antioxidant capacity equal to 262.75 mg equivalents of ascorbic acid /g tar ± 14,43. The experimental results indicated that our tar has promotive antioxidant activity.

Objectives: Garcinia atroviridis Griff. ex T. Anders., Garcinia mangostana L., and Garcinia cowa Roxb. are plants of the genus Garcinia that has been widely used by the community as a food flavoring, spices, and also as a herbal medicinal ingredient. This research aimed to evaluate the total phenolics and antioxidant activity from three species of Garcinia (G. atroviridis Griff. ex T. Anders., G. mangostana L., and G. cowa Roxb.) Methods: The total phenolic content (TPC) of the extracts was estimated as Gallic Acid Equivalent by the Folin-Ciocalteu method. Antioxidant activity was assessed using Ferric Reducing Antioxidant Power assay. Results: The TPC of G. mangostana L. rind extract is higher (31.83±3.70%), than G. cowa Roxb.(4.35±0.17%) and G. atroviridis Griff. ex T. Anders. (2.47±0.42%). Based on the antioxidant activity, G. mangostana L. rind has a higher total antioxidant activity (24.68 μmol Fe(II)/g) than G. cowa Roxb. (18.88±0.12 μM Fe (II)/g and G. atroviridis Griff. ex T. Anders.(17.61±0.05 μM Fe(II)/g). Conclusion: The results showed that G. mangostana L rind extract contains a higher level of TPC and antioxidant activity among the other rinds. The results obtained indicate that the three samples have the potential to be a source of natural antioxidants. Further studies must be carried out to isolate compounds that have antioxidant activity.

Leafy vegetables are an excellent source of bioactive factors, traditionally used as important medical ingredients. Recently, some leafy vegetables are domesticated without the use of fertilizer, as well as the assessment of the effect of fertilizer on their nutritional value. This study aims at testing the effect of three mineral and organic fertilizers (Cowpat, NPK and NPK + cowpat) on three traditional leafy vegetables: Ceratotheca sesamoïdes, Sesamum radiatum and Justicia tenella. Their antioxidant activities were assessed at different harvesting times varying from six (6) to fourteen (14) Weeks After Transplantation (WAT) using three in vitro methods: Ferric reducing antioxidant power (FRAP), 2,2’-Azinobis3-ethylbenzothiazoline-6- sulfonic acid (ABTS) and 2,2-diphenyl-1-picryl hydrazil (DPPH). The FRAP, DPPH, ABTS assays were consistent and positively correlated (p < 0.001). Total antioxidant activities of leafy vegetables depended on species, harvesting time and methods. They ranged from 32.0 to 45.7 µmol Fe/g DW (for FRAP), with non fertilized J. tenella cut at 12 WAT giving the highest antioxidant activity. Percentage of inhibition using DPPH assay ranged from 11.4 to 87.2 % and showed that J. tenella fertilized with NPK and cowpat, and harvested at 9 WAT had the highest antioxidant activity. Regarding ABTS, the range of 17.6 to 28.9 µmol TE/g DW was recorded, and the leaves of C. sesamoïdes harvested at 10 WAT and fertilized with cowpat showed the highest level. Compared to other species, those studied here may best contribute to improve human health related to degenerative diseases. Moreover, significant and positive correlations were observed between the total phenolic compounds content and antioxidant activities of leaves regardless the methods used. The positive and significant correlations between the three assays (FRAP, DPPH, ABTS) allow to suggest the use of only anyone of them to check factors in the study. This paper highlights the potential of antioxidant capability of the leafy vegetables even fertilized.

Abstract This study investigated the effects of different heat treatments, namely boiling, microwaving and pressure cooking, on the reduced ascorbic acid content and antioxidant activity in Momordica charantia extracts. The total antioxidant activity of M. charantia extracts was determined by ferric reducing-antioxidant power and 2,2-diphenyl-1-picrylhydrazyl radical scavenging assays. The reduced ascorbic acid content was estimated by ferric reducing-antioxidant power-ascorbic acid assay and confirmed by high performance liquid chromatography. Regardless of the cooking method, all cooked M. charantia extracts had significantly (p < 0.05) higher total antioxidant activity, radical scavenging potency and reduced ascorbic acid content than the uncooked sample. The decreasing order of reduced ascorbic acid in M. charantia was as follows: microwaved > boiled > pressure-cooked > uncooked. The reduced ascorbic acid in M. charantia strongly correlated with the total antioxidant activity (r = 0.958, p < 0.05) and radical scavenging potency (r= 0.951, p < 0.05). The principle component analysis showed that 87% of the variation in the antioxidant values of M. charantia extracts was attributed to the different cooking methods. Heat treatment either by boiling or microwaving for a short period of time (10 minutes) improved the reduced ascorbic acid content in the M. charantia extract. This study showed that the reduced ascorbic acid could be retained under high temperature and pressure in M. charantia extracts.

Abstract Background The main aim of this work was to synthesise a novel N-(substituted phenyl)-2-(3-(hydroxyimino) methyl)-1H-indol-1-yl) acetamide derivatives and evaluate their antioxidant activity. These compounds were prepared by a condensation reaction between 1H-indole carbaldehyde oxime and 2-chloro acetamide derivatives. The newly synthesised compound structures were characterised by FT-IR, 1H-NMR, mass spectroscopy and elemental analysis. Furthermore, the above-mentioned compounds were screened for antioxidant activity by using ferric reducing antioxidant power (FRAP) and 1,1-diphenyl-2-picrylhydrazyl (DPPH) methods. Result The antioxidant activity result reveals that most of the compounds were exhibiting considerable activity in both methods and the values are very closer to the standards. Among the synthesised compounds, compound 3j, 3a and 3k were shown remarkable activity at low concentration. Conclusion Compounds 3j, 3a and 3k were shown highest activity among the prepared analogues due to the attachment of halogens connected at the appropriate place in the phenyl ring. Hence, these substituted phenyl rings considered as a perfect side chain for the indole nucleus for the development of the new antioxidant agents.

This study investigated the impact of Parinari curatellifolia peel flour on the nutritional, physical and antioxidant properties of formulated biscuits. Biscuits enriched with 5%, 10%, 15% and 20% of Parinari (P). curatellifolia peel flour were formulated and characterised. Thermal, physicochemical, polyphenolic compounds and antioxidant properties of flour and biscuits were determined. The incorporation of P. curatellifolia peel flour significantly increased (p < 0.05) thermal properties (onset, peak and conclusion temperatures) of flour. However, enthalpy of gelatinisation, viscosity and pH of flour samples decreased. Nutritional analysis revealed an increase in ash (0.74% to 2.23%) and crude fibre contents (0.39% to 2.95%) along with an increase of P. curatellifolia peel flour levels. Protein content and carbohydrates decreased while moisture content was insignificantly affected by the addition of P. curatellifolia peel flour. The L*, b* values and whiteness index of formulated biscuits decreased while parameter a* value (10.76 to 21.89) and yellowness index (69.84 to 102.71) decreased. Physical properties such as diameter (3.57 mm to 3.97 mm), spread ratio (2.67 to 3.45) and hardness (1188.13 g to 2432.60 g) increased with the inclusion levels of peel flour while weight and thickness decreased. The inclusion of P. curatellifolia improved the polyphenolic compounds and antioxidant activity of biscuits with values of total flavonoids content ranging from 0.028 to 0.104 mg CE/g, total phenolic content increasing from 20.01 mg to 48.51 mg GAE/g, ferric reducing antioxidant power (FRAP) increasing from 108.33 mg to 162.67 mg GAE/g and DPPH (2,2-diphenyl-1-picrylhydrazyl) from 48.70% to 94.72%. These results lead to the recommendation of the utilisation of P. curatellifolia peel flour to enhance the nutritional value, polyphenolic compounds and antioxidant activity of bakery products such as biscuits.

The aim of this study was to determine the phytochemicals and antioxidant activity in oat-buckwheat doughs and cookies with the addition of ten selected spices or herbs (2 g/100 g flours weight basis). The used spices and herbs, as was expected, showed a wide range of bioactive molecules, namely phenolic acids and flavonoids, and they are a rich source of components with antioxidant potential. All analysed oat-buckwheat dough showed higher antioxidant activity potential and higher total phenolic content (TPC) compared to cookies. The highest TPC was found in clove, both dough and cookies, with its addition showing the highest ferric reducing antioxidant power. Generally, cookies with the addition of spice/herbs showed higher phytochemical contents and antioxidant activity compared to oat-buckwheat cookies without the condiment. The technology of obtaining confectionery products, like oat-buckwheat cookies, that will favor the protection of bioactive compounds should still be improved.
