Nutritional and Food Safety Aspects Related to the Consumption of Edible Mushrooms from Dambovita County in Correlation with their Levels of Some Essential and Non-essential Metals

Ten edible mushroom species collected from four sites of Dambovita County, Romania, were analyzed through ICP-MS technique in order to evaluate their content in Fe, Cu, Zn, Pb and Cd, both in cap and stipe. Wild growing species (Russula vesca, Russula alutacea, Macrolepiota procera, Cantharellus cibarius, Boletus edulis, Agaricus campestris and Pleurotus ostreatus) and cultivated species (Pleurotus ostreatus, Agaricus bisporus white and Agaricus bisporus brown) were taken into account. The data related to the elemental composition of the fruiting bodies of mushrooms are important to be known having in view the nutritional and food safety related aspects. Higher concentrations of copper, iron and zinc have been found in Pleurotus ostreatus (cap), Macrolepiota procera (stipe) and Pleurotus ostreatus cultivated (cap) respectively, as follows: 43.90�0.96 mg/g d.w., 715.15�4.52 mg/g d.w. and 379.33�2.05 mg/g d.w. Although significant Health Risk Index were determined for lead in Agaricus campestris (about 0.1 both in cap and stipe) and for cadmium in Pleurotus ostreatus (0.58 in cap), these values are under the regulated PTWI limits for adult person.

Pleurotus ostreatus is a well-known edible mushroom species which shows fast growth. The fungus can be used for medical, nutritional, filter, or packaging purposes. In this study, cultivation experiments were carried out with Pleurotus ostreatus growing on polyacrylonitrile (PAN) nanofiber mats in the presence of saccharose and Lutrol F68. The aim of this study was to find out whether modified PAN nanofiber mats are well suited for the growth of fungal mycelium, to increase growth rates and to affect mycelium fiber morphologies. Our results show that Pleurotus ostreatus mycelium grows on nanofiber mats in different morphologies, depending on the specific substrate, and can be used to produce a composite from fungal mycelium and nanofiber mats for biomedical and biotechnological applications.

The activity concentration and Annual Effective doses of 40K, 226Ra, and 232Th in some edible mushroom species (Cantharellus cibarius, Agaricus campestris, Termitomyces robustus) found in three Local Government Areas of Benue state-Nigeria were determined using Gamma Spectrometry; the 1460KeV gamma-radiation of 40K was used to determine the concentration of 40K, gamma transition energy of 1764.5KeV 214Bi was used to determine the concentration of 226R, while the gamma transition energy of 2614KeV 208TI was used to determine the concentration of 232Th. The activity concentration due to 226Ra, 232Th and 40K in the samples ranged from 10.06±1.6 - 14.19±3.01Bqkg-1; 10.88±2.65 to 15.38±4.30Bqkg-1and 202.31±1.4 to 318.44±3.20Bqkg-1 respectively; the highest activity due to 226Ra was found in Termitomyces robustus grown in Gboko; that due to 232Th was recorded in Agaricus campestris grown in Buruku L.G.A., while the highest activity concentration due to 40K was recorded in Termitomyces robustus found in Buruku. Generally, 40K recorded the highest activity concentration in each mushroom species examined. Annual Effective Dose from these species sampled ranges from 0.0006952mSvy-1 (in Makurdi- Termitomyces robustus species) - 0.0008467mSvy-1 (in Buruku Termitomyces robustus species). The average effective dose value of 0.00788±0.000186mSvy-1 obtained in this work is below the maximum permissible level established by ICRP (1996). Thus, these mushrooms species will not pose any apparent risk to human health.

Four edible mushroom species (Pleurotus ostreatus, Agaricus bisporus, Volvariella volvacea, Ganoderma lucidum) from different locations of Bangladesh, were analysed for their protein and metal content profile (K, Na, Fe, Cu, Zn, Mn, Cr, Pb, As and Cd). Trace metals were determined by atomic absorption spectrophotometer, Na and K by flame emission spectrophotometer and protein by micro Kjeldhal method. All element concentrations were determined on a dry weight basis. The protein content of mushrooms varied from 13.8%–34.3% and the metal content of samples ranged from 0.54–2.25% for K and 12.6–81.6, 69.5–626.2, 39.2–163.4, 30.1–75.5, 52.9–104.5, 0.20–0.30, 0.13–0.59 ?g g-1 for Na, Fe, Cu, Zn, Mn, Cd, Pb, respectively.  Arsenic and cadmium concentrations were below the detection limit of the method used. The detection limits of the method for As and Cd are 0.01 ?g g-1 for each element. In general, K and Fe content were higher than other metals in all mushroom species. The levels of Cu and Zn in some mushroom samples were found to be higher than legal limits.Asian J. Med. Biol. Res. December 2015, 1(3): 495-501

Abstract Objectives There is a growing public health concern on the indiscriminate use of pesticides in agriculture among farmers from developing countries including Nigeria. The presence of pesticide residues in food samples may pose a deleterious effect on food safety and consequently compromise the health of consumers especially children, elderly, and pregnant women. The estimation of pesticides residues via dietary intake constitutes a vital integral part of regulatory processes that seeks to preserve public health. This study is therefore focused on the estimation of some pesticide residues in samples of Irish potatoes collected from Jos Nigeria. Methods The samples were collected from five different markets in Jos Plateau State Nigeria. All the samples were transported to the Central Research Laboratory, Ilorin, Nigeria. The pesticide residue analysis was carried out using GC/MS after sample extraction, filtration and Concentration. After the analysis was carried out, the result obtained were subjected to statistical analysis using SPSS (Statistical Package for Social Sciences) statistical software (version 21) after which the Mean, Standard deviations and ANOVA (Analysis of variance) were calculated. Results The result shows that 17 different pesticide residues were identified with ten (10) organochlorines, two (2) organophosphates, one (1) thiocarbamate, one (1) benzamide and two (2) of them were unclassified. The concentration of these pesticides were determined which was then used to determine the estimated daily intake. The ADI and MRL for each pesticide was sought for and the health risk was also evaluated. With the results obtained, it was noticed that most of these pesticides usually exceed their ADI and MRL which then makes them hazardous to the human health. Considering the health risk index of consumers Aldrin, Heptachlor, Mecarbem and Dieldrin proved to be very hazardous (P > 1). Conclusions These pesticides can cause harmful effects on the food commodities which ultimately cause a damaging impact on the health of human. To guarantee food safety, continuous monitoring is recommended for pesticide residues in Irish potatoes. Funding Sources Self-sponsored.

Abstract We determined the elemental profile of 16 edible mushroom species from the Făget Forest, near Cluj-Napoca, and of 12 species from the Apuseni Mountains. One-way ANOVA showed no difference in the elemental content of mushrooms when the two regions were compared. Some species accumulated high amounts of trace elements, i.e. Boletus edulis (Ag, S, Zn), Macrolepiota procera (Cu), Lactarius volemus (Co), Russula emetica (Mn), Armillariella mellea, and Chantarellus cibarius (Cr). The cadmium content was the highest in the case of Leccinum scabrum and Boletus edulis. These two species presented elevated risk levels for all age-groups when they are consumed regularly.

Many studies highlight the health benefits of mushrooms, which are consequently becoming more and more interesting for researchers. The content of amino acids (AA), total phenolic content (TPC), and antioxidative activity (AAc) were determined in wild as well as cultivated mushrooms. The AA included: L-tryptophan (Trp), L-arginine (Arg), L-cysteine (Cys), L-methionine (Met), L-alanine (Ala), L-phenylalanine (Phe), L-lysine (Lys), L-valine (Val), L-glycine (Gly), and L-leucine (Leu). The wild mushrooms: Lactarius piperatus, Amanita caesarea, Lactarius deliciosus, Lycoperdon pyriforme, Macrolepiota procera, and cultivated mushrooms: Agaricus bisporus, Boletus aestivalis, Cantharellus cibarius, Pleurotus ostreatus, and Agaricus bisporus var. avellaneus were investigated in this study. The AA was determined by HPTLC method and quantified with a Camag TLC scanner and WINCAT software by scanning the plates at 540 nm. The TPC was spectrophotometrically estimated as gallic acid equivalents/g of fresh weight according to Folin-Ciocalteu’s method. The radical scavenging activity (RSA) of mushroom extracts was determined by DPPH assay. The highest content of Ala, Gly, Phe, Lys, Val, and Leu was found in Pleurotus ostreatus. The total phenolic content (mg GAE/g) in investigated mushrooms ranged from 1.90 to 35.56, and the % RSA ranged from 43.88 to 90.17. This study promotes the consumption of food rich in bioactive compounds, mushrooms being among such food. Further research on mushrooms from Bosnia and Herzegovina and their benefits in the overall maintenance of human health and protection from age-related diseases is necessary.

Sagu pada umumnya berwarna kecoklatan dan bau kurang sedap. Kelemahan ini dapat diperbaiki dengan penambahan enzim Laccase dalam produksi pati sagu. Tujuan penelitian ini adalah menghasilkan enzm Laccase dari edible mushroom.  Bahan yang digunakan adalah jamur Plurotus ostreatus, Agaricus bisporus dan Rhyzopus  oligosporus yang diperoleh dari pasar dan bahan kimia media. Metoda yang digunakan adalah melalui fermentasi cair menggunakan skala flask.  Hasil yang diperoleh bahwa  Pleurotus ostreatus pada uji agar cawan petri membentuk zona ring merah kecoklatan yang tebal menunjukan kemampuan oxidase senyawa guaicol dan syringaldazine. Uji fermentasi cair skala flaks 500 mL kultur jamur Pleurotus ostreatus, Agaricus bisporus, Rhyzopus oligosporus selama 21 hari. Hasil Laccase yang diproduksi oleh Pleurotus ostreatus mempunyai aktivitas tertinggi yaitu mencapai 774 U/L pada analisa spektrofotometer menggunakan substrat ABTS. Sementara itu, Agaricus bisporus dan Rhyzopus oligosporus mencapai puncak produksi laccase masing-masing 484 U/L dan 480 U/L.Kata kunci : Pleurotus ostreatus, Agaricus bisporus, Rhyzopus oligosporus, Laccase, bioleaching, dan kualitas pati sagu

The reduction of fat and salt and the incorporation of fiber-rich compounds in frankfurters is a trend to improve their nutritional profile. The objective of this study was to evaluate the partial replacement of 30 and 50% of pork backfat and 50% of salt by adding edible mushroom flour (2.5 and 5%) from Agaricus bisporus (Ab) and Pleurotus ostreatus (Po) on physicochemical, microbiological and sensory properties of frankfurters sausages during cold storage. The addition of flours increased the moisture, and the dietary fiber contents in frankfurters, keeping the amino acid profile. Lipid oxidation remained under acceptable values despite not antioxidant effect was observed by mushrooms flours. Only spore-forming bacteria were found during cold storage. Color and texture was modified by addition of mushroom, being the Ab samples darker, while Po flour addition resulted in softer and less cohesive sausages. Although lower color, flavor, and taste scores were given to the mushroom samples than the control, they ranked in the acceptable level confirming that the inclusion of 2.5 and 5% of Ab and Po flours in fat- and salt-reduced frankfurter sausages resulted a feasible strategy to enhance the nutritional profile these products.
