In the wetting of a solid by a liquid it is often assumed that the substrate is rigid. However, for an elastic substrate the rigidity depends on the cube of its thickness and so reduces rapidly as the substrate becomes thinner as it approaches becoming a thin sheet. In such circumstances, it has been shown that the capillary forces caused by a contacting droplet of a liquid can shape the solid rather than the solid shaping the liquid. A substrate can be bent and folded as a (pinned) droplet evaporates or even instantaneously and spontaneously wrapped on contact with a droplet. When this effect is used to create three dimensional shapes from initially flat sheets, the effect is called capillary origami or droplet wrapping. In this work, we consider how the conditions for the spontaneous, capillary induced, folding of a thin ribbon substrate might be altered by a rigid surface structure that, for a rigid substrate, would be expected to create Cassie–Baxter and Wenzel effects. For smooth thin substrates, droplet wrapping can occur for all liquids, including those for which the Young’s law contact angle (defined by the interfacial tensions) is greater than 90° and which would therefore normally be considered relatively hydrophobic. However, consideration of the balance between bending and interfacial energies suggests that the tendency for droplet wrapping can be suppressed for some liquids by providing the flexible solid surface with a rigid topographic structure. In general, it is known that when a liquid interacts with such a structure it can either fully penetrate the structure (the Wenzel case) or it can bridge between the asperities of the structure (the Cassie–Baxter case). In this report, we show theoretically that droplet wrapping should occur with both types of solid–liquid contact. We also derive a condition for the transition between the Cassie–Baxter and Wenzel type droplet wrapping and relate it to the same transition condition known to apply to superhydrophobic surfaces. The results are given for both droplets being wrapped by thin ribbons and for solid grains encapsulating droplets to form liquid marbles.

Three-dimensional hydroxyapatite-chitosan (HA-CS) composites were formulated via solid-liquid technic and freeze-drying. The prepared composites had an apatitic nature, which was demonstrated by X-ray diffraction and Infrared spectroscopy analyses. The impact of the solid/liquid (S/L) ratio and the content and the molecular weight of the polymer on the composite mechanical strength was investigated. An increase in the S/L ratio from 0.5 to 1 resulted in an increase in the compressive strength for HA-CSL (CS low molecular weight: CSL) from 0.08 ± 0.02 to 1.95 ± 0.39 MPa and from 0.3 ± 0.06 to 2.40 ± 0.51 MPa for the HA-CSM (CS medium molecular weight: CSM). Moreover, the increase in the amount (1 to 5 wt%) and the molecular weight of the polymer increased the mechanical strength of the composite. The highest compressive strength value (up to 2.40 ± 0.51 MPa) was obtained for HA-CSM (5 wt% of CS) formulated at an S/L of 1. The dissolution tests of the HA-CS composites confirmed their cohesion and mechanical stability in an aqueous solution. Both polymer and apatite are assumed to work together, giving the synergism needed to make effective cylindrical composites, and could serve as a promising candidate for bone repair in the orthopedic field.

The oat β-glucan (OG) was added into set-type yogurt as a functional ingredient, in order to evaluate effects on the rheological characteristics and microstructure of set-type yogurt. When the OG concentration increased from 0 to 0.3%, the WHC gradually increased. At 0.3% OG, the set-type yogurt had the highest WHC of 94.67%. Additionally, the WHC continuously decreased, reaching the lowest WHC (about 80%) at 0.5% OG. When 0.3% OG was added, the highest score of sensory evaluation was about 85. The rheological result showed that the fermentation process went through the changes as follows: solid → liquid → solid → liquid. The addition of 0.3% OG decreased the fermentation time of set-type yogurt by about 16 min, making yogurt more inclined to be liquid. The acidity of set-type yogurt with OG was slightly higher. The result of microstructure showed that the addition of OG destroyed the three-dimensional network structure of yogurt, and some spherical aggregate particles could be clearly observed at 0.3% OG. Overall, this study provided a theoretical basis for the application of OG in set-type yogurt.

The article presents the modeling of the dynamics of the vapor-gas mixture and heat and mass transfer (sorption-desorption) in the capillary structure of the porous medium. This approach is underpinned by the fact that the porous structure is represented by a system of linear microchannels oriented along the axes of a three-dimensional coordinate system. The equivalent diameter of these channels corresponds to the average pore diameter, and the ratio of the total pore volume to the volume of the entire porous material corresponds to its porosity. The entire channel area is modeled by a set of cubic elements with a certain humidity, moisture content, pressure and temperature. A simulation is carried out taking into account the difference in temperatures of each of the phases: solid, liquid and gas.

Background: Gradient temperature Raman spectroscopy (GTRS) applies the continuous temperature gradients utilized in differential scanning calorimetry (DSC) to Raman spectroscopy, providing a new means for rapid high throughput material identification and quality control. Methods: Using 20 Mb three-dimensional data arrays with 0.2 °C increments and first/second derivatives allows complete assignment of solid, liquid and transition state vibrational modes. The entire set or any subset of the any of the contour plots, first derivatives or second derivatives can be utilized to create a graphical standard to quickly authenticate a given source. In addition, a temperature range can be specified that maximizes information content. Results: We compared GTRS and DSC data for five commercial fish oils that are excellent sources of docosahexaenoic acid (DHA; 22:6n-3) and eicosapentaenoic acid (EPA; 20:5n-3). Each product has a unique, distinctive response to the thermal gradient, which graphically and spectroscopically differentiates them. We also present detailed Raman data and full vibrational mode assignments for EPA and DHA. Conclusion: Complex lipids with a variety of fatty acids and isomers have three dimensional structures based mainly on how structurally similar sites pack. Any localized non-uniformity in packing results in discrete “fingerprint” molecular sites due to increased elasticity and decreased torsion.

In the paper, a model basing on solute conservative in every unit is developed for solving the solute diffusion equation during solidification. The model includes time-dependent calculations for temperature distribution, solute redistribution in the liquid and solid phases. Three-dimensional computations are performed for Al-Cu dendritic growth into an adiabatic and highly supersaturated liquid phase. A numerical algorithm was developed to explicitly track the sharp solid/liquid (S/L) interface on a fixed Cartesian grid. Three-dimensional mesoscopic calculations were performed to simulate the evolution of equiaxed dendritic morphologies.

The three-dimensional evolutionary problem of rolling/sliding of a linear elastic body on a linear elastic substrate is studied. The inertial properties of the body regarded as rigid are accounted for. By employing an asymptotic analysis, it is shown that the process can be divided into two phases: transient and quasistationary. An expression for the frictional force as a function of the externally applied forces and moments, and inertial properties of the body is derived. For an ellipsoid rolling/sliding on a linear elastic substrate, numerical results for the frictional force distribution, slip/adhesion subareas, and the evolution of the slip velocity are given.

Dropwise cooling represents a major subject of interest for both academic and industrial researches. The present work is focused on investigating the thermal transient occurring as two water droplets are gently released (We < 30) onto a heated solid surface. This latter has been kept at initial temperature lower than 373.15 K to analyze the single-phase-evaporation regime. To the purpose, both an experimental and a numerical approach have conveniently been employed. Infrared thermography has been used to evaluate the temperature trend at the solid-liquid interface: an experimental facility has been built to carry out measurements from below, thus realizing a fully non-intrusive approach. A transparent-crystal disk has been inserted to serve as the solid substrate; its upper surface has been painted by a black coating, thus providing a black-body surface as the solid-liquid interface. The infrared thermocamera has been placed below and perpendicular to that surface; temperature has been thereby measured, being emissivity a known parameter. A numerical code has been developed to predict the involved physical phenomena: temperature trend, evaporation time and evaporated flux result from discretizing the three-dimensional energy-diffusion equation by the finite-volume method. Moreover, the model is based on structured non-uniform mesh to adapt to the occurring temperature gradients. Very good agreement is shown between experimental and numerical outcomes in terms of thermal transient and recovery.
