Market segmentation divides the market into small groups of consumers who share similar characteristics. As all consumers within the same group have a common profile, marketing strategies can be adapted to target a specific type of consumer. Owing to the rapid changes in today’s society, consumer lifestyle has become the ideal criterion for market segmentation. In this study, we employed the food-related lifestyle model, which scholars have shown to be suitable and valid in several countries. Using data from a survey (with 3.53% error), we segmented the Spanish food market based on consumers’ food-related lifestyles. For each segment, we identified the consumer profile and analysed consumers’ consumption of rabbit meat. Factor analysis and cluster analysis yielded 4 segments: (i) ‘Unconcerned’ (36.8% of the sample) mainly consists of male consumers. Consumers in this segment value neither the freshness nor the price/quality ratio of their food items and consume rabbit meat rarely (39.4%) or sporadically (29.3%). (ii) ‘Cooks’ (18.4%) predominantly consists of middle-aged women. Consumers in this segment are highly demanding and critical of the quality of food products. They like cooking and are regular consumers of rabbit meat (40.6%). (iii) ‘Out-of-home consumers and convenience shoppers’ (28.6%) mostly consists of consumers aged between 25 and 34 y old and contains a large proportion of upper-class consumers. Consumers in this segment prefer to eat out and consume convenience products. This segment has the second highest percentage of regular consumers of rabbit meat (36.9%). The segment also has the second highest percentage of consumers who rarely or never eat rabbit meat (43.9%). (iv) ‘Rational purchaser with little interest in cooking’ (16.2%) has the highest proportion of consumers aged 55 to 74 y old. Consumers in this segment have the least interest in cooking, the most interest in the purchasing process, and the lowest consumption of rabbit meat (51.1% consume little or no rabbit meat).

PurposeWith a focus on tourists' dining experiences, this study aimed to identify food neophobic tendencies and dining attributes that affect dining satisfaction and to compare these factors between two nationality groups – Chinese and Japanese.Design/methodology/approachFrom a paper-based survey, 380 usable responses were collected from inbound Chinese and Japanese tourists at an international airport in Korea. Bivariate and multivariate statistical analyses were employed.FindingsChinese tourists' level of dining satisfaction was related to their food neophobic tendencies as well as to the food, environment and service quality. Japanese tourists perceived quality of food and service only as important, and environment quality and food neophobic tendencies were not related to their dining satisfaction.Research limitations/implicationsThe findings of this cross-cultural study can be used to improve understanding of international tourists' perceptions and food-related personality traits and have implications for increasing favorable attitudes toward local food at tourist destinations. Destination marketing organizations and local restaurateurs can use the results to develop marketing strategies tailored to each tourist segment.Originality/valueSuccessful marketing strategies for promoting a tourist destination must consider how tourists view the local food as an aspect of the destination attraction. Many studies have considered all Asians as a single homogeneous entity, specifically in comparison with Westerners. This study attempted to debunk the myth of homogeneity by comparing two Asian countries, which may differ in regard to their dining satisfaction.

Among the global problems of today to the victims of the Chernobyl accident areas Zhytomyr region priority is safety and quality of animal products in Postchernobyl period. Safety and quality of food and raw materials is one of the key factors that ensure public health and preserve its gene pool. At the request of the Law of Ukraine. On the safety and quality of food and other regulatory legal acts, subject to the provisions of international law Codexalimentarius State Veterinary and Phytosanitary Service of Ukraine took the implementation in practice of veterinary medicine guidelines of good manufacturing and hygienic practices (GMP / GHP) «meat production», according to which «the conditions of growing animals for meat production should contribute to the production of safe and quality meat».Conducted research found that addressing diet, nutrition of the population, especially children and the elderly, as environmentally hazardous environments rabbit should take the lead. For radionuclide content in rabbit meat is very low. The specific activity of meat rabbits 4–month old was at <1.9 ± 0.47 Bq/kg for the content of 137 Cs and 3.7 ± 0.88 Bq/kg for the content of 90 Sr. In adult rabbit meat, these figures were respectively 4.8 ± 0.46 Bq/kg and 6.2 ± 1.2 (at a rate of 200 and 20 Bq/kg). In comparative perspective Meat 4–monthly Californian rabbits precocious meat breed has a high performance organoleptically–tasting than in adults. The taste, juiciness, color and flavor overall GPA was, neck and chest muscles – 4.3 points, lumbar–pelvic – 4.7 points, while the rate in adult animals was respectively 3.6 and 3.8 points. . Index zbytosti California precocious males breed in 4–months of age was 74.9%, and in two years – 86.2%. Slaughter output respectively – 49.2% and 44.2%, out of pure meat – 82.0% and 81.8%. In the carcass of rabbits that were grown in the farm, prosperous in infectious and parasitic diseases, pathological changes available.

Purpose – Having the discrepancies between different descriptions of an organic food consumer profile in various researches worldwide as well as the causes of their emergence as a starting point, the purpose of this paper is to apply the method of preference-based market segmentation (by means of conjoint and cluster analysis) to Serbian organic food market, searching for advantages of using that methodological approach and deepening knowledge about specific organic food market. Design/methodology/approach – The research was conducted from May to July 2014 with 400 respondents participating (aged 18-30). Primary data were gathered by means of focus groups and a survey – structured personal interviews by using a questionnaire. Findings – When applying conjoint and cluster analysis to data about Serbian consumers’ preferences towards researched product, it is possible to identify a segment that prefers organic food the most. Compared to other segments, these consumers are predominantly female, somewhat more mature, with the highest proportion of employed and near the top by the percentage of respondents who are married and have children. They strongly value the importance of diet for health, a number of them have experience with a disease of a close person, which is believed that could be prevented by proper diet, but they do the least sports. Practical implications – The authors give managerial recommendations to actors operating at domestic organic food market. Originality/value – According to the authors’ knowledge, the first application of preference-based market segmentation by conjoint and cluster analysis to organic food market, performed in Serbia, generally characterised by scarce food consumer research.

Changes that have taken place in recent years in production, sale, market circulation, quality of food consumption give relevance to the problem of assessing the society's food security, the country's food independence and forming a high – quality food market. For this reason the purpose of the study was to justify the need for changes in the principles and rules for assessing the country's food security. It is proposed that its definition took into account the quality of food, the volume of exports and imports, the indicator of the country's comparative advantage in external exchange. During the study, the reasons for veiling the food quality and its safety were revealed, non-objectivity of determining the state of food security was substantiated, the advantages of the new approach on more objective evaluation criteria are proved and basic indicators reflecting the qualitative advantages of the new methodology in assessing food security are proposed. The problem of food quality and its assessment exists and is worsening. The novelty achieved in the study process is the rationale for the need to take into account food quality indicators of all major types, calculate food security and independence, applying for this the proposed formula for indexing the comparative advantage. In today's economy, conditions have developed when it is necessary to assess the level of food security in the society more orderly and comprehensively. To do so, the criteria laid down by international organizations must be applied. High-quality food is noted to include not only organic products, but sparing mode products as well, that is products to produce which mineral fertilizers were used in compliance with all norms and rules. Producers must preserve and protect the environment. Many authors note that government structures should pay more attention to the formation and regulation of the high quality food market segment.

The food market grew circumstantially in recent years and the quality of services and products is the distinguishing factor among many companies in the field of food. The Foodborne Diseases (FD) are serious public health problem, and it is in this context that it becomes important to ensure food hygiene as a priority component of food safety. The objective was to evaluate the physical and structural hygiene fridge, cold, bakery and FFV (Fresh Fruits and Vegetables) in a supermarket chain sectors Teresina-PI conditions. Selected at random ten supermarkets located in four zones of the city that were evaluated through a check-list containing questions relating to health and hygiene handler, facilities and equipment. It was found that, as to the adequacy, no area was classified as poor, with the best grades were supermarkets B, F and C, belonging to different parts of the city. The adjustments ranged from fair to good, showing a concern for the quality control in some supermarkets while, in others, leaving a little aside this issue, which is worrying, since the quality of food is the key point health of human beings.

Gender difference in the lunches brought from home to school and the amount consumed by elementary and intermediate school students were examined using data collected from 12 schools in Texas. The amount and nutritional quality of food items brought and consumed was evaluated, by comparing the results to the 2012 school meal standards, and Dietary Reference Intakes (DRIs). Almost all lunches brought from home contained grain and meat/meat alternatives, and the amount brought and consumed exceeded the NSLP standards. The majority of students did not bring fruits, vegetables, and whole grain foods, but those who brought consumed most of what they brought. Among elementary school students, only 9% of boys and 14% of girls brought vegetables and the amount brought and consumed did not meet the standards. Although carbohydrate and protein consumption were adequate for boys and girls, the intakes of micronutrients and fiber did not meet the requirements across both genders at both school levels. Overall, lunches brought from home were not well balanced and did not meet NSLP standards and DRIs. It is imperative to identify strategies to improve the nutritional quality of lunches brought from home considering gender difference in food choice and educating parents and children on what is a healthy well-balanced lunch.

Nowadays the consumer's health consciousness drives the agri-food market. Superfoods or foods with health-related claims, including organic and functional foods, are the latest trend in the food industry. Since entering the market these products are rapidly gaining a remarkable market share worldwide. In this article, the authors conducted a survey of 300 Greek consumers to better understand attitudes towards these products, through the implementation of factor and cluster analysis and linear regression. Analyzing consumers' perception of healthy food products, in particular, organic and functional foods, is the best way to determine the market orientation and to have a clear market segmentation.

Purpose The purpose of this paper is to discover profiles of organic food consumers in Lebanon by performing a market segmentation based on lifestyle and attitude variables and thus be able to propose appropriate marketing strategies for each market segment. Design/methodology/approach A survey, based on the use of closed-ended questionnaire, was addressed to 320 organic food consumers in the capital Beirut, in February and March 2014. Descriptive analysis, principal component analysis and cluster analysis (k-means method) were performed upon collected data. Findings Four clusters were obtained and labelled based on psychographic characteristics and willingness to pay for the most purchased organic products. “Localist” and “Health conscious” clusters were the largest proportion of the selected sample, thus these were the most critical to be addressed by specific marketing strategies, emphasising the combination of local and organic food and the healthy properties of organic products. “Rational” and “Irregular” cluster were relatively small groups, addressed by pricing and promotional strategies. Originality/value This is the first study attempting to segment organic food consumers into different categories in a developing country as Lebanon.

The population of our planet is growing every year and its growth by 2050 will exceed the potential of agriculture and will not be able to provide food security in General. This problem is the subject of the study. The article considers the existing programs of the Russian Federation aimed at supporting domestic producers of agricultural raw materials and food, ensuring the availability and quality of food in the food market. Foreign experience in the creation and implementation of programs in these areas has been studied. The article presents an assessment of the consequences of sanctions on the total cost of trade flows between the European Union and Russia. The study was carried out on the example of data on the Irkutsk region. An element of scientific novelty is the consideration of approaches to solving the problem of food security not only from the state, producers of agricultural raw materials and food, but also from its consumers – the population. Social efficiency in achieving the proposed performance indicators will be determined by increasing life expectancy, reducing morbidity, improving the quality of life of those suffering from diseases associated with poor nutrition, and the ratio of the obtained favorable social results to the costs to achieve them. At the same time, economic efficiency will be expressed by assessing the impact of the results achieved in the framework of the program activities on the formation of the gross product, increasing labor productivity and ensuring the dynamics of economic growth. The practical application of the proposed directions of improving the availability and quality of food for the population will improve the efficiency of the food market and create conditions for the formation of the state of protection of the Russian subjects from the threats of food security.
