The problem of increasing the nutritional value of canned food products in hermetically sealed containers can be successfully solved by intensifying the process of thermal sterilization. The paper presents the results of research on improving the technology of production of canned compote from grapes using self-exgaustible containers and intensifying the process of thermal sterilization, which is the most widely used method of preserving food products and the perfection of which largely determines the nutritional value of the finished product. It is known that the duration and temperature level of the sterilization process can significantly change the qualitative and quantitative composition of vitamins, proteins, carbohydrates, mineral and organic acids and other substances, which often leads to a decrease in the nutritional value of the product. Based on the assessment of the traditional sterilization regime, a new method and modes of sterilization have been developed and proposed, which provide a reduction in the duration of heat treatment by more than 30 % and an increase in the nutritional value of the finished product. It was found that the use of a preliminary increase in the temperature of the product and the use of self-exgaustible glass jars ensures the preservation of vitamin C in the finished product by 0.8 mg/% higher than by traditional technology. The results obtained are of interest for implementation at plants processing plant raw materials.

Rational nutrition for a whole year is possible with a well-established system of storage and processing of plant raw materials. Products with vegetable and fruit raw materials due to their availability and nutritional value are in demand among the population. There is a constant interest in new products with increased biological value. The preservation of ascorbic acid, the main source of which is vegetables and fruits, is also affected by the technology of production. Despite the damaging effect of the heat treatment temperature of canned products on thermolabile components, the sterilization regimes should be relaxed. To this end, it has been proposed to produce beverages from vegetables and fruits for scientifically-based recipes, which allows them to be processed at a temperature of 100 °C, as well as juices with pulp and sugar. Smoothie, made on the basis of zucchini with the addition of gooseberries and blackcurrant puree contain respectively 13.3 and 41.8 mg/100 g of ascorbic acid, have an optimal for good perception of the sugar-acid index 21,4-21,5 compared with juices from soft pulp and sugar from gooseberry and black currant, which produces industry. The latter is explained by the fact that instead of sugar syrup, natural juice from zucchini was used in the recipe.

The technology of production of a biologically active phytocomplex in the form of a biologically active additive has been discussed. The qualitative and quantitative composition of the formulation, which forms the functional properties of a specialized product, has scientifically been determined. The main stages of production include the preparation and input control of the raw material, the preparation of a mixture for encapsulation, including the steps of dispensing, sieving, grinding and mixing at a rate of 100 kg / 1 h, encapsulation and deducting, packaging, packaging and storage. A description of the technology of ex-traction of plant raw materials has been given, which is of great importance in the formation of consumer properties of the product being developed. The extraction process includes: obtaining liquid recovery us-ing demineralized water with dissolved in it sodium bicarbonate in an amount of 8% of the dry feed con-tent. The extractant-raw ratio is 1:13, the extraction time is 4 hours for each time; thickening of the liquid extract. It is carried out by means of vacuum in a vacuum evaporator plant before obtaining an extract with a solids content of not less than 20%; obtaining a dry extract. It is carried out by spray drying at a temperature of 90-95 ° C. The advantage of the developed technology of dietary supplements is the possi-bility of combining several differently directed biologically active substances in one capsule. The gelati-nous membrane reliably protects the contents from various environmental factors. Functional properties of the formulation formula of a specialized product are aimed at the prevention and comprehensive treatment of infectious viral diseases, confirmed by the conclusion of experts from the Russian Federal Service for Consumer Rights and Consumer Protection and the results of clinical trials in a group of pa-tients with acute respiratory viral infections. The developed product has been approved and produced at the enterprises of the company «Art Life».

The problem of providing the world population with a high-grade dietary protein not only remains relevant in the third millennium, but is also becoming increasingly acute. Humanity is faced with limited natural resources against the background of rapid population growth in economically underdeveloped countries and an increase in the number of man-made disasters. The deficiency of dietary protein in the diet is 10-25 million tons/year, which leads to the depletion of the adaptive capacity of the human body and the emergence of a wide range of alimentary-dependent diseases and requires the adoption of measures and implementation of various programs at the state level. About 80% of the world's food protein reserves are of vegetable origin, with 50% being cereals, 25% - legumes and oilseeds. Due to the short reproduction cycle and availability, in terms of economic and environmental indicators, plant raw materials are a promising source of food protein, mainly used indirectly - for feed purposes. The article provides an overview of the main directions of biotechnological impact and the use of legume processing products. The biological diversity of legumes is presented, which provides the possibility of growing a large list of crops in the territory of the Russian Federation, the structure of representatives of legumes by types of harvest in 2019. The nutritional value of legumes is analyzed in comparison with other types of food raw materials. A list of valuable essential substances with a pronounced bio-corrective action present in legumes is given. Proteins of plant raw materials differ in the composition of limiting amino acids, for legumes (beans, peas, etc.) - methionine and cystine. Combining cereals with legumes allows you to design a protein that is closest to the optimal amino acid composition. The paper provides information on the amino acid composition of various legumes. Presents data on meeting the daily requirement for vitamins and minerals when introducing various legumes into the diet. The article analyzes the protein content in the chemical composition and nutritional value of various leguminous crops. Considered and studied modern recipe and technological solutions for obtaining food products using leguminous crops. The presented data provided the basis for the intensive development of scientific research, experimental design and experimental production work in the direction of deep processing of legumes and the development of technologies for the production of functional products based on them.

Consumer demand for both plant products and meat products enriched with plant raw materials is constantly increasing. Therefore, new versatile and reliable methods are needed to find and combat fraudulent practices in processed foods. The objective of this study was to identify oilseed species-specific peptide markers and meat-specific markers that were resistant to processing, for multispecies authentication of different meat and vegan food products using the proteomic LC-MS/MS method. To assess the limit of detection (LOD) for hemp proteins, cooked meatballs consisting of three meat species and hemp cake at a final concentration of up to 7.4% were examined. Hemp addition at a low concentration of below 1% was detected. The LOD for edestin subunits and albumin was 0.9% (w/w), whereas for 7S vicilin-like protein it was 4.2% (w/w). Specific heat-stable peptides unique to hemp seeds, flaxseed, nigella, pumpkin, sesame, and sunflower seeds, as well as guinea fowl, rabbit, pork, and chicken meat, were detected in different meat and vegan foods. Most of the oilseed-specific peptides were identified as processing-resistant markers belonging to 11S globulin subunits, namely conlinin, edestin, helianthinin, pumpkin vicilin-like or late embryogenesis proteins, and sesame legumin-like as well as 2S albumins and oleosin isoforms or selected enzymic proteins.

In Russia, raw materials of plant origin are used in the production of national beverages and food products. Many areas for cultivated crops are located near urbanized areas, oil refineries and mechanical engineering plants. Researches are devoted to the definition of heavy metals in soils of urbanized and rural areas of the Yaroslavl region and were carried out in 2019–2020. The purpose of this study is to determine the content of some microelements and heavy metals in soil, rhubarb and its processing product – kvass produced in various ways (2 technologies were considered: technology with an additional operation "soaking rhubarb stems" and "infusing rhubarb stems and additional ingredients" and technology with an additional operation "boiling rhubarb stems and additional ingredients"). When investigating soil contamination with microelements and heavy metals in all territories, no excess of maximum permissible concentrations was found. It was established that in terms of the average content in the water extract of the soil, the examined elements in all the considered territories of the region form the following decreasing series: iron > lead > zinc > copper > arsenic > cadmium. Higher concentrations of zinc, iron, cadmium, lead and arsenic were found in urbanized territory, and copper in rural territory. An analysis of the migration ability of elements in the system "soil – plant – product of plant processing" showed the presence of poor migration ability for zinc and iron. The use of plant raw materials produced according to the organic production technology and the developed technology for processing plant raw materials contributed to the least impact on its components, an increase in the content of macro- and microelements. At the same time, the content of toxic elements remains within the limits of existing regulatory documents. The technology, including an additional "boiling" operation, ensured the greatest extraction of macro- and microelements from rhubarb to kvass.

One of the most important problems of the population's nutrition is the high caloric content of flour confectionery products, due to their oversaturation with carbohydrate and fat components. This trend leads to micronutrient deficiencies, and later to metabolic problems and deteriorating health. In recent years, there has been an expansion of the range of waffles, improving technology through the wider introduction of various ingredients of plant origin. Crustilian is a crunchy product or component of a dish that has a crispy texture (waffles, cereal breads) or a surface (a crust of bread or potato balls with a fried crust). Crustilian is also used as a layer for cakes or desserts, which usually consists of waffle crumbs, chopped nuts and melted dark chocolate. There are still many variations for making crustilians. The range of applications of crustilian in the manufacture of sweet dishes is extremely wide. The nutritional value of crustilians is determined by the composition of raw materials and can be significantly increased due to the rational selection of components, the introduction of enrichments in the recipe, as well as technological processing, which increases their digestibility. Improving the technology of crucifers waffles by increasing their nutrient density will expand the range of products with functional ingredients, and enrichment of the micronutrient composition due to valuable plant raw materials will improve the nutritional value and organoleptic characteristics of the finished product. A line of crustilians with a high content of biologically active compounds has been developed due to the introduction of superfoods such as flax seeds, sesame seeds, sunflower and walnuts and peanuts into the product formulation. It is established that the use of peanuts and walnuts, in the composition, makes the dough less crispy and more fatty. The presence of flax and sesame does not reduce the crunchiness of the finished product, which is characteristic of crustilians, but, on the contrary, slightly increases this figure. It is proved that the index of nutritional density of crustilian made according to the developed recipe in comparison with the prototype is characterized by an increase in the index of nutritional density in three times, while the mass fraction of the macronutrients increases from 1.26 to 2.5 times, depending on the micronutrient. increases only 1.1 times.
