Phenolics compounds in grapes contribute to berry and must color, organoleptic properties, nutritional value, antioxidant properties and provide protection against environmental challenges. Climate change has place mammoth challenges for the viticulture industry in different viticulture regions. Environmental variables determine to the greater extent, suitable grapes varieties for fresh as well as premium quality wine production. Grape berry composition is particularly affected by heat, drought, and intensity of solar irradiation. It is expected that climatic extremes will have an adverse effect on berry quality traits such as phenolic compounds in different grape cultivars. Polyphenols particularly anthocyanins decrease at elevated temperature, similarly flavanols levels increase with better exposure to solar radiation. Water availability is crucial for better vine growth and good production, however modest water stress particularly near veraison, upregulates the activity of key enzymes of the phenylpropanoid and flavonoid pathways. Therefore, it is important to know that how and when phenolic substance accumulate in berries and how various cultivars respond. This review elaborates the effect of weather conditions on biosynthesis of different phenolic compounds in grapes. Berry phenolic substances e.g., total phenolic compounds (TPC), total anthocyanins (TAC) and total flavonoid contents (TFC) synthesis is strongly regulated under the influence of environmental conditions during growing season. In this chapter we, shall focus on accumulation of phenolic compounds in grapevine in relation to climatic variations.

Dynamics of total phenolic compounds content in the leaves of four cultivars and one subspecies of Olea europaea L. were studied during the cold periods of 2016-2019 years on the Southern Coast of the Crimea. The concentration of phenolic substances ranged from 642 to 1332 mg/100 g of fresh biomass. It was found out that the content of phenolic compounds depended on weather conditions during a particular cold period and it did not almost depend of the degree of frost resistance of the studied genotypes.

Notable parts of the population in Europe suffer from allergies towards apples. To address this health problem, the analysis of the interactions of relevant allergens with other substances such as phenolic compounds is of particular importance. The aim of this study was to evaluate the correlations between the total phenolic content (TPC), polyphenol oxidase (PPO) activity, antioxidant activity (AOA), and the phenolic compound profile and the content of the allergenic protein Mal d 1 in six apple cultivars. It was found that the PPO activity and the content of individual phenolic compounds had an influence on the Mal d 1 content. With regard to the important constituents, flavan-3-ols and phenolic acids, it was found that apples with a higher content of chlorogenic acid and a low content of procyanidin trimers and/or epicatechin had a lower allergenic potential. This is probably based on the reaction of phenolic compounds (when oxidized by the endogenous PPO) with proteins, thus being able to change the conformation of the (allergenic) proteins, which further corresponds to a loss of antibody recognition. When apples were additionally biofortified with selenium, the composition of the apples, with regard to TPC, phenolic profile, AOA, and PPO, was significantly affected. Consequently, this innovative agronomic practice seems to be promising for reducing the allergenic potential of apples.

The use of agroindustry by-products in animal diets allows the use of residues that are not fit for human consumption. In this study, it was investigated whether fattening commercial rabbits during 30 days with a non-medicated feed, with 20% addition of grape pomace (GPD), affected production traits and the fatty acid composition, antioxidants properties, and the shelf life of the meat compared to a conventional strategy (CON). Furthermore, it was tested, by chromatographic analysis, whether this alternative diet allowed the transfer of phenolic compounds to the meat. Thirty-six weaned rabbits were allotted to the two treatments. In each treatment, 18 rabbits were fattened in three indoor cages, each housing three males and three female rabbits. No significant differences were found in live weights (p > 0.05), but the feed conversion rate and carcass weight and yield were found to be impaired in the GPD group (p ≤ 0.05). The GPD group had a higher intramuscular fat percentage (2.01 vs. 1.54), improved polyunsaturated/saturated fatty acids ratio (0.75 vs. 0.66), and better atherogenicity (0.71 vs. 0.83) and thrombogenicity (1.14 vs. 1.24) indexes, while the n-6/n-3 ratio was higher (25.4 vs. 20.3). Total volatile basic nitrogen in meat was lower in the GPD group (p = 0.01), suggesting a delayed spoilage. However, no improvements in total phenolic content, antioxidant capacity, reducing power, and lipid oxidation (p > 0.05) were found in the meat. Even though the GPD pellets offered to the animals had several grape-derived phenolic compounds, and higher antioxidant properties compared to the CON diet, none of the phenolic compounds detected in feeds were detected in the meat samples.

Aims: The aim of this work was to evaluate the optimal radiation dose to maintain the antioxidant capacity of conventional and organic acaí freeze-dried pulps. Study Design: All analyses were conducted in sextuplicate for each experiment. Place and Duration of Study: Were conducted at the LATAIA and the irradiation processes at the Laboratory of Nuclear Instrumentation, UFRJ, Rio de Janeiro, Brazil. The study was carried out from July, 2018 to March, 2020. Methodology: Frozen acaí pulps from two commercial brands, one of them organic and other conventional were used and purchased in the city of Rio de Janeiro, packed in plastic bags containing 1 kg. For each brand, frozen pulps (5 kg) were thawed at 4ºC, opened and homogenized. Samples were subdivided into aliquots ranging from 20 to 300 g for the assays and frozen inside the plastic bags until analyses. A Cobalt 60, Gammacell irradiator was used and doses of 1.25. 2.5. 3.75 and 5 kGy were applied in the in natura pulps. Antioxidant capacity was performed by the ORAC and DPPH methods and, phenolic compounds by Folin Ciocalteau method and, total anthocyanins and majority anthocyanidins by HPLC. Results: Anthocyanins increases at irradiaton dose up to 3.75 kGy in organic açaí but it was not significant in conventional acaí irradiated at low doses (1.25 to 3.75 kGy). Our results suggested that irradiation doses up to 5 kGy do not decrease total phenolic or anthocyanin contents nor the pulp antioxidant activity compared with non-irradiated pulps. The results showed irradiation did not reduce these analytes, and even increased in the organic acaí. Conclusion: The study evidenced that gamma irradiation can be an alternative safe process for fruit pulps preservation. We conclude that irradiation doses up to 5 kGy can be used in acaí without harming its antioxidant properties.

Late ripening berry dehydration is an important phenomenon that occurs through grape berry water loss due to the alteration of the fruit water budget when transpiration and potential water back flow to the plant exceed the import of water into the berry through the phloem and xylem. Berry shrivelling can have a significant economic impact, reducing yields by ≥25 % with consequences on berry composition and the resulting wine. Its occurrence and consequences are expected to increase due to predicted climate change, shifting grape development and ripening into warmer periods (i.e., heat waves and drought events).

The results of studies of the biochemical composition and antioxidant properties of nuts sold in the consumer market of St. Petersburg were presented in the work. The objects of research were kernels of nuts: sweet almonds, hazelnuts, cashews, walnuts. Total Soxhlet lipids, fatty acid composition, vitamin E, fractional composition of tocopherols and phytosterols, total phenolic compounds and flavonoids, antioxidant activity by FRAP with ferric chloride, o-phenanthroline and Triton X 100 were determined in nuts. Nuts varied in lipid content (42.6–65.4%) with a predominance of unsaturated fatty acids from 80.4 to 92.4 relative%. Oleic acid prevailed in the fatty acids of almonds, hazelnuts and cashews, while linoleic acid prevailed in walnuts. Walnuts contained the highest amount of polyunsaturated fatty acids. The antioxidant properties of nuts were formed by a complex of water and fat-soluble antioxidants. Fat-soluble antioxidants included vitamin E with a predominance of ?-tocopherol in the kernels of sweet almonds and hazelnuts, ?-tocopherol - in walnuts and cashews. Only sweet almond kernels contained all the tocopherol fractions. ?- and ?-tocopherols were absent in hazelnut lipids, while ?-tocopherols were absent in cashews and walnuts. ?-sitosterol, campesterol and stigmasterol with a predominance of ?-sitosterol were identified in the composition of phytosterols in all nut kernels. Water-soluble antioxidants are mainly represented by phenolic compounds, the amount of which varies widely depending on the type of nuts: cashews

Due to their antioxidant properties, polyphenolic compounds are considered beneficial for human health. In this work, we investigated the polyphenol profile and antioxidant activity of edible tejocote (Crataegus pubescens) fruit extracts by micellar electrokinetic chromatography (MEKC) and HPLC/UV. The major phenolic compounds in the pulp extracts were (+)-catechin (9.17 ± 0.20 mg/100 mg dry fruit), (−)-epicatechin (4.32 ± 0.11 mg/100 mg dry fruit), and chlorogenic acid (5.60 ± 0.24 mg/100 mg dry fruit). The total phenolic content was 168.6 ± 0.9 mg gallic acid equivalent/g dry fruit; the total proanthocyanidin content was 84.6 ± 1.4 mg cyanidin/100 g dry fruit; and the total flavonoid content was 55.89 ± 1.43 mg quercetin/g dry fruit. Interestingly, procyanidins (dimers, trimers, and tetramers of (−)-epicatechin and (+)-catechin) were detected in the extract. This is the first study reporting the presence of polymeric polyphenols in Crataegus pubescens fruit. Accordingly, these fruits demonstrate great potential as a natural source of antioxidant phenolic compounds and could therefore be used as a nutraceutical and functional food.

Strawberries are one of the most important food crops grown in Florida, with a harvested area of ≈10,000 acres. The University of Florida strawberry breeding program develops cultivars adapted to this region and its particular weather conditions, with a major aim of increasing overall quality. The objective of this study was to compare the fruit of advanced breeding selections to those of commercial cultivars, for compositional attributes. Seven different strawberry genotypes were compared at harvest and after 7 days at 4 °C across multiple harvest dates during two consecutive years. Compositional attributes were highly influenced by year, harvest date within a year, genotype, and storage. Overall, compared with other genotypes, selection FL 09-127 exhibited consistently higher soluble solids and total sugar (TS) contents at harvest and after cold storage. Higher ascorbic acid (AA) and phenolic contents at harvest were observed in selection FL 07-193. However, its anthocyanin content was among the lowest. In contrast, FL 10-47 exhibited relatively low AA content at harvest but consistently high total anthocyanins (TACs) and total phenolic (TP) contents after storage. Overall, results from this study provide valuable information to the breeding process by identifying new genotypes with improved compositional attributes combined with suitable quality characteristics after cold storage.

The purpose of this study is to assess and evaluate the physicochemical properties of the seed oils of two Moroccan varieties of watermelon “Citrullus lanatus” extracted by three different techniques, a mechanical process using cold press, and two chemical processes using a Soxhlet apparatus and a sonotrode ultrasound assisted extraction (UAE) using n-hexane. The total phenolic compounds (TPC) and antioxidant properties against the DPPH radicals (2,2-diphenyl-1-picrylhydrazyl) were also studied. The seed oils of both varieties of watermelon exhibited high concentrations of unsaturated fatty acids with the predominance of linoleic and oleic fatty acids. The primary sterol was β-sitosterol, and high levels of total tocopherols were observed. Ɣ-tocopherol was the predominant tocopherol in all tested oils. The Citrullus lanatus var. lanatus variety seeds oil exhibited the highest TPC value (89.5 ± 0.06 mg EGA/100 g; EGA: gallic acid equivalent), with 82.4 ± 0.03% DPPH free radical inhibition efficiency. Nevertheless, all tested seeds oils showed a significant amount of total phenolic compounds and a good inhibition against DPPH radicals ranging from 51.1 ± 0.1% to 84.8 ± 0.04%. In addition, the influence of the ultrasonic extraction parameters was studied using two different solvents (n-hexane and the methanol-chloroform mixture), with different particle sizes (500–300 µm), duration (10 and 20 minutes), cycle (1–0.5), amplitude (80–100%) and solvent/seed ratios (1:5 and 1:10), and the seed roasting parameter was also studied. The oil yield was mainly affected by the extraction solvent, then the solvent/seed ratio and the duration, respectively.

The present study was carried out to establish the antioxidant capacity of plant material of Cornus stolonifera (syn. Cornus sericea, Red Osier Dogwood) grown in Manitoba, by measuring total phenolic content and oxygen radical absorbance capacity (ORAC) over a 3-yr period. The presence and concentrations of flavonoids that might account for antioxidant abilities were investigated using ultra-performance liquid chromatography and a total anthocyanins assay. Both ORAC levels and phenolic content increased during the spring, peaked during the summer months (1631.65±166.30 µmol trolox equivalents g−1DW in July 2011, 220.38±2.29 mg gallic acid equivalents g−1DW in August 2012), and then declined during the fall in all 3 yr. Analysis of individual flavonoids in 2010 samples revealed that high levels of rutin, a glycoside of quercetin, were present ranging from 7.46±0.09 (July 2010) to 18.77±0.23 mg g−1dried sample (October 2010). Anthocyanin content was high in the spring, very low in the summer months, and increased in the fall over all 3 yr. Although polyphenolic and antioxidant content in Cornus spp. plants have been largely attributed to their berries, results from this study demonstrate that other plant material may also be an abundant source of these compounds.
