The consumption of plant-based beverages is a growing trend and, consequently, the search for alternative plant sources, the improvement of beverage quality and the use of their by-products, acquire great interest. Thus, the purpose of this work was to characterize the composition (nutrients, phytochemicals and antioxidant activity) of the Brazil nut (BN), its whole beverage (WBM), water-soluble beverage (BM-S), and its by-products of the beverage production: cake, sediment fraction (BM-D), and fat fraction (BM-F). In this study, advanced methodologies for the analysis of the components were employed to assess HPLC-ESI-QTOF (phenolic compounds), GC (fatty acids), and MALDI-TOF/TOF (proteins and peptides). The production of WBM was based on a hot water extraction process, and the production of BM-S includes an additional centrifugation step. The BN showed an interesting nutritional quality and outstanding content of unsaturated fatty acids. The investigation found the following in the composition of the BN: phenolic compounds (mainly flavan-3-ols as Catechin (and glycosides or derivatives), Epicatechin (and glycosides or derivatives), Quercetin and Myricetin-3-O-rhamnoside, hydroxybenzoic acids as Gallic acid (and derivatives), 4-hydroxybenzoic acid, ellagic acid, Vanillic acid, p-Coumaric acid and Ferulic acid, bioactive minor lipid components (β-Sitosterol, γ-Tocopherol, α-Tocopherol and squalene), and a high level of selenium. In beverages, WBM had a higher lipid content than BM-S, a factor that influenced the energy characteristics and the content of bioactive minor lipid components. The level of phenolic compounds and selenium were outstanding in both beverages. Hydrothermal processing can promote some lipolysis, with an increase in free fatty acids and monoglycerides content. In by-products, the BM-F stood out due to its bioactive minor lipid components, the BM-D showed a highlight in protein and mineral contents, and the cake retained important nutrients and phytochemicals from the BN. In general, the BN and its beverages are healthy foods, and its by-products could be used to obtain healthy ingredients with appreciable biological activities (such as antioxidant activity).

The Brazil nut is one of the main non-timber forest products in Brazil, but its price fluctuations generate uncertainties and risks for both extractivists and investors. Econometric models or other simpler methods can estimate price changes and indicate the investment attractiveness of the Brazil nut. The objective of the present study was to analyze the risk-return relationship and the export price for both volatility of the Brazil nut over a 15 years period. The historical series of Brazil nut export prices, shelled and unshelled nuts, was evaluated from 2002 to 2016. The geometric growth rate and the variation coefficient indicate the return and risk respectively, associated with its price series. The price volatility of shelled and unshelled Brazil nuts was estimated with the standard deviation of the price series and with generalized models of ARCH (GARCH, EGARCH and TARCH). The shelled or unshelled Brazil nut coefficient increased over 15 years, with a low risk-return ratio. The shelled Brazil nut volatility was lower in the 2002 to 2006, 2007 to 2011 and 2012 to 2016 periods than for the unshelled nut when estimated by the standard deviation method than for the unshelled nut. The shelled Brazil nut price was higher from 2002 to 2016, with low volatility and persistent shocks. The estimate of the shelled and unshelled Brazil nut price volatility was better with the TARCH and the EGARCH models, respectively.

The activated carbon investigated in this work was produced from the extractive residues of Brazil nut processing, more specifically from the mesocarp of the Amazonian fruit. The process was performed by muffle pyrolysis, with ZnCl2 impregnation, at 400 and 500 °C. All samples were characterized by X-ray diffractometry, thermogravimetry, CHNS elemental analysis, scanning electron microscopy, and adsorption/desorption of N2. The results were promissory, with 99% removal of methylene blue for the CA25 material, which has a surface area of 1236 m2 g-1, much higher than commercial coal (CAC, 618 m2 g-1). The adsorption kinetics best fit the pseudo-second-order model for all materials. The maximum adsorption capacity obtained was 195.3 mg g-1. Therefore, the extractive residue of Brazil nut has excellent potential for the development of activated carbon, which can be used effectively to mediate environmental contamination in a given aqueous medium.

Brazil nut tree (Bertholletia excelsa Bonpl) management, is a traditional activity that plays a key role in the economy of forestbased Amazon communities and in the conservation of forests. Nevertheless, some threats and critical points related to sustainability indicate to the need for establishment of monitoring procedures that can assist in the management of this natural resource. The overall aim of the research was to evaluate the MESMIS method as a tool to support the participatory definition of sustainability indicators to monitor Brazil nut management, and the viability of Brazil nut harvest over time. For that, we carried out a case study in the Porvir Community, RESEX Chico Mendes, Acre State (Brazil), aiming to integrate the perceptions of Brazil nut harvesters, researchers, managers, and technicians to define the indicators. The result was the generation of 18 strategic indicators to assess sustainability in the environmental, technical-economic and social dimensions. Assessment parameters, representing conditions that must be achieved for system sustainability, were collectively defined for each indicator. The main critical values attributed in the evaluation of the indicators are related to Brazil nut commercialization to intermediaries and oscillation in the annual fruit production. The use of the MESMIS method was considered appropriate to the studied context and can be recommended to similar non-timber forest product management systems.
