Purpose: In this study, the optimal mixing ratio of total branched-chain amino acid (BCAA) content, total unsaturated fatty acid content, antioxidant activities, and enzyme activities of silkworm, mealworm, and white grub, which are alternative protein sources, was derived using response surface analysis.Method: Silkworm, mealworm, and white grub were the independent variables, and total BCAA content, total unsaturated fatty acid content, total polyphenol content, total flavonoid content, ABTS radical scavenging activity, α-glucosidase inhibitory activity, and ACE inhibitory activity were used as the dependent variables to determine the optimal mixing ratio.Result: The optimal mixing ratio for total BCAA content, total unsaturated fatty acid content, antioxidant activities, and enzyme activities derived from the response surface analysis was silkworm (X1) 2.998 : mealworm (X2) 0.623 : white grub (X3) 1.983. At this ratio, the total BCAA content was 0.52 g, the total unsaturated fatty acid content was 0.44 g, the total polyphenol content was 67.02 mg TAE/g, the total flavonoid content was 35.58 mg QE/g, the ABTS radical scavenging activity was 95.61%, the α-glucosidase inhibitory activity was 37.79%, and the ACE inhibitory activity was 95.25%.Conclusion: It is expected that the optimal mixing ratio of silkworm, mealworms, and white grub derived in this study can be used to develop products for the management of various chronic diseases.

Abstract Background The research was carried out to assess the lipid characteristics of oil extracted from the head and gills of Claris macrocephalus and Scomber scombrus. Results The results confirmed the presence of C16:0, C18:0, C18:1, C18:2, C18:3, C22:6 as the major fatty acids. Titus fish head (TFHD) oil had a total saturated fatty acid (TSFA) of 40.804 ± 0.002% of which C16:0 and C18:0 were the most dominant fatty acids present while the total monounsaturated fatty (TMUFA) acids present in the oil was 33.853 ± 0.001%. The total polyunsaturated fatty acid (TPUFA) content of the TFHD oil sample was found to be 25.368 ± 0.002%. The results revealed that the total unsaturated fatty acid (TUFA) present in the TFHD was higher than the TSFA. The results obtained for Titus fish gills (TFGL) oil sample followed the same trend as observed in the head sample. The results showed that the four (4) oil samples contain high level of palmitic acid (C16:0) and stearic acid (C18:0) both of which are saturated fatty acids (SFA). The main MUFA identified was C18:1 (cis-6) and ranged from 14.120 ± 0.004 to 20.418 ± 0.002% for TFHD, TFGL, CFHD, CFGL and oleic acid (C18:1) ranged from 10.297 ± 0.001 to 11.570 ± 0.003% for TFHD, TFGL, CFHD and CFGL. Conclusions Oils of CFHD and TFHD showed higher peroxide values indicating suitability for human consumption.

  Fatty acid levels of two edible and medicinal species: Delonix regia and Tetrapleura tetraptera seeds flour were investigated using standard analytical techniques. Among the saturated fatty acids (SFA), palmitic acid (17.2-49.4%) had the highest concentration in both samples. Oleic acid (19.7-21.0%) was most abundant among the mono-unsaturated fatty acids (MUFA). In both samples, palmitoleic acid recorded 0.00% concentration, whilst margaric acid (0.001-0.060%), lignoceric acid (0.001-0.079%) and arachidonic acid (0.065-0.080%) were found in trace amounts. Both samples were high in total poly-unsaturated fatty acids (PUFA) (26.9-42.7%). MUFA/SFA was less than 1.00 in both samples (0.375-0.584); PUFA/SFA was 1.18 (Delonix regia) and 0.507 (Tetrapleura tetraptera). Total unsaturated fatty acid (TUFA) (63.8%) was higher than total SFA(36.1%) in Delonix regia. In Tetrapleura tetraptera, SFA (53.1%) was more than TUFA (46.8%). 2n-6/3n-3 were high at 59.9 (Delonix regia) and 536 (Tetrapleura tetraptera). The correlation coefficient of the fatty acids was positively high and significant

Seaweed is consumed as nutritive food materials in many Asian countries such as Japan, Korea and China. In the present study, we analyzed proximate composition of two Korean seaweeds Sargassum horneri and Ecklonia cava. Crude protein content of S. horneri and E. cava were 8.57% and 9.11%, whereas 1.03% and 1.40% of total lipid was found from S. horneri and E. cava. We used supercritical carbon dioxide (SC-CO2) with ethanol, methanol, acetone and hexane for the extraction process. The highest extraction yield was obtained from E. cava by SC-CO2 with ethanol and the value was 1.52 g/100 g DW. Further, fatty acid composition of S. horneri and E. cava by SC-CO2 with ethanol were analyzed. The total unsaturated fatty acid of S. horneri and E. cava samples were 59.95% and 17.79%, respectively. Important PUFA such as EPA and DHA were present in both samples. Total phenolic content (TPC), total flavonoid content (TFC) and antioxidant activity were found in both seaweed extracts with the highest concentration obtained from E. cava extracted by SC-CO2 with ethanol.

<p><em>Avocado is a fruit that high unsaturated fatty aci</em><em>d, while</em><em> coconut water is fluid </em><em>which has</em><em> high potassium. </em><em>The objective of this study was<strong> </strong>t</em><em>o assess the formulation of avocado juice with coconut water that could potentially reduce hypertension. The design of the study was an experimental with the degree of subsititution of coconut water as treatments. There were 3 kinds of treatment, i.e. F1 (75% avocado and 25% coconut water), F2 (50% avocado and 50% coconut water), F3 (25% avocado and 75% coconut water) and F0 (without coconut water but using water). Avocado juice product with 75% avocado substitution and 25% coconut water (F1) was a best formula determined by the hedonic test. This formula contained 68,48% (%w/w) water, 3,12% (%w/w) ash content, 4,45% (%w/w) fat content, 1,76% (%w/w) protein content, 21,07% (%w/w) carbohydrate content, 2163,8 (mg/kg) potassium content, 9,20% (%w/w) linoleic acid content, 1,11% (%w/w) linolenic acid content and 42,4% (%w/w) of total unsaturated fatty acid. This product could potentially reduce and prevent hypertension, because in one serving size (200cc) contain 432,76 mg of potassium (claim source of potassium). </em><em></em></p>

Fatty acid in green tea leaves is important flavour precursor which has a negative effect onaroma quality of black teas. In this study, fatty acid composition of three cultivars includingShan Chat Tien, Trung Du and PH11 plucked at different time was analyzed by GC-MS/MS.The results showed that C16:0, C18:2, C18:1, C18:0 and C18:3 were the most abundant fattyacids indentified in tea leaves. In particular, total saturated fatty acid in the tea leaves plucked inJune and September was higher than total unsaturated fatty acid and vice versa for sampleplucked in March. Principal component analysis (PCA) showed that fatty acid compositions insamples plucked in June of three cultivars were similar to each other and they were characterizedby C18:0, C22:0 and C20:0. The sample plucked in March and in September were characterizedby C18:1, C18:2 and C18:3, andC18:1, C16:1, C18:0, C14:1 and C14:0; respectively. Thesample plucked in March had the highest total fat content followed by sample plucked inSeptember and June. The results showed that plucking time and cultivars significantlyinfluenced the fatty acid composition of tea leaves.

The present study, evaluated the effect of enrichment of the rotifer Brachionus plicatilis with the microalga Nannochloroposis salina, amino acid derivative L-carnitine and commercially available S-presso (SELCO). The study also evaluated the effect of enriched rotifers in larval rearing of Amphiprion clarkii in terms of metamorphosis, pigmentation, growth and survival of larvae.. Rotifer production increased by 43, 39 and 54% respectively in B. plicatilis enriched with different concentrations of L-carnitine at 1, 10 and 100 mg l-1 on day 4 (p<0.001) in comparison with the control group maintained on algal diet alone. Total unsaturated fatty acid (PUFA, HUFA and n-3 fatty acids) and the ratios of n-3/ n-6, DHA/EPA, EPA/AA were significantly higher (p<0.05) in the L-carnitine treated rotifers compared with the S-presso enriched as well N. salina enriched groups. Larvae of A. clarkii, fed with L-carnitine enriched rotifer achieved maximum growth of 56.92±0.2 mg; whereas, those fed S-presso treated rotifers attained only 48.74±1 mg. In L-carnitine enrichment; metamorphosis of clown fish larvae took only 10 days, while it took 11 days and 10 days respectively in S-presso and N. salina enrichment. In L-carnitine and S-presso enrichments, initial pigmentation of larvae was observed within first 3-4 days of culture, whereas it took 4-5 days in N. salina enrichment. L-carnitine enrichment resulted in the highest survival of 70%, followed by N. salina with 68% and S-presso enriched group with 52%. The results indicate that L-carnitine could be a recommendable enrichment for increasing rotifer production as well as for clown fish larval culture.

To evaluate the physicochemical characteristics of oilseeds, three varieties of mustard oilseeds were studied their seed weight, moisture, ash, carbohydrate, protein, fat, total energy and minerals composition of oil and cake. Among the varieties the highest thousand grain weight was found in BARI Sarisha-17 (4.24 g) and the lowest thousand grain weight was found in BARI Sarisha-15 (3.17 g). The highest moisture content was observed from BARI Sarisha-15 (4.52%); whereas the lowest moisture content was found in BARI Sarisha-17 (4.10%). The variety BARI Sarisha-17 contained significantly highest amount of oil (41.98%) whereas the variety BARI Sarisha-16 contained lowest amount of oil (40.95%). BARI Sarisha-16 contained highest amount of ash (14.20%). Significantly highest amount of protein was obtained from BARI Sarisha-15 (28.00%) and the lowest amount of protein obtained from BARI Sarisha-17 (22.57%). BARI Sarisha-17 contained highest amount of carbohydrate (18.85%), whereas BARI Sarisha-15 contained the lowest amount of carbohydrate (13.73%). BARI Sarisha-16 contained highest amount of Ca (2.52%) and Zn (66.80%). BARI Sarisha-15 contained highest amounts Cu (13.40%) and Fe (170.30%). Mustard varieties contained erucic acid (51.35-50.67%). Highest amount of total saturated fatty acid (TSFA) contained in BARI Sarisha- 15 (9.02%) and the lowest amount contained BARI Sarisha-16 (8.28%). Highest amount of total unsaturated fatty acid (TUSFA) contained in BARI Sarisha-17 (90.26%) lowest amount contained in BARI Sarisha-16 (87.04%). The highest amount of gross energy found from BARI Sarisha-15 (543.60 kcal/g; while lowest amount of gross energy recorded from BARI Sarisha-16 (531.20 kcal/g). Highest saponification value found in BARI Sarisha-17 (159.40) and lowest saponification value was found in BARI Sarisha-15 (157.6). The result of this research work confirms the mustard varieties seed to be of good quality and can be used for food preparation.
