AbstractBanana plant is one type of plant that contains chemical compounds that can be used for treatment. One part of the plant that has not been fully utilized is the heart of the Ambon banana (Musa acuminate Colla). Banana flower is known to contain flavonoid compounds, phenols, alkaloids, tannins, saponins, and coumarins. One of the compounds belonging to the flavonoid group which generally includes natural antioxidant compounds and has an antimicrobial function is phenolic compounds. The purpose of this study was to determine the total phenols, to examine the activity of antioxidants, antibacterials, and the ethanol extract of Ambon banana flower (Musa acuminate Colla). Determination of total phenol using the GAE (Gallic Acid Equivalence) method, antioxidant analysis using the FRAP method, and the antibacterial activity test using the paper disc method. The total phenol yield obtained was 17.7291 ± 0.102 mg GAE/g extract, the results from the antioxidant test were obtained with an EC50 value of 0.0628 µmolFe2+/g sampel extract, which means that the ethanolic extract of Ambon banana flower has a high antioxidant activity value, and antibacterial results in the extract. with a medium average (5-10 mm). From the results of tests carried out, the ethanol extract of Ambon banana flower has antioxidant activity and has little antibacterial power.Keywords : Banana plants; Ambon banana flower; antioxidants; antibacterial; total phenol AbstrakTanaman pisang merupakan salah satu jenis tanaman yang mengandung senyawa kimia yang dapat digunakan untuk pengobatan. Salah satu bagian tanaman yang belum dimanfaatkan secara maksimal adalah jantung pisang ambon (Musa acuminate Colla). Jantung pisang diketahui mengandung senyawa flavonoid, fenol, alkaloid, tannin, saponin, dan kumarin. Salah satu senyawa yang termasuk golongan flavonoid yang umumnya termasuk senyawa antioksidan alami dan memiliki fungsi antimikroba yaitu senyawa fenolik. Tujuan dari penelitian ini yaitu penentuan total fenol, meneliti aktivitas antioksidan, antibakteri, dan pada ekstrak etanol jantung pisang ambon (Musa acuminate Colla). Penentuan total fenol menggunakan metode GAE (Equivalensi Asam Galat), analisis antioksidan menggunakan metode FRAP, dan uji aktivitas antibakteri menggunakan metode kertas cakram. Hasil total fenol yang diperoleh 17,7291 ± 0,102 mg GAE/g ekstrak, hasil dari uji antioksidan didapat dengan nilai EC50 pada ekstrak 0,0628 µmolFe2+/g sampel yang berarti ekstrak etanol jantung pisang ambon mempunyai nilai aktivitas antioksidan yang tinggi, dan hasil antibakteri pada ekstrak dengan rata-rata sedang (5-10 mm). Dari hasil pengujian yang dilakukan ekstrak etanol jantung pisang ambon mempunyai aktivitas antioksidan dan mempunyai sedikit daya antibakteri. Plant tissue culture is a proven technique for producing banana seeds in large quantities, uniformly and in a short time to support good quality banana seeds. The banana flower meristem can be a potential explant. The banana flower meristem offers the opportunity to regenerate plants with agronomic characteristics. This study aimed to regenerate banana flowers in vitro with different sucrose and BA (Benzyladenine) concentrations after standardized surface sterilization protocols. The study used a Completely Randomized Design (CRD), two factorial designwith surface sterilents and gelling agents. The results showed that the treatmentT15 (Sodium hypochlorite (1%) + HgCl2 (0.1%)) in G1 (0.25% gelrite) recorded the lowest fungal and bacterial contamination (0.00, 0.00) & (0.73, 0.53) respectively, in in vitro cultures of male flower buds of banana cultivar KarpuraChakkarakeli (AAB). While, the combination of BA (4 mgL-1) and sucrose (30 mgL-1) concentration had directly induced organogenesis in banana male flower explants.

Background: Data Riskesdas 2013 shows that the average amount portion of vegetable consumption in people aged 10 years or older is only 0.5 portions while the vegetable consumption category is said to be "sufficient" is at least 5 portions per day for 7 days a week. Banana blossom is a vegetable and commonly found in Bangka Belitung Islands Province. Banana blossom processing as a source of vegetables rich in antioxidant compounds and chicken meat as a source of animal protein, needs to be done by processing into shredded banana blossom-chicken meat.Objectives: To determine the acceptability and antioxidant activity level of shredded banana blossom-chicken meat.Methods: This research is true experimental. Shredded banana blossom-chicken meat, made using 3 treatment, banana blossom 75%:chicken meat 25% (F1), banana blossom 50%: chicken meat 50% (F2), and banana blossom 25%:chicken meat 75% (F3). Furthermore, the acceptance of taste, colour, aroma, texture, overall, and antioxidant activity level of shredded banana blossom-chicken meat. Results: There was a significant difference in the acceptance of the colours of shredded F1, F2 and F3 (p = 0,00), while aroma, taste, texture and overall of the shredded F1, F2 and F3 were not significant (p> 0.05). Shredded F3 (banana blossom 25%: chicken meat 75%) is most preferred based on the parameters of colour, aroma, taste, texture and overall, and has the highest antioxidant activity value are 53.74%.Conclusions: Shredded banana blossom-chicken meat has a good acceptability and has a high antioxidant activity level.[AN1]

Banana plant (Musa spp.) is exploited in many researches as a potential source of therapeutic options to treat diseases. The aim of this study is to evaluate the antioxidant and antimicrobial activity of the banana flower and stem. Two selected Musa spp. banana plants were dried, powdered, and extracted using the Soxhlet method with solvents of increasing polarity, petroleum ether (PE), ethyl acetate (EA), and methanol (ME). The extracts were then subjected to antioxidant assays like DPPH, FRAP, Total Phenolic Count (TPC), and Total Flavonoid Count (TFC). The antimicrobial activity against selected microorganisms was investigated using the agar well diffusion method. The moisture content was found to be higher in banana stems compared to flowers. The banana flower extracts of increasing polarity shown a steady increase in all antioxidant assays, while the banana stem extracts were seen to vary across different antioxidant capacity assays. The highest in DPPH assay was Musa acuminata ‘Berangan’ flower (91.8%) ME extract, FRAP with Musa x Paradisiaca ‘Nangka’ stem (4393.9 mg BHT/g) PE extract, TPC (594.85 mg GAE/g) and TFC (391.01 mg QE/g) with Musa x Paradisiaca ‘Nangka’ stem EA extract. The extracts showed higher antimicrobial activity against S.aureus, followed by E.coli and E.faecalis. The EA extract of Musa x Paradisiaca ‘Nangka’ stem recorded the highest activity across the antioxidant, and antimicrobial assay carried out in this study. In conclusion, both the flower and the stem exhibited good antioxidant and antimicrobial capacity in solvent of increasing polarity.
