Climatic conditions prior to wheat harvest 2010 were favorable for the development of field molds. The most important wheat contamination that should be determined is the presence and frequency of grain lots infected with Fusarium. This paper presents the results of content of fusarious kernels found in samples collected from all wheat growing regions of Serbia. Investigations were performed according to the regulations which foresee sensory determination of content of infected kernels. Determined average content of fusarious kernels was 6.01%, varying in range from 0% to 29.65 %. The obtained results, which exceeded the upper limits of permitted contents defined by national and EU regulations, pointed to the need for investigation of presence of Fusarium metabolic products, i.e. mycotoxins (zearalenone (ZEA) and deoxinivalenol (DON)) in wheat. Mycotoxin content was determined in average wheat samples and in wheat samples with increased content of fusarious kernels. Direct enzymatic immunoaffinity test (ELISA) was applied for determination of mycotoxin content. Although high content of fusarious kernels characterizes wheat crop in 2010, the determined quantities of two investigated mycotoxins did not exceed maximal permitted content. Consequences of unfavorable quantity and structure of total impurities in wheat crop in 2010 reflect decreased commercial and technological quality of wheat and point out to the need of necessary wheat safety control.

By identifying the factors affecting the quality and safety in the supply chain of agricultural assets under the "Internet+", the importance of customer needs and various needs is determined by using the analytic hierarchy process and questionnaire method. Combining HACCP system with QFD principle, a quality house of agricultural assets based on quality and safety control is drawn up. The quality and safety control system of agricultural assets is established by quantifying quality and safety prevention and control measures. Through the quantitative analysis of measures adopted, the operability and emphasis of the measures are strengthened, which can provide reference and basis for improving the quality and safety of agricultural assets in the new era in China.

Violations in manufacturing and products that do not meet the declared markings are currently an acute problem in ensuring the safety and quality of food. Meat products are often falsified due to the high added value and multicomponent composition. Despite the efforts of regulatory organizations, the covert replacement of various types of meat with cheaper or low-grade compounds is widespread. Consumer societies, individuals, food quality control state institutions are interested in the results of food quality, safety and conformity monitoring. This article presents information on results of food products’ conformity and possible analytical methods used to control meat products’ composition, the results of meat product monitoring as conducted by the V. M. Gorbatov Federal National Center for Food Systems (Moscow, Russia), data on the prevalence of various types of falsification, and proposals to improve the quality and safety control of meat products in Russia. According to the national regulatory framework, which includes national and international safety standards and regulations, has a strict control over the content of a large number of components of a diverse chemical nature is needed. That leads to the development of analytical methods and devices that can reliably evaluate components in food products added even in micro amounts. A direct relationship between the introduction of a new, more accurate method for identifying a product’s components and the reduction in cases of the corresponding fraud has been detected.

The paper constitutes a review of the analytical chemistry general state, changes in its development trends, as well as substantial rise of both its tasks volume and complexity and its potential. The place that the analytical chemistry takes among other sciences is briefly considered, and its instrumentation improvement is noted. Author focuses on the russian scientists’ advances in this sphere, particularly those whose investigation were supported by the Russian Foundation for Basic Research. Examples of the new analytical methods creation, the original analytical approaches development and the important applied tasks solution in spheres of medicine, environmental protection and the food and medicines quality and safety control are given. Author attempts to forecast the analytical chemistry development prospects for the next 10–15 years.
