SUMMARYIn 1988 there were two outbreaks of infection with Salmonella enteritidis phage type 4 in adjacent local authorities. The first affected 18 of 75 helpers and guests who attended a private function. Investigations revealed that home-made vanilla ice-cream containing uncooked eggs was the vehicle of infection and the causative organism was identified at the premises of the egg producer. The second affected 84 of 422 delegates attending a conference dinner, and 12 of 50 hotel staff at risk. A dessert made with lightly-cooked egg yolk and raw egg white was associated with infection, and the epidemic strain was cultured from the shell of an egg and an environmental sample from the producer's farm. It is of interest that one outbreak involved free-range and one battery-produced eggs, and that in one the vehicle was prepared at home and in the other in commercial premises. In neither incident was any deficiency in standards of egg production or catering practice discovered.

Salmonella growth in egg and egg products has been widely studied, but there are still some aspects that are not fully known. The objective of this work was to study the influence of the initial cell number on the growth fitness of Salmonella Enteritidis in raw and pasteurized egg products. Growth curves of five Salmonella Enteritidis strains in raw and pasteurized egg products, starting from different initial numbers, were obtained and fitted to the Baranyi and Roberts model. The results revealed that lower initial numbers led to longer lag phases (λ) and lower maximum specific growth rates (μmax) in raw liquid whole egg. Similar results were observed in raw egg white (except for one strain). Conversely, no influence (p > 0.05) of the initial concentration on Salmonella growth parameters in raw egg yolk was observed. On the other hand, no influence of the initial number of cells on Salmonella growth fitness in commercial pasteurized liquid whole egg was observed. The results obtained demonstrate that the disappearance of this initial-dose dependency phenomenon was dependent on the intensity of the thermal treatment applied. Finally, the influence of the initial number was, in general, lower in pasteurized than in raw egg white, but large differences among strains were observed.

The U.S. Food Safety and Inspection Service (FSIS) tests for Salmonella in meat, poultry, and egg products through three regulatory testing programs: the Pathogen Reduction–Hazard Analysis and Critical Control Point (PR-HACCP) program, the ready-to-eat program for meat and poultry products, and the pasteurized egg products program. From 1998 through 2003, 293,938 samples collected for these testing programs were analyzed for the presence of Salmonella enterica serotypes. Of these samples, 12,699 (4.3%) were positive for Salmonella, and 167 (1.3%) of the positive samples (0.06% of all samples) contained Salmonella Enteritidis. The highest incidence of Salmonella Enteritidis was observed in ground chicken PR-HACCP samples (8 of 1,722 samples, 0.46%), and the lowest was found in steer-heifer PR-HACCP samples (0 of 12,835 samples). Salmonella Enteritidis isolates were characterized by phage type, pulsed-field gel electrophoretic pattern, and antimicrobial susceptibility. Phage typing of 94 Salmonella Enteritidis isolates identified PT13 (39 isolates) and PT8 (36 isolates) as the most common types. One isolate from a ready-to-eat ham product was characterized as PT4. Electrophoretic analysis of 148 Salmonella Enteritidis isolates indicated genetic diversity among the isolates, with 28 unique XbaI electrophoretic patterns identified. Of these 148 isolates, 136 (92%) were susceptible to each of 16 antimicrobials tested. Two isolates were resistant to ampicillin alone, and 10 isolates were resistant to two or more antimicrobials. Isolation of Salmonella Enteritidis from FSIS-regulated products emphasizes the need for continued consumer education on proper food handling and cooking practices and continued work to decrease the prevalence of Salmonella in meat, poultry, and pasteurized egg products.

Eggs are widely utilized because of their high nutrient value, coagulating, foaming, emulsifying and sometimes even colouring or flavouring facilities in food manufacturing. Production of processed egg products shows an increasing trend. Frozen products belong to first processing, their shelf life can increase up to 1 year. By freezing, a large reduction in microbial loss can be achieved. But different undesirable processes can occur. The effect of freezing on animal cells is highly dependent on freezing parameters. It has a different effect on egg subtituents. Egg yolk undergoes a gelation process while proteins can denaturate. In our study pasteurized liquid egg products (liquid egg white, liquid egg yolk and liquid whole egg) were frozen by dripping into liquid nitrogen. After that, a 14-day frozen storage experiment was carried out at -18°C. Before freezing and on the 1th, 7th and 14th days of storage experiment pH, dry matter content, colour and calorimetric properties (denaturation temperatures and enthalpy of denaturation) with differential scanning calorimetry were tested. For statistical analysis, one-way ANOVA (α = 0.05) was employed. In our experiment, we found no significant change in calorimetric properties of liquid egg white after freezing, but significant decreasing of enthalpy and denaturation temperatures of liquid egg yolk and liquid whole egg was identified. In contrast, frozen storage had a decreasing effect in all these products. Freezing caused a clearly visible colour change in LEW, a visible change in colour of LWE and a very clearly visible change in colour of LEY. In case of LEW and LEY changes increased to clearly visible 14 days. In conclusion, our results show that frozen storage had a greater effect on liquid egg products properties than freezing in liquid nitrogen.

ABSTRACTEggs and their products have been implicated in food-borne disease outbreaks due to contamination with SalmonellaEnteritidis. Irradiation, as a food preservation technology, could minimize such contamination. The aim of this study was to determine the effects of irradiation in powdered egg yolk, egg white, and whole egg samples spiked with Salmonella Enteritidis. The powdered egg samples were exposed to doses of 0.5, 1.0, 1.0, 2.0, 2.5, 3.0, 3.5, or 4.0 kGy irradiation. Odors and tastes of raw and cooked non-inoculated, irradiated samples, and non-irradiated samples, were analyzed by a trained panel. A dose of 2.0 kGy resulted in slight to moderate changes in powdered egg yolk samples, compared to non-irradiated controls, while minimal differences were observed in powdered egg white samples. The dose of 3.5 kGy, when applied to samples of powdered egg white, resulted in taste and odor slightly stronger than the non-irradiated control. The maximum irradiation threshold before changes in flavor and odor occurred was 2.28 kGy, for powdered yolk and whole eggs, and 2.58 kGy, for powdered egg white. Those thresholds were enough to reduce S.Enteritidis to safe levels.

Laying hens were orally inoculated with a phage type 13a strain of Salmonella enteritidis (SE). Eggs laid by the infected hens were collected daily between the 4th and 14th d postinoculation and randomly allocated into three groups. One group of eggs was sampled on the day of collection, one group was held for 7 d at 7.2°C before sampling, and one group was held for 7 d at 25°C before sampling. The frequency and level of detectable contamination of egg contents by SE were determined for each group. Only 3% of the freshly laid eggs and 4% of the eggs held for 7 d at refrigerator temperature were identified as having SE-contaminated contents, whereas SE was isolated from the contents of 16% of eggs held for 7 d at room temperature. Enumeration of SE in contaminated eggs indicated greater numbers of SE in eggs held for 7 d at 25°C than in eggs from the other two groups, although most contaminated eggs in all three groups contained relatively small numbers of SE (generally less than 10/ml and rarely exceeding 100/ml).

Foodborne outbreaks of Salmonella enterica serovar Enteritidis phage type 4 (PT4) infection (n=497), reported to the Health Protection Agency Communicable Disease Surveillance Centre between 1992 and 2002, were compared with other pathogens (n=1148) to determine factors (season, setting, food vehicles, food safety faults) associated with this pathogen. Logistic regression was applied to control for potential confounding. Foodborne general outbreaks of S. Enteritidis PT4 infection were more likely to occur in the spring and summer, and were more often linked to schools, private residences and residential institutions. Eggs, egg products and the use of raw shell egg were strongly associated with this pathogen. Most outbreaks were linked to cross-contamination and inadequate heat treatment. This paper describes the decline in the S. Enteritidis PT4 epidemic, providing evidence that control measures introduced, e.g. improved biosecurity and vaccination, have worked. Continued surveillance of human and veterinary salmonellosis is essential to detect future problems.

Four commercially pasteurized liquid egg products were individually inoculated with Listeria monocytogenes, Yersinia enterocolitica, and Aeromonas hydrophila. They were unsalted whole egg blend, unsalted egg white, 5% NaCl whole egg blend, and 10% NaCl egg yolk. The inoculated samples and uninoculated controls were held at 2, 6.7, and 12.8°C (temperature abuse) for 14 d. Psychrotropic pathogen growth or survival risks in the unsalted and NaCl supplemented eggs were Y. enterocolitica > A. hydrophila > L. monocytogenes, and L. monocytogenes > Y. enterocolitica > A. hydrophila, respectively. Y. enterocolitica produced delayed (≥4 d) growth responses in unsalted eggs held at ≤6.7°C but was inhibited by ≥5% NaCl at all three holding temperatures. L. monocytogenes growth was prevented at ≤6.7°C in the unsalted and NaCl supplemented eggs. The organism rapidly increased in the temperature abused 5% NaCl whole egg blend. L. monocytogenes and A. hydrophila were inactivated in the unsalted egg white and NaCl supplemented eggs, respectively. Psychrotropic pathogen behavior was unaffected by the competitive growth of indigenous spoilage microflora including pseudomonads, Serratia spp., and NaCl tolerant micrococci. Properly refrigerated and hygienically handled pasteurized liquid eggs are microbiologically safe against a broad range of psychrotropic pathogen strains.

The Altai Region along with the regions of the Siberian Federal District belongs to the zone with trace element deficiency including iodine deficiency. The research goal was to study the effect of iodine on edible egg quality of laying hens of the Rodonit cross. At the final stage of egg-laying, 4 groups of 4 laying hens were formed. No iodine was administered to the hens of the 1st control group. Starch-based iodine product was administered to the birds of the 2nd, 3rd and 4th trial groups into the lower third of the neck, under the wing and into the rump area in a dose of 1.5 mg per head. The egg production intensity in the trial groups was higher by 21.3-28.8%. Egg weight in the 1st control group was 65.6 ± 1.33g which was lower than that in the trial groups by 4.4% (2nd group); 3.7% (3rd group) and 1.5% 4th group). All eggs belonged to “select” grade. The 3rd and 4th trial groups had less egg white by 3.8 and 2.7%; the egg-yolk content increases in the eggs of the 2nd, 3rd and 4th trial groups by 1.2%, 9.4% and 2.4%, respectively, and the eggshell weight by 1.2-9.4% as com-pared to the control. The ratio of egg white and egg-yolk weight in the eggs of the trial groups was lower than in the control group by 9.38-19.29%, but the ratio of egg-yolk to egg white was by 10.4-23.9% higher. The following indices were higher in the trial groups as compared to the control: egg white index -by 1.4-17.1%; egg-yolk -by 3.2-6.4%; Haugh unit -by 7.2-11.1%; eggshell thickness -by 3.9-8.3%. The best results were obtained with the administra-tion of iodine to the hens in the region of the lower third of the neck. The enrichment of the body of laying hens of the Rodonit cross with iodine makes it possible to obtain the profitability of edible egg production at the level of 28.6-41.0%.

Indirect enzyme-linked immunosorbent assays (ELISAs) have been applied to detect immunoglobulin Y antibodies to different serotypes of Salmonella in the yolks of chicken eggs with heat-extracted antigens of Salmonella enterica serotypes Agona (SA), Cerro (SC), Enteritidis (SE), Montevideo (SM), and Putten (SP). The egg yolk samples examined were classified as positive if their ELISA absorbance values exceeded the value for eggs from specific-pathogen-free flocks by more than two standard deviations. Of 30 egg yolk samples from three flocks vaccinated with a killed SE vaccine, 29 were antibody positive by the ELISA assay for the SE antigen. Four to 29 of the 29 yolk samples showed positive results for the other serovars, although the absorbance values for SE were higher than those obtained for the other serotypes in each of the yolk samples. All 30 yolks from three flocks that were not administered any SE vaccines were found to be antibody negative for SE, and two samples were determined to be positive for SC. Thirty-nine or 40 eggs were obtained from each of four layer flocks in a commercial egg production farm where the laying houses were naturally contaminated with SA, SC, SM, SP, Salmonella serovar Infantis (SI), and untypeable strains. The ELISA absorbance values for SM in the egg yolks obtained from the two flocks molted through feed withdrawal when the birds restarted laying were significantly (P < 0.05) higher than those observed in the yolks obtained before the molt. In egg yolks from the two other flocks that were molted through a wheat bran diet, there was no significant difference between the absorbance values before and after the molt. The observations in the present study provide further evidence to suggest that a molt initiated through the administration of a wheat bran diet can reduce the risk for Salmonella problems in a commercial egg-producing setting.

The proportion of water-soluble protein in egg yolk increased markedly after 12 days' incubation, concurrent with the appearance of a new fraction that evidently entered from the egg white. The electrophoretic, sedimentation [Formula: see text], molecular weight (45 × 103), and chromatographic properties of this new fraction, after 18 days' incubation, were the same as, and the tyrosine–tryptophane and phosphorus–nitrogen ratios were similar to those of authentic ovalbumin. Ovalbumin is known to have two components differing in phosphorus content and both were evident in the authentic sample and in the new yolk fraction. At the later stages of incubation the ovalbumin component of lowest phosphorus content predominated and this also may be the form that was present in the serum of the embryo. Changes in the other components of the water-soluble material during embryogenesis were less dramatic. Chromatography on DEAE-cellulose revealed at least nine yolk components in unincubated egg, although only the three livetins were made evident by free-boundary electrophoresis. The great increase in ovalbumin prevented detection of changes in the livetins during embryogenesis but α-livetin (serum albumin) apparently disappeared most rapidly and completely.
