The current stage of consumer market development is described by increasing interest in healthy food products, specialized, and functional purpose foods. In these conditions, the solution of the problem of the correction of the composition, while preserving the taste, aroma and other consumer characteristics, is of particular importance. The complex of organoleptic, physicochemical, and microbiological tests confirmed the technological feasibility of using yacon powder in bakery technology made of a mixture of rye and wheat flour. The studies on the composition of yacon powder, its effect on the growth and development of lactic acid bacteria demonstrate the possibility of using yakon powder as a functional food ingredient with a prebiotic effect. The results obtained are confirmed by a comparative characteristic of the quality and composition of bread made of the mixture of rye and wheat flour of the control and experimental samples with the addition of powdered yacon semi-finished product.

Currently, development of the consumer market is becoming increasingly important. Loans provided by a commercial Bank contribute to solving financial problems of the population, as well as enables customers to meet their needs for the goods and services they need, without having a sufficient monetary means at the present moment. The growth of consumer activity activates the production processes, thereby increasing the market capacity, which contributes to developing the economy and, consequently, to improving human wellbeing. The issues related to the consumer credit market development affect not only the problems of the state of the banking system monetary mechanism as a whole, but also the mechanism of lending in a separate commercial bank. At the same time, the consumer lending is usually associated with high credit risks for the credit organization, which determines the topicality of the problems and the need to improve the consumer lending market in Russia.

The coronavirus infection, which has rapidly spread around the world and started determining global trends, has transformed the life of modern society. Over the past months, in the acute phase of restrictive measures, there have been both explosive growth in demand (digital goods) and negative trends connected with bankruptcies and cuts of salaries. All these fluctuations in supply and demand had an active impact on prices of various segments of the consumer market. The purpose of this paper is to analyze the dynamics of prices in the consumer market of Russian regions and assess possible trends in the postcrisis period, taking into account regional characteristics. In order to do this, the authors assess the main trends in the market of Russian regions at the beginning of the crisis; determine the price dynamics in the period 2019–2020 for separate market segments; specify the nature of certain factors associated with the impact of the crisis on different types of markets; identify promising trends in price dynamics. As a result of the research for five groups of regions with different characteristics of socio-economic conditions and the level of market development the following conclusions were made: 1) a slowdown in the growth of prices for services for the vast majority of regions was revealed; 2) for the Depression cluster, intensive growth in prices for services is caused by weak market development, high costs and concentration on the segment of necessary services (low elasticity in price and income); 3) with similar price dynamics in the non-food segment of Above-average and Below-average clusters, various reasons are specified. In the first case, there is a delayed demand due to rising prices, in the second there is hidden inflation, when people do not have money for goods. For a number of regions, there is a trend towards the emergence of new agents in the markets, due to rising prices (Depression for non-food products, Above-average and Below-average for food products).

Globalization of economic processes stipulates the qualitative changes in the structure of national economic systems, including in such an important component as the domestic consumer market, causing the updating and creating new rules of its functioning. Shifting focus towards the growing role of innovative-informational factors of domestic market development corresponds to the needs of the market economy and modern challenges faced by our country. Therefore, the need to not only analyze the substantive and transformational aspects of domestic consumer market development but to research the issues related to its structural and institutional maintenance grows in relevance. The paper aims to analyze foreign scientific research related to highlighting economic patterns of domestic consumer market functioning and to develop on this basis the structural-institutional model of the domestic consumer market. The paper outlines the nature of the discourse related to “institutes” and “institutions”. The structural-institutional concept of domestic consumer market functioning is determined. The structural-institutional model of domestic consumer market is developed and its exogenous and endogenous environment is defined. The fact that such a model can be implemented through the use of such institutional elements as the market functioning mechanism used as leverage of impact on economic agents (market participants) is emphasized. The composition of forming and development of structural-institutional links between the domestic consumer market entities is suggested. The structural-institutional dimension of domestic consumer market functioning is found to show the importance of the use of the complex approach to its development by the specification of accents on relationships between all institutional components that can secure normal market activity in the domestic environment.
