The interest in berries from food manufacturers is huge, which is explained by good organoleptic characteristics and high biological activity of berries. One way to preserve the properties of berries throughout the year is to obtain extracts. Determining the conditions and type of optimal extraction technology to obtain biologically active substances from plant materials is an important stage in the production of new natural preventive additives. The aim of this work is to study the chemical composition and antioxidant activity of blueberry extracts (Vaccinium myrtillus L.) obtained by various methods: maceration, ultrasonic and microwave extraction. The use of ultrasonic extraction as a method of intensifying the process of extracting biologically active compounds from blueberries is very effective. This proves an almost 2-fold increase in the flavonoid content in the extracts. However, the content of anthocyanins in the extracts of blueberries is not the highest for ultrasonic extraction (a decrease by 3.3 times compared with maceration), in all likelihood due to the instability of this class of compounds in this type of processing. Among the extracts of blueberries obtained by three technologies (maceration, microwave and ultrasound treatment), it is the ultrasound extract that has the highest antioxidant activity (9.5±0.1 mg/cm3, 18.18 mmol±0.24 Fe2+/1 kg, 58.6%), determined by three methods: DPPH method, FRAP method, method for assessing antioxidant properties using a model system with linoleic acid. Ultrasonic extraction was chosen as a technology for obtaining a concentrated blueberry extract.

Vaccinium arctostaphylos L. and Vaccinium myrtillus L. which are found naturally in most part of Blacksea Region, and Artvin are generally called bear grape, Trabzon tea, and likapa. In addition, different varieties of blueberry (Vaccinium corymbosum L.) have been cultivated in Artvin region for 5 or 6 years. Blueberries contain appreciable levels of phenolic compounds, including anthocyanins and flavonols that have high biological activity. V. arctostaphylos and V. myrtillus show that natural distrubition with received V. corymbosum of different cultured species in Artvin region will be determined antioxidant activity in this study. In this study showed that wild species had a higher antioxidant effect than cultivated species. V. myrtillus had high total polyphenols (11.539-20.742 mg GAE/g dry sample), flavonoids (1.182-2.676 mg QE/g dry sample) and anthocyanins (3.305-11.473 mg Cyn/g dry sample) than V. corymbosum species. In addition, wild species had high CUPRAC, FRAP and DPPH values. The antioxidant activities found with CUPRAC, expressed as trolox equivalent antioxidant capacity ranged from 0.143 to 0.297 mmol TEAC/g dry sample. Those determined with DPPH expressed as IC50 ranged from 0.229 to 1.178 mg/ml. Those determined with FRAP expressed as FeSO4.7H2O equivalent were in 130.719–346.115 µmol Fe/g dry sample range.

Abstract There is considerable interest in identifying new antioxidants from plant materials. Several studies have emphasized the antioxidant activity of species belonging to the Myrtaceae family. However, there are few reports on these species from the Cerrado (Brazilian savanna). In this study, the antioxidant activity and phenolic content of 12 native Myrtaceae species from the Cerrado were evaluated (Blepharocalyx salicifolius, Eugenia bimarginata, Eugenia dysenterica, Eugenia klotzschiana, Hexachlamys edulis, Myrcia bella, Myrcia lingua, Myrcia splendens, Myrcia tomentosa, Psidium australe, Psidium cinereum, and Psidium laruotteanum). Antioxidant potential was assessed using the antioxidant activity index (AAI) by the DPPH method and total phenolic content (TPC) by the Folin–Ciocalteu assay. There was a high correlation between TPC and AAI values. Psidium laruotteanum showed the highest TPC (576.56 mg GAE/g extract) and was the most potent antioxidant (AAI = 7.97, IC50 = 3.86 µg·mL−1), with activity close to that of pure quercetin (IC50 = 2.99 µg·mL−1). The extracts of nine species showed IC50 of 6.24–8.75 µg·mL−1. Most species showed TPC and AAI values similar to or higher than those for Camellia sinensis, a commonly consumed tea with strong antioxidant properties. The results reveal that the analyzed Myrtaceae species from the Cerrado possess high phenolic contents and antioxidant activities. Thus, they are a potential source of new natural antioxidants.

Plant materials have huge untapped potential in Russia. It has potential antioxidant properties, contains a large number of biologically active substances. As a result of a comparative study of the content of phenols, flavonoids, anti-radical ability according to the method with 2,2'-diphenyl-1-picrylhydrazyl reagent, restoring forces according to FRAP method with 2,4,6-tri (2-pyridyl)-1,3 reagent, 5-triazine in extracts obtained by three different extraction technologies (maceration 37 °C for 2 hours, microwave irradiation 800 W 1 min, ultrasonic treatment 37 °C, 37 kHz 90 min) from plant materials: rosehips (Rosa L.), oak bark (Quercus robur L.), rhubarb root (Rheum officinale), ginseng root (Panax L.), birch buds (Betula L.) on the advantage in the level of the studied indicators for the technology of extracts using innovative effects – ultrasonic irradiation. Extracts of plant materials are potential sources of antioxidant substances and can be used in the pharmaceutical, cosmetic industry and as components of food systems. A general trend is observed, which was observed in the study of various indicators: concentrated extracts, in which phenolic compounds and flavonoids are preserved after concentration (rhubarb root extract and birch bud extract), exhibit the best antiradical activity and restoring power; then, as with their destruction, other indicators fall.

In the last decade the attitude of socially active people to their own health has changed significantly. The desire to lead a healthy lifestyle forms consumers’ demand for proper balanced nutrition, products enriched with natural biologically active substances of unconventional plant materials, systematic consumption of which can not only reduce the risk of alimentary diseases, but also protect a person from oxidative stress, which is the predecessor of many serious illnesses. Among the wide range of chemical compounds that make up plant materials, a special place is occupied by compounds of antioxidant action, such as flavonoids, phenol carboxylic acids, vitamins C and E. The aim of the research was to study the qualitative composition and quantitative content of natural antioxidants in some types of medicinal and technical plant materials of the Republic of Adygea to determine the possibility of their use in the production of functional food products. The content of biologically active compounds that determine the antioxidant properties of plant materials was determined using «Kapel 105 «M» capillary electrophoresis system and JASCO 875-UV liquid chromatograph. Antioxidant activity was measured by the amperometric method with Tsvet Yauza-01-AA analyzer. According to the results of the research, it has been found that Echinacea purpurea herb (1,09 g / dm3) and walnut leaves (0,96 g / dm3) exhibit a high antioxidant activity (in terms of gallic acid), which is due to the high concentration of natural antioxidants of the phenolic type. Due to these properties this plant raw materials can be used as enriching ingredients for the production of various groups of food products for functional purposes.

The pyrazoline ring is defined as a “privileged structure” in medicinal chemistry. A variety of pharmacological properties of pyrazolines is associated with the nature and position of various substituents, which is especially evident in diarylpyrazolines. Compounds with a chalcone fragment show a wide range of biological properties as well as high reactivity which is primarily due to the presence of an α, β-unsaturated carbonyl system. At the same time, bicyclic monoterpenoids deserve special attention as a source of a key structural block or as one of the pharmacophore components of biologically active molecules. A series of new diarylpyrazoline derivatives based on isobornylchalcones with different substitutes (MeO, Hal, NO2, N(Me)2) was synthesized. Antioxidant properties of the obtained compounds were comparatively evaluated using in vitro model Fe2+/ascorbate-initiated lipid peroxidation in the substrate containing brain lipids of laboratory mice. It was demonstrated that the combination of the electron-donating group in the para-position of ring B and OH-group in the ring A in the structure of chalcone fragment provides significant antioxidant activity of synthesized diarylpyrazoline derivatives.

Chlorogenic acid has been proved to have cardiovascular protection, antibacterial, antiviral, hemostatic, and hypolipidemia effects. Modern scientific research on the bioactivity of chlorogenic acid has been extended to the fields of food, medicine, health care and daily-use chemical industry. The aim of this research was to optimize the extraction conditions for chlorogenic acid from Eucommia ulmoides (Eucommiaceae) leaves. The significant variables were screened and optimized by a combination of Plackett-Burman test and Box-Behnken design. Optimum extraction parameters with ethanol concentration of 50%, solvent pH value of 3, and particle size of 60 mesh were determined according to variance analysis and contour plots. Under these conditions, the yield of chlorogenic acid was up to 4.36 mg/g, which was basically consistent with the theoretical prediction value of 4.50 mg/g. This study also proved the potential antioxidant activity of E. ulmoides leaves. The optimal extract of E. ulmoides leaves rich in chlorogenic acid showed the highest antioxidant activity in the FRAP method, which was 219.8 μM Trolox equivalents (TE) per g extract weight (EW) (μM TE/g EW). The DPPH method gave a similar value (168 μM TE/g EW) to the ABTS method (152 μM TE/g EW). The established extraction process was efficient in the recovery of chlorogenic acid from E. ulmoides leaves, encouraging its valorization as a cheap and sustainable alternative for the isolation of chlorogenic acid.

The development of targeted beverages is a priority for healthy eating. Plant raw materials containing a wide variety of biologically active substances are used for their production. The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. The high efficiency of ultrasonic effects on various technological processes was confirmed by numerous studies. Ultrasonic extraction was carried out at t = 20 ? and an ultrasonic wave frequency of 22 kHz. As a result of the research, it was found that the equilibrium state is achieved within 15 minutes with ultrasound exposure. Natural raw materials, their chemical composition and the influence on the human body were studied in the work to develop new beverages recipes. The selected ingredients in a certain quantitative ratio made it possible to obtain beverages with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the beverage and the aftertaste, as proved by the comparative organoleptic evaluation of the samples. The functional properties of the beverages developed were confirmed experimentally. The following was determined in the beverages: macronutrients content, antioxidant activity, vitamin C content, shelf life duration. The ultrasonic extraction method application in the technology of beverages manufacturing allows: to reduce the preparation time by half, to reduce the amount of raw materials by 15%, to increase the content of macronutrients by 45%, to increase the content of vitamin C by 35%, to increase the antioxidant activity by 45-50%, to increase storage stability by 50-60%, to improve organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional beverages.

The features of biochemical composition and properties of meat raw materials determine the need to find new technologies for its processing in order to obtain new products with high consumer properties. The current trend in the development of technology is the enrichment of raw meat materials with useful components with functional and technological properties that have a high biological value: apiproducts and products of plant origin. Due to its chemical composition, honey contains about 500 different biologically active substances, which are feasible to use as natural antioxidants in the production of semi-finished meat products. Different types of honey are characterized by high biological activity, dietary and medicinal properties. During heat treatment, meat marinated with honey marinade acquires new taste qualities, the appearance becomes brighter due to the caramelization of honey. The article presents the results of an investigation of the initial raw meat materials, honey, and marinated semi-finished product. We found that a decrease in the pH value of the marinated semi-finished product during a 24-hour treatment period provides meat stability to storage, since most bacteria grow at high pH values, while their growth slows down in acidic nutrient media with pH value below 6.2. Long-term marination makes it possible to obtain meat with increased water-binding and water-holding capacity and improved consistency and juiciness. The task of new product development requires new approaches and techniques in technology. The use of apiproducts, which have antioxidant properties, will allow avoiding the use of food preservatives and stabilizers of chemical origin. Therefore, honey can be used as a part of marinated meat products. The introduction of the active components of honey into the marinade will extend the shelf life and correct the organoleptic properties.
